I don’t remember when missing out became such a big deal, but it is now the number 1 cause of discontent for the otherwise privileged. We are scared of missing out, we fear not being in the right place, not dressed in the latest über cool attire, not having children when we should. We are working harder than human beings have ever worked to ensure we miss nothing, with the result in my opinion that we are missing out on a lot.

I recently read about a 10- year old girl’s ‘Missed list’ to her absent father. This list, 22 of the most important moments of the year, including school concerts and a parent teacher meeting that he had failed to attend due to work commitments, shocked him into resigning from his lucrative job. It was I read, his wake-up call, a reminder that he was neglecting those big and little moments that make up each day. With that in mind, as November is now upon us it’s a welcome reminder to slow down, and let go for a change which is the best kind of fun and to make time for those little ‘unimportant’ moments.

This edition’s features are based on ‘Cultural Egypt’, which offers simple pleasures right here on our doorstep. We spent a day in Old Cairo, namely El Moez Street and were blown away with the richness of the area, read which places you should visit on page 30. The image on this month’s cover is a picture of Saied Halim Palace, taken by interior designer Karim El Hayawan, his imagery has blown us all away with its dynamic narrative and cinematic capturing of Cairo. See more of his work on page 22. We also cover Lake Nasser Cruises, and sailing on the Nile, to pottery in Fayoum.

We all know him as that ‘hot’ guy in El-Mowaten X and later Amr Youssef in Taraf Talet, a mistake we all make when all we see is eye-candy rather than an actual person! Amr Youssef

is a living, breathing, very alive person whom I had the pleasure of meeting. Behind his good looks he is a natural, easy-going and what-you-see-is-what-you-get

kind of guy. He’s a pretty boy with depth, personality and charm. He’s definitely a boy you’d want to bring home to your parents!

CEM: What did you enjoy most about filming El-Harb El-Alameya El-Talta?

AY: The crowd and vibe on location was amazing, they’re all my friends so we had a lot of fun together. However my shoot was only one day, it was very short. The role was quite different and challenging because I had to keep completely still while shooting. It would later be enhanced with graphics, if I moved 1 mm we’d have to start all over again.

With many of the writers also being in the cast there must have been a lot of improvisation and humour on set, was this the case?

It was a lot of fun, but not all laughs like people think because we were working most of the time. We did some improvisation when it came to my lines, mentioning talk shows and real-life characters as well speaking in colloquial Arabic, which is of course not in line with the historical character of Salah Eldin.

What do you think appealed most to Egyptian audiences about the film?

It’s incredibly funny and witty, a really great comedy! The writing and acting were fresh and original and Ahmed El Guindy the director did a great job!

What genre of film do you most enjoy?

All genres. If a film is well done I would watch it regardless of whether it is comedy, action, romantic or horror. I base my judgment on the quality of the work not the type.

What was your first big break?

I don’t believe there is such a thing as a big break, there are important steps one takes towards his/her goal

that bring them closer to achieving it, without each step you wouldn’t have reached the next one. It’s an accumulation that eventually leads to success. Having said that, I can tell you what I consider the milestones in my career. The first huge step was definitely El-Daly, starring the great Nour El-Sherif, this series had a huge audience and I went on to do two seasons. I then starred in front of Hanan Turk in two series consecutively. Another huge step was Taraf Talet, that was very well received. But I must admit that I have never experienced the feedback I got last Ramadan from my latest series Ad Tanazoly, people’s reaction to it was fantastic.

Did you ever question your direction in life, or was acting always the only option for you?

I never regret any decision I take, it takes me much longer than other people to make a decision but after it’s taken I never regret it. I feel regret is an impediment to progress, it slows you down. For example, if I turn down a project and it goes on to be a great success or if I take part in something that doesn’t receive the feedback I expected; I still don’t regret it. “There is no use crying over spilt milk”. By the way I graduated from the faculty of law at Cairo University, the English section, but acting was my true calling and I went for it!

How do you manage to maintain your privacy and a personal life when you are such a well-known actor?

I do my best to lead a normal personal life, I don’t go out a lot and I avoid extremely crowded places. However, I always try to make time for my fans. If people want to take a picture with me most of the time I agree to it. These people are the ones that made me successful. All they’re doing by taking a picture is showing their love, which is incredibly important to me.

Which actor and role has had the most impact on you?

There are many actors and roles I admire such as the late Ahmed Zaki in El-Beh El-Bawab, Nour El-Sherif, Yehia El-Fakharany and Adel Emam in a lot of their roles. If there is one role I would love to do it would be Ahmed Zaki in Zawget Ragol Mohem, even though it would be very unfair for me to be compared to such a legendary actor.

How do you prepare for a role, is it difficult to get into character?

Preparation differs from role to role, some roles require a lot of reading and watching references. Others require going to meet certain people and capitalizing on their experiences. What people don’t understand is that our job is full-time, yes, we don’t have fixed working hours but we work

just as hard. During shoots, I could easily work for 12-14 hours straight overnight; it’s very hectic physically and emotionally.

What hobbies do you find time for?

I enjoy all sports except for football, I’m not really into it, but I love to move all the time. Another favorite hobby of mine is travelling, it revives me.

I don’t have a favorite but I really enjoyed the last book I read called Ababeel. We’re considering turning it into a film or series.

If you’ve been lucky enough to experience Karim El Hayawan’s talent as an Architect/Interior Designer, then you’ve truly hit a designer jackpot! With a keen eye and a substantial understanding of space, El Hayawan’s services are a much-coveted privilege in Egypt and abroad. To get a glimpse of his discerning taste, remarkable sense of aestheticism, and profound passion for art and architecture, all you have to do is look at his Instagram page. Luckily, we not only feature his work on the cover this month, we also had a chance to chit-chat with the artist.

CEM: Which came first, interior design or photography?

KH: Architecture was the start point, what I originally studied. I believe architecture develops a mindset and fuels all arts. In a way every human relates, engages and is influenced by where they live or work. Spatial experience, light, shades and shadows and even materials.

Interior design was derived in a way as an attempt to avoid the architectural mayhem in modern day Egypt. Opting for a more introvert element where a clean and less restricting canvas exists.

Photography always complemented both. Let alone that the love of geometry, shapes and composition was common in all three.

How did the photography come on board?

Photography came on board while I was studying architecture, Islamic architecture fascinated me always. Essays on iconic mosques involved photography and that’s when I felt an immense urge to capture such timeless beauty with a personal perspective.

It felt both challenging and satisfying.

Has photography honed your designer’s eye and perceptions, and if so, how?

Yes, most definitely. Starting from random street palettes, to salvaged street furniture, to how people engage with their spaces. Coming close to a spectrum of social levels, backgrounds and lifestyles. Photography gets you the closest to places you wouldn’t find elsewhere.

What is your favorite location in Egypt to photograph?

Islamic Cairo. Behind the main walls of this enchanting area, being the largest Islamic outdoor museum. It is full of life. The alleys, monuments, the spontaneous urban network, people, stalls, the souks and workshops. All exist behind its doors.

How often do you go on walks to photograph Cairo?

I have a religiously fixed ritual of going on a few hours walk every Saturday morning, unplanned destination. Keeping a discipline to it always works and it’s something that I anticipate every week. Both, friends and random people sharing the same passion for Cairo and photography join me at times. Including travelers that would like to see the other side of Cairo.

Best places you would recommend our readers to visit in Cairo especially to photograph?

The list is endless… I would recommend getting lost in Islamic Cairo’s alleys… People there are quite friendly and less hostile around cameras. The area offers architecture, workshops and an array of activities… Especially the other side of Moez Street onwards… All the way up to El Darb El Ahmar and Bab El Wazeer… And those with enough stamina can reach all the way up to Sultan Hassan Mosque as the climax of that walk.

What camera do you most enjoy working with, and why?

It’s more of the lens, for me it would be a 50mm f/1.4 ideal for street photography. Currently I’m using a Canon 70d body.

Have you managed to photograph some of Cairo’s iconic buildings from the past?

Yes. Trespassing in itself is part of the process… Saied Halim Palace, built in 1897 to state one. As well as numerous downtown buildings. Climbing up minarets. Ancient warehouses and workshops. Iconic buildings are almost around every corner of downtown and old Cairo.

You were recently featured in CNN; tell us a little bit about this?

It was very interesting and rewarding to share what hidden Cairo has to offer with an international audience. I believe we need more light shed on such forgotten gems scattered all over the big city. Even though it’s mostly abandoned and in bad condition, yet it never fails to charm. The kind of charm only heritage and culture can behold.

What would be your perfect Friday in Cairo?

Time with the family (and I mean that even though it sounds cliché), and rest. (If that exists) – As well as anticipate my Saturday walk of course.

The best souvenir you’ve brought home?

Each souvenir has its meaning, I always collect something that reflects the country I visit. Italy inspires me a lot.

The best gift you’ve recently given?

Neymar’s football shoe for my eldest daughter, and a handmade pottery salad bowl for my wife, from Fayoum.

How would you describe yourself in 5 words or less?

Obsessive, restless and curious.

In Depth with Guinness World Record SCUBA Diver Ahmed gabr

Ahmed Gabr has become an internationally recognized name after achieving the Guinness World Record for the deepest SCUBA dive. Back on his home turf, Egyptian Ahmed Gabr was met with challenges along the path towards reaching what he set out to accomplish.

Preparation for the record Breaking Dive

Gabr maintains that preparation for the dive happened over the course of four years. Working as an officer in the Egyptian army, Gabr was required to balance his professional obligations with his diving pursuits. Gabr began avid preparation for his recent record dive approximately one year before he completed the dive this past September.

While cardiovascular training was absolutely essential in order to reduce muscle pain, physical preparation was only one of two aspects of Gabr’s training. As with many of the maost impressive human feats, Gabr knew that mental strength and determination would be his greatest wagers for success. Gabr’s mental mediums were visualization and anticipation in an attempt to expect the unexpected.

Divers boast of the beauty of the Egyptian seas and come from all over the world to dive here. Egypt stands as one of the world’s top diving destinations. For his dive, Gabr chose the coastal waters of Dahab for logistical and technical reasons. It provided the depth he needed, proximity to the shore and offered the best tidal currents, maximizing his chance of success. South African Nuno Gomes held the previous record of 318.25m in 2005 also off the coast of Dahab.

The Dive and its risks

Gabr reached an astonishing depth of 332.35m in the Red Sea, off the coast of Dahab and was immersed in the water for 13 hours and 50 minutes. While Gabr spent approximately 12 minutes to reach the record depth, the duration of time was occupied by a slow ascension in order to ensure his safety.

As a result of the dive, Gabr had to prepare for five main possible pathologies:

1. High Pressure nervous Syndrome (HPnS)

This physiological and neurological disorder may result when a diver is using a breathing gas containing Helium and descends below 180m.

2. Decompression Sickness

A diver may experience pain in the muscles and joints, cramps, numbness, nausea, and paralysis when rapid decompression occurs. A hasty ascension from a dive causes nitrogen bubbles to form in the tissues of the body. Divers refer to it as the bends.

3. isobaric Counterdiffusion

When the interaction of different gases move about in contrasting directions in the body without changes in the environmental pressure, gas will diffuse in enclaves of the body’s tissues causing malfunction.

4. oxygen Toxicity

Divers rely on supplemental oxygen. Increased levels of oxygen in bodily tissues is called Hyperoxia, which could result in respiratory failure.

5. Hypothermia

This is the risk of having a severely low body temperature which prevents the normal functioning of the metabolism and body.

Gabr’s drysuit prevented the possibility of hypothermia. At 290m Gabr incurred High Pressure Nervous Syndrome. Gabr had to remain stationary and fix this problem before continuing. ( Text to be added here )

Personal Challenges

As Gabr embarked on his mental and spiritual journey, he was met with a great deal of adversity from those around him. Gabr states that it was necessary to explore relationships with many different local dive centers before he was able to find a team that understood and appreciated his mission; one that he was able to trust and work with. Gabr also felt censured by the greater Egyptian community about his goal to accomplish the deepest SCUBA dive. He was criticized for risking his life and ridiculed for engaging in suicidal behavior. His grandiose mission was often reduced to attention-seeking behavior, rather than an ambitious, worthwhile undertaking.

Personal Perseverance

Gabr focused on his personal agenda and successfully ignored all distractions. He affirms that ego can ruin your life. He attributes his motivation to the quest for answers and humility. Gabr has been working as a dive instructor for 17 years and taking the plunge himself for 20 years; more than half his life. Gabr finds peace and purity in the depths of the water. He is intrigued by how far and deep the human body can go and maintains his own personal reasons for his underwater pursuits.

First impressions are everything. From the moment an Arabian horse enters the arena the judges are looking for that special magic that declares it to be a true ‘type’, from the toss of its mane, tail held high, dish face and proud bearing, to the flowing movement that has the crowd enthralled. On the 16th to the 18th of October Rabab Stud held its fourth annual International Arabian

Horse Championship, and proved that the Egyptian ‘type’ is thriving. The event has also secured its growing reputation as one of the most respected and important B-class shows on the international circuit. (To qualify as a ‘B-class’ the event must meet stringent conditions set by the European Conference of Arabian Horse Organizations).

Presided over by Sheikh Khaled Mohamed Awad Bin Laden, owner of the Rabab Stud in Sakkara, the Championship has become an important date on the calendar for many breeders, and according to several of the international judges present, is exhibiting a better calibre of horses year by year.

An increase in the numbers of breeders both local and foreign operating from Egypt, plus the development of new technology allowing for a wider breeding pool, has allowed for the introduction of new bloodlines, whilst the general level of knowledge among serious breeders is growing all the time. The choice of competition judges itself is crucial. Says Maha Ibrahim from El Zaman Stud, who has been sitting on the committee for three years, “It’s a show, but it is also a business. The judges are usually breeders themselves, but there should be no conflict of interest, and they must be impartial. We are also in Egypt so our taste in judges leans towards those favouring the ‘straight Egyptian’ horse. Although we allow Polish and Arabian entries, which can be bigger and showier, for me a big part of this show’s success is in the fact that the Egyptian horses have beat them. They have more charm!”

Russian judge Mrs Irina Stigler was impressed by the sheer number of entries in this year’s competition, “Often in European championship shows it’s difficult to bring together more than fifty horses. In this competition there are around two hundred and forty, with a wide range of breeders involved, from large studs down to the modest; it is very inclusive.”

Of those breeders, several raked in numerous prizes last month, including El Mamlaka (Sheikh Saud el Saud), Khatab and Tahany (Tarek Khatab), El Farida, and El Bawady. Winner of the Seven Plus mares category Mohga has been a champion every year for the past ten years, says Tarek Khatab, travelling as far away as Germany and Belgium to collect prizes, while Sheikh Saud took both gold and silver with his senior mares Parma and Ajenda. Although Parma had won world championship gold in Paris before he bought her, El Saud insists he chooses horses with his heart and not his head, “If I don’t feel that connection, I won’t buy a horse no matter how beautiful they are,” he says.

The Tunis village festival for pottery and handicrafts will take place for the 4th year running in this small Fayoum Oasis village by Lake Qarun, from the 27th to the 30th of November, 2014. The festival has become a major draw for visitors from Egypt and abroad who appreciate the efforts made to keep traditional crafts alive. Ibn Hayan Lab in Arkan Plaza has introduced a new technology in Egypt that might be able to explain your unresolved health problems. Cairo East Magazine paid a visit to Dr. Nesma Tallawy to get the details.

Food Detective, pioneered in the United Kingdom is the latest technology in food allergy and intolerance testing. The test is simple and painless. A lab technician will prick your thumb or finger one or two times to withdraw the necessary blood sample. A blood analysis will evaluate your Immunoglobulin G (IgG) levels in response to 46 different possible food allergens. In addition to determining the presence of food allergies, the lab is able to use this technology to evaluate the patient’s sensitive and intolerance to foods.

Food allergies and their accompanying physical response are well known to us. It is not uncommon for allergies to appear in young children and remain with individuals throughout their lives, while others out grow them. Reactions are immediate and the trigger should be withdrawn from the person’s diet in order to prevent allergic reaction in

the future. We are familiar with what allergic reactions look like: skin rash, swelling and shortness of breath are among the most common symptoms. The onset is immediate and knowledge of the cause helps one to prevent an allergic reaction by withdrawing the catalyst food allergen from one’s diets.

There is a more subtle offender wreaking havoc on the body’s immune system. Food sensitivities and intolerances are the underlying culprit of many of our health complaints and problems. While an allergic reaction to food is immediately noticeable, food intolerances wreak havoc on

the body slowly over time. Initially, symptoms masquerade inconspicuously throughout the body. Your persistent headaches, flatulence, bloating, fatigue, aches and pains are your body’s reaction to food sensitivities and intolerances.

In our September 2014 issue, we brought you the inspiring story of Galal Zekri-Chatila, the young cyclist planning a five-month journey across all of Egypt on his bicycle. It is a mission aimed at raising awareness of the diversity of Egypt and Egyptians; a noble cause striving for social tolerance, communal solidarity, and embracing differences.

This month we get a sneak peak into Galal’s training and prepping process ahead of undertaking this journey of a lifetime.

“I don’t have a routine for training, but I love running, so whenever I have free time I go for a run. In my last run, I completed 32 laps to cover 10 km in 1:15 hours. I also do some cycling; my last session was a 50 km of uphill and downhill across Sinai’s mountains. I train with Train for Aim in their Track & Field sessions, it’s quiet challenging! Now I’m working on adding swimming to my list.”

“I’m visiting my physiotherapist more often these days to make sure that my knees will be able to do their duty.”

“It has been a very tough year and a half for the most part. Getting the funds was a separate challenge all its own. To build a proposal and to understand the needs of the corporate sponsors was a tough learning experience. I was turned down by many entities, and after giving up on getting my funds I suddenly found Nestle Waters interested, and then I got Juhayna as well. Water-Ski, Windsurf & Sailin the Heart of Cairo

While head lice are an annoying occurrence, the good news is that they do not carry diseases, and accordingly should not be considered a medical or a health hazard.

Head lice are tiny insects, the size of a sesame seed, which feed on blood from the human scalp. A head lice infestation is not a sign of poor personal hygiene or an unclean living environment. Lice have no wings or powerful legs for jumping; they spread most commonly by head-to-head contact with an infected person. Lice can only survive for a short period on clothing or other personal items, so a shared hairbrush or towel can help a louse find a new host.

Common signs and symptoms of lice infestation can include:

• itching. Itching on the scalp, neck and ears is the most common symptom. It is caused by an allergic reaction to the bites of the head louse. Sometimes the itching can lead to excessive scratching that can increase the chance of a secondary skin infection.

• Lice on scalp. Lice may be visible but are difficult to spot because they’re small and move quickly.

• Lice eggs (nits) on hair shafts. Nits stick to hair shafts. They’re easiest to spot around the ears and the hairline of the neck. However, the presence of nits doesn’t necessarily indicate an active infestation.

Head lice will not go away on their own. If you suspect your child has an infestation, there are several steps you should take right away:

• Take your child to the doctor to confirm the diagnosis.

• Notify your child’s day care or school so that other students are checked.

• Examine all other household members for signs of lice infestation.

• Finally, treat everyone who’s infected at the same time.

Most products used to treat head lice are pesticides that can be absorbed through the skin. Therefore, all medicines used for the treatment of lice should be used with care and only as directed.

If the treatment for head lice doesn’t seem to be working, this doesn’t mean the lice are resistant; the following are several common reasons why treatment for head lice may fail sometimes:

1. Misdiagnosis. The symptoms are not caused by an active head lice infestation.

2. Not following the instructions

carefully for the treatment that is used like retreating too late after new eggs have already been deposited.

Sometimes re-shampooing the hair too soon (less than 2 days) after correctly applying and removing the medicine can reduce or eliminate any residual (continued) killing effect on the lice.

3. Re-infestation. The person was treated successfully and the lice were eliminated, but then re-infestation occurs from another infected person.

To avoid re-infestation by lice, follow these steps:

1. Machine wash clothing, bed linen, and other items that the infested person wore or used during the 2 days before treatment using the hot water (130°F) laundry cycle and the high heat drying cycle. Clothing and items that are not washable can be dry–cleaned or sealed in a plastic bag and stored for 2 weeks.

2. Soak combs and brushes in hot water (at least 130°F) for 5–10 minutes.

3. Vacuum the floor and furniture, particularly where the infested person sat or lay. However, the risk of getting infested by a louse that has fallen onto a rug or carpet or furniture is very small. Head lice survive less than 1–2 days if they fall off a person and cannot feed; nits cannot hatch and usually die within a week if they are not kept at the same temperature as that found close to the human scalp.

Finally, if you have young children, there’s very little you can do to ward off head lice. Kids will be kids, and when they put their heads together or share bows, lice get a ticket to ride. Your best defence is to examine your child’s hair and scalp regularly so you can catch the infestation early. Prompt treatment will help prevent the bugs from spreading to the rest of the family.

CEM: What is Fat Freezing and how was it discovered?

Sn: The procedure was officially FDA approved in 2009, making it a relatively recent method of

dealing with unwanted fat deposits. Strangely, it was actually noted some years ago that people who regularly sucked on ice-lollies or popsicles had far less fat in their cheeks than those who didn’t. Further experiments went on to prove that by freezing fat cells to a certain temperature the body could then break them down and dispose

of them without harming the other tissues through a process called apoptosis. The cryolipolysis methods we use today are more scientific and sophisticated, but we can thank that first person for making such an important observation.

The procedure involves selecting an area of hard-to-budge fat, inserting it into a freezing module, which then gauges how much can be removed, with the optimum length of time and temperature. The time of a session is generally around 40 minutes. 25% of the fat cells involved can be permanently removed in the primary session, with a further 25% in a follow-up session 30 -40 days later.

What type of machine is used?

Our machines come from Spain, which is quite advanced in this technique. They were the second country to be granted FDA approval.

is it dangerous or painful?

Not at all, there may be a slight numbness and redness immediately after a session, but there is no recovery time required as might be the case using other fat removal techniques. It is suitable for all ages and body types so long as there are no contraindicating conditions like anaemia or skin lesions. Of course, we do not carry the procedure out on women during pregnancy.

Does it leave any scarring?

It is a painless non-invasive procedure, so there are no scars.

Will it work if a person has already managed to lose a lot of weight?

Yes, it is great for tidying up stubborn areas of extra fat. In conjunction with the right exercise regime it can return a person’s body to excellent shape.

Are other therapies used alongside cryolipolysis?

Every case is judged on its own merits. The consulting specialist may also recommend some cavitation (shortwave ultrasound) or LPG

(lipomassage) to help break up areas of cellulite or fat. If there has been a very large amount of weight loss a tummy tuck (abdominoplasty) might be advised when the optimum weight level has been achieved to remove excess skin in the lower abdomen. This is a surgical procedure, but should not require a general anaesthetic, as epidural or spinal anaesthesia is effective.

How permanent is the procedure?

The fat cells that have been removed by cryolipolysis will not be replaced. By a person sticking to a healthy diet the remaining fat cells in the location should not expand and the problem zone should maintain its trimmer appearance.

How does the cost compare with other methods of fat removal?

It is actually very pocket friendly. For example, a session costs remarkably little in terms of the benefits that come, especially as there is no loss of valuable work time through needing a recovery period.

is everyone a suitable candidate for cryolipolysis?

As it has become better known we have been approached by more and more people, some of whom do not accept that this is an adjunct treatment for the benefits gained from following a disciplined healthy lifestyle. It is not a tool to merely suck away excess fat, which has accumulated through ongoing careless eating habits. We urge patients to understand the importance of eating a good nutritious diet, getting sufficient exercise, and using cryolipolysis as finishing touch to tackle difficult- to-move areas of fat.

Migration as I imagine it is the instability and continues movement of all; whether it is people, birds, animals, wind or ideas. Last year, I endeavored to demonstrate my views on the slums throughout my solo exhibition at Al Masar Gallery titled, “Urban Diversity”. As I took a profound insight into this argument, I was carried to a

scene to which I had unsurpassed feelings. Movement; a scene I felt best for us and our country. It is the discarding of the visually unpleasant for the superlative. For the sake of which we keep on migrating, altering, approaching, yet it remains unattained. Egyptians might migrate from one country to the other, yet they never cease to carry their identities along. If we decided for example to move to New York City, we will certainly redecorate it as we fancy it.

I find this theme a significant subject to consider and it is a challenging journey I will take to ensure that my ideas will drift to wherever I want them to be heard.

You can’t beat the location. Bang smack in the middle of town, in the heart of Zamalek, the Cairo Marriott is the perfect spot to meet up with friends who live in different parts of this vast city. So it was one weekend when our regular watering hole launched its new weekend brunch. Already being firm fans of the Garden Promenade Café, the best people watching venue in town, the lure of a really indulgent repast sealed the deal for us.

We got there early, a top tip if you want to catch your favourite table, and asked about the new brunch. And ah… that is when it started. For an amazingly reasonable price of 250 EGP inclusive, you can basically graze to your heart’s content, starting with a sumptuous buffet of hors d’oeuvres, seafood, sushi and sashimi, calamari, savories, assorted breads, a variety of cheeses, tasty oriental and international salads, dips and dressings. The vibrant colors testified to the freshness, from generous ‘roses’ of pink smoked salmon and shelled shrimp, to the crisp green of the salads, and every tone in between, everything tasted superb, and it took a lot of restraint to avoid overloading our plates. There was also a darling

mini-buffet set up in its own area for children, with wonderfully presented kid-sized portions, such a brilliant idea, we thought.

We had already spotted the carving station, with succulent roasts of lamb and beef, cooked exactly as we liked them. There were plenty of side dishes to accompany them, a creamy potato gratin, perfectly cooked fresh vegetables, pasta with béchamel, parmesan encrusted corn on the cob, mashed sweet potato, a choice of rich gravies and sauces. Although we were seriously tempted by the three barbecue stations operating on the terrace, with a choice of oriental, Indian or American meat items; our minds were already made up.

But, there was something confusing us, something different. We know the Marriott like an old friend, but this time there was a certain je ne sais quoi in the air. It didn’t take long to meet the man behind the mystery, newly arrived Executive Chef Marcelo Salinas. Young, articulate and clearly passionate about his art, Salinas was born in Argentina but raised in one of the great food metropolises of the world, New York. Add on a few years’ global experience with top

international hotels and you have a chef to reckon with. His food philosophy has created an impact within the three months he has been at the Cairo Marriott; we saw a fresh, innovative approach and creative flair in everything.

But back to business, the desserts. They say gluttony is a sin. I don’t think that should be applied for the dessert display we had before us. Delicious, divine, delectable, decadent, it would have been criminal not to try and taste as much as possible. Dainty mini-gâteaux nestled next to a veritable mountain of macaroons, slender stemmed glasses cossetted creamy delights of all colors, a chocolate fountain flowed unctuously next to a huge pile of marshmallows. Everything was a feast for the eyes, and equally scrumptious.

Planned for every Friday and Saturday from 1 pm to 5 pm, this buffet showcases the very best cuisine that the Cairo Marriott hotel has to offer. Teamed with the relaxing ambience of the Garden Promenade Café with its live jazz-fusion music the Cairo Marriott has got it right ; we would be hard pushed to think of a better place to while away a few hours.

Eggplant, Chickpea and Tomato Salad with Pomegranate and Pine-nut Relish

Salad ingredients:

300 gr eggplant, diced

2 tablespoons white onion, finely chopped

200 gr red cherry tomatoes, peeled, seeded and finely diced

300 gr chickpeas

5 gr parsley, finely chopped

3 gr mint, finely chopped

3 gr chervil, finely chopped

3 gr fresh basil leaves

2 cloves garlic, finely chopped

Sea Salt

Black Pepper

Sherry Vinegar

Extra Virgin Olive Oil

Pomegranate relish:

200 gr pomegranate seeds

100 gr pine-nuts, lightly toasted

Tablespoon shallot, finely chopped

2 tablespoons red wine vinegar

Mix lightly together.

Method:

Lightly fry eggplant, onion and garlic in olive oil and set to one side.

Boil pre-soaked chickpeas in salted water until cooked through but slightly firm to the touch. Alternatively you can substitute drained and rinsed canned chickpeas.

Add salt and black pepper to taste, mix in chopped herbs, and dress with sherry vinegar and olive oil. Drizzle with relish and garnish with basil leaves.

Casa Lingo Café and Restaurant just opened its doors in a very quiet residential street of Maadi, one that is lush with greenery. And that is where it gets inspiration for its name; Casa Lingo comes from Italian and refers to home or a homey feeling.

We came in to be greeted by founding manager Hamdy Abdel Ghaffar who comes from a consolidated career in the hospitality field. Along with his sons and daughter and staff from his hotel days, he built a solid team to launch his latest enterprise.

The restaurant area has been designed to attract both young adults, and families. Outdoor and indoor seating arrangements are available. Outdoors is beautifully adorned with plants, a cascading water wall, and flat screens – surely to attract the football fans. Indoors, tables take larger groups and a dedicated glass room houses the play area for kids. The Casa Lingo Kids’ area is a fully equipped room, with games and activities for all ages as well as a play station corner.

Despite the Italian name, Casa Lingo has a very international menu,

starting with oriental appetizers, to salads, sandwiches, burgers, pizzas, and main options. The menu is periodically changed to accommodate seasonality and freshness of ingredients. So it is always good to check on the board for the week’s suggestions from the kitchen.

Casa Lingo’s menu is straightforward, so it was easy to decide what to have, without being confused with too many options. We always like to try recommended dishes, so we followed the chef’s suggestion for mains. We started with some hot and cold oriental mezzeh, kobebah, sambusa, baba ghanough and tehina. We shared a Greek salad which was by the book, crunchy and fresh. For mains we had shrimp curry and chicken liver in a lemony sauce. Both dishes were well cooked and seasoned accordingly. The curry dish was unexpectedly light, and spiced just right. Both dishes were accompanied by white rice. Size and portions were just right too.

outs where you will meet familiar faces, come for a morning coffee to browse through the newspaper, meet your friends, have one of the best shishas, enjoy a match and feel at home and comfortable. Valet parking is available and as of November, will feature a breakfast menu on weekends.

As we were leaving our host presented us with a VIP Card,

another little touch from a venue where the client is the center of attention.

1/4 teaspoon whole cloves10 cardamom pods8 whole allspice1 bay leaf1 medium yellow onion, sliced2 teaspoons curry powder1/2 jalapeno, or more to taste1/2 cup whole, peeled, canned tomatoes (with puree), roughly chopped3/4 cup coconut milk2 cups water2 1/2 teaspoons salt1 1/2 pounds medium shrimp, peeled and deveined2 tablespoons chopped fresh coriander leaves1 tablespoon freshly squeezed lime juice.

Method:

Lightly sauté the spices, jalapeno and onion over a low heat in a heavy bottomed pan. Add water and allow to reduce.

Add shrimp, cook lightly then add tomato and salt.

Simmer gently till sauce reduces slightly, then add coconut milk and cook for around 10 minutes.

Finish off with a sprinkling of chopped coriander leaves and a squeeze of lime juice.

General Cleanliness & Safety

• Wear closed shoes in the kitchen, a clean apron; have your hair tied back and have a kitchen towel at hand.

• When chopping vegetables or meat, create a ‘claw’ using your fists where your fingers are not in direct contact with the knife.

• When washing dishes, wash messy ones first then cleaner ones last so you don’t waste a lot of water or change dishwater often.

• Use separate boards for meat/chicken/fish/veggies, so you don’t spread unwanted bacteria from raw food handling, around.

Meat & Poultry Handling

• Always make sure they’re cold to the touch when buying them, as this shows that they’ve been stored & handled right.

• Avoid re-freezing thawed meat/chicken/fish as it takes away from its freshness and is likely to have higher levels of food-poisoning bacteria.

• Use your cold compartment in the fridge to thaw freezed goods.

Vegetables & Fresh Greens

• Never place vegetables and fruits on the same shelf as they can go bad easily.

• Water & vinegar are natural disinfectants, so soak them well in a sink full of that combination before using or storing them.

• If your vegetables are about to go bad, minimize waste by preserving them into pickles, sauce or savory jams.

Waste & Storage

• To minimize waste & mess around the kitchen, use a ‘waste bowl’

for all the waste from food you are cleaning – making it

easy to dispose off when you are done.

• If your food is hot wait until it has

cooled down before placing it in the fridge, to minimize water from steam from ruining it.

• When handling jarred or canned

goods, store properly as per handling instructions or add oil on top to stop air from entering surface easily, helping bacteria survive.

McDonald’s Egypt celebrated 20 years of achievement in the Egyptian market and confirmed that it will increase its investments and create more than 10 thousand job opportunities. These actions have been part of its ambitious plan to expand its investments in Egypt and have 170 branches open nationwide by 2020.The 20 year celebration was attended by Mohamed Mansour, Managing Director of Manfoods, McDonalds’ top management, strategic suppliers and partners as well as a group of public figures and government officials.

This event was organized by United Group which is a collaboration between four fabulous ladies; Samia Abou El Fotouh, Alia Hassouna, Malak Madkour and Nevien el Shawarby.
