Registration
The registration desk will be situated at 4th
floor of Courtyard by Marriott Seoul Times
Square during the following time:
14:00-16:00, Tuesday, May 21, 2019

08:30-14:00, Thursday, May 23, 2019
A Polite Request to All Participants
Participants are requested to arrive in a timely fashion for all addresses. Presenters are reminded
that the time slots should be divided fairly and equally by the number of presentations, and that
they should not overrun. The session chair is asked to assume this timekeeping role and to
summarize key issues in each topic.
Certificate
Certificate of Presentation or Certificate of Attendance
A certificate of attendance includes participant’s name and affiliation, certifying the participation
in the conference. A certificate of presentation indicates a presenter’s name, affiliation and the
paper title that is presented in the scheduled session.
Certificate Distribution
Oral presenters will receive a certificate of presentation from the session chair at the end of the
session. Poster presenters will receive a certificate of presentation from the conference staff at
the end of their poster session.
The certificate of presentation will not be issued, either at or after the conference, to authors
whose papers are registered but not presented. Instead, the certificate of attendance will be
provided after the conference.

Preparation for Oral Presentations
All presentation rooms are equipped with a screen, an LCD projector, and a laptop computer
installed with Microsoft PowerPoint. You will be able to insert your USB flash drive into the
computer and double check your file in PowerPoint. We recommend you to bring two copies of
the file in case that one fails. You may also connect your own laptop to the provided projector;
however please ensure you have the requisite connector.

Materials Provided by the Conference Organizer:

Abstract
Aging is inevitable. According to data from World Population Prospects: the 2017 Revision, the
number of older persons - those aged 60 years or over - is expected to more than double by 2050
and to more than triple by 2100, rising from 962 million globally in 2017 to 2.1 billion in 2050
and 3.1 billion in 2100. The perception of aging from being seen as a challenge to revived
individuality opens the door to researchers of nutritional support foods/supplements that foster
self-care and enhanced functioning. Djulis (Chenopodium formosanum) is a native pseudocereal
plant in Taiwan. Apart from their abundant dietary fiber, minerals and essential amino acids,
Djulis grains are rich in phenolic acids and flavonoids, which are vital bioactive compounds
primarily responsible for their antioxidant capacity. However, there are many phenolic
compounds in bound form and some natural anti-nutritional factors such as phytates may cause a
decrease in the bioavailability of nutrients. Studies have shown that the fermentation of
filamentous fungi can release more free phenolics, enhance antioxidant activity, and reduce the
content of anti-nutritional factors in food. The aim of our study was to apply both submerged and
solid-state fermentations in order to enhance the bioactive and functional potential of Djulis
grains.

Abstract
Drying is an important way to not only preserved food, but also to deliver products with new
sensual enjoyments to the consumers. Traditionally, drying process frequently involves the use of
thermal energy that may produce substantial physical and chemical changes to the food being
processed. Consequently, these changes caused by thermal processing may result in many
undesirable reductions in product quality including loss of heat sensitive nutrients, excessive
browning, and hardening of product texture. As drying is the process of removing water from
food after overcoming its internal and external resistance to water transfer. Thus, any means that
reduce those resistances would improve the drying efficiency and cut the amount of thermal
treatment being applied on the product. In recently year, many novel technologies have been
developed to produce dried product with higher quality. These advances include pre-treatment,
techniques, and equipment all have showed promising advancement in industrial drying of food.
During the last few years, atmospheric-pressure plasma technologies has drawn great amount of
attention in many research fields including chemistry, material science, engineering, and
biomedical sciences due to its concentrated radical species that could promote rapid synthesizing,
etching, coating, and cleaning effects. In food science field, atmospheric plasma is mostly used
as a novel food technology to inactivate microorganisms. To better utilized the benefit of plasma
technology, the application of atmospheri-preesure plasma in food processing should be
extended to other area such as food drying. The atmospheric plasma containing large number of
reactive ions and radicals could be used to rapidly etched the surface of produce and, thus,
reduce the external resistance to water removal. Even though the developments of this
application is still at very early stage, the results from our recent investigation showed that this
technology definitely could be a good alternation to many drying pre-treatment with great
convience to be fitted to the existing manufacturing process and much less impact on the

Abstract
When one reads the term capital _ money may be the first thought envisioned, but in the field of
education and business, we have a variety of capital terminology that are appearing across the
tabloids, academic journals, and social media. The terms of key importance lately have been
Intellectual Capital, Social Capital and more importantly, Human Capital. What does the value
placed upon Human Capital, namely our workers and adult leaners mean to both business and
education? More importantly, what do we, as Human Capital mentors and facilitators,
generalize or conceive as the most relevant factors or impacting elements which can help to
enable workers and learners of today and for tomorrow? What values do we place on Human
Capital, as well as the business and educational enablers and drivers for creating and maintaining
the pathways for this group specific future as workers and learners? During the past two
decades the terms learning organization and organizational learning have developed from just
being rendy buzzwords_ to actual creations of knowledge management for organizations to
help learn from lessons learned and grow from the best practices of others to move forward in
the 21st century to hink smarter, not harder_ and to move from locally to globally ventures.
However, the strength of such a movement truly rests at the feet of today educators and
business leaders. What can we, as leaders and educators, do to enable, motive, and to support
our Human Capital or rather our Learning Capital? Take a moment and think about a recent or
previous leader or educator who helped you to think beyond your current dreams and image the
bigger picture of what you could actually do _ if given the tools to break free from your current
elf-referenced criterion_ of what you think your life should be in terms of your culture, family
setting, and socio-economic status. Then, consider what direction your life could be for
yourself and others with a newer, more enhanced, and motivational developed pathway in which
you, as a valued member of Human Capital in today society, could be set in motion to
become the next great leader, mover-shaker, change agent, motivational speaker or more _ how

could this change in direction enable you and others? Thus, we should not focus solely on the
tasks of just teaching and supervising, but rather we should assume an even stronger social and
ethical responsibility as leaders and educators to become the ew Generational Change Agents
for Social Adjustment (NGCSA)_. Consequently, we can enter a new era of change -- if we are
willing to enable it, nurture it, and envision unlimited change, rather than just a planned strategy
for a segment of time. We need to hink, implement and evaluate new dreams for our
Human Capital_ on a regular basis, and not at given ssigned times. Finally, we are the
masters of change and can control many destinies, if we dare to dream the possibilities.
However, change can only start when one is willing to become a uardian_ of the change
process to nurture it, envision it, and make it a reality._

Topic: How information and communication technology
help life in older adulthood? Perspectives and
experiences of the elderly in Taiwan

Abstract
The use of Information and Communication Technology（ICT has greatly facilitated people live
and work in the current society. In particular, the elderly has become the fastest growing
population using the ICT. The ICT has a variety of functions, such as gather information, social
networks and communication interactions. The trend using the ICT as a conduit for information
provision and communication, as well as complemented the growing demand for medical health
for the greying population became a global experience. However, to achieve the goal of
improving health, preventing or delaying the progression of chronic conditions, it is of great
importance to recognize how the use of technology networks can really provide an effective
health information acquisition channel for the elderly, and really facilitate the health behavior of
the elderly. The spectrum of using the ICT-related products among older adults varies a lot.
Whether ICT-related technology improved older adults’ quality of life, how current technology
might help for older adults with declining physical and mental functions, and those living with
comorbidities, loneliness, and weak economic conditions, are quires to be answered by research.
This talk will aggregate results of observational and interventional empirical ICT related research
among older Taiwanese to proffer discussions regarding the next frontiers between ICT and the
aging society.
