These instructions are issued at this time in order for you to familiarize yourself vii t l1 t he general set-up of serving l uncheons for lab oratory guests during the 191+8 Annual Inspection September 28 29 and 30 1948 i n th~ Audit or ium of the Administration Building

At the end of these instructions you wi l l find the arrangement of ~

The tables wi l l be set in groups of 16 guests at a t able on the east side of the ~udi t or i urn and 14 guests at a table at the side closest to the ki tchen with an aisle between Leader middot No1 will have charge of tables Nos 1 through 12 Girls aSSigned to t hese tables will r eceive their plates ~ from the sta3e end of t he kitchenalwars watching the l eader for t he s ignal for the next guest to be served Leader No 2 ldll have charge of tables Nos 13 thr ough 24 and t he girls assigned to these t ables vill recei ve their plates fr om the Foyer end of the kitchen also maltin g sure to watch the signal of the leader All girls except the l eaders will serve t he main course The girls assi [11ed to their tables will start serving beverages just as s oon as thei r table is completely served the main course

l Jhen clearing t he tables for dessert trays will be used and one girl will hold the tray vlhi1e the other girl picks up the s oiled dishes It is like~T by the time t h e las t tabl e is served the main course t he first tables will be r eady for clearing therefore the girls that have just finished serving t he last tables with the main course and beverage will help clear the early table and vicemiddot versa The vlhole t able will be cleared from soiled dishes before the dessert is s erved bull
