    Wash food

    Foodshouldbewashedanddriedthoroughly,

    removingsoftorspoiledareas.Becertain

    thatyourhands,cuttingutensilsandfood

    preparationareasareclean.

    Cut food uniformly

    Producecanbeshredded,slicedordiced,

    5mmslicesarebestforefficientdrying.

    Variation in drying times

    Dryingtimesareaffectedbythesizeof

    theload,thicknessoftheslicedproduce,humidityintheairandthemoisturecontent

    ofthefooditself.(Therefore,broaddrying

    timeshavebeengiveninthedryingtables).

    NOTE:Thefooddryermaybelefton

    overnight,howeverthismaynotachieve

    optimumresult.

    Werecommendtherotationofdryingracks

    every3-4hoursthroughoutdryingtimeto

    achieveevendrying.

    Testing for drynessBesuretolettheproducecoolbeforetesting

    fordryness.Totestfordryness,cutapiece

    openthereshouldbenovisiblemoisture

    inside.

    Uneven drying

    Ifyounoticeunevendrying,rotatethedrying

    racks,i.e.movethebottomracktothetop

    andthetopracksdown.

    Keep records

    Recordsofhumidity,weightofproduce

    beforeandafterdryingtimes,willbehelpful

    inimprovingyourdryingtechniquesforthe

    ImportantCheckformoisturebyshakingthecontentof

    returnedtothefooddehydrator,forfurther

    drying.

    Rehydrating Dried Foods
