Ocean (named for its address and seaside

location) has a more contemporary approach

to f ine dining, reflecting its unrivaled sett ing

along the Pacif ic. Under the direction of Steve

Schackne, food and beverage director for The

Del, the new direction of the menu features

Southland Coastal Cuis ine with an emphasis

on farm-to-table; and as always, the taste and

artistry of each plate aims to please.

An ala carte menu with very delectable

choices is available as well as a chef’s tast ing

menu. Taste tantal izers start the evening with

an amuse bouche of lemon mousse and lemon

granite with grape inside the mousse – a

palate cleanser that sets the tone with a very

refreshing taste and a pleasing presentation.

This is fol lowed soon thereafter with sashimi,

accompanied by pickled cucumbers and small

cr isp green apple disks to provide contrasting

f lavors and textures.

Chef Martinez’s baby heir loom tomatoes with

burrata cheese, herbs, and a clear intense

tomato broth was artful ly presented, and

evidences elegance and f inesse with its taste

– making it a true winner. This past spring, The

Del planted an on-site garden from which to

obtain fresh herbs (such as those used in this

course) daily, in addit ion to using fresh seasonal

ingredients from local farmers.

Art istry on a plate is presented with the

braised ham hocks (unl ike anything you have

ever had), served with gri l led baby art ichokes,

1500 OceanCLASSIC SAN DIEGO DINING AT HOTEL DEL

gnocchi, and f inished with the brais ing broth

from the ham hocks poured into the dish table

s ide; terr i f ic and remarkably different tastes,

all on one plate. The pan roasted grouper was

notable, and the smoked slow roasted glazed

carrots on the plate were amazing, with thinly

s l iced hazelnuts and a black truff le au jus

to complete the dish; the f ish was the r ight

combination of temperature and texture, and

paired wonder ful ly with the contrasting taste of

the per fectly prepared glazed carrots.

Chef Martinez then presented a mouth

watering New York str ip steak served with

torpedo onions, an abalone mushroom in a

circular disk – gri l led on both s ides, and a tasty

onion marmalade that raised the course to a

f lavor ful and memorable level.

For the sweet tooth, try the chocolate mil le-

feui l le with chocolate mousse layers between

the puffed pastry, with a vani l la gelato on the

side and orange coulis.

Sommelier Joe Weaver offers wine pair ings

for the tast ing menu along with an extensive

wine l ist for those desirous of selecting wines to

accompany their meal.

Advance reservations are recommended.

Of note, the restaurant’s outdoor and nearby

Sunset Bar features l ive jazz music every

Saturday and Sunday from 6-10 p.m. during the

summer season. u

W ith this year’s l ine-up featur ing the

talents of Heath Bel l and Clayton

Richard, Chase Headley, Cameron

Maybin and Nick Hundley (to name just a

few), the Padres have s ince 1969 remained

a hometown favor i te and one of only two

teams to have or iginated in Cal i fornia; not to

mention the f i rst team in profess ional sports to

develop a mi l i tary affai rs department. Having

twice won the National League Pennant, the

club’s commitment to generat ing a winning

team and enjoyable bal lpark exper ience for

the fans are ever-present in their efforts .

From the front off ice to the athletes on the

f ie ld, the ent i re f ranchise is without a doubt

intent ional about giv ing back – a phi lanthropic

legacy that began in 1995 by Padres Chairman,

John Moores. Their focus embraces:

• LIVE: an outreach init iat ive, focusing on chi ldren’s health and fundrais ing with organizat ions such as Rady’s Chi ldren’s Hospital .

• LEARN: addresses educational needs to acknowledging the teachers and faci l i tators involved within the community.

• PLAY: supports youth basebal l by refurbishing L i tt le League bal lparks, faci l i tat ing Coaches, Cl in ics and other innovative play programs.

The heart of The Padres Foundation s ince 1999

has been Sue Botos, recently promoted to vice

president of communications.

As the primary source of funding for the club’s outreach initiatives involving children’s health, education and youth baseball, The Padres Foundation for Children celebrates 16 years of compassion and community service in San Diego.

FINE sd . c o m L IFESTYLE | LUXURY | L IV ING 37

The miss ion of The Foundation is to s imply

“bui ld community pr ide through posit ive

connections with fans, players and Padres

staff and leading the community through

relevant, v is ible programs and partnerships,”

notes Botos. “Al l of the in it iat ives [we support

and champion] have power ful stor ies, but you

cannot help but be drawn to the ones that

without quest ion make a dif ference in the l i fe

of a chi ld. [As one example], our Cindy Matters

Fund was establ ished in 1997 and over the

years we have donated more than $1.1 mi l l ion

to pediatr ic cancer research; [a day without

concern], we host the k ids and their fami l ies

to an afternoon or evening of basebal l , they

meet the players and can play as k ids without

rules – they are the k ings and queens of Petco

Park when they vis i t .”

Star volunteer, Summer Serrano has been

a Padres Foundation volunteer for 15 years.

When asked why she supports this organizat ion

of al l the char it ies in San Diego, she answered

with just two words, “Sue Botos.”

“She is the best person i could ever work for,

so upbeat and a bal l of energy,” Serrano said.

“Plus, i love basebal l and i love the Padres. i see

them among the fans al l the t ime, they real ly

do care about giv ing back to the community.”

The club’s char itable giv ing is as t ight ly

interwoven with i ts creative, dedicated

foundation fundraisers as the st i tching of a

basebal l in a rookie’s hand. There are three

major in-bal lpark fundraisers: Scoreboard

Surpr ises, Shi rts Off Their Backs and the Annual

Garage Sale – with al l proceeds direct ly

benefit ing the foundation.

“The l i t t le k ids are so excited when they

actual ly buy something at the garage sale

worn by one of the players,” notes Serrano.

“ i love the smi les on their faces — that is so

sat isfy ing for me.”

New owners, Jeff Moorad and Tom Gar f inkel’s

quiet yet highly v is ible presence are felt

throughout Petco Park. They are seen walk ing

among the fans, staff and volunteers, and have

made tangible improvements; the “bal lpark

exper ience” is h igh on the l i s t , and of course,

a winning team.

“We are very fortunate in that [Moorad and

Gar f inkel] support the vis ion that the San

Diego Padres and the Padres Foundation

are community assets,” said Botos. “We wi l l

cont inue in our commitment by invest ing in

efforts that support youth in the San Diego and

Baja regions.” u

more than a feeling

M.Dot Design Studio

although it starts with a feeling, it certainly does not end there. when asked what fashion means to custom clothes stylist and designer, michelle aquino, her answer is forthright: “it’s a way to express yourself.” operating out of her studio in down-town san diego, aquino creates cus-tom clothing for women drawing on her immeasurable talent and passion for classic lines, modernizing them with a contemporary edge. and it usually begins with the fabric.

coming from spare beginnings, aquino began flexing some creative muscle as she reworked hand-me-downs at an early age, quickly generating her own creations by the age of 11. “my grandmother was a seamstress,” she confides, “and i watched her.” in-deed, many of her ideas stem from classic 20s and 30s styles that be-come both timeless and hip, as she fuses ‘then and now’ effectively. “a lot of my pieces are tailored with pleating, beading, and ruching to contemporize them.” in addition, aquino has a keen eye for what will look good on a woman and incorporates the fundamentals of fabric, color and lines that will ac-centuate the body. “i want to com-pliment the body type for a specific person,” she says; never creating more than three of a design with most being one-of-a-kind. all functions are performed in-house from pattern sketching to sewing and finish work.

vintage meets vavoom

Jennafer Grace Handmade Fashion

“i am and always have been a body con-scious designer,” says custom designer jennafer grace. “historically, i seem to keep a woman’s waist in mind.” in-corporating a lot of cut-outs, revealing just the right amount of tantalizing skin in her clothing line, grace is further inspired by the fabric itself. “when i put my hands on a textile, i know exactly what kind of silhouette it should have, then i focus on the details and how a mod-ern stylish woman would want to wear it.”

grace was also influenced by an artis-tic grandmother and began sewing early in life, owning her first sewing machine before even entering her teen years. she is inspired by vintage silhouettes but adds unpredictable textiles and colors, thereby contemporizing the style without “over-costuming vintage references.” and while there is a lot of vintage influence in what she creates, grace also loves to make what she describes as ‘cozy daywear’ that does not make it into edgy photo shoots yet ‘flies off the rack’ at area boutiques. while grace likes the diversity of mak-ing custom pieces, she also creates ‘mi-cro lines’, with three to six identical pieces in various sizes.

Le Dimora A FoRmulA FoR GooD DeS iGn

By Machel Penn Shull

e mily Dickinson, a poet and new england

myst ic, once stated, “Where thou art ,

that is home.” When naming their brand,

‘le Dimora’ – meaning ‘the home’ in i tal ian,

one can easi ly conclude that founders maria

Barry and Cindy Cerenzie knew exactly what

they were doing when they launched in 2007.

What began as two fr iendly neighbors f rom

Santaluz soon developed into one of the most

sought after inter ior design f i rms in Southern

Cal i fornia.

Their genuinely warm approach with their

cl ientele, coupled with their combined

industry acumen and design savvy, i s the

basis for their brand. With 11 staff members —

boast ing seven inter ior designers, and a newly

expanded 11,000 square foot showroom, one

might wonder how it i s poss ible that leDimora

has f lour ished given the current market status.

S imple, one mathematic equation: maria Barry

plus Cindy Cerenzie.

Barry has over 27 years of exper ience in

inter ior design, having partnered with a

number of bui lders, developers and architects

throughout the San Diego region – not to

mention a number of projects both national ly

and international ly as wel l . With an unerr ing

eye for detai l and sense of sty le, Barry’s

designs – whi le project and cl ient specif ic –

demonstrates the marr iage of casual elegance

and t imelessness; a union that highl ights both

natural l ight ing and an indoor-outdoor f low

in the home. in fact, recent projects have

included new developments within Rancho

Santa Fe and surrounding communit ies.

Cerenzie, on the other hand, holds a strong

background in engineer ing; as such, i t explains

the cohesiveness to the team’s success. As

managing operator at le Dimora, Cerenzie

organizes, manages and provides a streamline

effect to the many design projects, whi le

overseeing the showroom in Fairbanks as wel l .

FINE sd . c o m L IFESTYLE | LUXURY | L IV ING 61

Barry and Cerenzie recently spoke with Fine

Magazine about their growing business,

pass ion for design and how it al l began.

FINE Magazine: When did your pass ion for designing and decorat ing develop?

Barry: i have been an inter ior designer for 27

years. i wanted to be in the design f ie ld for

as long as i can remember. As a chi ld, i don’t

think i had any other dreams. my dad always

pushed me to go into medicine. i love working

with people, but i ’d much rather create

something beauti ful .

FINE: Cindy, unl ike Maria, your background is not design-based. How do think your exper ience has added to the success of Le Dimora?

Cerenzie: engineer ing school helps a person

to develop certain sk i l l s that have been

invaluable to develop and bui ld a smal l

business, such as t ime management, logical

thinking, planning and organizat ional sk i l l s

and attent ion to detai l , to name a few. That

technical background gave me the vis ibi l i ty to

create the infrastructure that bui l t le Dimora

from the ground up. i ’ve been told that a

large percentage of company Ceo’s have

engineer ing degrees.

FINE: Why do you think that Le Dimora has f lour ished dur ing these chal lenging economic t imes – even expanding your showroom?

Barry: We expanded our showroom last year.

i th ink we have the r ight formula for success.

We have a fantast ic location; proximity to our

cl ients i s so important. We have a great mix of

sty les, opt ions, services and pr ice points. But in

my opinion, our most important attr ibute is our

customer service. our cl ients love coming into

the store. The “exper ience is everything.”

FINE: How did your partnership and business col laborat ion begin?

Cerenzie: maria and i moved into a new

housing development at the same t ime and

met short ly after. When maria’s inter ior design

business started booming she asked me to help

her out. i started doing al l of the off ice work

for her and we recognized we were a real ly

good team. A smal l shopping area was being

constructed about a mi le f rom our home; we

leased a 1,500 square foot space and opened

le Dimora in late 2005. in i t ial ly, the bulk of our

business was working with local bui lders to ful ly

marketed and sold with al l of the furniture in

them. over the last few years we have real ly

bui l t up our res ident ial cl ientele with seven

talented designers on staff as wel l as a window

treatment special ist .

FINE: Why do you think your business formula for Le Dimora has been so successful?

Cerenzie: i th ink having an engineer and

designer, left brain/r ight brain, working

together has been a big part of our success.

We each have strengths that complement

each other very wel l and br ing the best out in

le Dimora. She knows she can count on me and

trusts my decis ions and i know the same about

her. That, along with a lot of t ime and energy

and a great staff , i s the basis for our success.

our designers and off ice staff are second to

none. We have been real ly part icular about

the people we’ve brought in to work with us,

the chemistry is real ly important and the key to

a great work environment. Al l of the designers

have a keen eye for scale, color and sty le of

the home, and they al l work with one another

to br ing a col laborat ion of ideas to every job.

FINE: After you have worked with a cl ient and see their v is ion combined with your talents in design, what is i t l ike seeing the f in ished project for the f i rst t ime?

Barry: The feel ing i get when a project is

completed is so overwhelming. i t ’s a fabulous

feel ing to see what i have created with my

cl ients. i t i s especial ly rewarding when we

del iver a whole room or a whole house at

one t ime. When we walk out, the furniture is

placed, the pictures and artwork are hung, the

plants are del ivered and the accessor iz ing is

the icing on the cake! u

Tracee is a testament to just how fast someone with the willingness to learn and the passion to play can excel at the sport of polo. A native San Diegan with roots in Point Loma, Tracee happened upon an advertisement offering a free lesson at the San Diego Polo Club, “I called and asked if you had to know how to ride a horse to try the class. Patti Fitzgerald answered the phone and said, “No! Just come on down!’ So I did.” In addition to playing in international locations such as England and the Dominican Republic, Tracee can also count a Female MVP award at the SDPC on her list of accom-plishments. pop culture. With the [fai r ly recent] addit ion

Spanning 1,200 feet of Str ip f rontage with a

Monte Carlo, City Center i s by far the largest

sustainable development in the world holding

Casino, Vdara Hotel & Spa, Crystals retai l and

entertainment dist r ict, the Mandarin or iental

and res idences at the Veer Towers, this ‘city

within a city’ has upped the ante – a spectacle

only suitable for the avant-garde of Las Vegas.

“CityCenter br idges the vital i ty of Las Vegas

with the exper iences t ravelers seek when they

vis i t great cit ies around the world, whether

London, Hong Kong or San francisco –

spectacular architecture, cultural ly s ignif icant

art , great publ ic spaces, sophist icated hotels ,

unique restaurants and incredible amenit ies,”

states Bobby Baldwin, pres ident and CEo of

CityCenter. “ I t i s an evolut ionary dest inat ion

that aims to transform Las Vegas as a new

symbol at i ts core, l ike the Guggenheim in

Bi lbao, the Pompidou in Par is or the Sony

Center in Ber l in.”

More than a resort or even the sum of i ts parts,

City Center offers a host of amenit ies and f ine

l iv ing accommodations; f rom shopping and

dining, to entertainment and spa indulgences,

the exper ience is a sure refuge from The Str ip,

an urban metropol is with a community-centr ic

design and personal i ty.
