CHILI COOKOFF SALSA CONTESTI AM COMPETING IN THE: (you may participate in both!)

1. There are no restrictions or requirements as to the ingredients (within reason.) No ingredient may be pre-cooked in any way prior to the commencement of the o�cial cook-o�. The only exceptions are canned or bo�les tomatoes, tomato sauce, peppers, pepper sauce, beverages, broth and grinding and/or mixing of spices. Meat may be treated, pre-cut or ground. Meat may not be pre-cooked, in any manner. All other ingredients must be chopped or prepared during the preparation period.2. You must be an active ICS member ($20 ICS Membership Fee) to compete.3. You must be at least 18 years old by January 27, 2018 to participate.4. The cooking period is 3:30 p.m. – 7:30 p.m.5. The Meadowlands Racetrack will conduct a contestant meeting @ 2:30 pm on January 27 and provide �nal instructions and answer any questions. 6. Contestants must bring their own supplies, crock pots, hot plates, cooking utensils, ingredients, etc. and must have a class K �re extinguisher. The Meadowlands will provide a cooking area for each contestant. If a gas burner is used all cooking must be done outside the Grandstand building on the East Apron.7. Each contestant must cook a minimum of two quarts of competition chili prepared in one pot which will be submi�ed for judging. Sharing or spli�ing chili for judging with another contestant for the purposes of increasing the number of entries is prohibited and results in automatic disquali�cation. 8. Contestants should cook enough additional chili to provide samples for the fans who will taste and vote for the People’s Choice ($250) at 8 p.m. immediately following the o�cial judging.

9. On the night of the contest, each contestant will be assigned a contestant’s number by the Chief Scorekeeper and given an o�cial 32oz ICS judging cup. In order for the cook to receive the judging cup, he/she must sign the contestant list and provide his/her active ICS Membership number. Each contestant should verify that the number on the bo�om of their cup is the same as their assigned contestant number. Each contestant is responsible to deliver their cup, which must be �lled to the top of the cup’s brim to the judging area at the o�cial time for judging at 7:30 pm. 10. Chili will be rated based on good chili �avor, texture of the meat, consistency, blend of spices, aroma and color. 11. Salsa may be made at home and brought to the track for judging. It cannot be commercially made salsa.12. A minimum of 10 contestants must compete in the Homestyle chili cook-o� for it to be a sanctioned ICS event. With fewer than 10 contestants the winner will not qualify for the 2018 ICS World’s Championship Homestyle Chili Cook-o�. Cash prizes will still be awarded.13. Management decisions with respect to all of these rules and regulations shall be �nal and binding on all participants. 14. The following are ineligible to participate: employees of Meadowlands Racetrack (as well as owners, trainers, drivers and their agents who currently have horses racing), Ark, Funbars, Sportech, a�liated vendors or suppliers, or the immediate family of any of the previously listed. 15. Meadowlands Racetrack reserves right to disqualify any entries.16. Prizes are not transferrable; no substitution of prizes is permi�ed.17. All taxes associated with the receipt or use of any prizes is the responsibility of the winner.
