EGGPLANT PIZZA Prep Time: 10 min Total Time: 25 min INGREDIENTS 1/2 large eggplant, sliced into thin rounds ½ c parmesan cheese, grated 1 T extra-virgin olive oil 1/3 c tomato sauce 1/3 c cheddar cheese, shredded salt and pepper to taste DIRECTIONS Preheat oven to 350°F. Arrange eggplant rounds on a baking sheet and lightly coat with oil. Baked rounds until hot (5 minutes). Flip rounds and top with an even layer of parmesan cheese. Return eggplant to oven and bake until cheese is melted (5 minutes). Drop a spoonful of tomato sauce in the center and top with cheddar cheese. Bake until cheese is bubbling (5 minutes) and season with salt and pepper.
