CHAPLAIN’S CORNER
Not a lot of people like January. Maybe it’s the post-holiday blues, really cold weather, and the dead of winter. But—
did you know that the Carnival season begins with Epiphany (January 6) and ends on “Fat Tuesday” which is
February 25 this year? Ah. Perhaps a time for creativity!
January signals resolutions for better health and deeper spirituality. For example, in Assisi, there was a Roman
temple dedicated to the deity “Janus” who had 2 faces: one looking back and the other looking forward. In
Franciscan history, the temple of Janus became the site where Francis stripped off his clothes and bade farewell to
his old life – and never looked back. Now, that temple is a church called Saint Mary Major and a shrine
commemorating that Franciscan event. And – behind the church is one of Assisi’s eight gates, the Porta Moana,
through which Clare passed and left her old life and looked forward to what lie beyond: the Portiuncula and a new
life with the friars.
You are invited to continue your own spiritual journey
celebrating the feasts of January: renew the vows and
resolve of your baptism on the feast of the Lord’s (Jan.
12); consider the life the great hermit and monk,
Anthony of Egypt (Jan 17); pray for Christian Unity,
which concludes with the conversion of St Paul (Jan 18-
25), and attend the Mass celebrated by Bishop
Callahan when he visits Viterbo on January 26 (11
a.m.).
Follow the January Saint calendar for more ideas – and
enjoy the beginning of Carnival…it adds a bit of luster
to those dreary days!

CAR CAKES (PANCAKES)
3 potatoes
2 eggs
2 tablespoons sugar
2 cups milk
2 cups flour 1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon melted butter
1 teaspoon vanilla
Beat eggs and sugar. Add milk and sifted dry ingredients alternately.
Mash and add in potatoes. Stir in butter and vanilla. Fry in large iron
skillet.
This makes a sweet pancake, good served with fruit or jam. Omit the
sugar and vanilla for a plainer dish; use four eggs, one cup milk and
three tablespoons sugar for a dessert.
