A favourite table they had owned for ten years was the starting point for Jo and Mark Nicholls’ new kitchen

en years and a table – that’s whatoccupied Jo Nicholls’ mind when it came to choosing a designer for her new kitchen. ‘Ten years ago, Matt

Podesta built us a lovely English oak kitchentable, so he was my first port of call,’ explainsJo. And, since the table was bought with somemoney inherited from her mother, Jo says that it has particular sentimental value andwas a must-keep item in the new room.

The new kitchen project started with afrustration in the layout of the ground floor.‘With two growing boys (Conor, 13, and Jack,10) we were increasingly feeling that having asmall kitchen next to a small TV room wasn’tideal, so we decided to knock the two roomsinto one family living space,’ explains Jo.

Matt Podesta immediately suggestedinvolving architect Jeremy Spratley ofSpratley Studios, given the complexity of theproject, including an extension, steel beamsand work to level the floor between the tworooms. ‘We spent an unusual amount of time at the design stage, batting around ideas withMatt and Jeremy, but it was time well spent as it meant that we could move really quicklywhen it came to completing the build.’

Matt designed classic furniture with adouble panel detail on the doors, hand-paintedin a light yet warm shade of grey. Oak accentsprovide contrast to the painted furniture andlink the design to the oak table. There are lotsof individual touches, from the brushed

aluminium inlaid bead on the breakfast bar, to the turned legs on the end of the cooker runand motifs cut into the larder cupboard doors.‘Quirky touches like this add character to theroom and create an individual, bespoke feel,’says Matt. Jo loves cooking as a way to relaxafter a busy working day, so she chose a Wolfrange – ‘my treat to myself,’ – for its powerfulcooking options, including a griddle platewhich is ideal for making American pancakes – the house-favourite. Jo particularlyrecommends the boiling water tap. ‘I wasn’tsure it was worth it, but I listened to Matt and I’m really glad I did,’ she says. ‘Coming infrom work, I can start the dinner cooking inseconds.’ Folding glass doors open onto thepatio, creating one element of the new designthat Jo most appreciates. ‘We couldn’t accessthe garden from the kitchen before,’ sheexplains. ‘Now the space flows. We haveparties with people outside by the fire-pit, or wandering inside for drinks at the breakfast bar, and it all works really well.’

Naturally, the table enjoys pride of place, ‘Having a space where we can all be together,while I’m cooking and the boys are watchingTV or doing their homework, makes such adifference,’ says Jo. ‘Now I honestly wonderwhat took us so long to do it.’

Georgian townhouse in Oxfordshire datesback to the 16th Century. It required a seriousprogramme of renovation and updating tomake it a useful part of this family home. ‘Itwas a very interesting project,’ recalls MarcusWatkins, Design Manager at KitchenArchitecture. ‘The house and the old wing –let’s call it a barn – had most recently beenused as offices, and there had been somerather odd additions over the years. The

owners wanted to convert it back into acohesive family home, linking the house to the barn.’ This was to be quite an undertakinggiven the listed status of the buildings, butWoodfield Brady Architects conceived of a clever solution, designed to respect theoriginal Georgian building and its older barn.Now a ground floor rear extension links thetwo, serving as a ‘spine’ off which all the roomscan be accessed. At the end of the spine, thepassage culminates in the new kitchen whichenjoys the full area of the barn, complete with glass walls on two sides to provide a light-filled dining area and open access to the terrace and courtyard garden.

It was Marcus’ challenge to create a kitchendesign sympathetic to the age of the barn, butentirely suitable for modern family life. ‘Wedecided to expose some of the original flint

wall as a nice way of revealing the character of the property, with texture that contrasts well with the clean lines of the Bulthaupfurniture,’ he says. Made of pale honey-coloured elm, the cabinetry sits comfortablybelow the vaulted ceiling, supported by theoriginal oak beams. And, to emphasise thelinear and contemporary design, the grain on the tall cabinets runs vertically – yet on the island and hob run it is horizontal to maximise the sense of width.

In keeping with his client’s brief to create a sociable entertaining space, the island‘preparation zone’ looks out over a breakfastbar, and then to the dining table and courtyardbeyond. Says Marcus, ‘The working area of theroom is distinct from the entertaining spaces,

but not so far away that the cook can’t join in.And the roller shutter in the tall run houses adrinks station, with cups, glasses and crockerynext to the coffee machine so that anyonewanting to make a drink or lay the tableneedn’t get in the way of dinner preparation.’

Three dramatic black glass pendant lightsemphasise the double-height of the room, and teamed with matching black leather bar stools, create a focal point of the island. Itssimple, rectangular shape is accentuated by a chunky symmetrical breakfast bar, whilealuminium side panels contrast with the elm and add interest to the design.

‘Creating a design with furniture inproportion to the height of the room was veryimportant,’ explains Marcus. He mirrored

the height of the tall run with that of thefunctional white glass wall panel, used to hang elm wood shelves and suspendaccessories. ‘The wall hung furniture creates a floating appearance, designed tolighten the feel of the room, and keep the look simple, pared-down and uncluttered,’ he says. ‘It’s a very practical room with lots of storage, easy to access appliances – even the dishwasher is raised off the ground toreduce bending – and the natural materialsand linear design seem to blend well. Periodproperties shouldn’t preclude contemporarydesign – and I think this is proof.’

t’s hard to imagine many kitchens being inspired by the master bedroom, but for Nicky Smith thestreamlined effect of her built-in wardrobe was just what she was looking for. ‘I suppose it was a bit

unusual to take a designer straight up to our bedroom,’ she agrees, laughing, ‘but we had that style of wall-to-wallfitted wardrobe cupboards and got the idea for the kitchenfrom that.’ Mike and Nicky Smith bought their beautifulfour-bedroomed Edwardian home in north London overnine years ago. But with the kitchen originally upstairs and

a bedroom in their current living space, the home hadneeded a complete refurbishment. After 18 months of hardgraft they had returned the kitchen to the ground floor,installed a downstairs lavatory and brought order to theirhome, before moving to Jakarta for three years with Mike’sjob. ‘When we came back we did everything we couldn’tafford to do before we left – put oak flooring in the studyand hall plus applied for planning to extend our kitchen. Bygetting the side return done, we wanted a bigger diningarea and to make it a lighter more social family space.’

The Smiths were in the enviable position of knowingalmost exactly what they wanted when they entered theshowroom of Funktional Kitchens in Crouch End, London.

Friends had already installed the German-designedHacker kitchens, sold by Emma Hood and her colleagues,so Nicky knew the product was affordable as well as hard-wearing for a family with two teenagers and two cats.

With nine years experience behind her, Emma fromFunktional Kitchens was not phased by the two metreheight restriction for the boundary wall and wasdetermined to make a virtue of necessity. ‘We exploredseveral different options, but Matt and Nicky were clearthat they wanted a kitchen in matt white, with a mixedwooden finish, lots of storage and handleless cupboards,’Emma said. ‘They wanted something modern, where

they could sit at the breakfast bar while facing the garden which tied the new space in with the old.’

The Smiths settled on the Inova range of Hackerkitchens, enhancing the natural light afforded by theskylight and the French windows, with a white laminatefinish and grey acacia panels. The wooden laminate on theisland is repeated on the shelves of the mirrored openingbetween the cupboards and above the wine fridge, subtlytying all areas of the kitchen together. Touch latches on the cupboards emphasise the streamlined quality of thekitchen and the pale luminous Cimstone composite on theisland surface not only reflects the light from the windows,but provides a large practical work and eating surface.

the French windows. Nicky took inspiration from thepinkish background to create her signature auberginesplashback, which she then subtly echoed with identicallycoloured dining chairs. By introducing a bold contrastingcolour to the white matt finish and wood-effect panels, theroom not only becomes a bright airy space, but one that iscarefully connected, without appearing clinical.

As with all builds there were inevitable compromises.The low boundary wall restricted their options, but as aresult Funktional Kitchens created a wall of almost endlesscupboard space. Not only does this subtle design hide theboiler and the underfloor heating, but in neatly divideddrawers and shelves Nicky can store medicines, candles,vases, glasses, tupperwares and an entire bakingcupboard. the end of the dining area serves as a cosy but useful utilityroom. Set into the cupboards is a rectangular mirror and shelves, which deftly create an illusion of depth in theroom, as well as breaking up the expanse of white withbrightly coloured glasses and fruit.

The island itself serves as both breakfast bar andworkspace. Its minimalism serves to draw the eye to thelush lawn and magnificent Magnolia tree in the gardenbeyond. The grasses and bamboo serve as a restful canvasfor the weary worker or school child at the start or end ofthe day. ‘We wanted the garden to be quite a focal point,’says Nicky. ‘It’s lovely when we’re sitting at the bar because we have a completely uninterrupted view.’

Flanking the cupboards at the garden end of the kitchenare two Siemens ovens, a combination microwave ovenand a fan assisted below. The Jan Levy ‘Rhetoric andReality’ picture provides a superb brightly colouredcontrasting focal point within the room, as well asenriching the aubergine and grey acacia surroundings.

‘I love this kitchen, it’s a great place to be in summer orwinter, and makes the whole building process worthwhile.We knew what we wanted, but obviously it still evolved,’says Nicky, adding with a laugh, ‘We were going to have a bench under the picture, but we ended up increasing thestorage and installing a new wine cooler instead.’ With abusy family to run, extra space was probably a wise move.

ith estate agent’s particulars inhand, Virginia and Anthony Jaffewere busy viewing a 1940s mock-Tudor house in Hertfordshire.

About to turn around and head home, thanksto the tired décor and warren-style interiorcreated by a granny annexe added to the sideof the house, they suddenly had a very pleasantsurprise. ‘I put my head out of the back doorand almost couldn’t believe what I saw – anamazing garden with old oak trees, a vegetablegarden, log cabin and large lawn,’ laughsVirginia. Zach, now 3, playing cowboys and Indiansamongst the trees, and Solly, the family’s blackLabrador making the most of his new foundfreedom. But first, there was work to be done.

‘Although there were far too many smallrooms in the house for our liking, the footprintwas perfect,’ explains Virginia. The couple setabout re-configuring the layout to suit theirlifestyle and settled on a plan to replace thegranny annexe with a large kitchen-familyspace. Virginia, a management consultant who now runs Ginger Linen which specialisesin tailored pillowcases to fit moulded pillows,spent 10 years living in Australia, andexecutive and life counsellor Anthony grew upin South Africa. ‘Because of our travels, I

think we have a rather un-English approach toour home,’ she says. ‘We both love the outdoorsand wanted to create a really open feel to thehouse with a strong connection to the garden.’

Sliding, folding glass doors wrap aroundtwo entire sides of the kitchen, almostseamlessly linking the indoor and outdoorterrace when the doors are wide open. Anoverhanging roof, clad in striking African teak,provides excellent protection from the Britishweather. Its design is inspired by African safari

lodges, familiar to Anthony. ‘It creates a verydifferent feel,’ says Virginia. ‘People arrive at the front door of the house, which still looks very traditional and in-keeping with the other houses in the road – and they are so surprised when they come inside.’

Determined to create a similarly uniquefeel in the kitchen itself, it was to Wilson Fink they headed, meeting director AndrewMartin. ‘We approached a couple of other localkitchen suppliers, but they came up with very

conservative ideas for the room,’ she says.‘Andy totally understood that we wanted to combine the new with the old, and create a unique and original feel.’

Andy’s design includes a long wall run ofOyster lacquer units, a walk-in pantry, coffeebar area and striking walnut island. ‘The longwall is very sleek and streamlined, while theisland adds depth to the design,’ he explains.For Virginia, it is the centrepiece island thatshe enjoys the most. ‘It reminds me of a

beautiful French antique table, which addssomething very different to the room,’ saysVirginia, who admits to time spent agonisingover the choice of stone top. ‘At the stone yard, I glimpsed a fantastic slab of granite, richlycoloured with green, pink and rust,’ she recalls.‘I ummed and aahed about whether it wouldwork, but in the end I took the risk – and now I adore it.’ And what about her choice for theglass splashback colour? ‘A grungy green ishow best to describe it,’ she says, ‘It doesn’tsound very nice but it works really beautifullywith the colours of the granite.’

While there’s no doubt that the project has been a major one (Anthony took a year off work to manage it all, including a loftconversion and garden landscaping), thehiggledy-piggedly layout of the property is gone for good. Says Virginia, ‘We’ve made the house work for our family, and the kitchen has become the heart of our home.’

growing out of the floor and it was all finishedoff with an array of Romanesque columns. But Syed Azmatullah (known as Azmat) andpartner Neil weren’t going to let the rather‘unusual’ decoration stand in their way. ‘The house needed complete refurbishment,

including new plumbing, electrics, floors andbathrooms, so we knew we’d be rippingeverything out anyway,’ says Azmat.

Situated in a peaceful location in the Sussexcountryside with views over the South Downs,the 200 year old property was otherwise idealfor Azmat and Neil. Having recently returnedhome to Brighton after living in Germany andAmerica, Azmat says that they were looking fora property in a less urban environment, but

not too far from friends. This house, despite the work required, ticked all the boxes.

At some point in the house’s history, an extension had been built at the rear,connecting the main house to an outbuilding.And this was the site of the kitchen.

‘We could see the potential of opening upthe room to the south-facing patio outside, sowe added folding glass doors, and re-glazedthe roof,’ explains Azmat. When it came to thepillars, the olive tree and a rather curioushand-painted mural – there was no questionthat they had to go, but there was one existingfeature that they chose to keep. ‘The previousowners told us that they had been to Barcelona many years ago and been inspiredby Gaudi’s architecture,’ he says. ‘They createdthese Gaudi-inspired alcoves in the kitchenand we felt they were rather special and added character to the room.’

With a brief to create an open kitchen-dining space, Azmat and Neil headed off tomeet designer Shane Hilton at Harvey Jones.

‘We knew a number of different kitchensuppliers, but Harvey Jones had a very simple Shaker style design on display whichwe both liked immediately and felt it blendedtraditional and contemporary styles in a

way that would suit our space.’ Shane was also keen to work in harmony with the style of architecture. ‘I felt that working with, notagainst, the vaulted ceiling would create adramatic design and make the most of thespace,’ he says. An extractor chimney above the steel range draws the eye upwards.

‘Once we had settled on the extractor hood, I commissioned a two metre tall, curved-fronted custom-made stainless steel chimneyand designed an angle-housing at the top,’ saysShane. ‘It makes the main focal point in theroom, enhanced by stepped wall cupboardseither side.’ Uplighters on top of the cupboardsilluminate the vaulted ceiling at night.

On the adjacent wall, two ceramic sinks areplaced in the middle of the central ‘scalloped’alcove, their curved shape echoed in thedesign of the base cupboards at both ends.While the cupboards and drawers provideample storage and the sweeping honed ZodiaqChalk White worktops plenty of prep space, itis the colour of the cabinetry that Azmat enjoysthe most. ‘It’s my favourite colour,’ he sayssimply. The soft apple green shade links to thecolours of the garden, seen so readily throughthe glass doors, and to the natural tones of theBrazilian green slate flooring. Both Azmat and

Neil enjoy cooking and time spent in thekitchen. ‘The room works brilliantly now and, even if we are both cooking, we don’t getin each other’s way,’ says Azmat. ‘It has a veryopen feel with an easy flow around the space –it makes entertaining very relaxed.’

machine spinning and a tumble dryer tumbling at all hours.It’s also a good idea to combine the laundry/utility with a‘boot room’ concept, especially if you have sporty membersof the family who trail in and out with muddy kit, dogs thatneed to be walked and especially if you live in the countryor do lots of gardening. You can even install a bath forwashing the dog before he jumps onto your clean sofa aftera muddy walk. A laundry-utility room needs to be totallypractical, furnished with hardwearing surfaces, a large sinkand as much storage as possible. Consider double-heightwall cabinets, using the higher level cupboards for rarelyused items or once-a-year kit such as Christmas china, partyplatters, boxes of party glassware etc. Try to leave floorspace for an ironing board that can be permanently left inposition, and a hanging rail for either airing clothes orhanging up just-ironed items.

The general idea of this hub of domesticity is to treat it a little like an old-fashioned scullery – it’s where all thepractical action happens, where dirty crockery can bestacked mid-dinner party and where bulk-buys can bestored. If you’re thinking of including a laundry-utility inyour new kitchen project, think about including a seconddishwasher, especially if you regularly cook and entertainfor large parties. One option is to use the ‘old’ dishwasherfrom the previous kitchen if it’s still in good working order.

A large sink is a good choice too, whether it’s used forsoaking large pans, for cutting or plunging fresh flowers,scrubbing trainers and football boots, or simply for hand-washing delicate items. A tap with a pull-out hose andspray nozzle is also useful for rinsing items, especiallylarge pans and so on. Although it’s not vital to use top endcabinetry, don’t stint on work surfaces and flooring, as theywill get a significant amount of wear and tear. Matt Podesta,designer and founder of bespoke kitchen company Podestasays, ‘For most utility rooms, the budget is the starting point

as it’s rare that people want to use a similar budget for theutility as they do on a kitchen. We often use melaminecarcasses as they are more durable, and suggest a lay-ondoor in similar style and colour to the main kitchen. Inmany cases, access to the rear of the house is through theutility room so we find ourselves designing the space to beused as a utility, dog and boot room, and to provide room forcoats and umbrellas – as many guests go straight round tothe back door!’ Woodstock Furniture has also been asked to design boot rooms, and Andrew Hall, MD and chiefdesigner, says ‘The perfect boot room should feature plentyof low-level storage spaces for the multitude of shoes andboots that accumulate in most households. Top this spacewith a handy seat, and make sure there is adequatehanging space for outdoor clothing. he airy and spacious feel of the bathrooms in thisproperty has not beencompromised by the design,

with exposed wooden beamskeeping an authentic feel. Itssimplistic design is both welcomingand dramatic. Not only does it makeuse of all the potential space, but italso discreetly incorporates practicalstorage and design aspects.

What were the main challenges?When starting a project, I imaginetaking the building and turning itupside down. All the elements thatfall out are the least important, andwhat remains is what I refer to as ‘the bones’. Primarily, you have tomake sure that the planning iscorrect, and ensure that any fixedaspects which require services are inthe right position. If ‘the bones’ needto be altered, the trick is in doing so in such a way to make it look asthough it has always been there.With this in mind, the guestbathroom was originally a disusedlean-to at the end of the building. Was your design influenced bythe architecture of the house?The original buildings, which areGrade II listed, initially served as the barn, stable and coach house

to a 16th Century manor house. Theproperty is sited adjacent to the moatof a ruined 12th Century castle.Therefore, the project was dictated by the architecture with regards to what had to be retained. In theThatch, the guest bathroom wasabout the only part of originalbuilding that was left, including the original beamed ceiling.

How do you inject a client’spersonality into a bathroom?Bathrooms should always be cleanand clutter free rooms. However,personality can be introducedthrough bold features such as thechequer board floor in the guestbathroom or bold stone such as theslate tiles used in the second guestbathroom. I used iconic whitegoodssuch as the central Philippe Starckbath in the master bathroom and a wonderful large 1950s OrpalinePendant (not shown).

What are your favourite features?In the guest bathroom, I would say my favourite feature is thejuxtaposition of the old and new,such as the exposed beams that date back to the 16th Century againstthe clean, strong white Farrow & Ball walls. In the master bathroom,we created a circular window to give us borrowed light from themain barn which was definitely a successful achievement.

Where does your inspirationcome from?My inspiration comes from lifeexperience and the feel of the project. Each project has its ownunique influences that drive thedesign direction.

Did the architecture of the house influence your design?Yes and no, the exterior is traditionalfour square Georgian, reconstructedin the style of the original manorhouse while the interiors are mid-century, Hollywood regency. Theinterior architectural elements weredesigned to be classical and currentfeeling. I used non-traditional colouron the walls to give the large spacesintimacy and warmth resulting in a youthful, liveable feeling.

Do you have a signature style thatyou adapt to the client’s brief?My signature style would probablybe best described as ‘looking asthough the house has always beenthere.’ I’m not afraid to use texture,pattern and colour to give a room

interest. Unexpected pieces excitethe eye appeal. All these elementsmake a room feel as if it has evolvedover many years of family life.

What are your favourite features in this bathroom?I would have to say the floor. Itturned out just as I imagined (like an exquisite rug) artfully crafted in black and white marble.

How would you advise a client to create an intimate feel in alarge bathroom space?Use fabrics and surfaces with varyingscales of pattern and texture, don’t beafraid of color. Furniture pieces suchas vanities and benches that don’thave a traditional ‘bathroom’ designto them are always interesting.

How do you get a sense of the client’s personality andincorporate it in your design?When an existing client starts a newproject with us it’s both a comfort and a challenge. I ask new clients topull together images of rooms andproducts they like and dislike. Thedislikes seem to be easier for them to identify, while likes can be moresubjective. I then pull together acomplete scheme of the rooms withdrapery, rugs, soft furnishings andpresent to the client. It’s uncannyhow often they comment, ‘it’s like you were inside my head, I love it.’

he first thing to strike you about this Belgraviapenthouse bathroom is theextraordinary light and hint

of past glamour. With the restorationof original architectural features andthe mix of lighting with mirroredand reflective surfaces, the overalleffect of space and increasing depth of vision is magnified.

What were the initial challenges?Creating practical as well asbeautiful spaces within a Grade IIListed building is always going to be a challenge. It is important tomaximise natural light, as well asincorporating and working with theperiod features within the context of a contemporary design.

How did you set about choosingthe surfaces for this room?Firstly, because the new layout was a relatively long and narrow space, I decided that we needed to reflect as much natural light deep into thespace, encapsulating a wealth offragmented light, and sending it inevery direction. I wanted to inject an element of style inspired by retro, vintage and modern design.The planning and layout came first,followed by the design – which mustsuit the lifestyle of the individualsusing the space. Style and fluidity are key elements, but functionalityand quality are just as important.

Do you have a signature style?Each project is unique, having a sensitive and open approach is ofvital importance, whether workingwith a listed building or new build.Very often, there are so many layersto these historic buildings, that it islike peeling an onion, and all of thedetails discovered on the wayinfluence the final design. I trulybelieve that good design is abouttimelessness and longevity.

How do you begin to translate the client’s brief into reality?The design brief is a direct responseto the site, its environment andsurroundings, as well as the clients’ needs and aspirations. A space has to be structured andedited to relate to the clients’ needs.Flow and movement within isimportant, but each componentintroduced must contribute to the overall sense of balance,harmony and wellbeing.

What are your favourite features?The bathroom has many greatfeatures which I like to think of interms of a good recipe consisting of many desirable ingredients.However, it is the complementaryeffect and combination of qualityfittings and use of practical anddurable materials, together withthoughtful design which leads to its eventual success.

FLOATING HEADBOARDIf you have the space to play with,consider introducing either a permanentor temporary floating wall. In a bedroom,if your headboard is against a floating wall,you can conceal a walk-in wardrobe orsimply place the bed in a different place if your room only has one position for thebed. Since the wall is floating it can also berelatively easy to mount a sound systeminto it, hiding the stereo in the back.

SIMPLE STORAGEConsider your storage whendeciding how to lay out aroom because most roomsrequire more than you think.In this bedroom, it wasimpossible to add a door tothe wardrobe because it couldnot open and close next to thenearby wall. A folding doorwas not an option as the spacewas too narrow, so a subtlecurtain and rod were installedto blend with the wall colour,thus concealing the hangingspace, making the bedroomfree of visual clutter.


RECYCLED STYLEA handmade four-poster bedin recycled wood was thestarting point for the entiredecorative scheme in thisDutch bedroom. Its warmsimplicity coupled with thebedding in calm blue tones, andthe blue accent wall, reflect thestyle of the entire home, whichis handmade, calm, warm andnatural. The sheer windowpanel and ceramic dragonfliesthat seem to be flying away onthe wall add softness, while theshelving gives the homeownerthe option to switch herdisplays on a whim. onto the nearest chair. Like any of our possessions, analysingthe contents of a wardrobe and collections of accessoriesusually divides into two – items worn regularly and those onlyused occasionally. Then there are things we are happy to haveon show and those we are not. Finding the right storage foryour lifestyle and bedroom, with the hugely versatile storageoptions around, can make day to day living easier and moreharmonious without any reason to compromise on style.

Sam O’Grady and Cathy Emmins, who head up Londoninteriors company Oliver Bea Design, have a clear and wellthought out philosophy when it comes to attractive, yetpractical storage. ‘We believe that design must never come atthe expense of practicality and this is especially important inbedrooms where storage is always a top priority. Bespokefitted furniture and standalone pieces each have pros and cons but there are some general guidelines we tend to follow.

Smaller or awkwardly shaped rooms lend themselves to fittedstorage solutions as they tend to make the most of availablespace and create a uniform, sleek appearance. Flexibility onfinishes is another benefit of bespoke furniture as the endresult is highly personalised. Standalone pieces are often moreappropriate in larger rooms or where a more classical, periodfeel is desired. Freestanding chest of drawers, for example,work particularly well in an alcove and when combined with alamp or mirror can become a focal point for the entire room. Inaddition to the conventional wardrobe space we encourageour clients to consider underbed storage. A fabric coveredottoman, divan base or an upholstered blanket box are notonly ways of gaining valuable space to store out of seasonclothing but they can introduce another fabric and createmore interest and texture.’ Fitted wardrobes where doors

ichelin-starred chefMichel Roux Jr, 51,owns Le Gavroche inMayfair, as well as

running two of London’s otherleading restaurants, Roux atParliament Square and Roux atthe Landau at the Langham Hotel.Having grown up in Kent, on theestate of Major Peter Cazelet(horse trainer to the Queen),where his father was the privatechef, he went on to train withmaster patissier Hellegouarche,the best pastry chef in France.Then, later with Alain Chapel (one of the founding fathers ofnouvelle cuisine) at his restaurantat Mionnay, near Lyon.

He now lives in south Londonwith his wife of some 23 years,Giselle and daughter, Emily, 20,who is training to be a chef. Hismost recent challenge has beenjudging on the BBC One show –MasterChef: The Professionals.

Do you have a state of the art kitchen at home?My kitchen in London is quitebasic but functional. I don’t cookthere often as it’s 14 years old anddue for an overhaul. It’s not veryme but hopefully the next one will be more state of the art.

Is the one in France very different? Completely. It’s a very Provençalstyle house, with a red tiled floor,thick stone walls and a bigbutcher’s block. We have a hugeAGA, which is both electric and gas, with a large dining tablewhich is great for entertaining.Everything happens in thekitchen and it is definitely themost used room in the house. Likemost character-filled houses thereis always some work to be done!

What is your must-havekitchen gadget?Sharp knives and good saucepansare the basic kitchen essentials. So important in fact, that I have my own range of saucepans withGreenPan and knives with GlobalKnives, which I use myself athome. Also, I don’t know what I’ddo without my KitchenAid mixer.

What are your childhoodmemories of growing up on a country estate in Kent?It was a beautiful estate with trout ponds and watercressstreams. It was an idyllic place to spend a childhood. I foraged forchestnuts and wild strawberrieswith my grandmother. Thekitchen always smelled sweet and the butler’s wife made old English puddings.

Is there a dish which alwaystransports you to that time?I think it would have to be roastchestnuts or vanilla ice cream,which I remember churning byhand with my father.

What is your favourite dish at the moment?I love game in winter. I don’t thinkyou can beat a simple roast with agood bottle of Cote du Rhone.

What is your favouriteingredient?There are too many to list.Essentially though, seasoning is so important. I think withoutsalt and pepper, food woulddefinitely be very dull.

Who would you most love to cook for?Eric Cantona. I am a ManchesterUnited fan and he is a legend.

Does your wife cook much?She cooks everyday for herself as I am working. She cooks simply,but well. However, she didn’tmarry me just for my looks!

What sort of dinner guest are you? I don’t get invited often enough,which is a pity but as a chef you do have quite anti-socialhours. I think people expect chefs to be acutely critical of food, but this isn’t the case when you are eating with friends, it is always a pleasure.
