1. a. Any of various tropical African shrubs or trees of the genus Coffea, especially C. arabica,

widely cultivated in the tropics for their seeds, which are dried, roasted and ground to

prepare a stimulating aromatic drink.

b. The beanlike seeds of this plant, enclosed within a pulpy fruit.

c. The beverage prepared from the seeds of this plant.

2. A moderate brown to dark brown or dark grayish brown.

3. An informal social gathering at which coffee and other refreshments are served.

There are two main species of bean, arabica and robusta. Both thrive in equatorial regions.

Robusta is grown at lower altitudes and has a high yield per plant and high caffeine content. It

accounts for about 30 percent of world production. Robusta has a stronger flavor than arabica,

with a full body and a woody aftertaste which is useful in creating blends and especially useful in

instant coffee.

Arabica grows at higher altitudes, and while it has a lower yield and less caffeine content, it is

widely recognized to be superior to robusta. Arabica accounts for about 70 percent of world

production. Arabica has a delicate acidic flavor, a refined aroma and a caramel aftertaste.

Many of the cheaper blends have a higher proportion of robusta compared to arabica. Some high

quality blends use a small quantity of the very best robusta beans to give body and character to

the blends.

2 Always Fresh, Always On

are subjected to heat for varying

periods to achieve the different types

of roasts. This is known as the roasting

process.

The Roasting Process

Dark Roasts - The darkest roasts, such

as Italian Roast, are also known as “heavy

roasts,” with beans roasted nearly to jet black.

This gives a smoky, well roasted taste that

masks the natural flavors of the coffee bean.

Medium Dark Roasts - Medium

dark roast is when the beans are roasted for

a long time at a high enough temperature

to bring the natural oil of the coffee to the

surface.

Medium Roasts - Medium roasts

balance body with flavor.

Light Roasts - A light roast gives a very

subtle, light-bodied flavor.

During the roasting process the beans pass through different stages. First, the water contained in

the bean evaporates. Then the bean swells to twice its original volume which causes the silvery

skin to break and fall off (this is the chaff that is removed from the roaster at the end of the

roasting process). The color of the bean changes from light green to yellow, to yellow-brown,

to light brown and then to dark brown. The coffee aroma develops from a series of chemical

reactions as the bean is roasted. In its green form, the bean has no aroma.

Canteen Connect - Our Canteen Connect program involves an independent telephone survey

of your satisfaction. Our Canteen Connect representative will call you and ask seven simple

questions and provide you with an opportunity to grade our service. Your responses and

resolution reports are forwarded to regional and division management.

Service Excellence Program - Canteen is committed to visiting with each client on a monthly

basis. This visit is scheduled in advance and helps ensure that we are in tune with our clients’

needs. After each visit, a card is filled out documenting the commitments made to you during

the visit. These cards are filed by location and are used as confirmations that follow-through is

completed on all requests.

Clients 4 Life - Clients 4 Life is Canteen’s dedicated process for defining your expectations

and ensuring that we exceed those expectations. Understanding and anticipating your needs

is the foundation of our client satisfaction effort. Communication, goal setting, follow-up and

evaluation are crucial to this process. This program provides us with a common language for

managing your needs through a series of meetings, checkpoints and the analysis of results.


Service ScheduleA uniformed Route Service Associate will arrive at your location on predetermined days to clean

and polish your brewing equipment, replace all of the pots and stock your supplies as needed.

Our Route Service Associates are extensively trained to make sure each piece of equipment,

brewing containers and the counter areas are working correctly and are as clean and organized

as the day we installed them. They report any issues to technicians or management as

appropriate.

Following is our Service Plus Checklist. The Service Plus Checklist card can be affixed to the

coffee brewer or a cabinet door. Our service personnel complete this at every visit to document

our service and assure you that your coffee equipment is clean and in optimum condition.
