Add almond flour, cocoa powder, stevia, and salt to a separate large mixing bowl; whisk to combine. 3. Slowly add almond flour mixture to egg mixture; whisk until smooth. Set aside. 4. Make filling by adding ricotta cheese, stevia, extract, zest, and salt (if desired) to a food processor; cover. Process on high for 2 to 3 minutes, or until thick and creamy. Refrigerate until ready to use. 5. Heat a large nonstick skillet over medium-high heat; lightly coat with spray. 6. Pour approximately ¼ of batter into skillet; cook for 2 minutes, or until dry on edges. Flip; cook for an additional 1 minute. Remove to a plate; cover with a clean towel (or paper towel). Repeat with remaining batter (should make 4 crêpes). 7 . Place 2 crêpes each on 2 serving plates; spread approximately 2 Tbsp. filling on half of each crêpe. Roll up crêpes to form tubes.
