The Perfect Turkey

Ingredients

Preparation: Steps 1-2

• 18lb turkey • 1 (18 lb) whole turkey, neck and giblets removed • 2 cups kosher salt • ½ cup butter, melted • 2 large onions, peeled and chopped • 4 carrots, peeled and chopped • 4 stalks celery, chopped • 2 sprigs fresh thyme • 1 bay leaf • 1 cup dry white wine

Rub the turkey inside and out with the kosher salt. Place the bird in a large stock pot, and cover with cold water. Place in the refrigerator, and allow the turkey to soak in the salt and water mixture 12 hours, or overnight.

Preheat oven to 350 degrees F (175 degrees C). Thoroughly rinse the turkey and discard the brine mixture.

The Perfect TurkeyPreparation: Steps 3-4

Brush the turkey with ½ the melted butter. Place breast side down on a roasting rack in a shallow roasting pan. Stuff the turkey cavity with 1 onion, ½ the carrots, ½ the celery, 1 sprig of thyme, and the bay leaf. Scatter the remaining vegetables and thyme around the bottom of the roasting pan, and cover with the white wine.

Roast uncovered 3½ to 4 hours in the preheated oven, until the internal temperature of the thigh reaches 180F° ( 85C° ). Carefully turn the turkey breast side up about 2/3 through the roasting time, and brush with the remaining butter. Allow the bird to stand about 30 minutes before carving.

Spinach & Artichoke Dip

IngredientsPreparation

• 10 ounce bag baby spinach, fresh or frozen • 1 can (14 oz) artichokes, drained and chopped • 8 ounces sour cream • 8 ounces cream cheese • 1 cup Parmesan cheese, shredded • 1/2 cup milk • 1/2 cup feta • 1/2 cup mayonnaise • 1 tablespoon red wine vinegar • 2 garlic cloves, peeled and minced • 1/4 teaspoon salt • 1/4 teaspoon ground black pepper

Place all ingredients in a slow-cooker. Mix well with a spoon until the ingredients are combined. Cook on high for 1 hour 30 minutes or on low for 2 hours and 30 minutes.

Stir and pour into a serving dish or set the slow-cooker to warm and serve out of the slow-cooker. Serve with tortilla chips, crackers, pita chips, or a sliced baguette.

Candied Yams

Ingredients

Preparation

• 1 (29 ounce) can sweet potatoes • 1/4 cup butter, cut into pieces • 1/2 cup brown sugar • 1 1/2 cups miniature marshmallows

Preheat oven to 400 F° ( 200 C° ).

Place sweet potatoes in a medium baking dish. Distribute butter pieces evenly over the sweet potatoes. Sprinkle with brown sugar. Layer with miniature marshmallows.

Bake in the preheated oven 25 minutes, or until sweet potatoes are tender and marshmallows have melted.

Slow Cooked Beef Stew

Ingredients

Preparation: Steps 1-4

• 2 pounds chuck meat, cut into 1 1/2-inch cubes • 1 15oz can unsalted diced tomatoes • 2 potatoes, peeled and cubed into 1 inch pieces • 2 stalks celery, sliced • 2 carrots, peeled and sliced • 2 garlic cloves, minced • 1 large onion, chopped into cubes • 1 cup beef stock • 2 bay leaves • 1/2 cup red wine • 1/4 cup flour • 2 tablespoons olive oil • 1 tablespoon fresh thyme, minced • 1/2 teaspoon kosher salt

Place the cubed meat and flour and in Ziploc bag, seal and shake until the piec-es are fully coated with flour.

Heat 2 tbsp of olive oil in a large sauté pan over medium high heat and sear the pieces of meat for 4 minutes until all sides are nicely brown.

Remove the meat from the pan and place in the crock pot.

Add the red wine and stock to the sauté pan and bring to a boil for one minute, scraping off the bits of meat that have caramelized in the pan with a wooden spoon.

Slow Cooked Beef Stew

Ingredients

Preparation: Steps 5-6

Add the reduced liquid to the crock pot along with the remaining ingredients and combine.

Cook on low for 6-8 hours. Serve.

Twice Baked Potato

Ingredients

Preparation: Steps 1-5

• 2 large russet potatoes • 1 1/2 cup shredded cheddar cheese or blue cheese • 1/2 cup diced scallions or chives • 1 cup sour cream, at room temp • 1/4 cup heavy cream • 4 Tbsp unsalted butter • 1 tsp olive oil • Salt and pepper

Preheat oven to 350 degrees.

Poke holes in the skin of the russets with a fork to prevent exploding and place on center rack, cook until soft and a skewer slides easily through, about 30-35 minutes.

Remove from oven. Turn oven up to 475 degrees.

Slice potatoes lengthwise and pinch from bottom to open.

With a large spoon, scoop out potato and place in large bowl, smash with a fork until fluffy.

Twice Baked Potato

Ingredients

Preparation: Steps 6-10

• 2 large russet potatoes • 1 1/2 cup shredded cheddar cheese or blue cheese • 1/2 cup diced scallions or chives • 1 cup sour cream, at room temp • 1/4 cup heavy cream • 4 Tbsp unsalted butter • 1 tsp olive oil • Salt and pepper

Add butter and mix until melted, add sour cream and heavy cream, mix un-til creamy but still chunky.

Add remainder ingredients and mix. Spoon back into potato skins until full, top with additional cheese if desired.

Brush skins lightly with oil or butter.

Place on pan and bake in hot oven for additional five minutes or until slightly brown.

Remove and serve.
