1/2 CUP YELLOW CORNMEAL1/2 CUP ALL-PURPOSE FLOUR
2 TABLESPOONS SUGAR2 TEASPOONS BAKING POWDER
1/8 TEASPOON SALT1 LARGE EGG
1/2 CUP WHOLE MILKVEGETABLE OIL, FOR FRYING
DIRECTIONS
STEP 1: Cut each hot dog in half, then insert a lollipop stick into the cut end of each hot dog. Thoroughly dry off the hot dogs with paper towels.STEP 2: In a large bowl, whisk together the cornmeal, flour, sugar, baking powder and salt. STEP 3: In a liquid measuring cup, whisk together the egg and milk. Pour the wet ingredients into the dry ingredients and stir until combined using a spoon or spatula. (See Chef Tim’s notes)STEP 4: Add 4 inches of oil to a large, heavy-bottomed stock pot. Attach the deep-fry thermometer then heat the oil over medium-high heat until the thermometer reaches 350°F. Line a plate with paper towels.STEP 5: Dip each hot dog in the batter until it’s completely coated, lightly shake off the excess then lower it into the hot oil. Fry the corn dog until golden and crispy, about 3 minutes, then transfer it to the paper towel-lined plate. Repeat the breading and frying process with the remaining hot dogs.Serve immediately.

CHEF TIM’S NOTESWhen dipping the hot dogs in the batter, it’s easiest if you pour the batter into a tall glass. The lollipop sticks can be fried, so you can
carefully lower the corn dogs into the oil, stick and all.

INGREDIENTS
6 CUPS WATER1 CUP WHITE SUGAR
2 CUPS FRESHLY SQUEEZED LEMON JUICE
FOR STRAWBERRY JUICE:8 LARGE STRAWBERRIES, HALVED
2 TABLESPOONS WHITE SUGAR1 CUP WATER
DIRECTIONS
STEP 1: Place strawberries in a blender; top with 2 tablespoons
sugar. Pour 1 cup water over sugared strawberries. Blend until
strawberry chunks transform into juice.
STEP 2: Combine strawberry juice, 6 cups water, 1 cup sugar,
and lemon juice in a large pitcher; stir until blended. Chill
before serving.

DIRECTIONS
STEP 1: Muddle 6 fresh mint leaves in shaker.
STEP 2: Pour 1 part vodka.
STEP 3: Pour 3 parts strawberry lemonade.
STEP 4: Add ice and shake.
STEP 5: Pour into rocks glass.
STEP 6: Add lemon or lime garnish.
