Just choose whatever you fancy from these pages; order it by telephone, by mail or online and we will deliver it direct to your front door on the day of your choosing. We deliver Tuesday to Friday.
We can deliver this week, next week or
next month. We can probably deliver
tomorrow if that would help.
Wherever possible, we deliver by overnight courier but a few addresses take two days to reach. Should yours be one of these "two-day" addresses we'll let you know when you place your order. In either case we send your foods chilled in heavily insulated containers with ice packs when necessary.
Finally, the food you will receive is fresh, not frozen, so you can safely freeze it yourself and enjoy it when you are ready.

Classic & Fennel SalamiOne of nature's little miracles! We take carefully selected cuts - shoulder, belly and
back - of British free-range pork, mince coarsely, add a little seasoning, fill into
natural casings and then let the wonderful Shropshire air do its best for us. And, its
best is very good indeed!
Our recipe for Fennel Salami - "Finocchiona" as it is known in Italy - calls for a
judicious sprinkling of fresh fennel seeds along with British pork, peppercorns and
Cornish sea salt. Naturally, our Classic Salami keeps very well in your pantry.

BBQ Pork Rib RacksFalling-off-the-bone-tender meat with delicious mesquite BBQ

think it might even be addictive! My friends love it and they tell
me that their children are now very keen to tuck into their salad

Cooking ChorizoProduced in our own curing rooms in Shropshire, this
lightly smoked uncooked chorizo is hearty with rich,
warm flavours. Use for dishes requiring cooking chorizo
such as fabada, cocido con chorizo, other stews and
paella. We split it open, grill on the barbecue and pop it
in a ciabatta roll with a generous helping of rocket and
piquillo peppers. Totally yummy!

Ham Hock TerrineTasty, moist and tender, this old-fashioned treat will delight your taste
buds and your pocket. We simmer the Wiltshire cured ham hocks in stock
made to my Mother’s recipe - onions, carrots, celery, black pepper and a
dash of brandy - for more than 12 hours. While cooling, the natural release
of gelatin from the hock bones sets the stock into delicious jelly.
This traditional favourite is available as a simple and scrumptious plain
terrine; or made with a carefully-judged smattering of mild and crunchy
cornichons and capers with a sprinkling of parsley too; or with mild
mustard seeds and seasonal vegetables. Pure pleasure on a plate.

Our finest traditionally cured lightly smoked gammon diced
by hand into delightfully irregular lardons. Full of flavour.

Duck ConfitRich and tender free-range duck legs from France are cooked slowly
and gently in the oven by London-based French chef Thomas
Maieli and then preserved in their own juices to encapsulate all the

Oak Smoked Turkey BreastThe very best turkey, all-natural ingredients and Rod
Adlington's expert smoking technique give the meat a rich,
deep brown colour. Firstly, the meat is brined for two days
which helps to enhance its natural flavour. Afterwards, it is
very slowly smoked whilst cooking over wood chips for 10-

Farmhouse MustardsProduced by hand the natural way using the finest ingredients
with no added artificial ingredients or preservatives by mustard
maestro Bruce Young on his Oxfordshire farm, these delightful
mustards are amongst the best I've ever eaten and all make
perfect accompaniments to your favourite ham. Not to
mention gammon, sausages and burgers.
Honey Mustard. A coarse grain mustard with an instant
sweet taste which then gives way to slight heat. Delicious with
smoked meat or poultry and adds zest to marinades. A coating

Proper PiccalilliWe've improved the recipe so now our Piccalilli is even more
"proper" than before. Piccalilli goes so well with ham, cold
cuts and cheese. This is a return to Piccalilli of old; crunchy
garden vegetables in a sweet, tangy mustard sauce spiced with

Old-Fashioned Middle Cut BaconOur rindless Old-Fashioned bacon is dry cured by
hand using salt combined with brown sugar and is full
of traditional bacon flavour. It is sliced a little thicker
and it tends to have a good layer of fat. And all the
better for that, I say.
We offer our Old-Fashioned Bacon in convenient twin

Shropshire Black Back BaconMaster Bacon Curer, Nick Trott spent a year developing
rind-on Shropshire Black Back Bacon. We reckon he’s
used just the right amount of molasses and juniper in
the marinade to produce the perfect balance of robust
flavours. It is a little costlier than our traditional dry-
cured bacon but it takes much longer to produce. Go
ahead and try it, you might love it.

Wiltshire Cured Back BaconOur award-winning traditional Wiltshire Cure recipe dates
back to the 1840s and is a "wet-cure" which means that
the bacon is immersed in a liquid brine (a salt and saltpetre
solution containing useful salt tolerant bacteria) for 3 to 4
days. This is a much milder form of curing than dry cure
and does not require so much salt. We do not pump liquid
into the bacon to speed up the process as happens with so
many modern bacons, rather we take our time - as with
everything we produce - and the result is a delight; naturally
moist, tender and packed with flavour. Rindless.
We offer our Wiltshire Cured Back Bacon in convenient twin
packs each containing 8 - 10 back rashers so you can eat
one pack straightaway and pop the other in the freezer.

Dry Cured BaconWhen only the very best breakfast will do, be sure
you have some of our rindless dry cured bacon in
the refrigerator. Cured using traditional methods to
our own heritage recipe; we don't add water so there
is no "goo" left in the pan. Whether you prefer back
or streaky rashers, this is the perfect bacon; lean,
tender and flavoursome.
If you prefer smoked bacon, please try ours. We believe that a
gentle "smoke" brings out the very best flavour and tenderness in
the meat. Lovely for an extra-tasty breakfast or ideal for snipping
into lardons to add flavour to a soup or stew.

and gives the ham its distinctive black rind, is a fortnight spent
wallowing in a special marinade of molasses, juniper and spices. The

The Shropshire Black Ham StoryThis most flavoursome of hams is the direct descendant of the historic
Bradenham Ham. The Bradenham didn’t begin its life in Shropshire,
or Wiltshire for that matter; it was invented by Lord Bradenham in
1781, and migrated from Bradenham Manor in Buckinghamshire
in the 19th Century. The story is that the butler there fell out with
his employer, moved to Wiltshire and took the recipe with him. He
set up the Bradenham Ham Company in 1781, and continued to
manufacture on that site for almost 100 years.
Sadly, the unstoppable march of big business took its toll, acquisition
after acquisition took place, and before long the manufacture of so-
called Bradenhams was a very unimportant part of a big corporation.
Eventually, the management decided to stop production.
Fortunately we were able to recreate the recipe and although we are unable to use the name "Bradenham Ham", this wonderful ham lives on as our Shropshire Black.

The Quintessential English Ham.We select only the finest legs of British pork and after trimming
them, we apply a measure of saltpetre to the cut face of the leg.
Next, we cover the ham with a generous layer of sea salt. We do this
by hand because every ham is a little different and we adjust the
amount of salt used accordingly. We re-apply the salt several times
then hang the hams for three months or more to give Mother Nature
time to do her wonderful work of dry-curing.
York Ham - On The BoneCOOKED AND READY TO EAT - UNGLAZED
Dry cured and matured over a period of three months, it develops a
wonderful depth of flavour, reminiscent of ham from days gone by. The dry
curing process means that the York Ham is somewhat drier and saltier than

Colston Bassett StiltonSmooth and creamy with distinctive blue veins which become
more strongly defined as the cheese matures, Stilton has deep
and complex flavours enjoyed by cheese lovers worldwide.
Colston Bassett is certainly one of the best producers of
this magnificent cheese. Their dairy is in the Vale of Belvoir
where they have been producing fine Stiltons for nearly
a century. An excellent dessert cheese it is one of those
Christmas "must haves". Produced with pasteurised cow's
milk. Not suitable for vegetarians.

Montgomery’s CheddarOften considered to be the standard-bearer of English farmhouse
cheddars. Made in North Cadbury, in the rustic countryside of
southwest England, with unpasteurised cow's milk produced on
the Montgomery family’s 500 year old farm. Aged for 13 months
or more, Jamie Montgomery’s cheddar has a golden interior,
occasional blue veining and a satisfying bite that delivers a perfect
balance and long, lingering finish. In my humble opinion, this
is the tastiest, most satisfying cheddar you’ll find anywhere and I
heartily recommend it to you. Not suitable for vegetarians.

As you will see throughout the brochure, we show our hams decorated in various
ways. Unless specifically stated otherwise, your ham will arrive unglazed ready for
you to dress with bread crumbs (not supplied) or glaze as you prefer.
All our products are sent to you fresh and securely packed by next working day delivery, except for smaller items
and those going to more remote destinations. Delivery is not guaranteed for any particular time during the day.
Please let us know as soon as possible if your order has not arrived.
Smaller items may be sent by 1st Class Post and although next day delivery is
usual, it cannot be guaranteed.
If your order is for a specific date, please arrange for delivery at least a few days
before you need it. Remember, all our hams keep for at least three weeks after delivery; it is far better that it sits for a day or two in
your refrigerator than not arrive in time!
If we are unable to deliver on the specified day due to adverse weather
conditions or other circumstances beyond our control, we will endeavour to deliver at the next earliest opportunity and our
liability is limited to this.

Craster KippersConsidered by many to be the finest kippers in the world and produced only in the small fishing village of Craster in Northumberland. Freshly caught North Sea herrings, known locally as "silver darlings", are split, gutted and washed, soaked in brine, and then taken to the smokehouse where they are cured over smouldering oak and white wood shavings for sixteen hours.
