Consolación, a Delicious hotel & restaurant located in the Matarraña region in Teruel, one of Spain’s most beautiful unknown spots bordered by Castellón and Tarragona, opened its doors in 2009. Consolación is a truly unique hotel that offers a perfect blend of tradition, modernity, comfort and nature. Built next to a 16th-century hermitage, its rooms consist of individual wooden cubes perched on a cliff and reached through a natural garden blanketed in rosemary and thyme. It also boasts a notable restaurant, housed in a former barn converted into a dining room of stone wood, steel and glass. The menu is based on local products from the Matarraña region and combines respect for traditional flavours with aesthetic detail, and dishes alternate according to the season. The kitchen is a space open to guests and diners and offers a table where one can have breakfast on special days, with a stocked refrigerator available to customers who arrive when the cooks are resting.
