A unique selection showcasing the very best of Central Otago, New Zealand. Our wine list is comprised of wines exclusive to the unique and adaptable terroir of the
local area.
Sample the high altitude vineyards of the valley of Gibbston, where hot dry summers and cold winters produce a stunning array of award winning wine. Take a journey along the
Kawarau River, sampling wines from the warm, dry vineyards of the Bannockburn region. Head East to the local township of Cromwell, where micro-climates give a multitide of expressions to the wines. Further North along Lake Dunstan finds the Pisa and Bendigo regions. Sample the bold, rich Pinot Noir formed from the hot summer Bendigo sun and
the silky seductive wines from the snow capped Pisa mountain range. Alternatively take a trip to the neighbouring Wanaka, where a cooler, wetter climate
produces vivid and delicate wines.
Central Otago truly produces spectacular wines for both casual drinkers and aficionados alike.

We offer you a chance to sample 3 great examples of pinot noir against each other, 3 sub regions showcasing the different styles of Central Otago. Central Otago is the most noted pinot noir region to emerge in the last 25 years, with hot days and cold nights—perfect
pinot growing weather. The vines are now old enough to truly express their terroir leading to clear sub-regions with their own distinct characteristics. Rugged landscapes with drier
soils make the pinot vines work harder to find the water, which helps to define their unique flavours.

Green Hour
Absinthe, or “The Green Fairy” has a rich and controversial history. An
anise-flavoured distilled spirit made with Artemesia absinthium, or grand
wormwood, absinthe was invented in Switzerland at the turn of the 19th
century, and grew massively in popularity both in and out of Europe in
the 19th and 20th centuries, especially among the aristocracy. Many
famous poets, writers, and artists regularly drank absinthe for inspiration
as it was said to have mind-freeing properties. Due to concerns of its safety,
Absinthe was banned in many countries until recently. Now that its
production has become regulated and it has been shown to be safe to
consume in responsible quantities, it is once again rising in popularity
worldwide. Great as an aperitif, absinthe is traditionally enjoyed in the
late afternoon, during l'heure verte (Green Hour).
The drinking of absinthe is an elaborate ritual, wherin the absinthe is
“louched”, or slowly diluted with sugar and cold water, releasing the oils in
the spirit and transforming it from the harsh, bright green, highly
alcoholic liquor, to a beautifully smooth, milky white, sweet and spicy
libation beloved by the likes of Vincent Van Gogh, Oscar Wilde, and
Ernest Hemmingway.

Distilled by Paul Devoille, this expression shows a beautiful juxtaposition of old and new styles Leads with a full-flavoured body, heavy botanical maceration provides a thick, and quick forming louche. The addition of coriander seeds adds a nutty, spicy touch to a wormwood-dominant taste.
