Make it cocktail hour every single day. Think fresh ingredients like juicy watermelon, cucumber, mint and lemon. Best served with your closest

friends in the afternoon sun.

1. Put watermelon, cucumber, mint and lemon juice in a blender, puree until smooth.

2. Strain the mixture into a pitcher to remove the pulp and leaves.

3. Add the alcohol or water and slowly mix in the syrup until well combined.

4. Garnish with fresh fruit and enjoy!

Bing BoyWe are excited to announce that urban Asian street food specialists Bing Boy have opened their first WA store at Galleria.

Not your average fast food, Bing Boy serves up tasty, fresh and healthy Jian Bing – or Bing. What’s in a Bing? It’s a thin wheat omelette wrap served with a huge selection of fillings. Why not try the Hey Bing Boy (dry pork, pickled cabbage and wonton skin) or the Ching Ching (chicken, salad, bean sprouts, avocado and wonton skin) when you need a pick-me-up. The legend of the ‘Bing’ dates back many thousands of years. It began with the wrongful imprisonment of a young man. During his stay in prison he wasn’t allowed to receive food from his wife. What he was allowed to receive was paper, ink and a Chinese brush to write with. And so, his wife came up with a cunning plan to feed her husband. She substituted the Chinese brush with spring onion, ink with sauce and the paper with a very thin pancake. As the story goes the plan was a success, the man was well fed and kept his sanity until his release. A taste of Bing Boy is like stepping back in time to rural China, all within the confines of Galleria. Enjoy!

Ministry of Sound The Annual 2015One of Australia’s most anticipated annual albums has dropped featuring the biggest house and dance anthems you’ll be listening to all summer. This time around the album was mixed by festival favourites Ember & Kronic. It’s an epic set list, kicking off with Armand Van Helden’s remix of Sam Smith’s I’m Not The Only One. There’s Timmy Trumpet & Savage’s Freaks, David Guetta’s Lovers On The Sun and ARIA nominated Peking Duk’s new track featuring Nicole Millar. This year’s album marks the 200th Ministry of Sound Compilation released in Australia. So to celebrate, a special third disc has been produced featuring all the distinctive dance tunes we’ve come to expect of a Ministry album.
