Our Hotline can also be used to report suspected fraud, waste and abuse in accordance with the federal Deficit Reduction Act of 2005. The Hotline number is posted throughout the facility. An Administrative Assistant will take calls, or you can record a message when no one is available. Please follow the instructions when leaving a recorded message. Your call is confidential, but you do need to provide your name and telephone number, in case we need to contact you for more information, and to inform you of the action taken. REMEMBERING DAYS GONE BY...Hoping that most of us here

at Cedarbrook had a wonderful holiday. Those who are Orthodox will be celebrating their holiday season. Starting with their Christmas on January 6th and ending with New Year Day on January 13th.

I grew up on the South Side of Bethlehem, which was the core of the different ethnic population. Among all the churches there, only four of them were of the Orthodox faith. In years after, the Second World War most churches moved to the North side of Bethlehem. One of the reason’s was because of the Bethlehem Steels expansion. One of the reasons was because the steel company needed the room so that they could have parking lots for their workers.

We also will be observing Martin Luther King, Jr.’s birthday on January 19th. We remember that he was a strong leader against the turmoil of the people he had represented.

Remember to bundle up if you go out for a visit to your relatives or a doctor’s appoint-ment.

I remember when we had snowfalls of 6 inches, 10 inches

and 12 inches. My husband Bob made sculptures with this snow of Rodin's The Thinker. He also did a six foot representa-tion of Michelangelo’s David and many others. Photos of them were in the newspaper.

In Memory - Margaret Zubek It was four year ago when Margaret Zubek moved into Brookview Apartments. Since I lived down the hall, it wasn’t long before we became dear friends. We shared many things during that time. Margaret was always well-dressed. Many times she looked like she was going “out on the town”. She always had a supply of candy and would share it with all her visitors. Her passing has definitely left a void at Brookview. Until we meet again, Rest In Peace my friend.

We are so pleased to see you. The Cedarbrook staff values the visits from the residents’ friends and family. Our newly renovated Family Room is now open. The new room is designed to give our residents a space to enjoy activities, spend time away from their units, and visit with family and friends. On special days/holidays when many families are visiting and would like to bring extra guests, we will try to make extra space available. As a result, we will no longer be accepting reservations for tables.

Recently Cedarbrook Volunteers were celebrated at a sumptuous Holiday Brunch which was prepared by Sodexo’s Director, Karen Carr, Allentown, and Jean Waitkaitis, Fountain Hill, along with their staff, they are to be congratulated for outdoing themselves again this year. Along with the great food, volunteers visited with each other, played games, and received a lovely little gift to show our appreciation for all that they do at Cedar-brook. Our volunteers work with a heart full of kindness; they work to benefit others. This is what makes them so very special and why is it is our honor and pleasure to show them how deeply we appreciate that they continue to volunteer with us. THANK YOU! Young, old, or just plain middle age………we need you all. Come volunteer! Just contact the Volunteer Department and set up an appointment. Our need for volunteers is on-going. Right now we are looking for in-house transporters, pinochle players and evening and weekend volunteers at both facilities. We would also love some more volunteer visitors. Please check your calendars and see if you have room to help out just one day a week for approxi-mately 2 hours. A great big THANK YOU from all of us at Cedarbrook for

1 (4 pound) pork loin roast

1 teaspoon caraway seeds

salt and pepper to taste

2 cups sauerkraut with liquid

Cut pork loin, if necessary, to fit in the slow cooker.

Season with caraway seeds, and salt and pepper to taste. Pour sauerkraut over the roast. Cook on

High for 1 hour, then cook on low for 5 to 6 hours. Internal temperature of the roast should be at least

145 degrees F.

1 (6-8 lb.) fully cooked bone-in

ham

48 whole cloves

1 (16oz.) package light brown sugar

1 cup spicy brown mustard

1 cup cola soft drink

3/4 cup bourbon

Preheat oven to 350 degrees. Remove skin from

ham, and trim fat to 1/4 inch thickness. Make

shallow cuts in fat 3/4 inch apart in a diamond pattern. Insert cloves in centers of diamonds.

Place ham in a lightly greased 13 x 9 inch pan. Stir together brown sugar, spicy brown mustard, cola

soft drink and bourbon. Spoon mixture over ham.

Bake at 350 degrees on lowest oven rack for 2

hours and 30 minutes, basting with pan juices every

15 to 20 minutes. Remove ham from oven, and let stand 20 minutes before slicing.

1 (18.4oz) package brownie mix

1 cup vanilla frosting

1/4 cup peppermint candy, crushed, more for

garnish 1/4 tsp. peppermint extract

Make the brownie batter according to the package

directions. Line a mini muffin pan with paper liners

and fill each 3/4 full with the prepared batter. Bake for about 15 minutes, remove from oven & cool. Combine

frosting, peppermint candy & extract. Remove cooled brownies from pan, frost & sprinkle with peppermint

USE OF PSYCHOPHARMACO-LOGIC DRUGS - These drugs may

only be administered to you on the orders of a physician and only as part of your written plan of care. Your plan of care must describe the plan to eliminate or modify the symptoms for which the drugs are prescribed. At least annually an independent, external consultant must review the appropriateness of your receiving such drugs.

Highlights:

Guidelines for Family Room usage have been established and will be displayed on table tents in the Family Room.

Please do not throw anything in the Fish tank in the Family Room.

Washer and Dryer on C-1 will be relocated to the PT/OT room.

Painting of the Auditorium will begin after the holidays.

Dietitian’s Corner Program

December is here! A time to celebrate many holidays as we end one year and begin another. Our building is very busy with many visitors and holiday parties. We hope you enjoy this festive time. Dining Services has added a few special items to our menus over this season and we hope you enjoy them. We remind you that if you have any food prefer-ences or concerns your Dietitian is always available to assist with your concerns. We also encourage everyone to join us at our monthly food committee meeting following resident council to offer any concerns and suggestions for our menu items. A reminder that this beautiful time of year also brings food items from family, friends and visitors. Please help to keep everyone safe by having your items stored in containers and in the refrigerator labeled with name and date as needed. Wishing you all a wonderful December. Thank You

December Birthday Party was held on Tues-day, December 5, 2017. We had 22 resi-dents attending and 12 who elected to stay on their unit.

We have changed our house egg noodles from a Medium Egg Noodle to a Bow Tie Noodle. The quality of Medium Egg Noodle was very poor.

Noon Meal December 14th - Breaded Chick-en Croquettes with Gravy and Coconut Cream Pie.

December 24th Evening Meal: Ring Bologna & Cheese with Mustard & Crackers, Potato Salad, Fruit Cocktail.

Let me take this time to wish you all a happy and blessed new year. Let me please offer a few words of advice for the upcoming year. Live your life like a healthy church. What???, you ask. A healthy church is based on three fac-tors. The word of God, fellowship and prayer. Make it a point to read the Bible more, or listen to sermons on TV or at-tend our Sunday worship services. The more we learn about God, the more our faith will grow. Next, surround yourself with people who will encourage you. Nothing is worse than spending your time with people who continually drag you down to their level. You will on-ly ever be as good as the company you keep. I live by those words and so should you. Last but certainly not least, prayer. In my office is a little piece of wood that someone gave me once a long time ago. It has the words on it, Prayer Changes Things. When faith is mixed with prayer mountains are moved! I have seen numerous answers to prayer in my first year as the full time chaplain. I personally look forward to this upcoming year and seeing what God will do for all of us here at Cedarbrook.

Therefore, we would like to offer these tips to help you keep your money and valuables safe from loss or theft. Since you have access to the money in your account during normal business hours Monday through Friday, we suggest that you only withdraw the amount you need for immediate use. If you need larger sums of money for gifts or to reimburse your family members for purchases made on your behalf, we suggest that you contact Financial Services to arrange for payment by check. If you choose to keep money and valuables in your room, we highly recommend that you secure such items in the locked drawer of your bedside cabinet. Keep your key with you, or keep your key out of sight in a safe place. As soon as you realize that your money or property is missing, it is important to report it immediately to the Charge Nurse. Cedarbrook will not assume responsibility for replacing missing property kept by res-idents on their person or in their room. However, we will take action to investigate, and to try to recover your property if possible. Finally, we ask that you help us maintain a current inventory of your personal property. Any property that you purchase or receive during your stay should be added to your Valuables Received After Admission Form, including a description of the property. This infor-mation is essential when trying to locate missing items.
