Modern Scotland - Contemporary cuisine from Scotland’s National Chef.
Food from William Wallace Country - a celebration of food and produce from central Scotland. (I actually live in the field of the farm that William Wallace was captured and a 100 yards from the well he took his last drink as a free man).
Food and Whisky - whisky can be used in some amazing dishes.
Ways with Haggis - there is more to haggis than a novelty food item. It is being used as a daily ingredient in restaurants all over the UK.
Scottish food that won MasterChef the Professionals - demonstrating some of the dishes that won.

SEMINAR DESCRIPTIONSWilliam Ciaurro is a Fly Fishers International Single & Two Hand Certified Casting Instructor. Spey casting is a fly-casting technique that evolved in Scotland in the mid 1800’s. It is named after the river Spey - one of Scotland’s premier salmon rivers. The fly fishing technique is useful where there is little or no room behind the caster.
Numerous artifacts and sites around New England offer evidence of exploration of North America long before Columbus. Specifically, the artifacts – including the so called Westford Knight carving – seem to confirm the legend of a group of Scottish explorers, with ties to the outlawed Knights Templar, island hopping their way across the North Atlantic in the late 1300’s. Who were they and why did they come? Well, that’s where the fun begins...
Introducing Kirstin Bridier, the executive director of NTSUSA. The National Trust for Scotland safeguards over 125 unique and beloved places that tell the story of this magical country. Here in America, The National Trust for Scotland Foundation USA is your key to experiencing and preserving Scotland’s rich culture and heritage.
A music and history program called Jacobite Risings in Song and Story. As a Highlander sympathetic to Prince Charlie’s cause, Charlie Zahm fills the program with history, music of the time, from the perspective of a true historical figure who actually fought in Prince Charlie’s cause.
Falconry is the sport of hunting game with falcons and other birds of prey. Experienced falconers Rita and Diane, will present the history of falconry and discuss the special relationship hunters have with their falcons. Visitors will be able to get up close to a red-tail hawk and a merlin, a small, fast-flying falcon.
Collette Tours will take visitors on a virtual tour of Scotland, from its rugged sea-sprayed islands to its stately castles rich in history.
