Refers to owning, organizing, andmanaging your own business by providing a necessary product orservice.

REQUIREMENTS:

1. Submitsix(6)copiesofthecontestants’businessplan.

2. Six (6) copies of a typed 8-½-inch by 11-inch double spaced business planmust accompany theproject.Thebusinessplan,whichshouldbeaminimumoften(10)pagesandnottoexceedtwenty(20) pages, should include a cover page, executive summary, company description, amarketingplan,amanagementplanandafinancialplan,inadditiontoanysupportingdocuments(i.e.graphs,photographs,statisticaldata).Thestudent’sname,pagenumberandbranchmustbeatthetopofeachpage.Thesix(6)copiesmustbesubmittedonorbeforethespecifieddeadline.

3. Thecontestantisrequiredtomakeanoralpresentation,nottoexceedfive(5)minutes,explaininghis/herbusinessplan.

4. A visual presentation in the formof a display, slide show, overhead or PowerPoint presentationshouldbeprovided.

CULINARYARTS

Thecreativepracticeofcooking.Onewhoengagesintheculinaryarts,oraculinarian,iseithercalledacookorachefdependingontheirlevelofexpertise.

REQUIREMENTS:

1. Each participant must be a high school junior or senior and is required to have previous orcurrentformalculinaryeducation,trainingorexperience.

2. Each participant must dress in full professional chef whites, including toque and apronthroughoutthecompetition.

3. The competition events will be held in a banquet/conference room with tabletop burner orinductioncooking.

4. 1(one)writtenMenuPlanisrequiredperstudent.TheMenuPlanwillconsistofthestudent’splanforexecutingtheircompetitionmenu.TheMenuPlanshouldbeamaximumof2pagesandinclude the guidelines identified in theMenu Plan template. The student’s name and pagenumbershouldappearatthetopofeachpage.

5. Priortothestartofcompetition,thestudentisrequiredtomakeanOralPresentation,nottoexceed five (5) minutes, explaining his/herMenu Plan. Contestants should be familiar withbusiness terminology in general and about terminology related to their selected menu.ContestantsarerequiredtohavepersonallyconductedtheMenuPlananalysisandhavebeeninvolvedwiththeproductionofanyprototypeproductorservicetrials.

6. EachparticipantwillpresentaCulinarySkillDemonstrationfollowingallHACCPguidelinesandwillhave2hoursand30minutespreparationandcleanuptimetocompletethefollowing:

• Two (2) course presentations consisting of Appetizer/Starter Course (studentmustprepare)

• Three(3)individualShowplatesrepresentingbalanceandproperportioning

• MainCourse

• Three(3)individualShowplates(toincludeacenteroftheplateproteinand2accompaniments)

• Participants will choose one of the following proteins for use in the CulinarySkillsDemonstration:RockCornishGameHen,ChickenorDuck(wholeorpartofthebird)

• The student will be prepared to fabricate and prepareONE of the followingproteins:

a) 1to1½poundRockCornishGameHenOR

b) 2to2½poundChickenOR

c) 5to6poundDuck.

7. Theparticipantisnotrequiredtouseallofthepreparationtime.Theparticipantwillpresentinthissequence:StarterDish-1plateforpresentationandcritiqueandtwoplatesforthejudges’table.MainCourse–1plateforpresentationandcritique,twoplatesforthejudges’table.Theparticipantmustbepreparedtobreakdownthecenteroftheplateproteinitems.Acommunitystoreroom table and communityequipment tablewill beprovidedand sharedbyeachof thecompetition participants. The storeroommay have a variety of ingredients in addition to theitems for the Culinary Skills Demonstration. Competitors may freely utilize any ingredientand/orequipmentinthecompetitionarea.

Noadvancefoodpreparationorcookingisallowed–thisincludespre-measureditems.

• ChefToque’s,cuttingboardsandsanitizer&gloveswillbeprovided.

• ThecommunitystoreroomtablewillincludeitemsfromthelistontheattachedCommunitystoreroomlistaswellasadditionalavailableitems.

• Cooking equipment use will be limited to any cooking preparation equipment, which islocatedonsiteatthecompetitionfacility.Ifnecessary,alternativecookingmaybedoneatanadjacent locationatthecompetitionfacility. Judges intheseareaswillmonitorcookingaswell.Eachkitchenworkareamustbeleftclean,neatandorderly.

• Thejudgeswillfinalizescoresaftertheinspectionofthekitchenandworkingareas.

Thescienceorartofarrangingmusicbyordering tonesor sounds in succession, incombinationor intemporalrelationshipstoproduceacompositionhavingunityandcontinuity.

REQUIREMENTS:

1. Mailsix(6)originalnotarizedcompositions.

2. The top of each pagemust include the contestant’s name, page number and unit name andnumber.

3. The compositionmust be neatly and precisely written onmusicmanuscript paper, in such amanner that any trained musician could perform the composition. Before submission, allelectronicallygeneratedmanuscripts(Finale,Sibelius,etc.)mustbeproofreadtoensureproperquantizationinthefinalprintgeneratedcomposition.

4. Thecontestantmust includeaCDof thecompositionwith theNationalRegistrationmaterialsand bring a copy of the CD for the judges onsite at the Local and National competition.Competitorswillnotperformtheircompositionatthecompetition.

REQUIREMENTS:

1. Themusicalselectionmustbeonespecificallywrittenforsoloperformances.Theperformance may be an excerpt and may not exceed five (5) minutes. (Contestants not adhering tothe maximumtimerequirementsaresubjecttopointdeduction.)

2. Contestantsmustsubmitsix(6)copiesofthesheetmusicfortheirperformance.

3. If the selection chosen is written with piano accompaniment, it must be performed in that manner.ContestantsmustrequestaccompanimentbyApril 07, 2018.Sheetmusicisrequiredat thetimeoftherequest.

4. Thecomposition tobeperformedmustbeconsistentwith thenatureof the instrumentand thelevelofmusicalproficiencyoftheperformer.
