Tommy’s Margarita 9Ambar Blanco Tequila shaken vigorously with

organic agave syrup and fresh lime; served on the rocks. No salt! Created by Julio Bermejo and named after his

families Mexican restaurant in San Francisco.

Kangaroo 10Belvedere Vodka stirred with a whisper of Noilly Prat dry

vermouth; served dry. Bartending lore believes that the Kangaroo was the original name for the vodkatini.

Negroni Sbagliato 10Campari and Vya sweet vermouth topped with bubbles. A light, fresh

and seasonal alternative to the classic Negroni. Pronounced ‘spal-yacht-oh’ which in Italian translates to ‘mistake’, this drink was created in the late 1980’s in Milan when making a Negroni the bartender simply mistook

a bottle of prosecco for gin. Served over an orange ice fossil.

Prince of Wales 11Hennessey VS Cognac and Grand Marnier poured over a lemon soaked sugar cube, Angostura bitters then finished with Loungelover Champagne. A cheeky, light alternative

to the Classic champagne cocktail.

Martinez 10Tanqueray 10 Gin stirred with a whisper of Vya sweet vermouth,

Luxardo maraschino liqueur and bitters. Believed to be the forerunner of the Martini. The first known recipe appears in ‘The modern Bartender’ in 1884. It appears as a variation to the Manhattan.

Sazerac 11Van Winkle 13 yr old rye Whiskey and a hint of Cognac stirred withPeychaud and Angostura bitters; served in an Absinthe coated snifter.

Vesper 10Tanqueray 10 Gin and Ketel One Vodka beautifully seduced by a delicate lick of Lillet Blanc. This variation on the dry martini

was created at Duke’s Hotel, London for the author Ian Fleming.
