Divide and conquer! Store designated gluten-free ingredients in clearlymarked, separate, airtight containers

Reserve a separate space in your kitchen designated forthe storage of dedicated utensils and pans

Use color-coding orlabels to easily identifyitems designated forgluten-free use, such aspots, pans, and utensils

Place gluten-free foodson separate pans or onfoil while cooking toavoid crosscontamination

Do not double-dip utensils between gluten-free foodsand gluten-containing foods

Staples of the gluten-free diet include: Beans Cereals made without wheat or barley malt Corn Fruits and vegetables Meat, poultry, and fish (not breaded or made with regular gravies) Milk-based items Oats (may be okay for some people with celiac disease, but work closely with your doctor or dietitian) Potatoes RiceYou can eat foods such as pasta, bread, pancakes, and pastries made with alternative grains (rice, buckwheat, tapioca, potato, or corn flours and starches).

Other food items you may use for cooking include: Flax, millet Legumes, nuts, seeds, cassava Tapioca sorghumThe gluten-free diet involves removing all foods, drinks, and medications made from gluten. Thismeans not eating anything made with barley, rye, and wheat. All items made with all-purpose, white, or wheat flour is prohibited.

Obvious sources of gluten include: Breaded foods Breads, bagels, croissants, buns Cakes, donuts, and pies Cereals (most) Cold cuts, hot dogs, salami, or sausage Crackers and many snacks bought at the store, such as potato chi ps and tortilla chi ps Gravy Pancakes and waffles Pasta and pizza Soups (most) Stuffing

Less obvious foods that must be eliminated include: Beer Candies (some) Communion breads Croutons Marinades, sauces, soy and teriyaki sauces Salad dressings (some) Self-basting turkey

1 package of Turkey Gravy Mix8-12 oz. of cooked GF pasta tsp. black pepper1/8 tsp. cayenne pepper1 C. turkey meat, cooked C. heavy cream2 Tbsp. parsley, choppedHot sauce, dash C. mushrooms, sliced2 oz. pimentos, diced (optional)1/3 C. parmesan cheese

In a medium size pot, prepare 1 package Turkey Gravy Mix as directed.

Add tsp. black pepper, 1/8 tsp. cayenne pepper and 1 C. cooked, diced Turkey meat. Remove from heat and stir in C. heavy cream, 2 Tbsp. chopped parsley, dash of hot sauce, C. sliced mushrooms, 2 oz. diced pimentos (optional). Toss in 8-12 oz. of cooked GF pasta and pour mixture into a greased 9 x 9 casserole dish. Sprinkle with 1/3 C. parmesan cheese and bake at 350F for about 30 minutes. Uncover and bake 15 minutes more.

Makes about 4 8 oz servings.

1 package of Cheese Sauce Mix2 C. ground beef, cooked & drained1 C. onion, choppedCheddar cheese, shredded

Follow directions on one package of Cheese Sauce Mix.

Add 2 C. cooked ground beef and 1 C. chopped onion.

Simmer 3-5 minutes.

Garnish with shredded cheddar cheese.


CHEESEBURGERSOUP

1 package of Beef Gravy Mix2 Tbsp. red wine vinegar8 oz. ground beef or beef tips1 C green onions, chopped2 C mushrooms, sliced8 oz. sour cream tsp. paprika8-12 oz. of cooked GF pasta

Mix 1 package Beef Gravy Mix according to directions.

Add 2 T. Red Wine Vinegar

Bring to boil over medium heat, stirring constantly.

Add 8 oz. cooked ground beef (drained of fat) or beef tips browned in oil, 1 C. chopped green onions and 2 C. sliced mushrooms. Simmer 3-5 min. Add 8 oz. Sour Cream, Yogurt or heavy non-dairy Sour Cream/Yogurt substitute and tsp. paprika. Serve over GF pasta


BEEFSTROGANOFF

1 package of Cream Soup Mix C. corned beef, shredded C. Sauerkraut C. corn, frozen C. potatoes, cooked & diced

Prepare 1 package Cream Soup Mix as directed.

Add C. shredded, cooked Corned Beef, C. Sauerkraut, C. frozen corn, C. cooked & diced potatoes.

Simmer 3-5 minutes.

Makes about 3-8 oz servings.
