Our Vision

This late 17th century house, rebuilt by the Dawley
family, stands on the cellars of an older building, the
windows of which can be seen behind the flower
borders each side of this East exit. Prior to leaving the
building you should notice the carvings above the
fireplace by Grinling Gibbons (1648-1721). A plaque
beside the left hand window tells of the great cedar
tree that fell in 1930 giving the name to our Cocktail
bar. Whilst enjoying your drink, and before the sunset,
look out of the window to admire the avenue of lime
trees, planted around 1716 with no other intention
than the magnificent vista. The flavours, the views, the
smell of a crackling fire, the sound of a piano and
obviously good company; all is part of the Cedar Bar
experience.

Basil – Pear – Apple –Martini Cocktail
The exact origin of the Martini is unclear. We believe that the first cocktail was mixed some 200 years ago. One of the earliest recipes originated in the United States and started out under the guise of The Martini and its precursor, The Martinez. Our house classic is based on the 1888 ‘Bartenders manual’ recipe, featuring “Old Tom Gin” and lovingly mixed exclusively for the guests at Lainston House. The legendary Harry Craddock, who once mixed drinks in this great room, lists in the “Savoy Cocktail Book” (1930) two great recipes for a Dry Martini. His first is the Dry Martini cocktail in which equal parts of gin and dry vermouth are mixed with a dash of Orange Bitters; the second being the ‘Martini Cocktail’ using one part of dry vermouth and two parts of gin, without the Orange Bitters. It’s worth noting that the original Dry Martini derived its name from the fact that it included dry instead of sweet vermouth.
Nothing really changed until the 1940’s and 1950’s. The use of Bitters in the Martinis disappeared and vermouth became less and less important as an ingredient. During the 1960’s The Martini took a back seat to wine appreciation and to the insurgence of the spirit, mixer and the beer market. It wasn’t until mid-1980 that people started to rediscover The Martini, which is now perceived as a cocktail ‘icon’. It was during this period that cocktails became known as Martinis and bartenders became mixologists.

The Gin Library
‘Genever’, the Dutch name for Gin originates from early 17th
Century Holland where it was used to cure upset stomachs. British troops fighting in the Low Countries during the Thirty Years’ War were given ‘Dutch Courage’ during the long campaigns in the damp weather through the warming properties of Gin.
Eventually these soldiers started bringing it back home, where it started being sold in Chemists’ shops in London and distillation began on a larger scale. The quality of the drink was often dubious, but it became a favourite with the poor and drunk.
Nowadays, with the Gin production process much more refined, this drink has evolved to become a delicate balance of flavours. In recent years Gin’s popularity has grown as a refreshing drink with smaller ‘artisan’ distilleries providing a wonderful range of flavours and styles to match any palate.
