CAKEPOPS

Theyaresweet,round,andalmosttoocutetoeat–cakepopsarethenewstarsinthesweet-lover’ssky!Notonlydotheselittlecakes-on-a-sticktasteunbelievablygood,buttheyalsolooktoogoodforanyonetoresist!Thenameisacombinationofthewords“lollipop”and“cake”.Cakepopstastelikecake,butwiththestickandroundballontoptheylooklikealollipop.

Allyouneedtomakethemisplainspongecake.Youcutoffthecrustandcrumbthecake,thenaddcreamcheeseandicingsugarandshapethismixtureinto

smallballs.Thelittleballsarethenattachedtosticksanddecoratedanywayyoulike.Youwillfindthebasicrecipeforthecakemixinthechapteroncakepopsonpages18and19.Ifyou’reinahurry,youcanalsouseboughtcakeoraflanbase,anduseitasexplainedinthebasicrecipe–thiswillsavethetimeneededforbaking!Anelectriccakepopmakeralsoprovidesasterlingservice.Themixissimplyspoonedintothedipsinthecakepopmakerandbaked.Theballsarereadyinjustafewminutes–andyoucanstartdecorating!

Attachthecakeballstocakepopstickswhentheyarecompletelycool.Dipafewcentimetresofthesticksinicingorchocolateglazefirst,theninsertthemtothatdepthintheballs.Thiswillhelptheballstostayonthesticks.Oncethe“glue”hasdried,youcandecoratethecakepops.

Putthecakepopsinthecakepopstandtoset.

IcingandlemonicingForaclassicalicing,combineicing(confectioner’s)sugarwithalittlewatertomakeafairlyviscous,smoothmixture.Alternatively,youcanmakeafruitlemonororangeicinginthesameway–simplysubstitutelemonororangejuiceforthewaterandmixitwiththesugar.

ApricotglazeTheitemsareglazedallaroundwithapricotjam.Itisalsooftenusedasundercoatingforchocolateglazes,marzipanandreadytorollfondanticingstohelpthemstickbetter.

Tomakeanapricotglaze,simplystraintheapricotjamthroughasieve,boilinasmallsaucepanwithalittlesugarforabout3minutes,stirringcontinuously.Theapricotglazeisbrushedonthecakewhilestillhot.

ChocolateglazeForasimplechocolateglaze,chocolatesimplybreakthechocolatecoatingintosmallpiecesandmeltoverhotwater.

CandyMeltsCandyMeltsareeasy-to-meltwafersofcolouredcoating.Theyareavailableinawiderangeofcoloursandflavours.Thedropsaremeltedoverahotwaterbathorbain-mariejustlikechocolatecoating.Ifthemeltedcandiesaretoostiff,theycanbethinnedbyaddingcoconutoil.

Creativelywrapped–marzipanandreadytorollfondantWhetherpirate,elkorfairy,thecakelolliessuitanyoccasion!Almondpasteorreadytorollfondanticing(sugarpaste),whichisavailableinlotsofcoloursandflavours,areusedtocreatetherightlook.Athinlayerofastickybase–apricotglaze,icingetc.–isfirstappliedtohelpthefondantsticktothesurfaceofthecake.Almondpastehastobekneadedwithalittleicingsugartomakeitmalleable.

UsefultoolsAllyouneedfordecoratingthecakepopswithreadytorollfondantisarollingpin,aknifeandavarietyofcutters.However,formorechallengingdecorations–ortomakeyourtaskeasier–youcanbuyawiderangeofusefulaccessoriessuchassiliconerollingpins,fondantcuttersandmodellingtools,plusreliefmatsandleafandflowercuttersordecorativebordersets.

DecoratingwithreadytorollfondanticingBeforefondanticingcanbeused,itneedstorestatroomtemperatureforabout2hours,thenkneaditthoroughlywithlightlygreasedhandstomakeitmalleable.Itisimportanttokneadallofthefondant,i.e.nottofoldanyareasovereachother

toknead,toensurethatthesurfaceremainssmooth.Thefondanticingisthenrolledoutonaworktopdustedwithcornstarchandusingawoodenorsiliconerollingpin.

Towrapacakepopinreadytorollfondanticing,cutacircleoftherightsizeoutofthefondantusingaknifeorsuitablysizedcircle.Placethecircleoverthetopofthecakepopandbrushdownthesideswithyourhandstomakeitsmooth.Ifyouseeanybubbles,justpiercethemwithapinandbrushthemout.

Motifscutoutofreadytorollfondanticingsuchaswings,ears,armsandsooncanbestucktothesurfaceoffondanticingwithapricotglaze,icingorwater(onlyuseaverysmallamount).Whiskedeggwhiteorroyalicingalsomakegood“glues”.

Sosimpleandyetsodifferentfromanyotherkindofcakeortartorpastry.Creamy,sweetmacaronshavelongbeenaparticularlydelicatespecialityinFrance.Inrecentyears,theyhavealsobecomeverypopularbeyondthecountry’sborders.Andit’shardlysurprising,becausethelittlemeringuesmadeoffinelygroundalmonds,icingsugarandeggwhitearenotonlydelightfultoeat,butarealsoenchantingtolookat.Robedinawidevarietyofcolours,theyabsolutelykeepwhattheypromise.Thewafer-thin,smoothexteriorconcealsasoft,delicateinterior,andthecreamyfillingofbuttercream,ganacheor–morerarely–jam,meltswonderfullyinthemouth.

Asingeniousastheselittlesweetdelightsare,ifyoubearjustafewpointsinmind,you’llfindthattheyarereallyeasytomakeyourself.

Aboveall,makesurethatthealmondsarereallyfinelyground.Eithergrindthemyourself,orbuysomeandgrindthemagaintogetherwiththeicingsugar.

Andbesuretofollowtheinstructionsforthedryingtimewhenyouhavepipedthemacaronsontothebakingtray.Leavethemtodryatroomtemperatureforabout15minutesbeforebakingthem;thiswillpreventthemacaronsfromcrackingintheoven.However,trynottoletthemdryforlongerthan15minutes.

Keepyoureyeonthemwhiletheyareintheoven.Theyshouldnotturnbrown,soit’sprobablyagoodideatoputthemonthebottomrunner.

Pleasenotethat,unlikemostbiscuitsandcookies,macaronslosetheirflavourquitequickly,sodonotstorethemforlongerthan5–7days.
