Mr. Lorenz commented on that point: the CFE certification involves more than just “the plate”, but is the result of a heavy process of controlling, auditing and signing-off operations, including fields as back office controlling, hygiene and payment. It is a very selective process.

Mr. Lorenz commented: the documentation tracing back the origin of products used is at the disposal of the school. On the hygiene side, the canteen got also an A grade from the government.

Mr. Lorenz: help from Compass can be brought, in order to continue improving the environment of the canteen, especially with plant walls.

When Mr. Mangion passed away, there was no interruption of service. As Mr. Lorenz notes, the new chef, Mr. Vetri, will replace the function, but not the person.

3. Q&A:

a. Mr. Tenne: “Can we know more about the background of Mr. Vetri, the new chef?”

Mr. Lorenz: Raphaël Vetri is 36 years old. He comes from Belgium and is married. He graduated from Bocuse School in Lyon in 2001. He worked in different Michelin stars restaurants, in Spain among others, before coming to China in 2008. From 2009 to 2014, he was Head Chef at Mr. & Mrs. Bund, then General Manager, as well as Executive Chef of the Shanghai Bocuse School. He is the Eurocampus chef since Jan. 2016.

b. Mrs. Soule De Bas: “Is the set menu the same in Qingpu and Pudong?” Mr. Fröhlig: Yes, it is.

c. Mrs. Soule de Bas: “Can children pay with cash, at the canteen cashiers?”

The cashiers are not supposed to accept cash from children.

d. Mr. Langourieux: “Can somebody help smaller children to queue, without

being taken over by teenagers?” Amélie Benoît: Usually, members of Vie Scolaire are present. However, special stress can be put there, so that every child is treated fairly.

e. Mr. Langourieux: “Is it possible to add seasoning stations, so that pupils do not have to wait in front of the ketchup?” Mr. Lorenz: Since this involves more attention and costs, the privileged solution so far, to tackle this problem, would be to give small ketchup sachets when ordering meat, for example. The current seasoning station would stay where it is.

f. Mr. Tenne: “Can parents visit the canteen?” Mr. Lorenz: It is indeed possible. Details have to be seen with Mr. Liu.

g. Other remarks: i. Mr. Fröhlig: the loss of cutlery is a continuing problem, which needs to be

tackled. ii. Mr. Kuhn: a project to recycle bottles is under way.

iii. Mr. Tenne: when parents eat at the canteen, it is necessary to remind them that children have the priority, and to make it smooth for children who do not have a very long time to lunch, that they should always have enough money on their card.

The next meeting is set for March, 2016. The date will be confirmed later.
