Have you heard the news? It’s timeto move! In so many ways this is true. Let’s start with the

simplest... The days are shorter, the workload is heavier,

and the necessity for coffee is stronger than ever (I’ll take

mine black, thank you). Have you found yourself fumbling

around in the morning or laboring to rise at your alarm’s

6 a.m. call? Whether you’re ready or not, the day demands

that you get at it. Fall has always had weighty aspirations,

whether it’s to conquer the world or conquer your 5th

grader’s latest math assignment. Maybe this seriousness

comes from the great hangover that summer leaves us

with. Or could it be Fall’s new time commitments and

demands for more productivity. Regardless, how do we

move forward at the necessary (warp) speed?

There are many ways to get the job done, if not for

yourself than for all the others in your life of which you are

the center of the universe. Whatever your method, it’s time

to begin. So straighten your tie, tighten your seatbelt, and

get ready to fire on all cylinders. In other words, move......

In this issue, our motto is “all in a day’s work.” We begin

with the task of dressing for work with a helpful guide

to putting together classic looks that say professional,

but also casual and stylish. Spend less time in your closet

stressing over choices and more time in the board room

changing the world.

Also on the business front, our finance report highlights

some uber-positive points that could help you make another

type of move - pulling up the stakes. With rates their lowest

in 50 years, settle into the home of your dreams, possible

in this month’s featured city: Santaluz. Get more for your

money in this little-known enclave of Rancho Santa Fe,

where the natural geography of the region is preserved and

met with mountains, ocean views and untold luxury. No

FINE | E D I T O R ’ S N O T E

EDITOR’S NOTEmatter how hectic your day, Santaluz represents yet another

of San Diego’s finest oasis spots to come home to.

In between business, socializing and charity work, get

a jump on your holiday planning with this month’s article

on holiday decor. Take our writer’s creative inspirations

and dress your holiday table with beautiful and impressive

choices that take the anxiety out of hosting and put your

personal signature on everything, from table centerpieces to

napkin holders.

If you’re someone who’d rather experience fine holiday

food and wine without the mess, consider this October’s

Gourmet Experience in Del Mar. The choices for elite dining

have never been greater and more accessible to San Diegans.

Another fine food organization celebrating its 50th U.S.

anniversary of culinary excellence this is the Confrérie de la

Chaîne des Rôtisseurs. The Chaîne’s legacy includes centuries

of cooking and dining tradition that has been handed down

to the finest gourmet chef’s in the world.

If this isn’t enough to get you moving, you might want to

consider this month’s exclusive on the legend and legacy that

is Ferrari. Read about the history and tradition of this fine

Italian auto-maker; you might just be inspired to take a test

drive yourself. Or, you might find yourself inspired by this

month’s fitness article, which comes complete with a 3-week

plan to keep you on the fast track of fitness. This and much

more awaits you in the pages of FINE Magazine. Whether

reading us online or with book in hand, we hope you are

surprised and delighted, as well as moved.

Sincerely,

Laurie Nelson

Imagine a secret world that includes 3,800 acres of rolling hillsides, olive

trees, trails and the highest mountain closest to the ocean... Now incorporate

a planned community with Tuscany style homes lining a golf course nestled in

between the native California desert terrain, while living the life of luxury. If that

sounds too good to be true, think again. Behind the gates of Santaluz,

residents enjoy a sense of community that is establishing 92127 as

one of the most desirable zip codes in Southern California. With

picturesque sunsets and views of the mountains and Pacific

ocean, Santaluz is making its mark on the Southern California

Real Estate scene.

Established at the beginning of the millennium, Santaluz

is a collaboration by an affiliate of DMB Associates, Inc.,

which was voted “Best Planned Community in San Diego”

by the Building Industry Association. With the original intent

to use the natural landscape, home owners enjoy picturesque

landscaping while conserving water and saving money at the same

time.

Local Realtor, Mike Taylor has sold properties in this area for 13

years. He shared some positive remarks regarding Santaluz. “Santaluz

has done a phenomenal job of creating a family community with

A SPECTACULAR GATED COMMUNITY

amenities for all ages. For someone

looking for the complete lifestyle,

this is it. Also, the value for new

homes in Santaluz is definitely

more bank for your money.”

Another agent commented “We

have so many beautiful views,

which include a golf course, the

surrounding mountains, the ocean and believe

it or not, views of La Jolla,” he says. “Residents can enjoy

the open space of trails, private tennis courts and our pool

is comparable to the feeling of a resort. We also have full

fitness, an indoor basketball court, coffee shop, dining room,

full service spa and lots of extra-curricular activities for those

that live here. The community is very family friendly. For the

4th of July we have one of those most spectacular firework

displays in Southern California with a full BBQ and tons of kid

activities. Club members enjoy both the lifestyle and amenities

that are unique to Santluz.”

But it’s not just amenities that draw people to SantaLuz.

Though a tucked away community, you’d be surprised to

realize how centrally located it is, with easy access to major

freeways and other gated communities in the area.

Ben Evers, explains why he finds his clients invest and buy

homes there. “Living in Santaluz is a lifestyle choice,” says Ben.

“A large community within a community, it’s a wonderful way

to live. From parents with young children to retired couples,

there are all sorts of different activities to choose from. I just

had a client that is closing escrow that chose Santaluz for all

of these many factors.”

With over forty-four miles of open space, the 250-acre Rees

Jones Championship Golf Course is also one of the main

attractions to this community. There is a 19,000 square foot

community center, a fitness facility, pool and gymnasium for

residents. During the summer, there are live concerts on the

Santaluz Village Green. Artists such as Kenny Loggins,

Huey Lewis & The News

and Boz Skaggs are some of the top

performers that have been featured

at these summer concerts. This is

yet another one of the surprising

perks of being a Santaluz Club

member.

And talk about “location”, consider these

neighboring enclaves to Santaluz: Rancho

Santa Fe and Fairbanks Ranch are just minutes

away. The Pacific ocean is only 6.5 miles away,

with easy access to top beach communities

like Del Mar and Solana Beach. The 5, 56 and

15 freeways are all within minutes, making Santaluz

an ideal location for almost any commute, including

downtown San Diego.

Just like its ‘big brother”, Rancho Santa Fe, Santa-

luz homes are priced well beyond the million dol-

lar price range. However, this being said, Santaluz

is less expensive yet still offers much of the same lifestyle,

amenities and prestige. In this market, there may just be a few

‘bargains’ to be had. Do your research, and don’t be afraid to

ask a few Santaluz residents yourself. They’ll most likely tell

you how they came to find Santaluz and realize their dream of

living in such a beautiful place here in Southern California.

One thing is sure; they’ll be proud to call this ‘one of a kind’

community their very own.

th ink ing about mov ing up?

article by: By: Lisa Vomero Inouye & Zoraya de la Bastida

BUYING POWER, especially if you have the following:

1. Maintained a solid and high FICO credit score.

2. Do not currently own a home or bought a home more

than 10 years ago.

3. Available cash reserves and/or equity for a new luxury

home purchase.

So, now that you know why today is the perfect time to

move up to and buy your dream home, what key concepts

should you consider to help you get the most value for your

money? In summary, here is a brief outline of what to look

for when shopping for your new executive home besides

location, location, location!

1. AMENITIES:For the ambience of luxury, consider all the amenities

available within a community such as: a golf course, pool,

spa, social clubs, tennis and equestrian facilities. These

amenities often sway buyers in a positive direction when

making that final decision between other, similar properties

in the same zip code that offer less. They not only afford the

best value; they also assure maximum upside resale value.

3. SAFETY:For the utmost luxury and sense of maximum privacy

and security, insist on guard-gated entrances and staffed

communities that also offer private and after hour security

patrols, much like the Del Mar Country Club, Fairbanks

Ranch, The Bridges, Crosby Estates, Cielo, Rancho Pacifica,

Palacio Del Mar, The Heritage and Santaluz, to name a

few.

3. SCHOOLS:Regardless of whether or not you have school aged

children or are sending them to private school, look

for distinctive properties that are located in the best

school district(s). Historically, these areas hold their

value, even when the marketplace wanes.

4. PROFESSIONALISM:Hire a full-time, professional, licensed agent that

is certified by the Institute for Luxury Home

Marketing with access to the International

Multiple Listing Service. Working with an

area specialist can help ensure a satisfying

and successful home buying experience.

Have you heard the news? Two distinct

factors in today’s marketplace are making

NOW the best time (in a long time) to move

up into that luxury, executive, estate home

you’ve always wanted.

For one, mortgage interest rates have not been

this low in 50 years - yes, 50 years since they

started tracking the data. Secondly, the

sheer amount of housing inventory

is HUGE, with record numbers of

distressed and foreclosure properties

- at all price points which was

previously unheard of, especially in

the upscale market.

Additionally, because these

numbers continue to rise, home

values continue to decrease, and

the amount of people who can

afford to move up shrinks. Thus, the

basic principles of ‘supply and demand’

are set into motion, creating the perfect

opportunity for low demand. What does

all this mean (finally!)? It means low

absorption rates, which will increase

inventory. Next, the current low rates

will produce renewed and MAXIMUM

In his book, The Enzo Ferrari Memoirs, Enzo Ferrari explains:

“The story of this rampant horse is a simple and fascinating

one. The emblem was emblazoned on the fighter plane of Fran-

cesco Baracca, the ace of World War I, who was shot down at

Montello.

In 1923, when competing

in the first Circuito del Sav-

io, at Ravenna, I made ac-

quaintance of Count Enrico

Baracca, the hero’s father;

as a result of that meeting,

I was subsequently intro-

duced to the ace’s moth-

er, the Countess Paolina

Baracca, who one day

said to me: Ferrari, why

don’t you put my son’s rampant horse on

your car? It will bring you luck.”

I still have Baracca’s photograph, with his parents dedication

in which they entrust the horse to me. The horse was, and has

remained, black; whilst I myself added the gold field, this being

the color of Modena.”

Each time you see a Ferrari, the mystique never goes away.

The name itself conjures up a history of professional racing

prowess, winning, success and sex appeal that remains. To this

day, the Ferrari name reigns supreme in the world of exotic

cars. While other car companies strive to reach the standard

that Ferrari has set, Ferarri remains in a class all its own.

When Enzo Ferrari founded his company in 1929, he could

not have ever imagined that one of his cars would sell at

auction for more 12 million dollars, an amount at least ten times

more than his entire investment. His passion for automotive

superiority helped him keep his focus on what he did best; build

automotive racing cars that continue to define the standard for

quality, performance and elegance.

The company sponsored drivers and manufactured race cars

before moving into production of street-legal vehicles in 1947.

Throughout its history, Ferrari has been noted for its continued

participation in racing, especially in Formula One where it has

earned great success. Says Enzo:

“When I decide to take part in a race, I don’t think about my

competitors. I try to do my best, without telling myself ‘I must

beat Mercedes or Maserati’. For me, the importance of a race

is the technical result; that is, whether – given the same course

and the same atmospheric conditions – established records

have been broken. If so, progress has been made.”

The first racing car designed by Enzo Ferrari was the 1940 AAC

815, although it was not branded as a Ferrari model because he

was still under contract to Alpha Romero.

The first Ferrari road car branded with his name was the 1947

125 S, powered by a 1.5 L V12 engine. While his beautiful

and fast cars quickly gained a reputation for excellence, Enzo

maintained a strong passion to build winning racing cars that

oftentimes would compromise passenger amenities for high

performance engines and handling. The 125 S used a steel

tube-frame chassis, double wishbone suspension, transverse

leaf springs in front and a live axle in the rear. Hydraulic power

drum brakes were incorporated front and rear.

The model 250, the most successful early line, was built

from 1953 to 1964. The car included several variations. In

all, thirty-four 250 Testa Rossas were built. The phrase “Testa

Rossa” means “red head.” The most well known, the 250TR,

was produced from 1957 to 1958.

This 1957 Ferrari 250 TR sold at auction for $12,156,252

(€9,020,000) in 2009.

The sight of a Ferrari on the road speaks volumes to elegance,

style and panache. You don’t just own a Ferrari; you invest

in motorsport excellence. RM Auctions and Sotheby’s made

history recently, selling a 1957 Ferrari 250 TR for $12,156,252

(€9,020,000), at that time a world record for most expensive

car sold at auction.

During the early years, the mixture of twelve

cylinder engines designed and

produced for street or racing

by Ferrari is remarkable. On

into the 1960’s the company

continued to develop

and design cars that set

standards for street and racing

performance, along with classic

lines and stunning presence.

Some of the cars built by the

company include:

• Sports cars

• 2-seat Gran Turismo

• Mid-engine V6/V8

• Mid-engine 2+2

• Front-engine 2+2

• Mid-engine 12-cylinder

• Supercars

THE PERFECT

TABLEH O L I D A Y

SETTING

Fall is officially upon us and with this welcomed season of

changing leaves and cooling temperatures come thoughts of

family and friends gathered around the holiday table. With a

little planning and even the tightest of budgets, a beautiful

table setting will enhance any dinner party or social event.

From casual to elegant and classic to extravagant, the perfect

table should be the focal point of your parties throughout the

holiday season.

HERE ARE SOME SIMPLE STEPS TO SETTINGTHE PERFECT TABLE:

Inspiration ~ Let everyday objects and memories be your

inspiration. Inspiration can come from organic elements

such as seashells and driftwood, a favorite painting

of Tuscany drenched with golden sunflowers

and rich red wines, or perhaps something as

designingo o o

D E S I G N | FINE

simple as a playful napkin ring that brings a smile to your face.

Whatever your inspiration, it will set the tone for everything

you do.

Linens ~ When setting your table, start with a basic color

tablecloth. For a more casual setting, choose a solid color

table cloth and add a festive runner down the center of the

table. If you have a favorite table cloth with a pattern, use a

solid color runner and place settings to avoid a busy table. A

white table cloth is always a successful canvas for creating a

more sophisticated table top. Cloth napkins can be creatively

folded in origami fashion, gathered in your favorite napkin

ring or draped softly in a goblet.

Color & Texture ~ Keep the color scheme simple and

tasteful. Choose one or two dominate colors and add accent

colors that coordinate and compliment the surrounding decor.

Rattan placemats or glass chargers add texture and interest

to your settings. Fruit and cheese platters, colorful serving

dishes, as well as spirited labeled wine bottles add both color

and texture. Adding chair pads to casual and slipcovers to

formal settings is another creative technique.

Centerpieces ~ When choosing a centerpiece, you will

want to adorn your tabletop without obstructing the view of

your dinner guests. Fresh flowers in low arrangements with

tall candleholders are classic. To add a sense of casual, a

simple vase with flowers will do. Candle holders come in a

variety of materials and shapes, like the more casual wood

and glass, while crystal exudes more elegance and formality.

Add interest by varying the height and quantity of your candle

holders and centerpieces.

Tableware ~ You don’t need fine china to create a beautiful

table setting. Local stores, such as Cost Plus World Market,

carry an array of solid or patterned dinnerware that will serve

any affair at a fraction of the cost. Be creative as you combine

different looks, shapes and sizes that will layer your table and

put your signature on the final creation.

Light ~ Don’t underestimate the power of light when planning

your party. Nothing adds to the ambiance of your table setting

more than candles. Set alone or in groupings, candles are

the perfect source of subdued lighting to set the mood for a

relaxed and comfortable conversation.

Props ~ Architectural elements bring a unique perspective

to a table setting. Consider using an antique door in

the background to create a sense of welcoming or an

oversized framed mirror to reflect light and open a small

space. Screens can be used to block an exposed dining area

that is otherwise creating a more intimate area in which to

dine.

These are just a few suggestions as you celebrate the season,

but remember that your table setting should be a reflection of

you! Whether casual or formal, it should embody your own

distinctive personality and style, creating holiday gatherings

that family and friends will long remember.

BOCCIERI GOLF’S HEAVY WEDGE AND HEAVY PUTTER

Improving your short game is the fastest way to lower

scores. The ability to make a crucial putt or get up-and-

down to save a shot is essential to being a good player.

Luckily, Boccieri Golf’s Heavy Wedge and Heavy Putter lines

utilize strategically placed weight to automatically groove

your swing and stroke to be more effective. An advocate

of counter-weighting (added mass in the grip-end of the

shaft) Boccieri Golf’s products move the club’s balance

point closer to the body for easier and more natural control.

The result is fewer strokes on and around the green and a

plummeting handicap.

When getting ready for work, there are many obstacles a

woman must overcome when answering the infamous question,

“what should I wear?” The challenge is to balance appropri-

ate work attire with a sense of personal style. In this quest, I

am not alone; dressing for work has become an ever-evolving

art form. Don’t let ‘what to wear’ wear you down: follow these

simple rules that will help you find the perfect balance of girl

meets work.

Rule #1: Invest in “Staples” Every wardrobe needs basic staples as a canvas to mix and

match with. Staple clothing items include: a pantsuit to wear

together or as separates, a pencil skirt, cardigan, a cashmere

sweater, and silk camisoles. It’s a good idea to start with basic

black or charcoal gray and work your way to color as your

wardrobe expands.

Rule #2: Accessorize, Accessorize, Accessorize .Accessories make or break an outfit. They help add person-

ality and fun to your work clothes. From hair clips, earrings,

necklaces and classic cuffs to cinch belts and mini clutches,

accessories are key to making a subtle personal style statement.

Mix vintage with classic or trendy; just don’t overdo it.

Rule #3: Spend More on Shoes and Handbags .Shoes and handbags are critical in work force attire; they

need to be functional and stylish. It’s wise to invest more in

these key items because a pair of great shoes and a fantastic

bag should stand the test of time. They also signal power and

put togetherness by showing you pay attention to small details

in a big way. Have your classics, but don’t be afraid to add

the Rules

flair with bold and daring colors. Some of my fa-

vorite work outfits incorporate footwear in bright

colors adding a nice pop that can brighten any

long work day.

Rule #4: Think Outside The Box, or in This Case The Pantsuit Look to dresses to help add variety to your work ward-

robe. Dresses are the easiest way to get dressed quickly, and

they make a stylish statement on their own. The dress is also

a starting point for creating multiple outfits. For example, a

dress can be worn with long sleeves layered under it, as a shirt

tucked into pants, over pants as a tunic or even as a skirt by

wearing a top over it.

Rule #5: Mix Texture and Patterns Experiment with textures, such as tweed pants worn with a silk

blouse. Tweed is a great texture for work because it’s versatile and

classic. Try mixing pinstripe and floral. A great pair of pinstripe

pants worn with a modern floral cardigan and high waist leather

belt exemplifies the art of mixing texture and patterns.

Rule #6: Add Print Don’t be afraid of print. A splashy floral or leopard print blouse

worn under a suit jacket gives your work outfit a colorful yet femi-

nine look. This may be the smallest part of your ensemble, but it

can have the biggest impact. A dash of print will show your sense

of style while still maintaining your professionalism.

Rule #7: Don’t Shy Away From Color When you have to wear suits that are black, gray or brown on a

daily basis, it’s easy to shy away from color. Combine that with

most women’s tendency to gravitate toward black and you’re

stuck in a colorless rut. Adding a splash of color instantly

adds personal style, not to mention, a sense of power.

Try red or purple, which have long signified power, and

take note of how productive your work day is. Who

knows, a promotion might just be on the way!

Rule #8: There Really Are No Rules Feel free to express yourself in ways in which you are most

comfortable because you always look your best when you exude

confidence. If that means breaking a rule or two, go for it. The

rules are still here to guide you, get you out of the closet and on

with your busy and successful life!

WHERE TO DINE?article by: HAROLD S. SMALL, J.D., AEP photo by: MARK SERONI

Are you planning a birthday, anniversary or other celebratory

occasion? If so, how do you select a restaurant where you are

reasonably assured to enjoy a special meal? There are numerous

guides in print and on the web. Those that quickly come to

mind are Zagat, Michelin, Yelp and Opinionated About. But do

you know how those critiquing organizations determine who

wins and who loses? Are their ratings based on the opinions

of experts or merely on how many internet “votes” they may

have received from a restaurant’s employees, family members

and friends?

If your goal is to enjoy wonderful meals, paired wines and

superbly crafted beverages all in the company of chefs, restau-

rateurs, hoteliers and like-minded food lovers, there is another

answer; the Confrérie de la Chaîne des Rôtisseurs (“Chaîne”).

The What, you ask? Chaîne is the world’s oldest and largest

international gastronomic society founded in Paris in 1248.

It was organized as a guild (union) of rotisserie chefs who

cooked with a spit over an open flame when that was the

norm. The organization was forced to disband during the

French Revolution when many of the royals who employed the

leading rotisserie chefs “lost their heads” over the revolt. It was

revived in 1950, blending the honored traditions of the original

guild with the contemporary techniques developed over the

centuries that followed. The Chaîne also expanded its exclusive

membership ranks (historically restricted to hospitality

professionals) to include amateur gastronomes (foodies) like

Page 67: FINE magazine Vol4 Iss10

you and me. In its now 60 year old form (50 years in the U.S.),

the Chaîne remains devoted to preserving the camaraderie and

pleasures of the dining table by promoting excellence in all

areas of the culinary arts.

Chaîne dinners are literally a gastronomic symphony where

chefs create extraordinary cuisine in concert with vinicultural

treasures crafted by some of the world’s finest vintners

and heightened by meticulous service. This orchestration

culminates in a crescendo of aromas, flavors and textures that

can only be characterized as “Chaînetastic!”

The Chaîne has approximately 136 Bailliages (chapters)

in the United States. Worldwide there are more than 300

chapters in 80 countries. From San Diego to New York, Chaîne

dinners occur throughout the year at local, regional, national

and international gatherings. Wherever they travel, Chaîne

Members can participate in dinners all over the world.

San Diego will be the host city for the 50th Anniversary

celebration of the establishment of the U.S. chapter. The

national meeting will take place October 20 – 24, 2010 at the

San Diego Marriott Hotel and Marina.

In addition to providing unique dining opportunities and

wine tasting events, the Chaîne sponsors young chefs and

sommeliers by hosting worldwide competitions. The Chaîne

Foundation provides scholarships for young culinarians. About

DINING EXPERIENCE LUXURY

$3,000,000 in scholarships have been awarded

since the Foundation was established.

San Diego’s professional members

comprise less than half of the membership

rosters of the two Bailliages, however, it

reads like a Who’s-Who listing. Several

media outlets have named these members

and restaurants as the best: Jeffrey Strauss of

Pamplemousse Grille, Bernard Guillas of The

Marine Room, Bertrand Hug of Mille Fleurs and

Bertrand at Mister A’s, Francis Perrot of Fairbanks

Ranch Country Club, Carl Schroeder of Market and Bankers

Hill, Pascal Vignau of Savory Casual Fare, John Beriker at the

Inn at Rancho Santa Fe, Patrick Dahms at the Hilton San Diego

Bayfront, Augie Saucedo at the Shores, Jesse Paul at the Park

Hyatt Aviara and Paul McCabe of Kitchen 1540. It’s this type

of name recognition that the Chaîne is known for and a reason

the Chaîne Baillis restricts membership to “by invitation” only.

Upholding this tradition of excellence is what the Chaîne is

all about.

If you are not a member of the Chaîne, you can still dine at their

restaurants where they provide terrific dining opportunities

day after day. When traveling, look for restaurants with a

Chaîne affiliation. The simplest way is to look for the Chaîne

Medallion generally displayed in a prominent location. Or

review a list of affiliated restaurants/hotels on the Chaîne

website at: www.chaineus.org

3 WEEKFINE | F I T N E S S

Whether it’s for the summer bikini, the little black dress or the guy who wants abs instead of love handles, dieting

is a 24/7 year round sport. But, optimal fat loss does not have to be difficult and tortuous. By following this “3 Week

Jump Start Plan”, you will maximize fat burning by boosting your metabolism and you WILL lose more weight and

body fat than you ever dreamed possible.

Of dieters across the nation, an astounding 92% see their weight loss stall, or worse, they see pounds of fat

sneak back onto their body. Everyone who has ever “dieted” has had this happen. But do you know

WHY this happened? When you diet the wrong way, i.e., calorie cutting, your body thinks that

food is scarce, so it hoards fat instead of burning it, and energizes with glycogen, a

sugar - based fuel found in muscles. So, the more often you diet

and constrict calories, the faster your body will shift into muscle -

burning / fat storing mode. Your body essentially stores fat and eats

muscle for fuel, which lowers your metabolism in an attempt to

save energy in preparation for a false, upcoming famine.

THE ANSWER: CARB - CYCLING: THE SECRET THAT TURNS FAT TO ENERGY. Whenever the muscle stores of glycogen are completely

depleted (a process that takes 3-7 days), the body STOPS

burning muscle and STARTS burning stored fat as fuel.

According to the American Journal of Clinical Nutrition,

“the body burns fat cells around the belly, hips and

butt first.” Surprisingly, it’s actually very easy to

diminish glycogen stores; you simply have to restrict

carbohydrate intake. I know what you are thinking -

“Great! There goes all the food that I enjoy”. Not

so, because once glycogen stores have been

depleted, cravings for sugar, breads or pastas

diminish pretty quick. The carbohydrate

sugars from these foods supply the glucose

from which muscle glycogen is derived.

Cutting these types of carbohydrates for

at least three days depletes the muscles’

glycogen stores and forces the body to

use fat for fuel.

But, you have to be careful. The

body is hyper-sensitive to calorie

restriction (as in the above example of starvation mode), so it

will quickly go back to storing fat and slowing your metabolism

in an attempt to conserve energy. Right along those same lines,

restricting carbohydrate intake for too long deprives the brain

of glucose, which is needed to produce the feeling of being

“full” or “satisfied”. Therefore, to avoid this backlash, limit your

carbohydrate restriction to no more than seven days. Once

you’ve completed seven days, it’s important to “carb” back

up in order to prevent the body from hitting a weight loss

plateau. This will also restore the brain’s appetite regulating

neurochemicals.

“SHOCKING THE BODY” Shifting between “carbing up” and “carbing down” days shocks

the body into tapping into the fat stores or “reserves” for

energy, rather than relying on the glycogen in your muscles.

Simple, right? It should be. Competitive athletes, bodybuilders,

fitness and figure models have used this technique for decades

because it works!

WHAT TO DO AND EAT FOR 21 DAYS.Days 1 - 7: You MUST limit your carb intake to 20 grams per day. Try to

stay with fresh, non-packaged food. If the food is packaged,

then make sure to examine the label. (On the label, total carb

grams per serving MINUS fiber grams per serving is the actual

carb count. Fiber grams do not effect the glycogen stores nor

the insulin production of the body. Both increase the fatty tissue

build up.) Also important: INCLUDE PROTEIN IN EVERY MEAL!

Avoid: all starchy carbs (breads, pastas, cereals, oatmeal, rice

and potatoes), starchy veggies (corn, carrots, beets and peas),

low-carb packaged foods and processed foods, fruits (YES,

fruits!), fruit juice, alcohol, sugar, fructose, etc. Stave off hunger

by snacking on and filling up on low glycemic (low sugar)

veggies such as broccoli, celery, cucumbers, spinach, lettuce,

mushrooms, radishes, etc. Try to stay with the “dark greens” as

much as possible.

Sample Meal Plan For 1 Day:Breakfast: 1 egg, 3 egg white omelette with (diced chicken

or turkey or ground beef, and a small amount of very low - no

carb, full fat cheese).

Snack: ½ cup of cottage cheese (once again, full fat because it

usually contains fewer carbs)

Lunch: (no later than 3 hours after last snack) Lettuce,

cucumber, spinach and mushroom salad topped with 4-8 oz. of

grilled chicken or turkey, with olive and vinegar (measuring a

TOTAL of 2 tablespoons.)

Late afternoon snack: a basic whey protein shake with less

than 5 grams of carbohydrates. Mix with water and a little bit

of ice.

Dinner: 4-8 oz. of broiled or grilled salmon or Tilapia; 1 cup

of steamed broccoli or asparagus; lettuce and cucumber salad

topped with same dressing as at lunch.

Days 8 - 14: During these next seven days you will change up your plan

by slightly “carbing up”, which will keep away the plateau yet

cause you to drop an additional 5-6 pounds. You will cycle

your carbs with 3 different plans in 7 days. Again, INCLUDE

PROTEIN IN EVERY MEAL!

Formula 1: Base days. Monday, Thursday and Sunday.

Eat one serving of starchy carbs at breakfast and lunch. Have

no carbs but low glycemic (low sugar) veggies for the rest of

the day.

Breakfast: Oatmeal (cinnamon, natural sweetener Stevia) and

egg whites.

Lunch: 4-8 oz. grilled tuna; steamed broccoli; ½ cup of rice.

Formula 2: Low-carb days. Tuesday and Friday.

Eat one serving of starchy carbs (like in Formula 1) at ONE

meal of your choice as long as it is before 3 p.m.

Formula 3: High-carb days. Wednesday and Saturday.

Eat one serving of starchy carbs before 3 p.m., then two servings

of starchy carbs after 3 p.m. (Could include 1 glass of alcohol,

fruit, pizza, pasta, bread, etc., don’t go overboard!)

Days 15 - 21:Simply switch up the “high carb” and “low carb” days from the

previous week. Once again, this small change will continue

to “shock “ the body and prevent your fat loss from stalling.

Expect to see another 4-6 pounds fall off. Include PROTEIN on

all days!

Monday, Tuesday and Friday. ( low-carb days)Eat one serving of starchy carbs at one meal of your choice

before 3 p.m. Only low glycemic (low sugar) veggies for the

rest of the day.

Thursday and Sunday. ( base days)Eat one serving of starchy carbs at breakfast and lunch. Only

low glycemic veggies for the rest of the day.

Wednesday and Saturday. ( high-carb days)Eat one serving of starchy carbs before 3 p.m., then two servings

of starchy carbs after 3 p.m. (Could include 1 glass of alcohol,

fruit, pizza, pasta, bread, etc., don’t go overboard!)

Sample Dessert with ANY ONE MEAL:1 cup of sugar-free jello and 1 tablespoon of full fat Reddi-whip

whipped cream.
