A Note

I have been lucky enough to experience the wonders of Canada from east to west. To bear witness to the purity of silence atop a mountain in Alberta. To immerse myself in the cacophony of Vancouver. And as I have travelled, I have met people whose lifestyles have been made magnificent by the magnificence of Canada. Experts on the wildlife-rich Pacific waters around Vancouver Island. Chefs at five star hotels in Toronto. Guides located in the stunning wilds of Manitoba. Each of these people have told me how they wouldn’t change their lot for anything, so content are they with the life that Canada gives them. For this is a country whose endless stretches of wilderness, whose unforgettable, eclectic scenes of metropolitan life, are a sight to behold.

It is the people we meet that truly define a destination, and it is the people of Canada that, for me, have defined the country as an exciting, vast, generous place that deserves the opportunity to win over travellers across the world. I can only urge you to find time to give Canada this opportunity. You will never look back.

Alberta has the ability to leave an impression as powerful as the tectonic movements that first formed its most spectacular landscapes.

Venture to the national parks of Banff and Jasper and you’ll come face to face with scenes so vast, so breath-taking, you’ll never quite shake the realisation of how inconsequential we really are. They’re scenes that Max Darrah, a certified mountain guide, witnesses on a daily basis as he leads small groups of people on climbing expeditions and ski runs. He’s also a mountain rescue specialist in Jasper National Park, so he’s well aware of the dangers these spectacularly

beautiful, yet often incomprehensibly wild, landscapes present… ‘every single day I am faced with the potential of new challenges in the mountains. Every single day I’m either embarking on the trip of a lifetime with a new client, or providing assistance to climbers in difficult situations’.

Born in Edmonton, Max has never strayed too far from the mountains, instead embracing a lifestyle of fresh air, stunning vistas and untouched natural wonders. ‘I’ve lived in the Rocky Mountains for 15 years, a time in which I’ve lived and worked in Banff, Revelstoke, Haines Junction and Jasper’.

And surely, that’s an opportunity we all deserve to give ourselves? It’s easy to forget that there’s a big world out there that remains undeveloped, remains immune to the progress of modern man. In an age where skyscrapers are replacing forests, where technology is dulling our senses, it’s so important to take time to submit yourself to the pure majesty of nature. Leave the gadgets at home, and just take it all in. ‘The national parks are a true treasure of Canada. They provide challenges, adventures and moments of pure awe, and whilst some people may discover the rewards of a landscape through a viewfinder, there are still others who venture off the pavement and into the vistas’.

The only question left to ask is, which kind of person will you be?

No longer simply known for poutine and pancakes; Canada is officially one of the most respected foodie strongholds in the west and Toronto is just one of the key players at the forefront of the country’s culinary renaissance.

A city whose very foundations extend from a variety of cultural areas, this planetary microcosm is home to a Little Italy, a Little Portugal, a Koreatown as well as large Polish, Jewish and Greek communities. It has enjoyed, therefore, flavoursome inspiration from around the world, and the food you’ll sample here will be rich and traditional with a little touch of modern flair. It’s this international inspiration that Tom Phuong, banquet Chef at the city’s iconic Fairmont Royal

York hotel, has drawn from throughout the time he’s spent in this enchanting city, and something that never fails to excite him… ‘We enjoy the luxury of having diverse and ethnically influenced food from across the world, right here in Canada. How can you not be inspired by such a medley of flavours and offerings?’.

A native to Ontario, Tom has worked across the country, initially heading over to the West Coast to get a taste for different food offerings in different localities. Now settled in Toronto, he’s deeply passionate about supporting local farmers and producers…‘One of the reasons I love working at the Fairmont Royal York is the brand’s farm-to-table approach to cuisine. Every day I interact with

local farmers and I’m always up-to-date on the seasonal Ontario produce’.

We couldn’t help but agree that there is something intensely satisfying knowing that you’re eating fresh food from a local supplier, especially when you’re in a city that’s known for its farmers’ markets and unique ingredients. In fact, Tom put a great emphasis on the fact that, yes, Toronto is incredibly multi-cultural, but it’s still the home-grown goodness that creates the flavours… ‘Whilst the food scene here in Canada is indeed influenced by ethnic settlers, it still relies on the great produce that the country offers in abundance, namely the seasonal fruits and vegetables that we have access to thanks to an army of dedicated farmers’.

Head down to the city’s infamous St Lawrence Market and you’ll get a taste for this colourful world of local artisans that you might not have expected to find within such an urban landscape. But these little surprises are exactly what keep drawing us back to Toronto.

If you’re a foodie in particular, you’ll delight in the variety on offer…‘You get a mixture of everything here. I can go for an authentic Portuguese egg tart for breakfast, an Italian meal for lunch and have Mexican cuisine for dinner. This city is the country’s hub for international cuisine’.

Algonquin Provincial Park is a space filled with endless pine forests and thousands upon thousands of lakes. Hike the expansive trails or

canoe across glassy surfaces, all the while keeping an eye out for moose and other indigenous

wildlife. Visit in autumn and the park will be a riot of reds, golds and browns.

Ontario’s Niagara Wine Region is a destination whose abundance of vineyards and wineries are recognised as some of the best in North America. It is here that you’ll be able to try Canada’s famed Icewine, a delicious dessert wine that’s managed to

most insightful museums, whose focus on the importance of the First Nations settlers is

fascinating. The bustle of farmers’ markets and array of gourmet eateries and craft breweries only

add to this capital city’s undeniable charm.

Toronto’s Distillery District is a historic part of the city that houses the largest collection of Victorian-

era industrial architecture in North America. Located in downtown Toronto, this pedestrian-

only distillery also happens to be a hub of activity, with numerous cafés, restaurants and shops

‘I was born and raised in St Johns, Newfoundland & Labrador and, like many Newfoundlanders and Labradoreans, I set my sights on traversing the length of Canada as soon as I hit 18. I’ve lived and worked all over, but here I am, back in Newfoundland and settled on Fogo Island. This is where I intend to stay for as near to eternity as I can get’.

A heartfelt opener from Paddy Barry, the resident photographer for the iconic Fogo Island Inn, but one that rings true for those lucky enough to know this wind-swept, achingly beautiful granite outcrop that he calls home. For Fogo Island is a place of magic. A place whose raw beauty, sculpted by the merciless elements that the island is so

openly exposed to, nurtures creativity and draws those seeking the truly unique in a world that’s becoming ever smaller; ever more explored.

It’s an island that has undergone somewhat of a renaissance over the past few years, and it would seem the days of struggle that faced Fogo Islanders in the wake of the ban on cod fishing, their main source of income, are coming to an end. No longer an impossibly hard-to-reach speck in the midst of the wild Atlantic seas; Fogo Island has positioned itself as a charming hub of art, design, culture and adventure that’s starting to capture the attention of the discerning traveller. It’s a transition that Paddy has joyfully witnessed and one that has made his work ever more

relevant and far-reaching… ‘Every day for me is unique. One moment I could be accompanying a journalist on an open boat tour of the abandoned, outlying archipelago known as the Little Fogo Islands and the next I’ll be back in the office designing promotional materials and writing daily posts for social media’.

He’s dedicated himself to spreading the word of Fogo Island, wilfully inviting the world in to see his faraway paradise. And even by today’s standards, Fogo Island is just that –‘faraway’. Yet this is something that we feel should be shouted about. It’s what makes the destination so unique, and whether you’ve arrived in a chartered aircraft or you’re fresh off the ferry, your first sight of this subarctic wonderland with its pretty white weatherboard houses and bright red sheds, will completely justify every effort you made to get there. There’s no doubt that this sense of wonder one feels upon arrival on Fogo Island doesn’t fade with time. Despite all his years photographing the island and its surrounds, Paddy’s passion for photography is infallible and comes above everything else...

‘At any time, I may receive a phone call from someone in the community, informing me that caribou are crossing the frozen ocean in Shoal Bay, or whales and porpoises are skeeting across the water in front of the lobby of Fogo Island Inn. When this happens, I drop everything, hop in my car and race to the scene, hoping the light holds out for a good snap’.

It’s with confidence that we can say Paddy has mastered the ‘good snap’. Just a week looking through the lens of his camera instilled a wanderlust in us that will only subside once we make time to return to the island. And even then, there’s no guarantee we’ll stay away, for Fogo Island is one of those destinations that immediately feels like home. It’s something Paddy attributes to that classic Canadian charm...‘This is a vast country, stitched together in many ways, from coast to coast; a country full of friendly neighbourhoods. Come to Canada and you will bear witness to our quirky yetconnected multinational cultures, and you will feel the kindness and sincere hospitality found in all corners of this nation’.

Our conversation quickly turned back to the particular charms of Fogo Island. A citizen whose passion for the island was palpable from the moment we first spoke, Paddy

signed off with as heartfelt a statement as he started with…‘This is a tremendously beautiful island that is rugged, windswept and sometimes even harsh in the challenges it presents, yet the people here carry a hospitable nature that comes easily. Fogo Islanders have always looked to one another for support and exude warmth, kindness, a sense of humour and a deep knowledge of the land and sea that is rare and inspiring. Once you visit here and get to know the place and its people, you are changed by it, and will immediately look forward to your return visit’.

A subarctic wonderland of frozen winters and short yet sweet summers, Churchill is a world of its own when it comes to unique experiences and fragile ecosystems.

A far cry from the rolling green plains of Saskatchewan to the west and the thriving metropolis’ of Ontario to the east; those that travel to Churchill are often in pursuit of the wildlife that roam across its beautifully barren tundra and swim in its spectacular icy bays. Manitoba is a province whose economy relies heavily on ecotourism, but since this destination is one of the only places in the world you can get close to polar bears, and the only place in the world you can snorkel with belugas, we’re confident that it’s on to a good thing.

Doreen, Andrew and Terry are three local characters working for Churchill Wild; a company for whom polar bear tours, beluga whales and arctic safaris are a way of life. Unsurprisingly then, the photos we got back from these three opened our eyes to a world of completely astonishing experiences. They’ve got the sort of day jobs we were sure only existed in our fantasies. Thankfully, they’re aware of how special their lifestyles are…‘We know how lucky we are to be in a position to get close to polar bears, to observe such diverse wildlife and learn from their behaviours. These astounding experiences are an everyday occurrence for us, and it’s a privilege to be able to share them with our guests’.

The passion of Canadian locals for their home has become somewhat of a running theme throughout these interviews. There’s not one person we’ve spoken to who hasn’t filled us with their infectious enthusiasm, and our conversation with our local Manitobians quickly became a hearty list of reasons to visit…‘There are so many reasons to come to Churchill. The incredible wildlife viewing opportunities are, of course, one of the bigger draws, but there’s something else, something that is in some ways even more unique. This destination offers people the chance to exist, for a time, somewhere completely remote, completely uncrowded’.

Wander the plains of Churchill and you’ll be deafened by a roar of silence, a precious commodity in this ever-evolving world. Step beyond the province’s cities and towns and you’ll leave behind all trace of humanity. Fly above the winter pack-ice or summer flower-filled tundra and you’ll look down upon a vast expanse of beautiful nothingness. These simple things are experiences in themselves, and the opportunity to share them with endangered species like the polar bear make it all the more worthwhile.

The photos Doreen, Andrew and Terry shared with us illustrated these facts. From the muted shapes of belugas inquisitively following their boat just beneath the surface to the giant bear relaxing on a rocky outcrop; we were left in awe of the sights they know so well, but never take for granted…‘We’ll never tire of the opportunities this country provides us with. The opportunities to see, experience and learn about incredible wildlife. To live in truly wild places whose skies dance with the colours of the northern lights and whose environments are still unspoiled, still untouched’.

Daily life for these three, in one of the world’s most thrilling destinations, we hope will remain as it is today; pristine, wild and free. Their work is a celebration of the existence of the remote, the endangered and the beautiful. A celebration of the people that actively seek to experience what few know to exist. And, thankfully, it’s a celebration we’re all invited to.

Manitoba is one of the best places in the world to see the northern lights (one of the top 3, actually),

and you’re most likely to see them between January and April. Watching those colours dancing on the perfect night sky, untouched by light pollution, is

an experience you’ll never forget.

Friendly and playful, the beluga whale can be found along the waters of the Churchill River

between late June to late August. They’re not very shy and extremely inquisitive, so whether you’re on board a boat, a kayak, or you’re snorkelling

in the water with them, you’ll get a great view of these wonderful creatures.

Winnipeg, the cultural hub of the province, hosts some of Manitoba’s best events, one being the

Winnipeg Comedy Festival. It’s a relatively new festival, but each year it’s gone from strength to

strength. You can expect performances from some of the best comedians on the circuit, as well as a variety of workshops and television broadcasts.

Manitoba’s star attraction can be spotted all year round, although October and November are the prime viewing seasons. Churchill is the place to head to see these magnificent bears, be it in the

summer as they wander the tundra or in autumn, when they leave their summer habitat to make

The Rocky Mountains, bubbling brooks and ferocious rapids, bears, moose, impenetrable forests and sapphire-blue alpine lakes; these things we dream of when we dream of Canada.

Speak to Wade Bush of these dreams, however, and he’ll gently explain how your reveries are his reality. For Wade is a manager aboard the iconic Rocky Mountaineer and he spends his days traversing the very wilds that so fill us with awe and wanderlust, passing his working hours introducing enamoured passengers to the beauty beyond the carriage window.

Born in Vancouver and raised in a little town called Lac La Hache in the central interior (the

first image that comes up when you Google this town is of a sparkling lake and charming wooden houses), Wade has spent his life making the most of the great outdoors that Canada is so famous for, and revels in the smaller communities that are often overshadowed by the big cities in BC…‘Vancouver and Victoria are beautiful, but the real action is in the small towns. In the summertime especially, there are so many small town festivals and events, and that’s where you’ll meet the real Canada’.

It’s a philosophy that we can completely relate to, especially in a country with so many big attractions, so many things to ‘tick off’, that can often distract even the most fool-hardy

traveller…‘Sure, you can take all the pictures you want of giant river canyons, giant mountains, giant trees and a giant ocean, but you’ve got to be careful not to miss the people and the culture, because that’s what makes Canada so unique’.

As the conversation returned back to Wade’s life aboard the Rocky Mountaineer, we grew ever more envious. Some of the train’s routes trace the same journeys that inspired the pioneers of Canada’s past, and thus the brand has become a part of the country’s proud heritage. And the more we learnt about Wade, the more we realised how perfect he was for a life on the railroad…

‘I am happiest when in motion…From the Pacific shores through to the mountains of Alberta, I’ll even spend my days off riding my bike, hiking the hills or just walking amongst a natural beauty you’ll find everywhere in Canada’. It’s a reality that sounds idyllic, allowing Wade access to the most inspiring parts of the country on a daily basis. Yet he’s adamant about the fact that no matter how far and how often he travels, he won’t even scratch the surface of Canada. Which is exactly why he urges people to visit, and then to return time and time again…‘I live here and work hard to see as much as I can, but I know I won’t see it all, so I always try to remind people that Western Canada and the North were the last discovered parts of North America, and that discovery is still happening - why wouldn’t you want to be a part of it?’.

British Columbia is the quintessential Canadian province. Lapped by the pristine waters of the Pacific Ocean to the west and overlooked by the majestic Rocky Mountains to the east; BC is a place of unadulterated natural beauty. And nowhere is this beauty more evident, more pronounced, than Knight Inlet.

Located to the east of Port McNeill of Vancouver Island, this inlet is a stunning wilderness, a wilderness most famous for its population of grizzly bears that thrive thanks to the area’s abundant salmon run. Brian Collen is the lodge operations manager for Knight Inlet Lodge, and has spent years introducing the world to the wonders of this special place… ‘I’ve lived and

worked here in the southern portion of the Great Bear Rainforest for the past couple of decades, and I cannot ever envision being anywhere else’.

Once again, we are speaking with someone so passionate, so enamoured with the destination in which they reside, that they are declaring they hope to never leave. And, once again, the more we find out about Brian’s day-to-day life, the more we understand why he feels this way…‘I’ll start my morning with a short walk from my accommodation to the dining hall for my morning cup of coffee, and en-route I’ll often see bears along the shoreline, bald eagles soaring overhead and on occasion, humpback and killer whales cruising by in front of the lodge’.

It’s a morning whose magnificence we find hard to comprehend, so accustomed are we to fighting for space on the Underground and being swept up in crowds as we race to our desks. But unlike Brian, we are not on a part of the planet where such astounding natural occurrences abound. Not in fields of work that allow us to dedicate our days to the natural world…‘My work along coastal British Columbia has immersed me in an eco-region that is forever revealing something new. Whether it be the behavior and interactions of the wildlife, or experiencing the seasonal rhythms of the temperate rainforest and its adjacent marine waters, it provides endless inspiration to me’.

It is abundantly clear that Brian lives and breathes Knight Inlet, and thus it took little prompting to get the impassioned, informed speech we so wanted him to conclude with…‘Knight Inlet Lodge is located in part of the largest area of undeveloped temperate rainforest in the world. It is a place where the connection between ocean and rainforest sustains a biomass greater than any other terrestrial ecosystem on the planet. It is a place where you can listen to complete silence interrupted only by the sounds of the forest and the ocean. It is a place where the night sky is filled only with stars. It is a place where sightings of salmon, grizzly bears, black bears, wolves, bald eagles, killer whales, humpback whales and dolphins, to name only a few, is still a reality’.

It is a place, Brian, that we are now all dreaming of experiencing first hand.

On Vancouver Island you’ll find the provincial capital of Victoria, a slightly bohemian city

that’s best explored on two wheels. The island is also home to Tofino, where you can try your

hand at surfing, and a multitude of other quirky communities whose friendly, small-town vibe is
