Roasted Eggplant & Red Capsicum Bruschetta

(pronounced broosket-ta)

1 large eggplant 2 tbsp olive oil 1 medium onion, chopped 2 stalks celery, diced 3 garlic cloves, minced 2 red capsicum, diced Salt to taste 500g ripe tomatoes 3 tbsp capers, rinsed & drained 3 tbsp pitted green olives, chopped 2 tbsp sugar, plus a pinch 3 tbsp balsamic vinegar Freshly ground pepper Roast eggplant, allow to cool. Chop coarsely. Heat 1 tbsp of oil over med heat in a large frying pan, add onion & celery. Stir until onion softens, add garlic. Heat gently, add capsicum & ½ tsp salt, stir until just tender. Add remaining oil & eggplant, stir whilst cooking until vegetables are tender. Season to taste. Add skinned, seeded & finely chopped tomatoes to pan with ½ tsp salt & pinch of sugar. Cook, stirring & scraping the bottom of the pan often, until the tomatoes have reduced a bit. Add capers, olives, remaining sugar & balsamic. Turn the heat to medium-low and cook, stirring often, until vegetables are tender & the mixture is thick, sweet & fragrant. Season to taste with salt and pepper, and remove from the heat. Allow to cool to room temperature. Serve over toasted baguette slices.

RE CYCLE Cabonne residents are being encouraged to take their recycling habits into the community, their workplaces and schools. That’s the message of Recycling Week which runs from the 12-18 November 2012. Cabonne Mayor Ian Gosper said Recycling Week provided the perfect opportunity to commend local residents on their recycling efforts over the past few years. “The amount of material recycled through our six recycling depots continues to grow rapidly as people become more aware of the economic and environmental benefits of recycling,” Cr Gosper said. “One of the best features of Recycling Week is that it helps make people aware of just how important recycling is for our environment. “Recycling Week organisers want recycling to become second nature in our workplaces, schools and wider community. “I’d be surprised if there was not a strong culture of recycling in most workplaces and schools in Cabonne but, just like at home, there is always room for improve-ment.” Cabonne residents can drop recyclable goods between 10am-1pm and 2pm-5pm on Wednesdays and Sundays at Cargo, Canowindra, Manildra and Cumnock waste disposal depots. They can also recycle goods between the same hours on Tuesdays and Saturdays at Eugowra waste depot and Yeoval transfer station. Recyclables are received free at Council’s stations and include plastics, paper, card-board, glass bottles and jars, aluminium cans, e-waste, motor oils, batteries and scrap metal. Some kerbside collections are also available through contractors JR Richards. Cr Gosper said each of Cabonne’s waste depots had a variety of recycled goods for sale. “A wide range of items including bicycles, furniture, books, prams and strollers can be bought for just a few dollars,” he said.

Kate Barclay, proprietor of Bendy Street has advised, "Our bricks and mortar store is closing to allow me to concentrate fully on the online side and to develop the design studio and pop up part of the business which is taking off. It will also allow me to be the Mum to three, wife to the farmer, bookkeeper, cleaner, chef, daughter and gardener in no particular order mind you. "2013 is shaping up to be amazing for Bendy Street and I would love you to share the Bendy Street FaceBook page and sign up for our newsletter so you can visit the studio and see what I have been working on in my spare time." To celebrate, Bendy Street Emporium is having a massive sale, mostly because Kate is not fond of packing. It will also make room for the new stock being planned for the online store which will be getting a makeover in 2013. Dail is not only a talented Vocalist and “Multi-Instrumentalist”, he is also a daunting perfectionist. He maintains an amazingly high standard of professional-ism in everything he does. An excellent musician playing Acoustic and Electric guitars, Mandolin and Banjo, he is also one of Australia’s top fiddle players. It is no wonder he has been filling rooms and wowing audiences throughout Australia and loving it! Dail Platz will be bringing his Alan Jackson Tribute Show to the Canowindra Community Bowls and Recreation club this Friday 16 November with doors opening at 7:30pm with the show starting at 8pm. Come along for a great night out, have dinner at the Chinese Restaurant and enjoy some classic country tunes.

EARLY MORNING LAP SWIMMING Lisa Cartwright and Jarrod Strange of Canowindra Pool wish to advise that based on feedback early morning swimming will be offered on Tuesday and Thursday mornings from 7-8am beginning Tuesday 4 December 2012. Lisa and Jarrod are hoping to get at least 10 swimmers per morning to make the extended hours worthwhile. As parents of three young children Lisa and Jarrod are determined to accommodate what swimmers want, however if numbers fall below 10 for two consecutive weeks, the early opening times will be reviewed and discontinued if not being utilised.

JAZZ FOR JUNIORS Ali Toole (above left) and Gabby Yeo (above right) had great ideas, to hold jazz classes for young people. Earlier this year, after having organised advertising separately, the two realised that they could combine their talents and skills and offer twice as much support and guidance with half the effort. Now, the two enterprising young women have created a new group of which they can be proud. Canowindra Jazz have been holding classes throughout the year, and will be holding activity days throughout the Summer Holidays for girls and BOYS aged between 4-15 years. It won't all be dancing, there will be sports and games held, using the equipment available at the Public School Hall. Gabby and Ali will provide drinks and afternoon tea, however they ask parents or carers to supply a packed lunch and a hat for the children. Drop your kids off at the Canowindra Primary School Hall at 11am and pick them up at 3pm on the following days: Ages 4-9: Tuesday January 8, 15 & 22 Ages 10-15: Wednesday January 9, 16 & 23 The cost is only $30 per child per session; or the family package is $30 for the first child, then $15 for each child thereafter. PUBLIC SCHOOL P&C NEWS The Canowindra Public School P&C have been very busy lately, having opened the Bottle Tree Path; mulched, mulched, mulched; held a Disco at the end of October; and their successful Fete on Friday afternoon. The committee has done an amazing job over the years, and they have created a new facebook group for parents and community members who are dedicated to assisting the Canowindra Public School at: www.facebook.com/

CRIME IN CANOWINDRA Determined to make a difference, local father, business owner and activist Phil Gersbach is tackling crime from a community level, or as Phil calls it a "common unity". Following months of criminal activity, from dog baitings to burglaries, Phil is urging residents to become part of a facebook group: Crime in Canowindra. The group was recently established to create a network of locals to keep track of what's going on, when and where, in town. How it works: after reporting incidents to police on 131 444 (please use this in-stead of the police station number), or Triple Zero 000 if you are in an emer-gency situation, you post the information on Crime in Canowindra, email to [email protected] (or contact Phil 0429 234 996 if you don't have internet connection). Always remember prevention is better than any risk, so lock your windows and doors when you are not home, and be-fore you retire for the night. Don't leave valuables lying around your home or in your vehicle, and lock your car when it is not being used. PLEASE NOTE: this group is not a place to report crime, only to track it in the community. Please contact 131 444 or Triple Zero 000 in the first instance. Remembrance Day: It was great to see people of all ages turn out to Remembrance Day services on Sunday, including in Bathurst, where the local RSL put on a very special service to commemorate Australian troops who have died in action. Even 94 years on from the signing of the Armistice which ended World War One, it is always good to see people stop what they’re doing at 11am to pause and remember the sacrifice of 103,000 Australian service men and women. This year alone, seven Australians have died in action in Afghanistan, fighting to protect the ideals and freedom we as Australians should be grateful for. Commemorations continue despite funding cuts: I would like to thank those Australian Air Force Cadets who assisted in officiating Remembrance Day services in the region at the weekend. It was extremely disappointing Government funding cuts forced the withdrawal of Army Reservists from attending Remembrance Day services in an official capacity this year. In fact, Army Reserves have been forced to reduce training days by as much as 27% as a result of this Government’s financial mismanagement. It was a new low for this Government, but local Air Force cadets certainly filled the roll with great respect and professionalism, and I congratulate them on doing a fantastic job. World Diabetes Day: Wednesday this week marks World Diabetes Day, and it’s a good time to take a minute to think about your health and that of your family’s. According to figures released by the Australian Diabetes Council, 6.9 people per 100 have diabetes in Lithgow; 5.61 per 100 people in Cabonne and Blayney and 4.99 people per 100 in Bathurst have diabetes. There are approximately 366 million people worldwide who have diabetes. Out of this figure, 1.15 million Australians have been officially diagnosed with the disease. As diabetes becomes a national health priority, we need to take action and make changes in our lives to protect our health and the health of our children – and that can be as simple as sitting down to a healthy meal each day.

One dozen of our dedicated local women volunteers have had their outstanding contribution to the social wellbeing of the community recognised with their inclusion on the 2012 Hidden Treasure Honour Roll. This year's Roll of Honour was unveiled at a ceremony in Parkes organised by the NSW Rural Women's Gathering. Some 126 women from across the state were honoured for their efforts with no less than seven of our local recipients coming from Forbes. Volunteers from Parkes, Peak Hill, Manildra and Tichborne also made it onto the Roll. The Honour Roll acknowledges the valuable role played by dedicated volunteer women and the many inspiring stories they bring to a diverse range of unpaid activities. Charities like the Red Cross, the Cancer Council, Meals on Wheels as well as hospitals, fire brigades and rescue services have come to depend on these ladies and would struggle to survive without such an outstanding volunteer contribution. Following her visit to Dubbo last week to launch a four year plan to increase access to palliative care throughout rural and regional NSW, Health Minister Jillian Skinner has wasted no time by announcing the establishment of a Ministerial Advisory Committee for Rural Health. The aim of the committee will be to improve the delivery of health care and the general health of rural communities across NSW. Made up of rural clinicians, community members and members of local health districts, the committee will provide advice to the minister on ways to improve patient services in rural NSW. The Dubbo electorate is fortunate that in Jillian Skinner we have a Health Minister who not only understands the issues faced by rural communities but who recognises that when delivering health services to these communities it is vitally important that local clinicians and community members have a role to play in determining appropriate models of care. The Agency for Clinical Innovation will develop a Rural Health Network, which will play a vital role in coordinating models of care in rural areas and advising how they can best be implemented by local health districts. They will also be collectively responsible for the development of the Rural Health Plan 2013-2017. This initiative is a further demonstration of the NSW Government's commitment to improving patient care in rural and regional areas. On Wednesday this week we mark World Diabetes Day. More than one million Australian's have been diagnosed with the disease, 400,000 of those suffers reside in New South Wales. Diabetes is a chronic disease that is diagnosed when there are abnormally high levels of glucose or sugar in the blood. More than three million or one in four Australian adults over the age of 25 have either diabetes or impaired glucose tolerance which is often referred to as pre-diabetes. There are two main types: Type 1 which is insulin dependent diabetes and represents 10-15% of cases; and Type 2 which is non-insulin dependent and represents 85-90% of cases and may be prevented in around 60% of people at risk. The incidence of diabetes in Narromine, Forbes and Dubbo is disturbing with 6.99, 6.50 and 6.41 residents per one hundred respectively suffering from the condition. The Australian Diabetes Council recommends that we can take a positive first step towards protecting our own health and that of our children by preparing a home cooked meal on Wednesday evening, one that includes plenty of fresh vegetables. Studies show that children who regularly sit down to a meal with their family are more likely have good social skills and table manners, and are more likely to try new foods and learn healthy eating behaviours. You can show your support for the cause by wearing something blue on 14 November, blue being the international colour of diabetes. As the fastest growing chronic disease in the community, we all have a responsibility to do what we can to slow the progress of this health epidemic. The NSW Government is calling upon qualified members of the public to put their hand up to join the NSW Crown Holiday Parks Trust Board. The new board will oversee existing trusts that currently manage 26 holiday parks on the north and south coasts, as well as the seven state parks, including Lake Burrendong State Park. The board will set the framework for management and accountability for these recreational reserves enjoyed by thousands of visitors each year. The board offers an opportunity for motivated candidates to add genuine value to inland tourism across NSW. Candidates with experience in business, finance, the tourism industry and a broad range of life experience are encouraged to apply for a position before applications close on December 7. Those looking to make a contribution to managing these unique, publicly-owned regional tourism businesses should obtain an information package and application form which can be downloaded from the website www.crownland.nsw.gov.au.

TEAM PENNING Central West Team Penning had another huge twilight meeting last weekend. Teams came form far and wide to participate. Friday evening began about 4pm with 110 runs of Team Penning, then 15 teams entered into a 'Mystery Draw' finishing about 11:30pm. Saturday evening had 115 runs of Arena Sorting, then 32 runs in 'One on One' penning. These novelty events proved to be a huge success for competitors as well as spectators. We give our encouragement awards to Juniors, under 11 years old, to promote good horsemanship and fellowship. This weekend saw Jared Martin presented with his favourite cake. AQUA THERAPY CLASSES TO START SOON!!! For all those people who want to have fun and improve their fitness, Spring is here and Summer just around the corner which means the start of aqua therapy classes. Exercises in the water are easier to do and less stressful on the joints. You do not need to be able to swim to take part in the aqua therapy classes. The hour long session involves walking in the water, specific exercises for each joint, aerobic exercises and cool down stretches. “The aqua therapy classes over the past number of years have been a lot of fun, and participants felt their fitness and energy levels improved” says Physiotherapy Aide Angela Ellis. “There is increasing evidence about the benefits of physical activity. Exercising regularly reduces the risk of heart disease and strokes, improves muscle strength and balance, and helps with weight control, diabetes and high blood pressure. And above all, it makes you feel good. These classes are a good way to start or to provide variety, if you already exercise regularly,” says Angela. The aqua therapy classes will be held on Mondays and Thursdays from 9am to 10am from Monday 3 December. The classes are for adult men and women, and all newcomers are welcome to attend. The cost is $2.30 for pool entry unless you have a season ticket. TWILIGHT CRICKET Canowindra Junior Cricket will be having a 20/20 Twilight Match Wednesday evening 14 November against each other at Tom Clyburn Oval. Everyone is urged to come along and cheer on the kids, there will be a sausage sizzle and drinks available to purchase. Hopefully the first of many twilight matches, and the Junior Cricket Club would love to see our great little town get behind these kids.

SWIMMING CLUB NEWS Over 75 swimmers turned up for Swimming Club this week and times tumbled despite it being only Week 2. Super fast in the Spoon were Tom Mitchell and Harry Coady who took 6 and 7 seconds off their times respectively. The Spoon semis and final were very close races with the place judges being asked to separate the swimmers on two occasions. In the final semi Brooke Kinsela found the extra energy to hold off the fast finishing males to make it into the final. While in the Spoon Final Michael Coady started in Lane one and swam like Ian Thorpe was after him, to edge out Jamie Austin and Zali Dunn and take the Spoon home in a PB of 46 seconds. Forty two swimmers took part in the relay and after all were swum the winner was Lane 2 with Tom Mitchell, Marshall McKay, Tori McKay, Josie Clements, Angus Fisher, Wade Kinsela and Josh Flannery awarded the winners pennants. Special thanks goes to Kylie Reeves assisted on the race secretary’s table in just her second night of swimming club. A big thank you to Kylie for being brave enough to help with a job that isn’t rocket science but is constant over the night. Could all swimmers please remember that roll call is at 5:45pm and all swimmers need to be at the pool by then!!! (or else!) See you on Friday afternoon.

CANOWINDRA WOMEN'S BOWLS Results of social matches played on Melbourne Cup Day last Tuesday 6th November. Jenny Middleton and Shirley Robson defeated Bobbie Turner and Margaret Gosper 24-12. Joy Beattie, Joice McNaught and Moyna Rue defeated Diane Slattery and Nancy Morrow 20-15. Diane played lead and second. Linda Miller, Marion Wilson and Libby Balcombe defeated Jean Roth, Sandy McDonald and Ellen petty 20-18. The winners on the day with lowest score (which was drawn from the Fun Day envelopes) were Bobbie Turner and Margaret Gosper with a score of 12. After bowls we had a delicious lunch which was catered for by our member, lovely platters of meats and lots of beautiful salads, followed by many very tempting desserts. Many thanks to all who provided the food and to Jenny Middleton for organising the meal. We also celebrated the October birthdays of Sandy McDonald on 3rd, Doris Pfeiffer on 8th, Joice McNaught on 11th and Penny Nash on 22nd and the November birthdays of Moyna Rue on 27th and Colleen Crump on 28th. Thanks to Colleen Crump and Gwen Earsman for efficiently organising the Melbourne Cup sweeps and congratulations to those who had the winner and placegetters. All our members present had a most enjoyable day. A reminder our next monthly will be held on Tuesday 20th November following bowls and our Presentation Day and Christmas party will be held on Tuesday 4th December, bowls will be on for those who wish to play. The Match Committee have the nomination sheets for the Major and Minor Singles and Club Pairs on the Notice Board, nominations close on 22nd January with play to commence on 29th January.
