My older sister is a great storyteller. Her penchant for embellishing however, has another family member cautioning to “take everything Ellen says and divide by three.” But she did get me thinking a few years ago when she said my mother prepared meals for our family of nine with a total of two spices in her kitchen—salt and pepper.

I have to disagree. I distinctly remember seeing a rusty can of cream of tar-tar perennially sitting next to a plastic container of dried onion flakes in our “spice cabinet.” You see, my mother’s passion is sewing, and what we lacked in spices we made up for with remnants stacked in closets.

But she did use that cream of tartar once a year to make “sticky icing” for my birthday cake (which I later learned was seven-minute frosting), and the onion flakes were used at holidays when she’d make incredible scalloped potatoes. The funny thing is, my sisters and I can’t sew a lick, but we all love to cook. We love to share great recipes and buy the latest gadgets. That’s why it was so fun for me to talk with Marilyn Harris and Pat Huller, two women who have each taught thousands how to cook, and to ask them to share their favorite pantry items, recipes, kitchen tools and a few design tips. See their answers and their kitchens on page 33.

Focusing on the essentials can often inspire a design team to create an

uncomplicated beauty. | With functionality and simplicity as the driving force

behind this master bath for a busy Cincinnati couple with small children, that

simple beauty was achieved. The design began with an effort to use clean

lines with white as a dominant color in the overall palette. And the end result

is a unique look worthy of attention.

“I like white and I like muted, earthy tones. I like a very Zen look,” says the homeowner. “So we have a white bathroom, but we brought a lot of color into it.”

Horizontal linesThe homeowner and her interior designer, Shannon Riley of Voltage, first introduced warmth to the space with the rich wood of the cabinetry. Against the dark cabinets and chocolate paint, a swath of unbroken white backsplash and countertop circles the room, melting into the white built-in tub creating dramatic, horizontal lines that draw any visitor into the space.

Finally a floor-to-ceiling wall of small, horizontal tiles of various lengths and widths in shades of white, brown and green lead into a curved-wall shower tucked off to one side. The doorless entry invites curiosity, but the purpose behind the design is all practicality.

“I didn’t want a glass shower because it is too much work to keep it clean,” says the homeowner. “To me, simplicity is very important. I want a practical bathroom that looks smart and is easy to maintain.”

Practical realitiesStaying true to the vision of the design was challenging when accommodating mundane decisions regarding construc-tion elements such as plumbing. One nec-essary work-around was moving the pipes for the shower from an exterior wall to avoid the possibility of having them freeze during cold winter temperatures. Then there was finding a way to have individual spaces that were separate yet adjacent.

“We wanted a his-and-hers space,” says the homeowner. “Most bathrooms have sinks right next to each other, but we each wanted our own space, and I wanted my area to have a longer counter.”

Riley says placing the white sinks perpendicular to each other accomplished the goal of separate “zones” without sacrificing overall flow. The extra work to achieve all the goals of the homeowner was well worth it, she says.

“The footprint of the space is nothing palatial, yet it has such a dramatic impact,” Riley says. “It’s modern while still being very warm and very soft.”

Love where you liveThe combination of recessed task lighting and ambient lighting and three westward fac-ing windows mean the bathroom is always filled with light. And that met the final goal the homeowner had—a bright room.

The Zen-like effect created gives the bathroom an airy, natural feel that can be difficult to achieve with an interior space.

“I still have a very good feeling when I walk into the bathroom after two and a half

years,” says the homeowner. “I occasion-ally wonder if there are things we could have done differently, but I feel the whole space has been used to its fullest. I just love it.”

And some sage advice on how anyone can achieve the bathroom design of their dreams: “You have to live in that bathroom every day of your life,” says the home-owner. “Visualize yourself in a space and see how your daily routine goes. By keep-ing things simple and functional, any bath-room can be smart and beautiful.”

Over the course of her career, Pat Huller has trained and inspired thousands of eager individuals who share a common dream. As chef instructor for the Midwest Culinary Institute (MCI) at Cincinnati State, one of Huller’s favorite job perks is sharing the passion students bring to the prep table. She enjoys the scientific aspect of the nutritional and healthy cooking course she teaches, and yes, she also loves the fact that unlike most of those she is teaching, she doesn’t need to worry about working weekends, nights or holidays.

“Usually, it’s a hard knock life for the first ten years in this business,” Huller says. “I’m lucky to have time off to spend with my family.”

Huller has been teaching others how to cook and handle food since she graduated with a degree in Home Economics from the University of Kentucky in 1973. For the past 21 years, she’s been on staff at MCI and has enjoyed watching that culinary program grow by leaps and bounds from about 100 students enrolled when she began to over 600 today.

“It used to be we all had to teach everything,” Huller says. “Now we all have been able to specialize. My colleagues are a diverse group. I enjoy all the positive interaction we have.”

Huller lives with her husband Tom in a striking Villa Hills hillside home that offers a sweeping Ohio River view from every room in the house. We asked her to share some of the wisdom she has collected during her years of working in the kitchen and teaching others about food.

What do you love about your oWn kitchen?Tom and I lived in a house for 18 years without an avail-able gas line. I was thrilled when we bought this house and gas was an option. When we remodeled the kitchen in 2003, I installed a 5-burner gas stovetop.

Also, the double oven is handy when cooking for a crowd. When I’m putting on a party—we have 60 for Christmas Eve—it’s great to have the two temperature options and the warmer drawer below.

What’s your favorite tool? I love my Cuisinart mini chopper. I use it to make spice blends, vinaigrettes, cold sauces, and grind up Wasabi beans to a flour to coat fish. (See recipe at housetrends.com.)

What Would you change if you could in your kitchen? It was a trade-off having the cooktop on the island, it would have been nice to have all that prep space. But I don’t like having my back to the room when I cook.

It would be nice if it were a bit larger. We considered expanding the room during the remodel, but didn’t want to destroy the turret ceiling and built-ins in the adjacent breakfast area. But it works—everything is so easy to reach. When I work in there I can do things efficiently and easily, but it’s not a kitchen where you can have five people working.

What do you cook for last-minute company?I usually pull together some sort of stir fry. I look around and see what I have before I decide whether it will be a fish base, chicken base or vegetarian.

What do you cook for family?Tom always cooks goetta, even in the summer. It’s something the grandkids will always eat. He uses his grandmother’s recipe. I usually throw together some pasta with homemade sauces. Every Sunday we host dinner for my son, two daughters and their spouses, my five grandkids who range from six months to five years, and Tom’s mother.

What ingredients are alWays on hand in your pantry?• I have all kinds of canned tomatoes.• Everything from the garlic/shallot/onions family.• Good chicken or vegetable stock. I really like Trader Joe’s

low sodium version.• A good assortment of grains. Couscous. Whole grain pasta—

penne, angel hair. Basmati and jasmine rice. • I always buy whatever vegetables are in season.• Year round, if I can, I buy fresh berries. I make smoothies a lot.

What items justify splurging? I like to serve Chilean sea bass, but it’s pricey at $22-$23 per pound.

What’s a common misconception regarding food preparation?Sometimes television programs make people think it’s a quick learning process. Learning to cook well and properly takes a lot of time and effort.

Marilyn Harris

What do you love about your kitchen?Even though we remodeled it 15 years ago, it’s basically timeless. It’s the ultimate compliment to our architect Don Beck who designed the kitchen and our second story addition. He did such a good job—that’s the advantage of an architect who knows good basic design and stays away from anything trendy.

What’s your favorite tool? My small ceramic chef’s knife (made by Kyocera). Look at how thin it slices this apple. (See Marilyn’s Apple Strudel recipe at housetrends.com)

I couldn’t live without my Cuisinart food processor. It’s a big Cuisinart—super-sized.

I love my commercial Thermador stove. It has a radiant ceramic broiler which produces a high BTU for searing steaks and such. It is almost a waste of time to try to sear something with a conventional broiler—it doesn’t get hot enough.

Outside, I love my Thermador grill. I use it all sum-mer when it’s too hot to turn on the stove.

What Would you change if you could in your kitchen? If I had room for it, I’d have a second dishwasher. If I ever remodeled my kitchen, I would make room for it. I would also love to have a steam oven. It’s a wonderful new appliance, similar to what professional chefs use.

Should you find yourself at any event focused on food in Greater Cincinnati, you won’t get far without meeting a friend, colleague or fan of Marilyn Harris. She is, without a doubt, one of the more visible—and audible—foodies in our area.

With culinary roots sprouting from Mississippi, Harris has travelled the world, studying in France and Italy and earning a Certificate from Le Cordon Bleu in London before settling in Cincinnati and beginning her career here as a cooking teacher and later as a food consultant.

This local icon is now in her 23rd year hosting her radio pro-gram “Cooking with Marilyn” which airs Saturday afternoons on 55KRC. She writes a biweekly column for The Cincinnati Enquirer and is the author of four cookbooks including “Live! From Marilyn’s Kitchen,” and “Cooking with Marilyn” which are available at local bookstores. Harris also gets face to face with her students when teaching classes at Cooks’Wares in Harper’s Point.

No matter the arena: radio, print, in person or during a phone conversation with a journalist, Harris easily conveys her passion for her industry and is always quick to offer a practical tip.

“Do you have an immersion blender?” she asks. “You need to get one. I use mine to make soups and sauces. Just this weekend I used it to make fresh cream of tomato soup. You don’t have to make a mess and pour everything out of the pan to blend it. Everybody should have one of those.”

Harris shares her soup and home with her husband E.P. in a charming older home in the gaslight district of Clifton. From their kitchen she shares her philosophy on good food and its importance in our lives.

What do you cook for last-minute company?Steak or chicken on the grill with a whole array of grilled veg-etables.

What ingredients are alWays on hand in your pantry?• Assorted vinegars. I use them for marinades and salad dressings.

My favorite right now is a white balsamic vinaigrette served with great fresh tomatoes from our garden.

• Always, always extra virgin olive oil.• Kosher salt.

What items justify splurging? Again, really good olive oil and vinegar. I always buy olive oil from Italy and always extra virgin. It assures you that you are getting the best of the cold pressed oils.

Actually, any money I spend on top quality food, I don’t consider splurging. Good food is an essential quality of living a good life. Save on something else—never on food. When I’m at the store, I may buy the cheapest wax paper, but I always go with quality versus price when it comes to food.

And, it’s impossible to spend too much on chocolate. There’s nothing like it.

What’s groWing in your herB garden?Basil, three kinds of sage, two kinds of thyme, oregano, tarragon, marjoram, usually cilantro and dill, but the heat took them out this year.

What’s your most memoraBle flop?The first pie I every made for my husband was a pecan pie. I’d never made one before. I had made lemon meringue types of pies where I would cut holes in the crust and pre-bake them. So when I made my pecan pie, I cut holes in the crust. When it baked, all of the filling leaked through to the bottom. When it was finished it was a layer of filling on the bottom, the crust in the middle and the pecans on top. E.P. said it certainly was “an unusual looking pie,” but it tasted just fine. That was early in our marriage and before I went to culinary school.

The home of Bob and Arlene Niehaus is nestled at the end of a secluded driveway enveloped by trees. It is green and lush as far as the eye can see—both upward and around—and that is exactly what sold the Niehauses on the property.

“In our last house, we had a wooded area behind us that we loved, but they came in and started developing,” Bob explains. “This property had just opened up when we started looking to move. There are only 15 homes on 87 acres, and we know it will never be developed.”

And move they did. Instead of downsizing as many empty nesters do after their children leave home, Bob and Arlene decided to increase their square footage in order to build Bob’s dream house. The couple also wanted to create a retreat for their three children and their families, including two grandchildren at that time. Six years later, and now with six grandchildren to entertain, the Niehaus home is clearly centered on family.

What happens at Grandma’s...It isn’t unusual to walk into Bob and Arlene’s home and find children. Whether it’s one of their older granddaughters searching for a snack in the kitchen’s walk-in pantry or their two younger granddaughters practicing their crawling and walking techniques on the carpet in the adjoining hearth room, there is always activity.

“This is probably our favorite area of the house and where we spend most of our time,” Arlene says of the hearth room and sunroom that connect with the eat-in kitchen. “This area is more casual and great for family dinners. The sunroom is a great place to read and watch what the weather’s doing outside.”

The dream teamWhile the main hub of activity in the Niehaus home is casual and comfortable, there is still an element of sophistication and class that is undeniable. The couple credits this to their design and construction team, which began with Kurlemann Homes. “We walked through a lot of homes, at Homearama and other places,” Bob says. “We were attracted to Kurlemann’s finishing work and detail.”

Bob and Arlene agree that their architect from Studer Residential Designs was wonderful to work with and brought life to the vision they’d created walking through classic Kurlemann homes. “Our house is actually the design of two of Kurlemann’s homes put together,” Bob says. “I was really impressed with Studer. They captured all of our ideas.”

Things were moving smoothly on the conceptual and con-struction side of the building process, but Arlene knew she would need the right interior designer to help her bring her husband’s dream house to life. Much in keeping with the way Bob and Arlene found other members of their team, they turned to Homearama to search for designers with style similar to their own. They were impressed with the work of Nancy Paul. Arlene says she clicked with Paul immediately. “I began to pick up her vibes, so we worked really well together,” Arlene explains. “If she thought I was headed in the wrong direction, she had her own way of steering me back on course.”

The couple had acquired nice furniture over the years that Arlene thought she could bring to their new home, but it wasn’t to scale with the size of their new space. Therefore, Arlene and Paul got to start from scratch.

“I knew what Arlene wanted, so we got along great and actually became great friends,” Paul explains of her client who she says was looking for a blend between formal and casual areas to meet the needs of her family.

Paul explains that differentiating between formal and casual living areas comes down to the fabric choices. “We used durable, more textural fabrics in high traffic areas like the hearth room and sun-room,” Paul says. “But we got to be more dramatic in the great room and formal dining room. I loved the great room. It had such huge windows that I got to dress with luxurious fabric.”

All about the viewIt’s no coincidence that the windows Paul so lovingly dressed provide oversized views of the Niehaus’ property. After all, it was the enchantment and relaxation of the wooded space that sold them on the location in the first place. Beyond the great room windows, a magical waterfall flows into a Koi pond where the Niehaus’ granddaughters can feed their fish and use their young imaginations to transport themselves to far-away lands.

“We have wild turkey, deer...” Arlene begins. “Pretty much any animal that lives in the forest ends up in our back yard.”

Bob and Arlene called upon Dan Lynch of Seiler’s Landscaping to help them carve their own niche out of the woods. “They definitely

The Niehauses knew they could count on Lynch to land-scape their dream lot because they had worked with him before on their previous land-scape. “They moved up to a three-acre lot, so we were able to be more creative,” Lynch explains. “The annual plant-ings are spectacular in the beds on both sides of the driveway. Every time I’m in the area, I sneak a peek to see how things are looking.”

Open door policyLynch isn’t the only person stopping by for visits. The Niehaus’ children say they love coming to see their mom and dad with their children. And neither Stephanie, Bob and Arlene’s daughter, or Alexandria, their daughter-in-law, thinks it’s strange that their parents up-sized instead of downsizing.

“Dad’s always wanted his dream house, so I was excited for them,” Stephanie explains. Alexandria agrees adding, “It worked out well for us too, because we bought their house in Sharonville.”

For the Niehauses, it’s all in the family.

Artistic ExpressionI love it when manufacturers put extra thought into a particular design. Kitchen and bathroom products need to be func-tional, but who says they can’t have a spec-tacular design to boot? “Thinking outside the box” fits perfectly when describing the Recess Shell hardware from Turnstyle Designs. Talk about jewelry for your cabi-nets. Also, the intriguing glass counter-tops from Think Glass are reminiscent of paint splashed on a blank canvas—no two are alike. Squared OffMaybe it’s because I am in the ballpark of being two decades older than my two traveling companions and perhaps feel-ing a bit “square” myself, but for some reason square shapes caught my eye at the show this year. And, maybe I need a bit of R&R because all three products I selected belong in the master bath, or as these spaces were referred to at the show—the spa-like retreat. I liked the sophisticated lines of Kohler’s Escale Dual Flush Toilet. It just adds a bit of dignity to the function and saves water with its eco-friendly dual flush feature. kitchen demolition begins mid-September. The space is completely gutted to make room for a couple’s dream cooking and entertaining area. By the middle of December, ninety-five percent of the renovation is complete. A few weeks later, an entire family arrives to celebrate Christmas.

How, you might ask, can a complete kitchen (and master bath) renovation be completed in three months?

“It was a complete collaboration,” kitch-en designer Laura Dalzell explains.

Homeowner Bonnie Briggs agrees. “Everyone collaborated and problem-solved throughout the process. We had a good plan, and we stuck to it.”

Bound for the BluegrassWhen Bonnie and her husband, Robert, moved to Kentucky after retiring from careers with Caterpillar, they felt lucky to find a place so quickly. “We found a won-derful house,” Bonnie says. “It was entirely functional with a great floor plan, but I knew from the get-go that the kitchen and master bathroom would need work.”

The Briggs decided to settle into their home and get a feel for how they used their kitchen before tackling a renovation. In the four years they spent in the old kitchen, the couple made a list of must-haves that included new appliances in a more accommodating layout, a function-ing island with storage, and wider door-ways and openings flowing into and out of the space.

“The sink, cooktop and fridge were so crammed together,” Dalzell says. “They couldn’t move comfortably while cooking.”

Dalzell, owner of Cabinets & Designs, Inc., was recommended to the Briggs by their neighbors. “We’d also seen Laura’s work at a kitchen open house we attended every year to get ideas about what might work in our kitchen,” Bonnie says.

The Briggs used their design backgrounds—Bonnie in graphic design and Robert in industrial design—to part-ner with Dalzell on reconfiguring their kitchen. “I knew I wanted a larger window over the sink, and I knew I didn’t want traditional upper cabinets that tend to close the room,” Bonnie explains. “Robert really wanted a coffered ceiling, and we both wanted to open up the space between the kitchen and dining room.”

It’s hard to believe the Briggs’ new kitchen was hiding beneath the surface of their dated space. The old kitchen seemed crowded and small, but the new space has a more open flow. The rectangular island is crafted to look like a piece of furniture instead of an obstacle to maneuver around while cooking. Along the same lines, the absence of traditional upper cabinets opens the space. Cabinets have been crafted to look like furniture pieces drawing the eye up with vertical lines. Stainless steel appliances and fixtures add a modern touch while the faint green cabin-etry adds softness.

“We carefully planned where everything was going to go—down to the island where each drawer has a specific purpose,” Dalzell adds. “This kitchen had amazingly pre-cise planning.”

There are many labels given for the practice of making

your home easier to live in, and countless resources for

you to visit to find out the latest information, statistics and

advice. You never know what the future holds, whether

that means having to transform your house to grow with

you, or dealing with an unexpected disability that changes

the way you look at your home altogether. Let’s be honest,

The first obstacle to someone who is disabled, or simply having a harder time getting around than they used to, is getting inside their home, or the home of a loved one. “Being able to get into the house is the first piece of the puzzle,” says Rosemarie Rossetti, Ph.D. and president of the Universal Design Living Laboratory, located in Columbus, Ohio. “You need at least a 36-inch wide door somewhere on the property and it needs to be as smooth as possible so you don’t have to pop a wheelie to get in or out,” she says.

According to Lisa Sandlin, an expert on universal design and owner of Lisa Sandlin

Design in Cincinnati, OH, all houses should strive to be at least visitable. This term is fairly new to the housing industry and refers to the minimal requirements of an accessible or stepless entry and one accessible bathroom. This way everyone can feel comfortable and have peace of mind that they won’t be excluded from visiting friends, while homeowners will feel confident that they won’t need to turn anyone away from their home.

When turning to the design of the structure, one should look at the interior flow and circulation patterns of the home. The elimination of as

changing, but there are simple steps and modifications that can be made for everyone.

Rossetti and her husband will soon be calling the Living Laboratory home and when guests walk into her kitchen she says they won’t notice a drastic change. “They’ll see it as a spacious and open kitch-en,” Rossetti says. Her kitchen includes various heights of counters, which she says gives some flexibility for everyone who might live or visit there. “Children can work in here, or someone who is seated, or even my husband, who hap-pens to be very tall,” she says.

According to Sandlin, pas-sageways need to be wide enough for more than one user to work comfortably together in the kitchen. “The standard 36-inch passage is too tight,” she says. “I try to provide 48-inch passageways if pos-sible, but never less than 42.”

Sandlin recommends a raised dishwasher, which can be great for homeowners with lower back issues, or home-owners in wheelchairs. Cabinet manufacturers are now offer-ing dishwasher cabinets that range from 7 to 9 inches above the standard height.

A must-have for Sandlin is a movable cart on lockable casters because she says it works wonderfully as a cutting surface, serving counter and pastry board. “When prepar-ing vegetables for a stir-fry I can unlock the casters and move the cart next to the

many hallways as possible is a good thing to think about so no floor space is wasted. Being in a wheelchair herself, Rossetti recommends 5-foot turning spaces in many of the key areas of the home so there is always functionality inside the home.

The kitchenAs we all know, the kitchen is the gathering place in a home. It is where everyone ends up cooking, eating, talking or just hanging out. The importance of this room doesn’t disap-pear with age, or the addition of an unexpected disability. It’s probably the most over-whelming room to think about

stove for a convenient transfer to the skillet,” she says. “This is a convenience for me now, but later in my elder years, it will most likely be a necessity.”

The bathroomMaster baths have certainly become a luxurious space for home­owners. It’s a place where everyone can go to relax and enjoy the comfort of being home, a feeling that shouldn’t be limited for anyone. There are many options out there today that allow the bath to stay on trend and beautiful, while at the same time ensuring safety.

For Sandlin, a bathroom that works for life begins with an entry door that does not swing into a space designated for any other use in the bathroom. This access may be achieved with the use of a pocket door. Doors that swing out from the bathroom would also permit access in the case of emergency.

Curbless showers are quickly becoming a popular choice for homeowners, as they allow dignified access for everyone. “The shower base is formed to slope toward the drain allowing the water to flow away from the door opening,” says Sandlin. “Inside the shower stall we should find grab bars, a seat, shampoo and soap storage and appropriate faucets.”

When building a new home, small steps can be taken to prepare for the future. “If you don’t need or want grab bars in the shower
