Most people think that anything served in a long-stemmed “V” shaped glass is a martini. To purists, a martini is gin and vermouth-nothing more, nothing less. The modern definition of a classic martini is gin or vodka, we have added a summer twist combining both Vodka and Sloe Gin with the fruity flavours of Hibiscus and Blackcurrant

El Draque Mojito Cachaça, Brown Sugar, Lime & Mint

The Mojito has many theories of where it originates from, the ‘El

Draque’ Mojito originates from Sir Francis Drake with his privateer

naming this cocktail after his mentor. Sir Francis was well known

for his nickname ‘The Dragon’, this historic Mojito really brings

a lime endured kick to the Cachaça rum, so this gave the perfect

similarity on the concoction designed for Drake himself.

The Drink itself was created to unsettle a stomach problem drake

had on one of his ventures by his Privateer and cousin Richard

Drake. The drink was created using local sources from the venture,

these included a Brazilian spirit made from pure sugar cane, fresh

lime and mint. Hundreds of years a er the death of Sir Francis

Drake the Cachaça based remedy was being consumed by native

Caribbean Settlers as a refreshing drink.

Gin & Jam - Tiptree Raspberry Jam, Pinksters Gin, Lemon Juice, Sugar Syrup

It’s all in the name. This simple creation marries Pinksters agreeably British Raspberry Gin with a delightful dose of Tiptree jam. A touch of lemon juice adds a little balance to the Bramble twist.

Very much a warm winter based cocktail, the presentation of this really adds to the effect of the drink itself. Combining warm cinnamon with a forrest fruit juice and a couple hidden ingredients. This really is a thoroughly enjoyable cocktail to sip in the evening next to the fireplace!

Whisky

Scottish Single Malts

The Scots have been at the very pinnacle of whisky production for many years. Scotland is recognised all over the world for their diverse regions producing different types of high quality whisky, and throughout the county there are 6 whisky regions. The same basic process is used to produce whisky across the country but subtle variations mean single malts from each region have unique characteristics and flavours. The region should always be considered when choosing a whisky but by no means should it be used as the only guideline.

Highland The highlands are by far the largest whisky region; the region itself stretches from the north of Glasgow to the north most tip of the east coast. The Highlands offer the most variation in style due to the large proximity covered, this would be why 25% of all whiskies made are produced from the Highland region.

IslandIsland whiskies are in a very diverse region, but are renowned for their richness in character. Smokiness is the recurring theme as is the balance. Due to the diversity there are no outlined rules for the island, as the production methods differ greatly.

LowlandLowlands is the second biggest whisky region in Scotland in terms of the area covered, but in terms of distilleries it is one of the smallest with only 4 distilleries currently producing whisky. The region itself borders a top of England and north towards Glasgow and the Highlands. Lowland whiskies are formidably known for being light and gentle as-well as offering very little peat.

IslayThe Scottish island of Islay is located to the west of the mainland, it is the smallest region in terms of area in Scotland. The tiny island itself contains eight distilleries, each with their own unique smoky character; these whiskies offer a complexity behind the all their peat.

SpeysideThe region of Speyside is located in the north east of Scotland surrounding the River Spey. Irish

Japanese

The Japanese have really come to the forefront of Whisky distillation in recent years, with winning various blind tasting awards against the Scots. It was always believed that the Japanese were very much trying to emulate the Scottish, this was due to Japanese chemist and businessman Masataka Taketsuru studying the art of distilling in Scotland. With gaining this knowledge Masataka founded Japan’s first whisky industry.
