Mrs Eden, 60, was struck by the car on the footpath, in Milne St, less than 300m from her home.
She died in hospital after suffering catastrophic head injuries.
Mr Sandip told Beenleigh District Court his car left the road but was unable to explain why or how.
Mr pleaded guilty to dangerous operation of a vehicle causing death.
He was granted bail in May last year after it was revealed he bought a one-way ticket to India as soon as he discovered he would face charges.
Ratan Singh Sandip, 26, pleaded guilty to hitting and killing Mt Warren Park mother of three Beth Eden on November 27 last year.
The court was packed with many of Mrs Eden’s family and friends from Beenleigh including her two daughters who had made emotional victim impact statements to the court.

Trent Hall says he started hanging with a bad gang in Logan, south of Brisbane, to take his mind off family issues.
But he has also witnessed how easily a knife can escalate a situation, or get turned back on the person carrying it.
"You just carry that because you feel like you're on top of the world and no one can stop you," he said.
The 17-year-old said carrying a knife became normal practice, as a way of protection and status.
"I was with a mate, and we were just walking around and he was doing a bad deal," he said.
"The amount of times I've had police knock on my door. I just didn't want to do it anymore. I've had enough and I stopped.
"He got stabbed once in the leg, twice in the back. I don't know where he is

'We needed to act swiftly'
In the last financial year alone, there were 24,687 reported offences of that kind — up from 17,308 in 2014/15.
Logan Acting Detective Inspector Ken Murray said knife crime was a symptom of "people carrying knives".
Statewide figures released to the ABC by the Queensland Police Service reveal over the past five years there has been a40 per cent increase in the use of knives as the weapon of choice in homicides, manslaughter, assault and domestic violence incidents.
"Whilst we concentrate on the crime, and the harm that can be done, what is important to concentrate on is the people carrying the knives," he said.
"Without that knife on them, without them being able to choose, or make that bad choice to have that knife there, and to use it, knife crime won't exist."

Townsville's growing youth crime problem has it listed as one of the worst criminal hotspots in the world, with the regional Queensland city named alongside Tijuana, Baghdad, Caracas and Tripoli.
Labor MP Coralee O'Rourke said comparing Townsville to other crime hotspots around the world like Baghdad is "completely offensive to residents" but admitted "nothing is off the table" when it comes to finding a solution to the growing youth crime problem.
The city is ranked as the 60th worst location in the world for in terms of crime, according to Numbeo, the world's largest user- contributed database which provides statistics on global cost of living, housing indicators, health care, traffic, pollution and crime.

Townsville is considered to have a "high" level of crime, with an overall rating of 60.80 on the index.

Townsville also recorded 1829 offences for assault, 154 for robbery and 44 for sexual offences in the past 12 months, with these crimes reflected in the city’s safety index which was rated as "low" - particularly for the metric "walking alone during night".
Using a scale from 0 to 100, the global crime index scans user-contributed data to provide an estimation of the overall level of crime in cities across the globe.
A metric exploring crime increases over the past three years gives Townsville a "very high" index score of 82.73, with residents flagging break and enters (65.73), car theft (62.85), drug use and sales (70.18), and property damage (71.56) as the biggest concerns for the city.
Speaking to A Current Affair, State MP and former police officer Dale Last said Townsville's youth crime rampages were coming from a "core group of recidivist, high-risk offenders" who frequently break into homes to find car keys.
The three worst cities - Caracas (Venezuela), Port Moresby (Papua New Guinea) and Pietermaritzburg (South Africa) - are rated at84.92, 84.06 and 81.92 respectively.

"We know that crime is an issue and everyone in Townsville deserves the right to feel safe," she told nine.com.au.
"I think these young offenders are hunting as a pack if you like," he said. "They're feeding off each other, they're now treating it as some sort of game."
"There is nothing off the table. We will look at everything because we want to make sure that we are addressing this issue with the community."
Queensland police statistics from the past 12 months show 3005 offences related to unlawful entry, 2232 for property damage,6104 for drug offences and 919 for unlawful use of a motor vehicle - there was a total of 31,932 offences across all categories during this time.

While Townsville had been struggling with the amount of youth crime in recent years, Inspector Irvine said the week's offending had been significantly higher than normal.
Police have charged a 13-year-old girl with stabbing a shopping centre security guard with a pair of scissors after allegedly being caught shoplifting on Sunday night.
Inspector Damian Irvine said most of the crimes were being committed by a "very small group of recidivist juvenile offenders".
Townsville police are bolstering their numbers during peak times and urging residents to hide their keys as authorities grapple with a troubling spike in youth crime across the city.
"There was one elderly gentleman, they stole his insulin and then walked outside and realised it was of no value to them, so they smashed it on the ground," Inspector Irvine said.
In the past week, 32 cars have been stolen and police have received reports of about 140 break-ins and attempted break-ins.

"The local police, we're doing the best we can with the numbers we've got the moment," Inspector Irvine said.

The intruders, who Mr Thorley believes were teenagers, broke in through his back door and stole his wallet, keys and car.
Mr Thorley said the recent spike in property crime made him worried about becoming a target again.
Inspector Irvine urged local residents to start hiding their car keys in the afternoon, ahead of peak crime time overnight.
Kirwan resident Stanley Thorley, 82, told the ABC he has been living in fear since his home was robbed in 2018 while he sat on his couch.
An ongoing Townsville police campaign targeting property crime — Operation Romeo Seville — has resulted in 327 people being charged with 1,247 offences since October.
"Some of these juveniles have been arrested multiple times since Operation Seville has commenced, and have reoffended over and over and over again," he said.
"I've had a triple bypass ... if they'd have punched me in the chest, they would've killed me," he said.
"Reality is, right now, we need to hide our keys — it might help us try to get on top of the rut we're in at the moment."
'That's what worries [my neighbours and I] — we're at their mercy."
"Even now, you have to have the house completely locked up all day — you can't leave a door open, they'll come straight in," he said.
"The majority of these break-ins are being done for one reason and one reason only, and that is to secure a car to joyride around town in.

The State Government in December announced a “broadening” of Operation Regenerate in Townsville, with police liaison officers taking the lead on mentoring work while police officers focused on bail and curfew checks.
Opposition police spokesman Trevor Watts said the “staggering” $9.41 million Operation Regenerate budget could “easily pay for” an extra 70 full time police officers instead.
Of that, $235,000 has been spent on rostered overtime for 284 police officers and police liaison officers to “monitor, supervise and conduct bail curfew checks” on 64 at-risk young people.
Data revealed through a state parliament question on notice revealed a total of $315,000 of Operation Regenerate’s $9.41 million budget had been spent across the state.
NEARLY 300 police officers and police liaison officers have been paid overtime as part of a controversial multimillion-dollar program that involved them taking young offenders to sporting events and other recreational activities.
“Townsville residents want a stronger police beat, not kindergarten cops,” he said.

The Premier, who said she would look further into the operation when asked about it last week, clarified her position, but would not commit to scrapping the policy, or reviewing it.
He would not answer questions about Brisbane police officers engaged in the same operation, who have trialled the initiative for longer.
The spokesman said youth workers had a valuable role to play in breaking the cycle of offending and that involved them accompanying young people to sporting events or cultural events. However, the spokesman said police were not accompanying young offenders to major sporting games “as has been implied”.

The Numbeo website calls itself “the world’s largest database of user contributed data about cities and countries” and features a crime rating section with plenty of revealing data.
It places Cairns in the 83rd slot for the world’s worst crime cities — thankfully better off than Townsville in 68th place.

Resident Tony Miller was robbed two years ago and took CCTV footage to the police which led to an arrest.
Mr Farnham said the community needed to act because Ormeau’s location - half way between the Coomera and Beenleigh police stations - made it increasingly vulnerable to criminals.
He said he was disappointed there had been no additional funds pledged to boosting police numbers, or another station.
Crime statistics obtained by the Gold Coast Bulletin show that Unlawful Entry in Ormeau and Ormeau Hills has spiked in the last six months. Despite the increase and continued calls for additional police resources in the Gold Coast’s northern growth corridor, the State Government did not allocate any extra funding in its budget handed down on Tuesday.
“The police are doing the best job with what they’ve got,” he said. “I’ve got no time for anyone who criticises them, they don’t deserve to cop any abuse.
“The two guys and woman who robbed our place had robbed 22 houses,” hesaid.
“We’re so close to the Mi so anyone who gets spotted as being suspect, they just get straight on the Ml and they’re gone.”
“It’s so easy as we’re at least 10 minutes drive from the police station and that’s assuming the police are in their cars and ready to go,” he said.
“Don’t whinge, get off your bums and have a crack and rally the government.”
Ormeau is located halfway between Beenleigh and Coomera police stations.

Jake Farnham has lived in Ormeau for more than three years and has called on fellow residents to pool together to fund a private security guard, or for cameras to be installed in the suburb.

“With all the waves of crime we get, I feel getting a security presence in the estate will take the pressure off,” he said.
“If every house put in a few dollars per week... set it up as an auto direct and it (the money) won’t be thought of and won’t be missed.”

But following the course the person had secured a Skills for Work and Vocational Pathways certificate.
She cited the first “transition 2 success” course run on the Coast last year for 11 at-risk youths.

Ms Farmer also cited another young Gold Coaster who had turned their life around.
“A young person appeared in Southport Children’s Court in the second half of 2019 for attempted robbery, robbery with actual violence and stealing offences committed in early 2018 while they were on a probation order,” she said.
• 77 per cent of young people who completed restorative justice conferencing did not reoffend or show a decrease in offending behaviour in the six months afterwards.
One of the participants had fallen out of the schools system entirely and had been placed on temporary bans and behaviour agreements.

THE state’s Youth Justice Minister has defended the State Government’s handing of the Coast’s “kindergarten crooks” crime wave, insisting a $500 million intervention is making a difference.
The Palaszczuk Government has been under pressure over the escalating issue since Parkwood teenager Jack Beasley was stabbed to death in Surfers Paradise two months ago.
Minister Di Farmer said just 10 per cent of offenders committed almost half of youth crime and more than $500 million was being spent to “break the cycle”.

Since the end of January, tensions between warring gangs have escalated to all-out violence with the most recent incident leaving a Brisbane tattoo shop, owned by Rebels president Mick Kosenko, up in smoke.
Forensic investigators set up a crime scene at tattoo parlour Koolsville Studios for days after the shop was deliberately set alight late last Thursday night.
The fire came two days after the shooting of alleged Rebels member Gokhan Turkyilmaz on the Gold Coast on Tuesday night.
