BASICS OF CIP

WHY WE NEED CIP

Cleaning of equipment that comes into contact with product is essential.

Manufacturers have a brand, moral and legal obligation to maintain high.

The following terms are used to define the degree of cleanliness, hygienic standards

a. Physical cleanliness removal of visible dirt

b. Chemical cleanliness

removal of dirt & microscopic redues deteched by smell or tastebut not visible to the naked eye

c. Bacteriological cleanliness attained by disinfection

d. Sterilie cleanliess destruction of all micro-organisms

In dairy operations the objective is nearly always to achieve Chemical and bacteriological cleanliness.

Therefore equipement are first thoroughly cleaned with chemicals detergents and then disinfected
