Introduction My name is Cameryn Shelby, and in this book, “How to Throw a Casual Dinner Party”, I will help you know what a basic table setting looks like and also some good recipes to use for a party. A lot of people struggle with knowing what to cook for a casual dinner party or how to set a table for the party, but with this book I will give you some ideas to help you throw a good party you would be proud of. In this book, I made a Mexican themed meal including Homemade Salsa and a Sopapilla Cheesecake. My husband and I invited a few friends over along with some family to enjoy this meal with us and to just catch up over a casual dinner party.

Place Setting In this picture, it shows a very simple place setting for a casual dinner party. You have the plate for your main meal, along with a smaller bread plate. On the left of the plate you have your fork and bread knife. On the right side of the plate you have your steak knife and your glass. This is a very basic place setting and should only be used when entertaining people during casual events.

Homemade Salsa
Ingredients • 2 cans of southwestern style diced tomatoes • 1 small can of diced green chiles • ½ bunch of cilantro, chopped • 1 clove garlic, minced • 3-4 whole green onions (stem included), chopped • Couple shakes of red pepper flakes • 1 tsp. salt
Directions Blend all ingredients, minus the tomatoes.

Add tomatoes and blend a little to mince the tomatoes or until it reaches your desired smoothness. My family likes our salsa chunky, so I only blend a little bit but I know others prefer it to be smoother so blend to your family’s liking.

Cheesy Jalapeno Cornbread
Ingredients • 3 large fresh jalapenos • 2 boxes Jiffy cornbread mix • ingredients from box • 1 ½ cups shredded cheddar cheese • 1 can of corn, drained
Directions Preheat oven to 400 degrees. Slice each jalapeno down the center and carefully remove the stem, and all seeds and veins. Chop the jalapenos into small bite-sized pieces. **Note: Be sure to thoroughly wash your hands after handling jalapenos. The juice will burn your eyes, nose and mouth.

In a medium bowl, mix the cornbread mix according to directions on box. Add in the corn, 1 cup of cheese, and jalapenos.

Spread into a lightly greased 9x13 pan. Sprinkle remaining cheese on top of the cornbread. Bake for 30-35 minutes or until cooked thoroughly. Insert fork in the middle and if it comes out clean then it is done.

Queso Smothered Chicken
Ingredients • 1 bottle Lawry’s Baja Chipotle marinade (or mesquite) • 4 boneless skinless chicken breasts • 16 oz Velveeta, diced • 1 can Rotel diced tomatoes with green chiles • 2 packages Taco Rice- cooked according to package
Directions Pour the marinade over chicken and let marinate in the refrigerator for 30 min or overnight. When ready, grill chicken until done (165 degrees).

Combine Rotel and Velveeta in a medium bowl. Heat on HIGH in the microwave in 30 second intervals until cheese is melted, stirring occasionally. Once the chicken has been grilled and the queso prepared, put a bed of rice on each plate. Then place a chicken breast on top of the rice and smother with queso. Serve the cornbread on the side.

Sopapilla Cheesecake
Ingredients • 2 (8oz) packages cream cheese • 2 (8oz) packages refrigerated crescent dinner rolls • 1 cup sugar • 1 tsp. vanilla extract • ½ cup butter, melted • ½ cup cinnamon sugar ( ½ cup sugar and 1 Tbsp. cinnamon mixed)
Directions Preheat oven to 350 degrees. Using a 9x13 pan lightly sprayed with non-stick cooking spray, unroll one package of crescent rolls and line the bottom of the pan, pressing to flatten and seal. Mix together the cream cheese, sugar and vanilla extract. Spread over crescent rolls. Unroll the other can of crescent rolls and place over the cream cheese mixture.

Pour the melted butter over the top and sprinkle with the cinnamon sugar.
Bake for 30 minutes.
