Two people who have truly lived joyfully are Dr. Phil Bosserman and his wife Carol. Both worked for Salisbury University for nearly 30 years and it was their vision that the University teach peace and conflict resolution courses as well as house a center devoted to peace and conflict resolution. From initial concept meetings around their dining room table in the 1980s, where the Cen-ter for Teaching Peace and the minor in Peace Studies began, Phil and Carol have constantly contributed their expertise, passion and financial resources to see that the Center became a leading outreach organization at Salisbury University. Arun Ghandi, the grandson of Mahatma Ghandi will speak at the college this fall as part of the valuable outreach the Center for Conflict resolu-tion offers. Dedicated to Dr. Phil Bosserman

Almost 80, Long-time advocate for Peace, Salisbury University Sociology Professor, and founder, along with his

wife Carol, of the Center for Conflict Resolution.

October is full of impossibly perfect days, a crimson light and wind that wraps a friendly arm around your shoulders steering you the long way home. It is a month of lingering when possible. A nice place to be. In late August I had the opportunity to crew on “The Taya” a stunning metal clad bluewater sailboat with an inverted V keel. It was her shake-down cruise after 4 years of planning, welding and tweaking by my friends Alan and Katy. It is challenging for me to carve time away, but when they needed another hand, I eagerly signed on. As the skyline of Ocean City fell away, the wind stiffened and we shot forward through high rolling waves. The sun set, the moon rose, and we took turns on watch, each of us struggling with the deep fatigue of riding hard weather. Our 40 mile long tacks took us far out into the blue water and back in where a dark front of smoke from the Dismal Swamp fire smudged out the moonlight. Over several days we contended with too much wind, too little and a head on breeze that caused long hours of motoring. My friends worried that I might be sorry that I came along. Not at all. When life is minimized to you, the sea and the motions of going forward it is a gift of supreme simplicity: bread ripped and smeared with goat cheese and a ripe tomato, conversation, silence, naps, a chapter journey to some far off place in a book and back to the water parting in front of our sharp bow, dolphins feeding off to port. We returned to the Crisfield Harbor in utter darkness, calculating the buoy lights from the land mass. A slight motion ahead clarified into one of the Smith Island ferries, jolt-ing forward on a rolicking “Benefit Cruise” sending country music drifting over the soft waves. We pass like shadows, singing back to them. As I write this Hurricane Irene pounds by outside and I wonder that we still have power. But we are at home as nature has her way with us. Another chance just to be.Not a disaster, just a day doing something else. bon voyage,

Dana Simson

what’s done is doneWell, we had a good run, drought and all. At it’s height our garden was prolific and the picture of what I had hoped it would be. We were showered with tomatoes, peppers, herbs, fruits of all kinds and before it got too hot, colorful tasty lettuces. Our fickle friend Irene directed her wrath elsewhere, while here on Delmarva a half hearted-trouncing crushed the garden and shook every apple off our trees. No matter, some of those apples were up pretty high. We gathered boxes of those along with bundles of sticks (to start wood stove fires with in winter.) When life gives you hurricanes- make apple sauce!note to self for next yearEarly on when the peach and apple trees wereloaded with buds, then tiny fruit, did I say to myself, “ Hmmm, I wonder if I should cullthis tree?” The answer, which I did not do is“Yes!” Even though you are dazzled by all that potential fruit growing ever more plump, you must pull it off at this point, or it willsnap the branches off your tree, like a sinkingboat with one person too many. Hurricanes and drought further bully our over fruited trees, and I’m sad to say a few suffered very bad trims by Mother Nature.tidying up- (post storm or season)*Dip your pruning tool in a mixture of 10 percent denatured alcohol and water when cutting off diseased branches to ensure you don’t spread the diseases. Prune areas par-allel and 6 inches from the growing branches to provide a smooth cut. Avoid leaving any stubs. Don’t apply any type of sealant, the tree will do its best to form scar tissue to protect the wound. A sealant tends to trap moisture inviting rot and fungus infec-tion. NOTE: the main pruning of trees should be done in deep winter.* Pick up any diseased or rotting fruit off the ground. Rotting fruit will not only attract wildlife and insects, but it can also infect the tree with fungi spores. Treat the fruit tree with a fungicide if the tree has been infested with a fungus.* Clear and clip any broken or dead plants out of your garden. You may get a few more weeks out of the plant. Don’t put diseased plants into your compost.

*Almost done tomato plants with green tomatoes may be cut at the base stem and hung upside down-& your maters will still ripen. Some gardeners wipe down their to-mato cages with a 50/50 bleach water mix before stowing for the winter. I applaud that, but that is simply time I don’t have. Next year I may use all bamboo fences, they took on the wind far better .*Harvest the individual leaves of tarragon, rosemary, basil, sage and other culinary herbs and dry them indoors. Herb leaves are most intensely flavored right before the plant blooms. Snip foliage in the morning after the dew has dried. To dry herbs for storage, tie the cut stems together and hang them upside down in a dry location. Cover with a paper bag to avoid losing the shattered leaves. Store dried herbs in glass jars away from light and heat. Fresh basil can also be frozen in plastic containers. Finely chop basil and cover with olive oil. Freeze in ice cube tray, pop out and stow in freezer bags.*Plant winter greens asap if you haven’t gotten to it. With our mild weather, you can have them through December.

recipes

* 2 cups sugar * 2/3 cup light corn syrup * Assorted candies and seeds, such as red and black licorice whips, candy corn, gummy worms and pepitas (hulled pumpkin seeds) 1. Line three baking sheets with parchment paper. Prepare an ice-water bath; set aside. 2. Bring sugar, corn syrup, and 1/4 cup water to a boil in a small saucepan, stir-ring until sugar is dissolved. Don’t stir, but occasionally wash down sides of pan with a pastry brush dipped in cold water to prevent crystals from forming; boil un-til mixture turns golden and registers 300 degrees to 310 degrees (hard-crack stage) on a candy thermometer, 5 to 7 minutes.

3. Immediately set pan into ice-water bath to stop the cooking (syrup will steam vigorously); let sit about 20 seconds. Swirl pan 2 minutes more to cool.

Photo courtesy of Jay Fleming to see more of his photos go to jayflemingphotography.comThis recently bygone structure was home to wildlife such as eagles and other shorebirds,

including hundreds of brown pelicans, who have moved their nesting grounds north in the last several years due to the general warming of the planet.

Over the last 4o years an influx of professionals and a growing tourism industry have swayed the demographics of Delmarva from a strong agriculture and seafood focus. Higher education, tech and service industries have attracted the folks from our many small towns to move to larger population centers like Salisbury, Dover and Easton.Combine this with rising property values, expenses and increased regulations for inde-pendant farmers and watermen, and those that wish to continue in these time honored professions have learned to go forward in some cases by pulling ideas from the past, establishing smaller organic farms and diversifying to include various crops and animals.Working the water presents a different set of challenges, and in the last several years an alliance of sorts has sprung up between watermen and environmentalists as they work to preserve the health of the bay. I interviewed writer, environmentalist, and Salisbury University professor Tom Horton and Mick Blackistone Editor, Waterman’s Gazette on how this lifestyle might be maintained as we go forward. What is the current situation as to the health of the blue crab and chesapeake bay oyster?(Tom) “Oysters were being overharvested as long ago as the 1870’s. In more modern times, increasing pollution, including the natural disaster of Tropical Storm Agnes and its huge sediment loads in 1972, and diseases like msx and dermo all came to bear...I think natural oyster reef restoration is well worthwhile as it would improve water quality and provide tremendous new habitat for a host of marine life. two caveats: I think we couldn’t harvest such restorations commercially...maybe harvest around their fringes if they became successful and widespread; and I think it is unlikely such restoration can put back anything like the oyster reefs the bay had a century ago. I think we can have a thriving oyster farming industry, employing a lot of watermen and others... if there’s any-way to keep it in the province of lots of small producers versus a couple big companies, that’d be ideal. Blue crabs are within reach of producing a truly sustainable, prosperous fishery. The annual surveys and monitoring, and the cooperation of most watermen are at a point now where we can set realistic harvest quotas each year, with Maryland and Virginia cooperating pretty well, which is critical. As with oysters, both overharvesting, mainly of females, and pollution, a lot of low oxygen water each summer, have ham-mered bluecrabs; but as I say, they are now on the way back. Water quality still needs to improve to see a fullblown healthy fishery.”

l i f e s ty l e how are today’s waterman rising to the many challenges that face them today.....(Tom) “It’s tough today to be a young waterman trying to make a full time living from the bay, but some are doing it. Somehow I think watermen have to figure out how to get more money from what they catch. How? Co-ops would be one way, cutting out middlemen; marketing direct to retail markets, even ‘boutique’ markets might work for some. Controlling harvests so they don’t glut the market and sell lots and lots for little money would be another...again requiring far more coordina-tion and cooperation than exist today. There are some promising efforts underway to help this happen.”What are the chief obstacles for young watermen wishing to take up the business (Tom) “Right now it’s proving easier to restrict harvests than to improve bay health...we can do the first pretty quickly...we have been shamefully derelict both in Maryland and Virginia and the whole watershed in improving water quality. I agree with many watermen that they have borne the brunt of this failure; on the other hand, until we improve bay health more, we have to control what we can. The states and EPA are moving toward a tougher, more regulatory approach to bay water qual-ity. I’d say a major obstacle right now is the bitter partisan politics that is hampering this, along with many other things we need to get done. This country ought to treat clean water as a basic right, not something to work on when times are flush.”

How are waterman working to insure a strong future for their profession?(Tom) “Environmentalists, watermen and government are working together better than in previous decades...but there is much room for improvement all around. I think we need to keep all harvestable, marketable bay species available for water-men if we want to keep them around. The nature of watermen is to be opportunistic, to switch from one species to another as markets and availability dictate. You can’t take parts of this away (like striped bass, yellow perch, even diamondback terrapins) if you want to keep a waterman tradition. Some species should be shared with sportsfishermen of course, and some, like terrapins and snapping turtles need very careful and selective regulation as they’re easily overfished.”

Tom Horton

“Improving bay health, raising oxygen levels, bringing back seagrass habitat, ending the practice of bulkheading shorelines used by lots of bay critters, filling wetlands...

all this is just vital to keeping watermen around.”

50

Page 53: Chesapeake east calendar guide october 2011

“Watermen have to become more active politically at the local and state levels and be involved in their local watermen’s associations and the Maryland Watermen’s Association. You know, by nature many watermen are independent and not joiners…that has to change if, as a collective industry, they are going to face the mounting challenges with some success. We all need to think big picture, down the road, and not just in the moment. “

What is the current situation as to the health of the blue crab and chesapeake bay oyster? (Mick) “Well, first and foremost, the most influential factor affecting the health of the bay is pollution from either point or non-point sources, with little, in my opinion being done to correct it. There is a lot of rhetoric, but little being actually done. Developers havetremendous influence over politicians at all levels of government, so we have seen frequent violations to the Critical Areas Law with little consequences. The fines are so minimal that it is worth it to break the law! EPA showed that little progress has been made over the past 25 years so they and the President had to step in and make it happen…and the states are still whining about the cost. No money and no political will.”what are the chief obstacles for achieving a balance between harvest and bay health(Mick) “A major obstacle is too much regulation without industry (watermen) input. That’s starting to change with the new Blue Crab Management Design Team and some other efforts. Watermen have agreed to many tough regulations to save various fisheries, including the blue crab recently, but, at the end of the day, without a healthy bay there can hardly be a healthy harvest.” continued...

Mick Blackistone

There will always be a market for fresh seafood and it needs to harvested, are the

current regulations working well- to insure a satisfactory income for watermen, a sustainable crab/ oyster

population and room for the tourist/sport fishermen?

(Mick) “Some regulations are working as we have seen with the blue crab…even though many watermen were

angry about them at first. The MWA has tried to look at the big picture, despite criticism from some men, and that has helped strengthen

fisheries. When the Governor promoted sanctuaries and aquaculture last year the industry fought it hard because it was taking too much from the oystermen. We pushed for our members to look at aquaculture as a new way for them to do business and potentially make more money. Some are doing it now but the government has fouled up the permit process and they are trying to straighten it out now. A lot of times the government gets in its own way and watermen and farmers are caught in the middle. We are working for sustainability, no question, and most leaders at the local levels agree that we have to bite a tough bullet to make it happen. Good water-men will always make a decent living but we have to have sustainability here too in order to attract young men and women to the traditions of the water. We’re having a tough time doing that right now, but it is part of our plan. There is room for commer-cial and sport fishermen. Of course, groups like the Coastal Conservation Associa-tion and Maryland Saltwater Sportsfishermens Association would both like to see watermen disappear altogether. You all might ask then who will provide them with seafood if we go away. The CCA in particular is a very dangerous organization to watermen. They throw a lot of money at politicians so it makes it increasingly harder for us to compete on the same turf. It costs so damn much money to run for office that politicians don’t have the will to turn it down. Some do but most don’t. Senator Mikulski is clearly the watermen’s closest ally, but, for example, we have a long way to go with Governor O’Malley. The recreational groups threw a lot of money into his campaign. It is what it is.”

How might waterman, farmers and environmentalists work together to insure a strong future here on Delmarva? (Mick) “Watermen, farmers and environmentalists have to try to put down their swords from time to time and sit down with coffee and talk. I don’t think one group should try to blind side another group with a law, regulation or position. Envi-ronmentalists could get a lot further if they would listen to the watermen and farmers. They know more about their respective environments than most of those scientists who learned about it in books. Dr. Rita Caldwell, leading oyster expert, told her col-leagues about oyster’s dying off from MSX and Dermo, “perhaps we need to talk to the watermen”, and they did.” - Mick Blackistone Waterman’s Gazette
