It has been another great, gluttonous year for London’s vibrant dining scene, showcasing quality, diversity and innovation. An explosion of restaurant pop-ups and street food vendors means that food-lovers are able to choose from a range of global and innovative cuisines for every meal of the day. There has also been more focus than ever before on the provenance and quality of ingredients ensuring that the very best from local and national producers is sourced to go onto our plates.
Therefore, with all of this increased choice it’s been harder than ever to decide where to eat out in the capital.
Luckily, All In London is back with the answer… on the following pages we have the definitive index of London’s best restaurants, the All In One Ultimate Restaurant List for London 2013.
hOw IT wORks
The All In One Ultimate Restaurant List is formulated using a closely-guarded algorithm to index the most respected restaurant awards, reviews and scores, producing a definitive, impartial list of London’s best restaurants.
The list collates ratings from established guidebooks such as Michelin, AA and The Good Food Guide, as well as expert industry and media awards including The World’s 50 Best Restaurants, The Sunday Times Top 100 and the Observer Food Monthly Awards, to name but three. Our formula cleverly normalises the various ratings and awards into an easily digestible score allowing you to directly and fairly contrast one London restaurant with another.

mOveRs And shAkeRs
We’re pleased to report that the 2013 season has seen the Top100 collective stretching themselves to even greater culinary heights and improving the average Ultimate Restaurant List score by a further 3.4% to 6.282 (2012: 6.078). The runaway winner of the list, The Ledbury aside, is the modestly sized and priced Pitt Cue Co, whose fashionable menu of BBQ ribs, pulled pork, brisket and bourbon is straight in at number 10 this year. Alongside this our ‘ones to watch’ from last year (note to self - remove smug grin) have stormed onto the list with Corner Room, The Delaunay, Hawksmoor Guildhall, Dabbous and North Road (which has disappointingly closed down) all now among London’s Top 100 restaurants. Sketch (The Lecture Room & Library) received a second Michelin star and plenty of praise this year, such that it has been catapulted to number 11 on the list.
Ones TO wATch
The Ultimate Restaurant List is based solely on third party awards, accolades and results, and therefore until these have had the opportunity to be presented in sufficient numbers to a specific restaurant it will not appear on the All In One Ultimate Restaurant List. This means that results cannot be skewed by a very small number of inputs, but also that some new openings
won’t be on the list despite some critical acclaim. However we predict that the following restaurants will have a significant impact on next season’s list:
Restaurant Story is a new opening this year. With ex-Noma’s Tom Sellers at the helm we’d be amazed if it didn’t pick up a whole host of awards.
Balthazar is the London outpost of the famous New York restaurant likely to make an impact on the big guide books.
Duck and Waffle at the top of the Heron Tower created quite a buzz because of its 24-hour opening time, as well as its menu.
Lima is a Peruvian eatery with the added bonus that Executive Chef Virgilio Martinez’s Central restaurant in Peru has earned a place among the World’s 50 Best Restaurants.
Bubbledogs serve hotdogs and champagne, and we assume their very long queues are a precursor to critical acclaim.
HKK is the new restaurant from the hugely successful Hakkasan stable.

“I oversee all aspects of the dining concept at the St James’s Hotel and Club, which means the Michelin-starred restaurant Seven Park Place, our informal restaurant William’s Bar and Bistro, private dining, room service and afternoon tea. The kitchen never stops; in one moment you can have an order for a burger, at the same time you are preparing a poached lobster tail with cauliflower purée and lobster butter sauce… and you are plating a slow cooked blade of beef for 40 people in banqueting. It can be very challenging sometimes, but also very exciting. Organisation in such an extremely busy environment is definitely a key skill. And you always need to foresee any problems that may happen”.

to find a lot more inspiration with vegetables rather than with meat or fish. Customers are going
to be more and more excited and willing to eat an all-vegetable meal for taste and healthy eating

This stylish eatery has a Japanese-inspired counter on the ground floor where patrons surround the kitchen in their front-row seats to watch the preparation of tapas-sized dishes to their specifications. On the first floor, dining is said to be like eating in the kitchen of an old friend, albeit a friend with impeccable taste. Seating is well spaced and provides great views of the chefs at work; food is unfussy yet still impeccable, with stunning flavours and presentation.

Hélène Darroze’s Mayfair restaurant at the luxurious Connaught Hotel (where she replaced Gordon Ramsay protégé Angela Hartnett) has received two Michelin stars. River Café is one of London’s most famous restaurants, partly due to the stable of chefs it has trained over the years, who have included Theo Randall, Hugh Fearnley-Whittingstall and Stevie Parle. Set up by Ruth Rogers and the late Rose Gray, this Italian restaurant helped to popularise fresh, seasonal, locally sourced ingredients, now the accepted standard for any eatery. There are great views of the Thames thanks to its fantastic riverside location; otherwise you can spy on the chefs while they work in the exposed kitchen.

Consistently voted one of London’s favourite restaurants, Chez Bruce has been going strong since 1995. Inspiration comes from classic chefs of yesteryear like Elizabeth David and Larousse rather than modern cooking techniques, and this approach has served them very well. Plenty of care goes into the preparation of the dishes, even the cheeseboard. Matt Christmas is head chef, while Bruce Poole and restaurateur Nigel Platts-Martin (The Square, The Ledbury) are directors.

Portuguese chef Nuno Mendes caused a huge stir when he opened Viajante in 2010. Mendes’ CV includes working at El Bulli in Spain and hosting the Loft Supperclub from his flat on Kingsland Road. His tasting menus offering molecular cuisine (foams, dehydrated ingredients, unlikely flavour injections and sous vide) continue to capture imaginations. Viajante is located in the super hip venue that used to be Bethnal Green’s Town Hall, and is where the stunning art deco Town Hall Hotel is located.
Joe Mercer Nairne, previously of Chez Bruce, and David O’Connor, who has managed Chez Bruce, The Ledbury and The Square, opened Medlar in 2011. Their first restaurant received a unanimous thumbs up from critics for their restrained yet perfectly executed dishes. A combination of muted hues, a mirrored wall, and eye-catching bursts of green on the studded booth seats is daring, but elegant and understated nonetheless. They received their first Michelin star in 2013.

Ollie Dabbous has only just turned 30, however his impressive CV includes stints at Le Manoir Aux Quat’ Saisons, The Loft Project, The Fat Duck, and more recently the role of Head Chef at Texture. Plans to open his first restaurant were initially hatched four years before he unveiled Dabbous, but it was worth the wait as it remains one of the buzziest restaurants in town right now with reservations almost impossible to come by.
Pied à Terre was established in 1991, operating under the guidance of David Moore. Marcus Eaves, previously of sister-restaurant L’Autre Pied, has continued to ensure the highest of standards gaining a Michelin star in 2012 after just five months at the helm. The food on offer is complex and beautifully presented, complemented by a tremendous wine list.

The jaw-dropping décor alone at Sketch makes it worth a visit; in fact the building was once used as Christian Dior’s London atelier. Run by Mourad Mazouz, the man behind Momo, Sketch has three separate dining rooms ranging from the expensive to the more affordable, and DJs play in the Gallery till the early hours. The Lecture Room, which is the fine dining restaurant with Pierre Gagnaire at the helm, received its first Michelin star in 2005, and a second in 2012. 10

It’s the restaurant story du jour: a couple of enterprising mates start a truck selling American fast food, a Twitter buzz ensues, and a few months later they open a permanent restaurant. Located in Soho, Pitt Cue Co has just 30 covers, a distinctly fashionable no-bookings policy and an even more fashionable menu of BBQ ribs, pulled pork, brisket and bourbon. It’s very satisfying food, served in generous portions and at relatively low prices; small wonder it’s always full.
“Luck has had a big part to play in our success, meeting certain people at the perfect time. We didn’t have any experience running a restaurant, so hard work was key to a lot of the success. Working 100 hour weeks isn’t healthy but was important for us to get to grips with all aspects of the restaurant. Also, from a food point of view, trying to keep it simple and focusing on a brilliant supply chain has had a lot to do with why we’re still very busy.”

9Alain Ducasse brings his roots from south-western France to London with such authenticity you may even think you’ve moved there for the duration of your meal. Though not an active member of the kitchen, Ducasse is the inspiring force, while Jocelyn Herland is the Executive Chef. Located within the legendary Dorchester Hotel, the dining room is opulent, with a central feature that’s a circular wall of fibre optic lights, surrounding a table for private dining, and service is of the highest level. The receipt of three Michelin stars is testament to the restaurant’s enduring winning formula.

Claude Bosi moved from France to the UK in 1997 with the aim of improving his English, having trained under some of the greatest French chefs including Alain Passard and Alain Ducasse. After opening his own restaurant in Ludlow, Shropshire in 2000, he was rewarded within a year with a Michelin star. In 2007, with two Michelin stars under his belt, Bosi and his wife Claire (Restaurant Manager) moved Hibiscus to the heart of Mayfair where it has retained its stars as well as adding a whole host of other accolades and admirers to its name. The style at Hibiscus is bold in terms of flavour, but surroundings are beautifully subtle; a perfect combination.

“I love the sourdough pizza at Franco Manca in Chiswick and a good Japanese meal with some sake at Zuma.“
What food trends will come in next year?
“I see more and more restaurants growing their own produce at the moment, and also home brewing – we are currently doing a bit of that here!“
