She’s the inspirational down-to-earth supermodel with a passion for food and feeling good so it’s fair to say that Robyn Lawley is our kind of woman!

Just like us she is passionate about making all women feel feminine and proud of who they are, she’s a strong advocate of positive body image and healthy eating. Since becoming a first time Mum, Robyn’s priorities are her family, her health and her home.

Walking, hiking and playing in the park with her one-year old daughter are her favourite things to do when she’s not travelling the world. “I love camping too!” says Robyn. Robyn is all about casual comfort when she’s travelling, with jeans or leggings often being her go-to outfit.

INGREDIENTS: 8 egg whites, 2 cups caster sugar (sifted), 1 tbsp cornflour, 2 tsp white vinegar

TOPPING: 300ml thickened cream, 1 tbsp icing sugar, 1 tsp vanilla extract, 250g strawberries (hulled and sliced),

150g raspberries, 150g blueberries

METHODStep 1 Preheat the oven to 150°C and line a large

baking tray with baking powder.

Step 2 Before mixing, wipe all bowls and utensils with white vinegar as any trace of grease will prevent the egg

whites beating up to a good volume.

Step 3 Using an electric mixer, beat the egg whites until stiff peaks form. Add the caster sugar, cornflour and vinegar gradually and beat for another 3-5 minutes, or until you can no longer feel the grains of sugar

between your fingers.

Step 4 Spoon the mixture onto the prepared tray. Using a knife or spatula, shape into a circle at your preferred height (as this doesn't rise). Leave a little

room around the edge as it wil spread slightly.

Step 5 Bake for 1 hour (if too much browning occurs on top just carefully place some foil lightly over).

When done, switch off the oven and open the oven door slightly. Leave the pavlova in the oven to cool.

Step 6 For the topping, use an electric mixer to beat the cream, icing sugar and vanilla until soft

peaks form. Place pavlova on a serving plate and top with the cream mixture and berries.

NOTE: To make a berry sauce, heat the berries with some sugar in a saucepan until slightly thickened,

then cool and use to top pavlova.
