½ cup (120 mL) mayonnaise
1 tablespoon (15 mL) Dijon mustard
1 tablespoon (15 mL) celery, finely chopped
1 teaspoon (5 mL) lemon zest
1 teaspoon (5 mL) ketchup
1 teaspoon (5 mL) Worcestershire sauce
1 tablespoon (15 mL) capers, drained
1 scallion, finely chopped
½ teaspoon (2 mL) hot sauce
¼ teaspoon (1 mL) black pepper
12 ounces (340 g) lobster meat, cooked and cooled
12 ounces (340 g) small cooked shrimp
12 ounces (340 g) cooked crawfish
4 tablespoons (60 mL) melted butter
12 slices green tomatoes
½ cup (64 g) all-purpose flour
2 large eggs, beaten
1½ cups (192 g) panko bread crumbs
1½ cups (360 mL) watercress
6 ACE® Rustic Hero Rolls, thawed, split, grilled
In a medium bowl, combine mayonnaise and next 9 ingredients to make
remoulade sauce. Cover and refrigerate until ready to assemble sandwiches.
In a medium bowl, combine lobster, shrimp, crawfish and melted butter. Toss
to coat. Keep warm until ready to assemble sandwiches.
For fried green tomatoes, coat slices in flour, then dip in egg, then panko
crumbs. Pan fry for 3-4 minutes or until golden brown.
Spread about 1 tablespoon of remoulade sauce on grilled
sides of buns. Place two fried green tomato slices on
each bottom bun. Spoon 5-6 ounces (142-170 g)
seafood mixture over tomatoes. Top with watercress
and bun tops. Serve.
