Clegg says an arthritis cookbook wasn’t on her radar until Karen Kennedy from the Arthritis Association of Louisiana contacted her about writing a cookbook for people who suffer from the disease. “I had to do a lot of research. While nothing cures arthritis, there are things you can do to alleviate some of the symptoms.” What resulted was Eating Well to Fight Arthritis. Clegg says while there’s nothing else like it out there, one thing she did not want to do was make it a medical book. “My goal – always-- is to appeal to the average, busy person who wants to cook affordable recipes.” The book includes chapters which focus on “no fuss foods”. Clegg says, “When your joints are giving you problems, I share simple recipes that need very little preparation such as chopping and cutting. Sometimes it’s not the food you eat, but how you prepare it.” Clegg, who has made the national circuit promoting her cookbooks, is committed to a healthy lifestyle and she says she is inspired to make a difference especially when it comes to something that touches so many lives. According to the Arthritis Foundation and the Centers for Disease Control, 1.7 million people in Louisiana have some form of arthritis. That’s one out of three people. Forty-nine percent are under the age of 55. “We want to improve the quality of life for the 20,000 people we serve in the state,” says Kennedy, whose mother had arthritis. Cooking became a challenge for her loved one. “My mother loved to cook. When the pain in her hands became crippling, she stopped cooking. It was devastating to her.” Kennedy says she came up with the idea for an arthritis cookbook three years ago when she learned that a diet with antioxidants and omega-3 reduces inflammation which in turn reduces pain. Clegg says the beauty of her book is that although it is arthritis specific, you don’t have to have the disease to enjoy cooking from it. “It’s not about singling people out. You can remove all the diseases from all of my trim and terrific recipes and prepare meals quickly, literally under 30 minutes. I like practical cookbooks where you can buy everything you need at one grocery store and eat afford- ably.” Kennedy says with May being National Arthritis Awareness Month, the launch of Clegg’s book is timely. “Not only are there great recipes, but Holly (Clegg) has designed the cookbook around helpful hints on “joint friendly” ways to fix a meal. “I’m so thrilled. Holly has a good mix in the book. She includes some recipes for those with diabetes or those who need gluten free. She’s also added recipes that are easy to freeze which in the long run, saves a step for people who sometimes can’t physically prepare a meal. I recently read an article in theDelta Farm Press about importedcrawfish and catfish. When theLouisiana Department ofAgriculture and Forestry, alongwith the Crawfish Board, cameup with the “Ask Before You Eat”campaign, it was meant to first,support your local farmers andproducers and second, ensure that

the product you are purchasingand consuming is both safe to eatand absolutely delicious.

We live in a state where ourproduce and seafood products aremarkedly desired in other parts ofthe world. Here we have it at ourfingertips. Why would we settlefor less? While some people areenticed by the lower prices of

imported seafood, better growingconditions here in Louisianaresult in a difference that you cantaste. Better flavor, better texture.Ultimately, it’s your decision.

One thing is for sure, restau-rants are required by law to dis-close to consumers the origin ofthe seafood they serve. Check itout! I bet you’ll be able to taste

the difference. So remember, I request that you

“Ask Before You Eat.” It shouldbe top of mind when you are din-ing at a restaurant or buyingseafood at the local grocery store.It's good for you and it's good forour farmers and fishermen.

2/3 cup spreadable seedless sugarfree raspberry jam1/4 cup orange liqueur or orangejuice, depending on taste6 ounces reduced fat cream cheese1/4 cup sugar1 teaspoon vanilla extract

1 teaspoon grated orange rind1 (8-ounce) container free fat free whippedtopping, thawed2 (3-ounce) pkgs. ladyfingers, split in half(24) or angel food cake cut into pieces1/2 cup raspberries1 1/2 cups strawberries, stemmed & sliced

1. In small bowl, mix together preserves and orange juice. 2. In mixing bowl, cream together cream cheese, sugar, and vanilla until light.Mix in whipped topping reserving, 1/2 cup for topping. 3. Line bottom of an oblong small dish with split ladyfingers. Layer with pre-serves mixture, cream cheese layer, and top with strawberries. Repeat layerswith remaining ladyfingers, preserves and cream cheese layer. 4. Carefully top with thin layer of remaining whipped topping. Top withremaining strawberries. Cover, refrigerate several hours or overnight.

Lemon Herb Shrimp

1/2 cup olive oil 2 teaspoons dried oregano leaves 2 teaspoons dried thyme leaves 1/2 cup pre-chopped green onion

1/4 cup lemon juice Salt and pepper 2 pounds peeled medium shrimp

1. Combine all ingredients except shrimp in resealable plastic bag. Add shrimp,tossing to coat. Refrigerate one hour, time permitting.2. Preheat oven 450 degrees. Place shrimp and marinade on foil lined bakingpan. Bake 10 minutes (depending on shrimp size) or until shrimp are done andmarinade bubbling. Serve shrimp with sauce.

The Louisiana Department ofAgriculture and Forestry (LDAF)hosted the 2013 Southern PlantBoard (SPB) Conference April 21-24in New Orleans. The SPB is a region-al arm of the National Plant Board,an organization of plant pest regula-tory agencies representing each stateand Commonwealth of Puerto Rico.

The meeting provides an informa-tion-sharing outlet for the plant pest

regulatory agencies to discuss issuesaffecting the southern states.

One of the highlights of the four-day meeting was a tour and lunch-eon at the Woodland Plantation inPort Sulphur, La. The luncheon wasfollowed by a trip to Belle Chasse inPlaquemines Parish to tour Saxon,Becnel and Sons Citrus Nursery.

The group was greeted byPlaquemines Parish President Billy

Nungesser, owner Ricky Becnel andhis wife, Stephanie, who treated thevisitors to refreshments featuringunique local specialties like freshorange cake, freshly squeezed man-darin orange juice and an orangeslush.

Ricky Becnel guided the tour of the163-year-old nursery. Becnel saidthe operation sits on about 20 acresof land along the Mississippi River

and houses 400,000 trees when fullyloaded. The nursery grows primari-ly citrus trees including kumquat,satsuma, orange, lemon, lime andfig.
