Sharing tradition, taste and celebrating life through food; this is the philosophy behind Manolas Brothers Delicatessen & Providore and the lifeblood of a business built on family and community connection.

The Manolas family has a rich history of sharing continental cuisine and culture on the Gold Coast. Since its first Carrara Market stall in 1994, this family-run business has seen the ebb and flow of the budding city, and catered to the people’s ever-adapting palate and food interests.

The family will celebrate a milestone 20-year anniversary in the Gold Coast food and hospitality industry at the end of this year. This also marks the first year of trading of its new showcase at Capri on Via Roma.

Brothers Con and Steve Manolas are the driving forces behind the prominent Capri location, which has been received exceptionally well by locals and travellers since opening its doors.

Inspired by their Greek heritage and memories of long tables of mezze plates at Mediterranean-style Sunday lunches, Con and Steve are passionate about bringing together the best traditions of continental cuisine with the latest contemporary food trends.

They describe Manolas Brothers Delicatessen & Providore as an “urban, capital city setting on the coast” that celebrates continental classics with “a modern New York deli-style twist.”

The family ties that have always defined the Manolas Brothers business run deep at their latest venture, where mum Angela and dad Jack can still be found in the kitchen

or on the shop floor chatting to long-time loyal and new customers. Many of the regulars remember Steve and Con as teenagers at the family’s original Carrara outlet.

Con says his family’s passion for connecting with people through food is at the heart of everything they do. This passion has been notably reflected by locals’ instant familiarity with the Capri outlet.

“The response has been fantastic, both from our loyal customers who have followed us over the past 20 years and those who are experiencing everything Manolas Brothers has to offer for the first time,” he says.

“The modern urban setting of the Capri lifestyle hub is a perfect fit for our innovative dining and deli options that you won’t find elsewhere on the Gold Coast. It is one of the only places that customers can turn up by boat, jet-ski or stand up paddleboard!”

With plenty of on-site parking and outdoor seating, Manolas Brothers is the ideal spot to sit down and enjoy a few delicious hours, or to pop in quickly for a convenient take-home meal.

The latter is one of the delicatessen’s biggest hits, with between 300 and 400 meals created from scratch, in-store for customers seeking wholesome take-away food options on the run. Hearty soups, fresh risottos, succulent lamb shanks; meals of the Mediterranean to enjoy at home.

“We create native Australian flavours because that’s who we are, and we want to share the beautiful flavours of this country with other people.”

For Peter Ingall, founder and owner of Mayfield Chocolates, life is exactly like a box of chocolates. According to Peter, who began the company in 1993 with the late Danica Antunovich, the divine experience of chocolate should encompass and celebrate the real, unadulterated flavour of cocoa and fresh ingredients.

In a market often burdened by over-processing and unhealthy additives, creating outstanding chocolate based on its own taste merit is essential to satisfying chocoholics without the guilt.

“A lot of chocolate brands out there use things like vegetable fat and additives, which we don’t agree with. Our chocolates are made from the finest ingredients, the freshest cream and cocoa butter, and they excel with natural flavour,” explains Peter.

“Our chocolates have no flour, no syrups, no cereals, no cheap fillers. Just exceptional, Australian high quality flavour. That’s who we are.”

The philosophy behind Mayfield Chocolates is based on showcasing unique Australian ingredients to chocolate lovers around the country. After years of working with bigger confectionery companies, Peter acknowledged a gap in the market.

There just weren’t enough companies taking advantage of natural Australian flavours, so he decided to explore them. Queensland rum and sultana ganache, Tasmanian

leatherwood honey and Queensland ginger ganache,

Australian pecan gianduja in milk chocolate, Australian lavender ganache. These soft, delicious bites of finely crafted Australian flavours can turn anyone nonchalant about chocolate into an instant lover.

“We often have people come in with their partners or family who claim that they don’t like chocolate. So we give them a taste of ours, and the reaction is priceless,” says Peter.

During the Christmas period, Mayfield Chocolates loves to give. Not only can customers tailor their own gift boxes to take away or have delivered, there are a few seasonal treats that appear for a limited time of the year.

Alongside the White Box Selections in a range of sizes, customers can also try the dark chocolates Florentine Christmas packs, the Christmas truffle in milk and dark (alcoholic) chocolate, the Santa lollipop milk chocolates, as well as specially shaped and wrapped bite-sized pieces that hit high scores in flavour, texture and Australian personality.

And as for Peter’s favourite chocolate of the moment?“I’m an epicurist, so my favourite food or chocolate

depends on the person with whom I am eating,” he ponders. “But if I must say, at the moment it would have to be the

Christmas truffle in dark chocolate. It’s fruity with a little alcohol, and if you can imagine a Christmas pudding with fresh crème and chocolate instead of flour…”

A sigh escapes. “Yeah, it’s that good.”

If the essence of an Australian Christmas were to be summarised aromatically, the result would be rich in lemon, salt and fresh seafood. During the time leading up to Christmas, let’s praise seafood at its most seasonal - from our own oceans, capturing the sublime and simple taste of summer.

The Fish Emporium is at the forefront of freshness on the Gold Coast, sourcing a huge range of fish and seafood from both local Australian and close-by New Zealand waters. Negotiating tonight’s dinner menu for the family is both simple and delightful, with shimmering red crustaceans, prawns and a myriad of fish on ice-cold offer, with a helping hand by the knowledgeable fish-loving staff.

For those who love their fish, locally sourced is an important preference. Executive Chef David McCawe, who works closely with experienced fishmonger Trent Lobrisch, sits in the same boat as these local seafood lovers.

David explains that overcoming the challenge of fluctuating supplies requires passion for good quality.

“Anything that you source out of the ocean is constantly changing, and so the market for seafood is constantly changing. This means it’s often hard to predict what we will always have,” he says.

“We try to use as much local seafood as possible. We also give preference to high-quality produce such as Mooloolaba prawns and Tasmanian seafood so that we can give our customers the best out of Australian waters throughout the year.”

The Fish Emporium’s philosophy is the less from unknown overseas fisheries, the better, and more of the high quality produce, even better. They are all about fresh, local and quality.

The Fish Emporium stock only premium quality Huon salmon from Tasmania, including the smoked variety that Alex recommends with some sour crème and dill. Customers will also find an impressive range of crustaceans and ocean-fresh fish during the summer season.

If you thought it couldn’t get any fresher, take a little peruse around to the live oyster tank, where oysters are plucked and shucked on order for customers at The Fish Emporium, or taken straight over to adjoining modern Australian restaurant Edgewater Dining & Lounge Bar on the deck.

Currently underway is a tank for live crustaceans and lobsters, so customers can meet, greet and eat seafood of the finest quality.

Fire up the barbeque, the hot pan, the grill or whatever your weapon of choice, and get equipped with some lemon, some salt and The Fish Emporium’s highest quality Australian seafood. That is the essence of summer.

The team at Funk Fitness know how to play down a workout, and when it comes to consistent motivation and having a good time, they simply get it.

Funk Fitness at Capri on Via Roma isn’t your normal gym, by any stretch of the Lycra. In this Austin Power-esque powerhouse, glittering with disco balls and exploding in retro colour themes, a community thrives on improving health and happiness with a bit of hip-shaking.

Owner and manager Ty Armstrong explains it perfectly. It’s illogical to drive people towards a corporate, colourless, vibe-less gym that fails to inspire the workout. That’s why Funk Fitness marries the words “fun” and “fitness” in a celebratory environment of colour and groove.

“It’s difficult enough getting people to go to the gym, let alone complete a work out. So we make it fun and funky, a totally different experience to a ‘normal’ gym,” he says.

The music jukebox, free massage chairs, arcade games and the disco-inspired interior are telling of this intent, as well as the staff’s official title as ‘Funksters’, each with a funny nickname reflecting their individual personalities and styles of training.

Funk Fitness’s ‘Look Better Naked’ program is the ideal motivation to improve your health, fitness and birthday suit in a relaxed but electric environment, in which support and advice are reciprocated between all members and staff.

Members of the gym have access to fully customised equipment, plate and pin loaded equipment and group fitness classes including live instructors and cinema-screen training classes, functional training cage, as well as spin bikes on the balcony overlooking the park, a fully

rubberised 25-metre running track overlooking the Q1 and the funkiest steam room on the planet.

Though this period is notoriously busy with people keen to whip into post-winter, pre-summer shape, Ty thinks the heavy workout schedule can be excused for starting a little later, allowing the crazy Christmas period of relaxation and indulgence to run its course.

“Around New Year's Eve and mid-January we start to see a lot of people sign up or return after the busy holiday period, where you need to dedicate some down time for spoiling yourself,” Ty says.

“It’s good to give in a little over Christmas, but after the break, it’s straight back to it!”

Funk Fitness also demonstrates the generosity of Christmas through its monthly donations to a range of local and national charities. A percentage of the money from the gym’s vending machines is dedicated to a chosen charity each month, like the Currumbin Wildlife Sanctuary or the Breast Cancer Foundation, so that members know their dedication to fitness impacts the body, mind and the heart.
