Chocolate Pudding and the Effects
on the Final Product

Purpose of Our Experiment
• 2.3% of the adult population in the United States were vegetarians, about 1.4% were vegans (ADA, 2009)
• Increase risks of nutrition deficiencies: calcium, iron, zinc, vitamin B-12, vitamin D, riboflavin, and especially long-chain omega-3 fatty acids
• Essential fatty acids, EPA and DHA cannot be produced in the body
• Fish is the major dietary source

• Hemp seeds are naturally rich in omega-3 fatty acids.
• Hemp milk a good alternative of cow’s milk for vegetarians and vegans.
• Recommendation = 500mg/day
• 1 cup (240mL) = 5g omega-3 fatty acids
• More than any of the nondairy milk
Review of Literature
• Vegans tend to have lower blood concentrations of EPA and DHA compare with meat-eaters (Craig, 2009)
• Omega-3 fatty acid supplements are available, but it can cause harm to the body if excessive amount is taken (Craig, 2009)
• Plant0based milks could be good dietary sources for vegetarians and vegans to increase their intake of omega-3 fatty acids

• Why we choose hemp milk?
• Optimum balance of omega-6 and omega-3 fatty acids is needed for the body, for vegetarian is between 2:1 and 4:1 (Marsh, Zeuschner, & Saunders, 2011)
• Hemp seeds have 3:1 ratio of omega-6 to omega-3 fatty acids (Vahanvaty, 2009)
• Hemp milk is plant-based, safe for pregnant women, mercury free! (Vahanvaty, 2009)

• Function of omega-3 fatty acids ▫ Play a very important role in the growth and
function of nervous system (innis, 2008). ▫ Inadequate intake would result in deficits in the
development of never tissue, leaning ability and visual function (Innis, 2008).
▫ Increased needs for pregnant women for development of the fetus (Craig, 2009)
▫ Maternal intake of omega-3 fatty acid contributes to the DHA levels in breast milk (Kennedy, Luo & Ausman (2012)

Conclusion
• Vegetarian and vegan diets provide many health benefits, but nutrition deficiencies could happen if it is not well-planned
• Hemp milk is a good source of omega-3 fatty acids to be added in vegetarian and vegan diets
• Based on the results of the sensory evaluation, the experimental samples are quite acceptable to the tasters
• Further research is need to improve the quality of our product
