Ethical sourcingWe are committed to sourcing quality, healthy and fresh produce for all of our dishes, from both our home in Aberdeen and Mexico. Where possible, we support local suppliers and producers, but when we need an authentic spark that we cannot get here, we source ingredients from ethical suppliers straight from Mexico.

ADOBOSmokey chile marinade made of chile peppers, citrus juice, garlic and spices. Often served on pork, chicken and fish.

BURRITO A large white tortilla rolled up aroundfillings such as meat, salsa, rice, beans,and avocado.

CARNITASOften eaten for breakfast, these are corn tortillas with pickled onions and succulent pork that has been roasted in lard and citrus juice.

CHIPOTLEA chipotle is a smoke-dried jalapeo.It is a chile used primarily in Mexican andMexican-inspired cuisines.
