West Hylebos Wetlands ParkConsidered Federal Way’s hidden jewel, the 120-acre

West Hylebos Wetlands Park is located off South 348th Street. The park is a critical natural habitat for local wild-life. A boardwalk loops through the bog and moss-coated woods. Tens of thousands of people visit the park each year, and it has been recognized as one of the state’s top nature areas.

Wild Waves Theme ParkLocated on 70 acres at 36201 Enchanted Parkway South (just

off Interstate 5) in Federal Way, Wild Waves is the largest theme park in Washington and is also the largest seasonal employer in the region.

This summer, Wild Waves will feature onsite concerts in its 4,000-seat amphitheater. The first announced performer is coun-try music artist Gloriana on Aug. 30.

The park features 20 waterslides, a 24,000-square-foot wave pool and the state’s biggest wooden roller coaster, TimberHawk.

The PowellsWood Garden is a 3-acre urban oasis with a twist.

Tucked in a corner of the Marine Hills neighborhood off Dash Point Road, visitors can find peace and tranquility from the garden’s tech-nicolor blooms, fragrant perennials and trickling streams.

“It’s more of a painter’s pallet than a plantsman’s list,” said Monte Powell, who shares a passion for gardening with his wife, Diane. “It’s not a botanic garden. There’s more order, rhythm and color.”

After a three-month renovation, PowellsWood will reopen to the public on June 22-23. Much of the garden was replanted and more open spaces were created.

Each well-manicured nook, or “room,” hosts native and non-native Northwest plants, framed by lush greenery and woods. Visitors can find favorites like fuchsias, Asian lilies, hydrangeas and hostas, but also see a few curveballs — like a trio of banana plants that overlook the gar-den’s tea room and patio.

Powell wanted to symbolize the nuances of climate change and show how the bananas, while native to more warmer latitudes, could still thrive in the Northwest.

The bananas also represent an educational component of Powells-Wood. Powell has goals of partnering with University of Washington and Federal Way students — anything to immerse youth in studying nature. Families are already welcome to visit and bring their children, who can see a frog or a tadpole, or kick over a rock and find slug eggs.PowellsWood Garden is located at 430 S. Dash Point Road. The

The festival is co-sponsored by the Seattle Storytellers Guild. Listen to masters perform folk tales based on real people, historical events and personal experiences. These storytellers don’t read from a book. They mesmerize audiences with engaging and emotional tales told in their own words.

The Weyerhaeuser King County Aquatic Center houses more than just a world-class swimming pool. It acts as an eco-nomic engine and tourism magnet for the region.

The 2,500-seat facility on SW Campus Drive opened in 1990 to host the Seattle Goodwill Games. In the past 20-plus years, the aquatic center has attracted more than 10.3 million visitors, according to King County.

The aquatic center has served as a training facility for U.S. Olympic synchronized swim teams, along with national swim-ming and diving teams from Australia, Japan and Great Britain. Other major events hosted by the Federal Way facility include the NCAA swimming and diving championships, WIAA state high school swimming and diving championships, Speedo Champions Series, Special Olympics regional swimming championships, YMCA state swimming championships, Washington state high school girls water polo championships, and more.

Rhododendron Species Botanical GardenThe world-renowned Rhododendron Species Botanical Garden pays colorful homage to hundreds of rhododendron

species. It also features complementary plants such as himalayan poppies, along with trails and a stumpery (garden area made from parts of dead trees) that rivals Prince Charles’ famous stumpery in Great Britain.

Hours are 10 a.m. to 4 p.m. Tuesday through Sunday (closed Mondays). General admission is $8; seniors (65-plus) and students (with school ID) are $5. Admission is free for children under 12 years, school groups with ID, military personnel (active and retired), RSBG members and current Weyerhaeuser employees.

Pacific Rim Bonsai Collection

The Pacific Rim Bonsai Collection is open weekly Tuesdays through Sundays (closed Mondays) year-round on the Weyerhaeuser campus, 2525 S. 336th St. Operating hours are 10 a.m. to 4 p.m. Admission is free.

Bonsai are miniaturized, living trees shaped by artists to portray scenic large trees in nature. The collection features 60 outstanding bonsai from six Pacific Rim nations.

A hidden gem of Federal Way is French Lake Dog Park, one of the few off-leash dog parks in the region. Created by a push from the non-profit group Park Pals, the park allows man, and man's best friend, a place to play and get outside in Federal Way.

Established seven years ago, the off-leash area at French Lake Park is located on 1st Avenue South between South 320th Street and South 312th Street. Park Pals is raising money to build a rain shelter at the park. Past projects include the installation of a doggie drinking fountain. FREE ShuttLE SERVicESenior Services introduced a new

van service in Federal Way for se-niors ages 55 and older and people with disabilities of all ages.

The Hyde Shuttles offer free door-to-door service throughout the Fed-eral Way city limits, transporting riders to the Federal Way Commu-nity Center, grocery shopping, the library, bank, to visit a friend, cultur-al and social activities, medical ap-pointments, and any local errands.

Riders register for service by phone. There is no application to fill out or in-person eligibility screen-ing. Riders may request service up

to 30 days in advance and same-day service on a space available basis. The shuttles are lift-equipped for people who have difficulty using stairs or use a mobility aid. Hours of operation are 9 a.m. to 4 p.m. The shuttles are free, although dona-tions are accepted.

Senior Services operates the Hyde Shuttles in partnership with King County Metro. To request a ride or learn more, call (206) 727-6262.

The transportation program has 30 shuttles on the road success-fully serving other communities in King County.

Vietnamese noodle soup, also known as pho (pronounced “fuh”), is a popular meal in the Northwest.

With more than a half-dozen pho restaurants to choose from in Federal Way, The Mirror set out to find the city’s best.

As a whole, the pho experience is similar wherever you go. The quintessential bowl of pho comes with rice noodles, thin-sliced steak, and green and white onions, all stewing in a beef broth that’s flavored with ox tail, beef bones and spices. Pho can be garnished with bean sprouts, basil leaves, sliced green chilies and a wedge of lime, all served on a plate that accompanies the soup.

Variations include pho with meatballs, flank steak, brisket, tripe, tendon, seafood, chicken or even tofu. Many diners like to spice up their soup with chili oil or chili paste. Standard condiments include hoisin sauce and Sriracha sauce.

Pho began as a street food in Vietnam in the early 1900s. Vietnamese refugees brought the dish to other parts of the world, especially in the years after the Vietnam War.

Other Vietnamese restaurant staples include appetizers like fried egg rolls, or spring rolls stuffed with veggies and shrimp. Also common is banh mi, which is a soft French-type baguette filled with grilled chicken or pork as well as cilantro, shredded carrots, sliced cucumber, green pepper rings and mayo. These sandwiches put Subway to shame with a lower cost, higher quality bread and tastier ingredients.

I recently sampled a handful

of Vietnamese restaurants in Federal Way. Of the places I tried, here are the ones that stood out. It should be noted that the servers were friendly and brought my meal within a few minutes after ordering. A bowl of pho and a soft drink usually averages under $10.

pho tAi

Perhaps the most commercial of Federal Way’s pho restaurants, Pho Tai’s extensive menu is tough to beat. The soup has a bolder broth and goes heavy on onions (which can be omitted by request). The short and fat spring rolls are packed with vermicelli noodles, sprouts and shrimp, and the peanut dipping sauce is thicker than average. The banh mi sandwiches are stuffed with your choice of meat and veggies on soft Vietnamese baguettes. Noodle salad bowls are like pho, but without the broth, and often come with a fried roll and fish sauce. The menu includes a full range of teriyaki dishes as well as a kids meal: meatball pho with a soft drink. The service can be a little hit or miss, depending on how busy it is. But if you’re a pho beginner, or dining with non-pho eaters, then Pho Tai is a place to start.

times over the years, and the food and service are consistently good. The pho is traditional, with a savory broth and a good balance of standard ingredients. The sandwiches and spring rolls, however, set Linh Son apart. The rolls are long and thin but densely packed with shrimp, a thick slice of pork and veggies, and are served with a side of tangy peanut dipping sauce. The banh

mi sandwiches are the best in town. For about $4, a hearty baguette stuffed with grilled chicken and veggies — along with a recommended dab of chili paste — is a true lunch bargain.

cRAzY pho cAjun

If jambalaya and pho had a baby, it might taste like the cajun crawfish pho, pictured on page 23. I’ve never eaten pho like this. Along with the rice noodles and bean sprouts, this version of the soup included shrimp, crawfish and sliced sausage. Diners can choose between mild, medium or spicy. I chose the sinus-clearing spicy, and it knocked my socks off. I’m already a spice-head, and I literally had a buzz when leaving the restaurant. Next time, I’ll get the medium. The spring rolls were some of the plumpest I’ve seen, and came with a different twist: each roll had a strip of tempura inside the crisp veggies and rice paper, served with standard peanut sauce.

In addition to traditional Vietnamese offerings, Crazy Pho Cajun’s menu includes straight-up Louisiana grub like a Po’ Boy Sandwich, smothered catfish, gumbo, red beans and rice, and etoufee. The prices are slightly higher than other pho restaurants, but then again, Crazy Pho Cajun walks to the beat of its own drum.

appealing to those who don’t want their fingers swelling up like sausages after eating. Unlike some pho restaurants, Than Brothers’ version went light on the onions. This was appreciated, because even as an onion lover, too many onions will mask the other flavors like basil, lime and cilantro, all while leaving you reeking like an onion. In my visit, I heard two other customers also ask for spring rolls. A pho fanatic will rank a restaurant based on the quality of spring rolls and the accompanying sauce. If Than Brothers added spring rolls to the menu, I might become a regular.
