There’s only one thing better than a tender and juicy Farmland Pork Chop: a stuffed Farmland Pork Chop. We’ve been providing the best bone-in and boneless chops in foodservice for years, and we thought it was about time that we shared some of our best stuffi ng recipes (take a look at the back of the newsletter), just in time for the holidays.

• Cranberry Apple Stuffi ng: Stuffi ng mix with chopped apple, dried cranberries, celery and toasted walnut pieces added. Use apple cider to moisten mixture.

• Sweet Potato Stuffi ng: Combine diced cooked sweet potatoes, Farmland Apple Cider Bacon (cooked and crumbled), toasted pecan pieces and cinnamon-raisin–bread cubes.

• Cornbread Sausage Stuffi ng: Cornbread stuffi ng mix with Farmland Breakfast Sausage (cooked and crumbled), mushrooms, onions, celery and sage added. Moisten with pork or chicken broth.

• Tropical Stuffi ng: Cornbread stuffi ng mix with pineapple, mango, almonds and crushed red pepper added.

• Italian Stuffi ng: Stuffi ng mix with Farmland Pepperoni, marinated artichoke hearts, spinach, sun-dried tomatoes and asiago cheese added.

Pork Chops with Prosciutto Stuffi ng

Breakfast Ham Calzones

1. Heat convection oven to 350oF. Combine biscuit mix, Cheddar cheese and garlic powder in medium bowl. Stir in milk. Knead dough by hand a few times until it forms a ball. Divide dough into 6 equal pieces (about 5 oz. each). Place on parchment-lined sheet pan; press each into a 7-inch diameter circle.

2. Sauté pepper and onion in skillet with melted butter over medium-high heat 2 minutes. Add beaten eggs; cook until eggs are set, stirring occasionally.

3. Combine pizza sauce and pesto. Spread 2 tablespoons sauce onto each dough circle to within 1 inch of edge. Top one half of dough with pulled ham, scrambled eggs and mozzarella.

4. Fold untopped dough over fi lling; press edges fi rmly to seal. Bake at 350oF. for 15 minutes.

Makes 6 servings

3 cups biscuit mix4 oz. (1 cup) shredded sharp Cheddar cheese1 teaspoon granulated garlic1 cup milk3 oz. diced green bell pepper2 oz. diced sweet onion1 tablespoon butter6 large eggs, beaten¾ cup pizza sauce2 tablespoons sun-dried-tomato pesto 9 oz. Farmland® Pulled Smoked Ham*3 oz. (about ½ cup) shredded mozzarella cheese

12 oz. cream cheese, softened9½ oz. frozen chopped spinach, thawed and well-drained7 oz. prosciutto, chopped5 oz. diced onion1 tablespoon minced garlic12 (8-oz.) Farmland GM Center Cut Pork Chops** Italian seasoning Salt and pepper Olive oil

1. Beat cream cheese until smooth. Add spinach, prosciutto, onion and garlic; mix well.

2. Cut 2½-inch-deep pocket in side of each pork chop. Stuff with prosciutto mixture. Season outside of chops as desired with Italian seasoning, salt and pepper.

3. Brown chops in olive oil, approximately 2 minutes per side. Place on lined sheet pan and bake in convection oven, covered, at 350oF. for 18 to 22 minutes until internal temperature reaches 160oF. Remove cover during last 5 minutes of baking.
