PARIS IN CALIFORNIA Square Root’s passionate and skillful design teams specialize in fusing creativity and innovation to building works of art. For this event, the client’s dream was to feel as if they were in a French Manor. The event took place at The Montage Laguna Beach. The room was transformed into an elegant Paris salon, filled with period and contemporary French layers. Square Root’s team designed and built 14 foot gold gilded panels. The corners of the room were anchored with stunning floor to ceiling pave floral structures. The centerpieces were created with an eclectic mixture of garden flowers and soft greenery inspired by French gardens.

The center of the room was anchored with a custom ivory round dance floor decorated with a beautiful gold floral trumpe l’oeil. The ornate and multi layered linens were custom designed and made by Wildflower Linens. Square Root curated all of the furniture and accessories from Revelry, Classic Party Rentals, Amber and Archive Rentals, The lighting was choreographed in sequences throughout the evening to create an ambiance to transform the guests into another place. How do you know he is…the one? You may have been asked this question by your parents, your friends, even yourself. The answer isn’t always perfectly clear; he may or may not be ‘ideal’ on paper; you may have known him for only two months or perhaps you’ve been hanging in there a good fi ve years; he may be a cowboy while you were visualizing a business man. The so-called ‘signs’ aren’t always there, but somehow, you just know.

At Ceremony, we feel the same way about our Great List of vendors that we recommend. We take this vendor collective very seriously, which is why we don’t put arbitrary consideration requirements in an antiquated form. We don’t have a scholastic checklist to help us come up with an ‘A’ grade. We don’t even have a job application type form to fi ll out. You see, when it comes to choosing our Great List of recommended vendors, we believe there is no specifi c formula for choosing who we invite to join our family. Probably not unlike you, we take a look-see at Facebook, we inquire with their friends and colleagues and, most importantly, we get to know them by social networking the old-fashioned way (in person). In the end, we go with our gut. We just…know.

You will fi nd that some of these recommended vendors have refi ned their businesses over the past twenty years, while others bring fresh ideas after having recently started their own businesses. Many of our recommended venues are on the AAA Five-Diamond Resort list; others include charming private estates and everything in between. What they all have in common is that we have a mutual respect for each other; we each genuinely want to see the other succeed; we envision a future together. Do those relationship qualities sound familiar with someone you know?

We hope that you will fi nd this varied Great List vendor collective to be helpful in fi nding your wedding day professionals. There is no single vendor that is perfect for everyone, but there are vendors that are perfect for you. And when you meet them, you will just know.

The foundation to planning a great wedding is a smart spending plan. I call it a spending plan because it sounds much more positive than the term “budget.” Couples often agonize over how much they end up spending on their wedding day, but you can navigate through all of the financial pitfalls with ease if you follow these simple steps.

Determine The Most You Can Spend Today’s weddings typically don’t follow the traditional financial divisions or funding etiquette that existed in years past. Families vary in ability and willingness to contribute making it the first challenge couples face when planning their wedding.

The simplest way to determine the maximum amount of money you are able to spend on your wedding is to find out how much each contributor is able to give. While you are having this conversation it is also important to find out how each contributor expects to influence the decisions made with their money. Once this amount is known, you can start moving on to how you would like to spend it.

Prioritize How You Want To Spend Your Funds I recommend couples rank everything they spend money on individually and then take the average rank from both people to establish how to allocate money. Then you just move the money around to support what is important to both of you.

Research Current Pricing It can be frustrating to create a budget that makes sense on paper only to realize that you estimated lower than the actual pricing in the area. For instance, you allocate $2,000 for a photographer but find the starting price for the photography style you are looking for is twice that amount. Wedding professionals are used to sending out pricing information, so don’t be shy to ask for it if pricing isn’t on their website.

Leave A Cushion Unexpected expenses (and sometimes even indulgences) can sabotage the best of spending plans. Be prepared by setting aside extra funds just in case something pops up during your planning.

Be Realistic If the market price is higher than you expected it to be, trying to negotiate everything down into the price range you created on paper may be close to impossible. Cutting corners may seem like a good idea during planning, but backfire on the wedding day. Instead, you may need to re-evaluate the size of your guest list or look at an off-season wedding date.

24 Carrots’ philosophy on food is that it must always be fresh, well prepared, stylish, and made with love.

Then again it’s a family business that began 11 years ago by Swiss-born chef Norm Bennett who decided after working in both restaurant and catering that he could top what had become the standard in off-site catering. He did not believe in hot boxing food and letting it sit for hours before serving it to guests. Instead Norm thought preparing fresh food with local ingredients directly onsite was the way to go.

In 2004 he took a gamble and opened 24 Carrots Catering & Events. It started small, just him and his wife Sherri, and a modest operation that quickly gained notoriety through referrals and people giving them a shot to prove how different a small company could be. Norm’s brother-in-law, Jon Brown, joined the crusade, coming from a position in senior management at Xerox, and with his business and managerial expertise, they took 24 Carrots to the next level.

Today 24 Carrots is one of the largest, most sought after catering companies in Southern California. They continue to stay true to their roots and provide fresh, cooked-onsite food, with unprecedented service that best represent their clients. Because family is at the heart and soul of what they do, they take great pride in getting to know their couples and invest in their journey. While 24 Carrots has their food story, they want to help you tell yours. FOODIE FACT ABOUT 24 CARROTS: The entire office staff sits down for “family lunch” every Friday.

Cool Eats: Small PlatesThe traditional sit down is being transformed into multiple course small plates. This allows for a variety of favorites to be served in smaller portions. It is also a great way to serve “dinner” with a cocktail party feel. All small plates are designed to be eaten with just one utensil.

Ice CreamThis isn’t your typical vanilla and chocolate ice cream. Unique ice cream flavors are becoming a must-have, like Lucky Charms or the requested, Speculoos (beet and goat cheese). Liquid Nitrogren Ice Cream stations are also hot as guests select their toppings and flavor base while we mix it with liquid nitrogen to make instant ice cream in just 90 seconds. It is a fun, interactive way to make a unique dessert.

Haute Plates: Compressed Salad of Baby Arugula A beautiful compressed salad that looks like a delicate birds nest consists of baby arugula, manchego cheese, sliced gala apples, sundried cranberries, caramelized pecans, and an aged balsamic vinaigrette.

Coconut Shrimp LollipopsOtherwise know as “the very best coconut shrimp pops” these large shrimp are battered in a secret coconut recipe, deep-fried to be golden brown, and drizzled with a house-made orange plum sauce.

Jay’s Catering was born out of a family’s passion for excellent cuisine and a conviction that catering should be available to everyone.

In 1961, Eleanor and Jay Mastroianni founded the company and began preparing food out of a converted carwash in Midway City. It quickly became a one-stop shop for catering trucks to purchase dairy products, fruit, ice and freshly made “palm” sandwiches to take on their daily routes. It wasn’t long before Jay segued into his own catering truck business and delivered meals to various industries throughout Southern California. As business boomed, they moved to a more spacious facility, which would give way to their momentous transition into social catering and events.

At Jay’s, food is the centerpiece that holds the limbs of the operation together. When it comes to quality cuisine, there’s no room for sacrifice. While any caterer can make their dishes visually pleasing, Jay’s always ensures that taste is priority, which is why all of their food is made fresh and from scratch, using sustainable ingredients whenever possible, and consider delivering simple, clean foods with bold flavors to be their mission. While their tradition provides an excellent foundation and knowledge base, Jay’s is innovative, adapting with the times by staying on trend. Unlike many caterers, Jay’s has an incredible, in-house baker, run by a third generation French Executive Pastry Chef, who blends his passion for reinventing timeless eats, from fresh bread, pastries and decadent cakes made entirely from scratch. To top it off, their in-house award-winning Executive Cake Artist can design any style or themed cake imaginable. Aside from their flaky and buttery croissants, what sets Jay’s apart is their full-service model that not only provides extraordinary cuisine but offers rentals, event coordination, venue concierge, and mixology, making sure each event is completely customized and tailored to their couple’s needs. It’s apparent that family and tradition are a crucial aspect of operating Jay’s. Mastroianni’s wish was to pass the business on from generation to generation, and now they are proud to be in their third. To honor both Jay & his wife Eleanor, the company expanded their café, Ellie’s Table, in San Clemente, that boasts a delectable menu of pastries, including the famous cinnamon rolls and original palm sandwiches. It was with Ellie’s culinary talents that helped make Jay’s such a huge success. It goes without saying that “Happiness is Homemade” and that’s just what you get with Jay’s Catering.
