Introducing a “bite‐sized”, portable version of our Classic Roll.
Our objective is to appeal to a new guest, looking for something that’s less filling,
portable, and less messy but with all the great taste that comes from our Classic Cinnabon.

APPEARANCE• All Cinnabon Bites are round; not square and stand upright.• Frosting is evenly spread over entire top of each Cinnabon Bite, and running down the
sides in numerous areas.• Bake temperature is 175°F. to 185° F.• Color of the Cinnabon Bites are light to golden brown without looking burnt.• Each Cinnabon Bite has 2 ½ wraps.• Each Cinnabon Bite is approximately 1 ½ inches in diameter.• Gapping between wraps is preferably “0”.• All Cinnabon Bites in the pan appear consistent in size and shape.
FLAVOR• Each Cinnabon Bite has a full bodied cinnamon flavor.• The frosting provides a sweet, fresh taste. Cream cheese, vanilla and lemon flavors
are also present.
TEXTURE• The dough is smooth, tender and slightly chewy.• Cinnabon Bites eat moist throughout, without being “doughy” (underdone) in the
center. Air pockets appear when center is torn apart.• The frosting is smooth, not grainy, melts evenly and does not separate.

Receiving Instructions

• FTO Bites should be removed from the freezer section of the delivery truck and transported immediately to the in bakery freezer. Do not allow the delivery driver to “stage” the complete frozen order at the door of the truck or on the pavement outside the truck.
• Open and check 2/3rd of your delivery to insure that bites have not or are not thawed. Temp several bites from the open cases, they should be equal to or less than 0°F. Rolls should be frozen hard and should be loose from each other in the case. If the bites have been thawed and refrozen there will be ice crystals in the box.
• Rolls that have been temperature abused should be returned and the cases marked with a marker “REFUSED” due to thaw. This is so that they can’t be re‐delivered to another bakery.
• Place call to your DC andJuan Carlos Banderas‐Director of Quality Assurance (contact information on following page)and copy your FC on the delivery issues you have experienced to ensure the problems are corrected before your next delivery.

3Remove case of FTO bites from freezer.
Be sure to return case to freezer as quickly as possible.
5 (Full Pan)Out of the sight of the guest place Bites onto ¼ sheet pan in rows 5 x 6 ensuring that the top of the roll is facing up.
Skip to step 8 when making a full pan.

2Fold 1/3 of parchment paper under and press into ¼ sheet pan allowing ½ inch to extend over the edge of pan.

4Determine the top and bottom of each bite. The top of each roll will have a slight dome shape with a line through it. The bottom of each roll will appear smooth.
6 (Half Pan)Out of the sight of the guest place bites onto ¼ sheet pan in rows 3 X 6 ensuring that the top of the roll is facing up.
1Wash hands. Use soap and hot water. Rub hands together for 20 seconds. Dry with a single use, disposable paper towel. Put on food grade gloves.

12Cut between the Cinnabon Bites in all directions.
10Using an oven mitt remove pan from oven.
11Take the temperature of a roll in the middle of the pan. The internal temperature should be 175˚F. – 185˚F.
8Place the pan into the oven for approximately 16 – 18 minutes.
Remember: We always bake to temperature!
Avoid using position 2 to bake this product when possible it tends to be too hot and could burn the bites.
7 (Half Pan)Insert pan divider ensuring paper is folded over divider.
9Set the timer on the oven that corresponds to the location of the pan. Bake time should be between 16 – 18 minutes. It is critical to take the temperature to verify that product is fully baked.

18Move packaged product on to a HOT, CLEAN ¼ sheet pan that is already in use on the Hotplate or Hussmann Case.
Do not display product on ¼ sheet pan that was used for baking.
17Place the row of 6 Bites into the packing sleeve.
16 (Full Pan)Lift an entire row of 6 Cinnabon Bites using the off‐set spatula.
15 (Half Pan)Frost entire pan with ½ cup of frosting. Approximately 2.5 oz.
14 (Half Pan)Using an oven mitt remove pan divider.
13 (Full Pan)Frost the entire pan with ¾ cup of frosting. Approximately 5 oz. of frosting.

21When ordered; place a tray of 6 bites into the bites sleeve and serve to guest.
20When placing Cinnabon Bites on the hotplate the sheet pan needs to be set directly on the surface. Hold time is 30 minutes.When possible, bites should be used as samples prior to them expiring.
19When placing Cinnabon Bites in the Hussmann case be sure to place an empty baking pan into the space. This will help keep the pan level and the temperature even. Hold time on the Hussman case is 30 minutes. When possible, bites should be used as samples prior to them expiring.
After 30 minutes Bites should be discarded.

2Place a doily on a sampling tray. Next, place a “hero” pack of Bites in the center of sampling tray.
3Cut Cinnabon Bites into two pieces.
5Remove samples from microwave and top with small amount of frosting. Place into a sample cup or insert a toothpick into each sample.
4Microwave samples for approximately 10 seconds. Heat time will vary depending on wattage of microwave.
6Position samples around the display package. Serve to guest with a selling message.
Discard remaining samples after 20 minutes.
