We are currently enjoying a stronger position, after two years of operating in a relatively buoyant marketplace. It’s one to build on for the future and NSA Sheep 2010 is the vehicle that will help you to progress, whether you are a sheep farmer, a partner, shepherd, manager, consultant or have other interests in sheep farming.

More than 250 exhibitors will be offering a huge range of advice – technical, business and finance – and there will be opportunities to find out what’s new in nutrition and management along with environmental issues and the latest in machinery and equipment.

The event has also attracted associations and societies representing more than 40 different sheep breeds enabling you to catch up on cutting-edge genetic developments.

Away from the exhibitors’ stands, there will be plenty for involvement throughout the day, from testing your own lamb and carcass selection skills, to learning new shearing techniques from the competitive shearing classes.

Succession is absolutely vital within our industry and involving the next generation in the event has been paramount. For example, we will be staging the NSA Young Shepherd of the Year, and most of our seminars and panels featuring issues from health and welfare to marketing and EID, will be chaired by the industry’s youngsters.

Finally, this event has been organised by NSA and I would like to express my personal thanks to Helen Davies and her team of organisers. NSA is the sole industry body working hard for all UK sheep farmers; if you are not already a member, then I urge you to join and become part of this dynamic organisation. There has never been greater awareness among sheep farmers about what happens to their lambs beyond the farm gate than there is now. That said I would be deluding myself if I thought sheep farmers knew all they needed to about the destiny of their animals in terms of how the supply chain works, which markets matter and how markets are developed and maintained.

It is fascinating to me that so many sheep farmers now know the daily fluctuations of sterling against the euro almost as well as they know the number of sheep they have in each field. Watching the currency market has become something of a preoccupation – and rightly so. However, as the economic difficulties spread throughout the EU there is almost the same level of uncertainty about the future of the euro as there has been about sterling and as a result there has been a slight but significant strengthening of sterling against the currency upon which so much of farming fortunes ride.

The weakness of sterling has introduced real competition into the marketplace for lamb which has been the main contributing factor in better prices for sheep farmers. However, things will change and through currency changes and seasonal trends the amount of export driven buoyancy will alter and the UK retailers will probably be able to reassert themselves as the strongest players in town.

The question for me is having taken advantage of currency to strengthen UK lamb exports into France and other EU countries, what should the industry do now from a position of relative strength to consolidate the progress that has been made in securing increased market share in mainland Europe? All too often when prices are relatively good there is a sense of complacency that sets in. The ability to build from a position of strength is missed and the sheep industry waits for fortunes to diminish and then tries to rebuild out of a position of desperation and weakness.

It is plain to see that through the good work of exporters and the support they have received

from the levy boards that progress has been made in establishing the UK lamb brand in mainland Europe. Examples such as the “Agneau Presto” or “Quick Lamb” campaign have moved French consumers into regarding lamb as a quick and easy meal proposition in the same way as happened in the UK a decade ago. This can only be good news.

So what should the industry

do now in these relatively good times? Should sheep farmers throughout the UK be banging on the doors of their respective levy bodies asking for increased resources to be put into consolidating these export markets? The levy board response would probably and quite rightly be “OK, but what is it you want us to cut in order that we might finance this?”

So instead should the question be “How much extra levy do you need to turn a short-term marketing success story into solid infrastructure for long-term market growth and share?” As I don’t pay levies, that is not my question to answer. However those of you who do might think about what value you put upon the financial benefits that exports have brought to your business.

Legs, chops and steaks – they are cuts of lamb most consumers are familiar with, but what about the shank, shoulder and neck? When you’re marketing your own meat, it’s even more important to make the most of the carcass, but the key is knowing what to do with the less popular cuts.

And making the most from a carcass comes down to a few essential points – education, consumer confidence, knowing the market, butchery skills and presentation, says Abby Janaway, owner of Newlyns Farm Shop, Hook, Hampshire. “When we have new-season lamb everyone wants a leg, but we are trying to educate the public that the shoulder is just as good and that it’s not an inferior cut,” she says.

That education is vital when it comes to selling different cuts, says Mrs Janaway, who set up the farm shop along with the rest of the Janaway family six years ago. “We try to not stick to selling just

the leg and shoulder, but many people are scared of different cuts as they assume just because they have seen something in a restaurant, such as a rack of lamb, that it must be hard to cook, but it’s not,” she says.

For this reason the shop provides free recipe cards – supplied by EBLEX – to help promote a whole range of cuts. “The butchers will also explain how to cook something to increase consumer confidence and they will butcher different joints to make them easier to carve.”

Presentation of the meat in the chiller is also vital, says head butcher Terry Tarrant. “People buy with their eyes and when something looks good they are more likely to buy it. Some parts of the carcass are harder to sell than others, but by dicing lamb, making kebabs and rolling and stuffing shoulder joints as examples, we can make these more appealing as they look good on display.”

Marinating different cuts and targeting specific seasons, such as the summer BBQ season, with different recipe ideas also helps sell less popular cuts.

“In the summer we will sell different flavour lamb kebabs and have even sold lamb sausages during the season. By getting different cuts from the forequarter we can essentially turn an unwanted product in to a value-added product,” he says.

farm shop awards NSA and EBLEX are launching two new awards – the Best Farm Shop and the Best English Farm Shop awards, designed to test the skills of UK farm shop owners selling lamb, together with those of their managers or butchers. Each entrant will be given one hour to prepare and display a variety of cuts from a whole dressed lamb carcass.

Judges for the competition, which takes place in the Avon Hall, will be looking for the best set of butchery skills, together with innovation and appealing presentation.

comments Mr Tarrant. “Whether it’s from a cookery show or a food campaign such as those driven by Jamie Oliver or Hugh Fearnley-Whittingstall we often get a surge in demand for different cuts when they have appeared on TV.”

Any joints that don’t sell get used in ready meals, which the Janaway family sells in the shop. Mrs Janaway says: “With the ready meals we essentially pitch to two different markets – less-expensive and more-expensive dishes, with meals ranging from shepherd’s pie to lamb tagine. This means there is no wastage as everything, even down to the bones, is used to make stock.”

And buying the whole animal, using it in this way is the most profitable route to take, says Mr Tarrant. “When you have the whole carcass to work with it simply means you can add value throughout the whole animal. You can lose a lot of value when the whole carcass isn’t used.”

Allowing customers to see behind the scenes, whether that’s in the farm shop or on farm, is also important, adds Mrs Janaway. “We open our farm on several occasions in the year, allowing the customer to see where all our meat comes from as we are fortunate enough to be able to supply our own home-produced lamb, beef, pork or chicken. Consumers aren’t great at reading things which is why we open our doors to them.”

“Customers can also see through to the butchery so they can see what goes on. This is important as, when it comes to meat quality, how an animal is butchered is just as important as how it is reared and killed. We just want to be open with the consumer.”[email protected]

Compulsory sheep EID may be viewed by many as yet more legislation to make producers’ lives increasingly difficult, but one Devon farmer has proved the opposite.

EID gives you the ability to manage ewes better and quickly identify any shortcomings in your system, says Peter Baber, Weir Park Farm, Christow.

As a breeder of Suffolks, Texels, Exlana, Suftex and Friesland, totalling 1150 ewes, an enormous amount of data are needed to determine the best animal for breeding.

“We take a lot of measurements to see which lambs perform best in our low-input system. And by recording at the same time as you would normally handle stock, you are almost getting ‘free’ data,” Mr Baber explains.

Before EID was introduced five years ago, only lamb weights were recorded. However the new system, which incorporates a weigh pad, has increased the ease with which both ewes and lambs can be monitored.

“It is simpler to weigh both mothers and lambs rather than split them off as they come through the race. And by recording year on year, it is easy to assess how the system is working.”

Although it has taken a number of years to gather benchmarking figures, collated data can now be used to make informed management decisions. “We can now see whether ewes have lost more weight that season and whether we need to wean earlier for example.”

Lambs are weighed at eight weeks, weaning and 20 weeks, and ewes at scanning, eight weeks post scanning, weaning and tupping.

occasions, and the computer screen only touched three to four times.

At scanning, a short race is set up after the scanning point so key data can be recorded, he says. “The system automatically records the number of the animal, weight and which group they are from. Body condition score and number of lambs is then entered manually.”

The farm also records ease of birth, lamb vigour, colostrum yields and mothering ability at lambing.

And although the benefit of EID may be more marked on the breeding side, the system also comes into play for finishing animals. “When finishers are not achieving a target daily live weight gain of about 270-330g a day, we can accurately identify them within minutes,” he says.

“The more automated the system, the better – there is always the potential for human error when recording manually.

“When comparing reading a tag

by eye and writing information, using EID is like the difference between driving a sports car or pushing a wheelbarrow.”

And the power of the information produced, alongside the added labour benefits, becomes apparent as soon as the system is in place. “The auto weigher may be more expensive, but you can easily justify it in time savings – we frequently weigh 300 animals an hour. And with this, the scales easily pay for themselves in two years.”

EID has the potential to benefit both commercial and pedigree producers, he says.

“More and more commercial farmers are becoming breeders in their own right by producing their own female replacements. And EID provides these guys with the tools to select their best stock for the future.

“But the main benefits are speed, efficiency and close to 100% accuracy in data recording,” Mr Baber stresses.

Producers should take advantage of the opportunities EID provides to improve profitability, says Richard Webber, Shearwell Data. “When the software is right, you can do anything you want in terms of management recording.”

And by linking EID to an automated weigh platform, farmers are provided with the opportunity to make management choices, he says. “By assessing weigh records, farmers can plan when an animal will be ready for slaughter. And in some cases, poor live weight gains have been linked back to stale pastures.”[email protected]

Farm inspections, whether for cross-compliance or farm assurance, may be the bane of many sheep farmers’ lives, but they need not be and can actually turn out to be beneficial.

A bit of preparation prior to a visit is all that’s needed to ease the stress and reduce the chance of getting a non-compliance, according to Nick Davies, SAI Global beef and lamb scheme manager. “It’s amazing when you look at the most common reasons for non-compliance they are often for the simplest of things that could be easily rectified,” he says.

For example, the most common pitfall is with medicine records, explains Mr Davies. “Often withdrawal dates haven’t been recorded and animals not identified and these are simple things that should be recorded. It’s all about being prepared, when administering drugs making sure all the paperwork is up to date, and getting everyone on the farm disciplined to recording.”

Health plans for sheep/beef are the second largest non-compliance area. “It’s not that people don’t have health plans in place, it’s just that they often can’t find it, it’s incomplete or it just hasn’t been reviewed.”

And it’s simple things like health plans and medicine records that sheep and beef farmer Stuart Hutchings, Leominster, Herefordshire, makes sure he has up to date prior to inspections.

“As soon I know an inspector is coming I check the medicine cupboard and make sure they are all within date and that everything has been correctly recorded in the

“It’s like the inspection is a prick to the conscience, as it makes sure you have everything in place,” adds Mr Hutchings.

Common areaSOther common areas of non-conformance include being unable to provide a written manure management plan, medicines inappropriately stored, planned biosecurity measures not in place and dog and cat worming routines not recorded, says Mr Davies. “Some of the things are easy to fall foul of, for example

“And with planned biosecurity measures it’s amazing how many people still use Jeyes fluid instead of a DEFRA-approved disinfectant. These are all things people can easily rectify and which they often do rectify there and then when the inspector points it out.”

Another common pitfall is unsafe housing – which can be classed as broken gates and cubicles to broken tin sides on sheds. “Having unsafe housing

pointed out is important as this could prevent injury and as a result, potential welfare issues. So to have an inspection every 18 months is not a lot of money when you can prevent injury and potentially deaths.”

And having an inspection is something Mr Hutchings views as a continuous improvement tool. “Each year when we have an inspection it makes us think of areas we may need to improve. Nothing is ever perfect, but each time we will always try to be better.”

Mr Hutchings says he walks the farm before an inspection. “I look at things such as handling facilities to make sure there are no broken railings I also make sure feed storage is all fine and records are up to date.

“It doesn’t take too long, but a bit of preparation can help prevent any non-conformances being raised.”

There are elements of the farm assurance inspection that could also affect cross-compliance, adds Mr Davies. “Having a regular inspection as part of farm assurance helps keep farmers up to speed and makes them aware of potential issues that, if they were to get a cross-compliance inspection, could affect the Single Farm Payment.” [email protected]

Succession is universal to all businesses, and particularly owner managed farms. The great danger is ignoring it in the hope it will go away – it won’t, it will just become a bigger issue as time goes by, says Lloyds TSB’s Dick Mason. “Like going to the dentist, don’t put it off,” he says.

Plan early and involve the whole family. You might think you know what their hopes and aspirations are, but you might not, explains Mr Mason. “Be prepared to listen to them and understand their concerns. Above all, discuss it before making any significant expansion or development of the farm. The earlier you do it the better.”

Retirement for most people in salaried jobs comes naturally at the end of their working life, usually at 60 or 65 years. But many farmers never retire, adds Mr Mason. “For this reason it’s important to ask yourself whether that’s what your partner wants, or whether it’s what your successor wants. It may be time to step aside and let the next generation have their head,” he says.

And when it comes to finance there are a few key issues to consider, says Mr Mason. “Pensions, for example, may have had a bit of a chequered history but they are great to have when you retire, reducing pressure on the business and your successors.

“Also make sure there is an equitable settlement on children not involved in the business in order that your successor is not burdened with debt that the business cannot cope with. With capital gains tax, if it rises, find out whether dispensation will be allowed for business assets.”

Drawing up a detailed business plan will also help the successor realise whether the hopes are financially viable. “Succession often results in increased borrowing and increased drawings on the business,” says Mr Mason.

“For many it will pay to use a good consultant. They can challenge you, advise you and crucially pull it all together into a robust budget. That way you, your successor and your banker will have the confidence to move forward.”[email protected]

A clear strategy for passing on your business to the next generation can help avoid difficult problems in the future.

Rich Smith, who farms 1100 acres carrying 1600 ewes and a 160-cow suckler herd, says it is thanks to his parents Dick and Marjorie’s forward thinking a family partnership and subsequent succession were agreed in 2001.

“They were a driving force and wanted to make sure that myself and my sister, Lynne, became business partners and a succession plan was in place before they reached 65 years,

and while I was in my mid-20s and Lynne her early 30s.”

While taking responsibility for the farm’s running, which evolved over the years for Rich and Lynne, the arrangement meant they started to become fully engaged in all aspects of the business, from buying and selling to managing the accounts.

“We believe we have a responsibility for each other and have taken advice from various sources on CGT and IHT and made

the appropriate provision, and we are able to make further changes should the situation arise.

“We are in a fortunate and comfortable business position, which enables us to think outside the box and do things differently. We decided to abandon the arable operations and focus on sheep and beef.

“Dad is still active around the farm, he provides a guiding hand where necessary and we take major decisions as a family.”

While most sheep farmers can sit back and ponder the success and failures of this year’s lambing season, for sheep farmer Robert Hole, of Sherborne in Dorset, the busiest time of year is yet to come.

Lambing 300 pedigree Dorset ewes in September and a further 120 in December is a routine that fits Mr Hole’s 147ha farm well. “Because we contract-rear 250 dairy heifers for three local dairies it essentially means the lambs graze cattle grass in winter, leaving cattle to have access to the best pasture in the summer, when ewe stocking rates are at their highest.” It’s like trying to put a big jigsaw together,” he says.

And lambing at the latter end of the year is something Mr Hole, who farms in partnership with his father, has always practiced. This is because it not only fits well in his system, but because it also marks the start of the pedigree year as well as having the added benefit of being able to target the lucrative Christmas market. “I definitely wouldn’t want to lamb at any other time of the year and for farmers with cattle the Dorset does have a place,” he says.

Lambing out of season also helps lambs get off to a better start, believes Mr Hole. “March

on this farm is often cold and wet, which isn’t an ideal situation to rear lambs in. However, by September the weather tends to be better and lambs get off to a flying start, which means we are finishing lambs off between 14-20 weeks of age.”

The good start to life also means lamb losses are minimal when they are weighed at eight weeks old and grazing management means worm burdens are negligible.

And it’s the Dorset breed that is fundamental to lambing out of season since it is the only breed in the UK to be able to breed naturally all year round. “This out-of-season ability to breed is perfectly natural so we don’t have too many problems getting ewes

in lamb. Ewes are lean and are fantastic mothers and milk well, which also aids the lambs good start to life.”

But, because ewes are put to the ram in April it means some of the best land is offered for flushing. “Much to the horror of my dairy neighbours, ewes are flushed on silage ground, but lush grass along with teaser rams gets the ewes cycling well.”

Ewes are then scanned at the end of June, with any empties returning to the ram. “These empty ewes are the ones that lamb in December and they do have a slightly higher lambing percentage. This is probably because the weather in April can sometimes be cold, which can influence conception rates.”

However, realistically, Mr Hole says he would not want all ewes lambing down in September as labour resource is kept to a minimum and spreading out lambing dates allows two different market periods to be targeted.

“Between 65 and 70% of our lambs are marketed in January and February through Waitrose and with more people becoming aware of the availability of fresh lamb in January there is quite a demand. Those lambing at Christmas can then be marketed

for the Easter trade meaning we essentially get two bites of the cherry.” Marketing lambs at the start of the year also means a guaranteed contract price is agreed months in advance.

Breeding lambs that are not only a good pedigree animal but are also commercial is important, says Mr Hole. “We are trying to produce top pedigree lambs that are commercial. Along with the lambs that are marketed through Waitrose we also sell about 100 breeding females and 25-30 rams and keep 100 breeding females for replacements.”

And out-of-season breeding is profitable as all costings are calculated by Promar, explains Mr Hole. “If the system wasn’t profitable we wouldn’t do it. Lambs are finished on stubble turnips but do have some access to creep feed, but the cost of providing a little creep feed pays off at the slaughter house because January lambs this year were averaging 19kg deadweight along with 95% of lambs grading U and R 2+3Ls.”

Lambing at the end of the year allows lambs to get off to the best start, says Robert Hole.

Sheep and cattle rotation strategy Rotational grazing of cattle and sheep has been part of a strategy by Cornwall farmer Steven Thorn, to prevent unnecessary use of wormers.

“We regularly worm early lambs but, once weaned, we only worm in response to faecal egg counts – we don’t want to use wormers when it’s not necessary and this is where rotational grazing of stock comes into play.”

Ground is grazed by cattle one year and then with sheep the next year, with the aim to cut down sheep parastites.

Grazing in such a way was influenced by a reduction in the grazing platform at Lower West Panson, St Giles on the Heath.

“We were grazing extensively, with 800 sheep and 200 mostly Limousin cattle on 243ha (600 acres) but, following renting out a proportion of ground, grazing land was reduced and stocking density increased.

“Rotationally grazing stock was a means of minimising the risk of increased parasite numbers by resting fields.”

The key to worm control and grazing management

Grazing at the correct height influences parasite burdens, with shorter swards increasing parasite concentration.

Efficient parasite control and good grazing management go hand in hand, according to independent sheep consultant Lesley Stubbings. “It is essential producers get grass management right for optimal animal performance,” she says. “There’s a danger grazing management can be counter-productive to parasite control but the fact is, when stock are provided with high-quality feed, they are more able to cope with a parasite challenge.”

GRAZING HEIGHTTo achieve this, grass should be grazed at 4-6cm. “At this level, grass quality is at its highest – the key is to maintain it at this height by matching stocking density with grass levels and measure dry matter production on a regular basis.”

Nutrition and health also have a huge influence on how an animal copes with a worm challenge, so it is paramount farmers make the most out of grass.

Grazing at the correct height also influences parasite burdens, with shorter swards increasing parasite concentration. “Most larvae are in the first 3cm of the sward – above 4cm the concentration drops rapidly – so going in at this height has as much to do with parasite control

as producing good quality feed.”And producers with the luxury

of having both cattle and sheep on farm should use the balance of stock to their advantage.

CATTLE AND SHEEP “By grazing pasture with cattle one year and sheep the next, you can reduce the parasite burden for the following season,” she says.

“Assess where the risk is on your farm and graze cattle accordingly. For example, fields where ewes and lambs were

grazed this season should be prioritised for cattle.” In this way, you can prevent nematodirus risk.

Weaning can also act as an excellent parasite management tool, says Ms Stubbings.

“Mid-season is when parasites are at their highest. This is when lambs can be moved to low risk pastures, such as silage or hay fields, and sheep and cattle swards can be swapped.”

TARGETED TREATMENTTargeted worm treatment at weaning is also key to preventing the build up of worm resistance in the flock, she says.

“Do not treat all stock at weaning – use egg counts to assess risk in the flock and when counts are low, there is no need to drench.”

But when moving sheep onto low-risk pastures, it may be worth targeting treatment to the smallest animals, as these could potentially be worm carriers, says Ms Stubbings.

The key is to minimise the number of resistant worms on pastures, stresses Novartis brand manager Simon Harris.

“There is a role for using a wormer when stock first come onto farm. SCOPS recommends using a quarantine dose of

monepantel (orange wormer) – a new family of wormers with no resistance – for maximum control.”

CHICORYIntroducing chicory into the sward is also another way of reducing parasite risk, explains Ms Stubbings.

“Chicory included in a rye grass/clover mix can provide an excellent nutritional base.” The structure of the plant also makes it difficult for worms to climb up – reducing the chance of ingestion, while the plant itself is thought to have anthelmintic properties.

And there is some evidence to suggest the high level of nutrition provided by chicory means even when stock are exposed to high egg counts they are more able to cope with the challenge.

Producing high-quality swards, rotating stock and undertaking targeted treatment can help reduce sheep parasite risk. Aly Balsom reports
