Hello! Let me introduce myself! My name is Denise Bernier, and I am known by many friends as "Calicat" or Cali for short! I've been an avid cook and baker for decades (Mom was an awesome teacher!), and I started making chocolate caramels to sell at Tophatter, an online auction, in the summer of 2013. One of my first customers dubbed my caramels as "Calimels", short for Calicat's caramels, and the name stuck (no pun intended)!

My imagination and compulsion to create have, over time, resulted in well over two dozen varieties of Calimels. Some are simple, some are complex and some feature baked goods as well. All varieties are made using natural ingredients whenever possible, and as much from scratch as possible too (i.e., shortbread cookies, graham crackers, even marshmallows are from scratch!).

Original Chocolate - Soft and chewy, not sticky and gooey; fudgy in flavor, reminiscent of a soft Tootsie Roll.

Salted Chocolate - Original Chocolate with a smidge of flaked sea salt on top - just enough to accent, not overpower.

Chocolate with Basic Nuts - Mixed in or on top, your choice: peanuts, walnuts, hazelnuts or slivered almonds.

Chocolate with Premium Nuts - Mixed in or on top, your choice: cashews, pecans, candied pecans or chopped macadamia nuts.

Cinn-fully Cinnamon - No chocolate, just smooth, soft, chewy cinnamon caramel, dusted with freshly ground cinnamon sugar

Smooth Peanut Butter - Another chocolate-less

flavor, the smoooothest peanut butter candy you'll find, made with all natural peanut butter.

Fresh Mint - Just fresh, yet mellow, peppermint similar to that in Andes mints (except without the artificial color) - finely chopped fresh peppermint leaves added when available.

Mexican Chocolate - Original chocolate with

cinnamon and a dash of cayenne (just enough for a little kick), dusted with freshly ground cinnamon sugar.

Mocha - A lighter, sweeter chocolate than the original, laced with coffee and just a little espresso, dusted with sweetened cocoa powder.

Butterscotch Blondies - No chocolate here either, just soft and chewy butterscotch with some natural peanut butter, peanuts, chewy coconut and chopped cashews.

Hazelnut Coffee - Original chocolate laced with coffee and just a little espresso, topped with chopped hazelnuts.

Rich Espresso - Original chocolate, loaded with espresso and topped with a coffee bean on each piece (this one is not for the faint of heart).

Fresh Mint & Chocolate - A layer of original chocolate on the bottom and a fresh minty layer on top, swirled together just a bit. Fresh peppermint leaves added in season.

Peanut Butter & Chocolate - Chocolate on the

bottom and a smooth natural peanut butter layer on top with chocolate squiggles that can be personalized with a name or phrase too!

Oh Joy! Coconut & Almond - A layer of chocolate, then soft coconut, more chocolate, then some toasted coconut and a whole

almond stuck in the top of every piece.

S'Mores - A layer of homemade graham crackers, then original chocolate, some homemade marshmallows and more chocolate, swirled into the marshmallow. Gluten-Free available too!

Snickery - Like "that" candy bar! A layer of chocolate, then some peanut butter nougat, a layer of Virginia peanuts and vanilla caramel, topped with a very thin layer of chocolate.

Apple Cider - Similar in consistency to traditional caramel, yet tastes anything but

traditional, using a whole quart of cider and a whole apple in every 1-1/2 pound batch.

Orange - Not quite as firm as the chocolate and not gooey either. Also not too sweet. Made using real orange juice and pure orange oil; no artificial flavors or coloring.

Pumpkin Pie - Almost a traditional caramel consistency, but not quite as sticky, and loaded with real pumpkin and warm pie

spices - chewy pie without the crust!

Vanilla - A super creamy vanilla, with or without sea salt (plain or smoked!). For those caramel purists out there who don't need the fancy stuff!

Calimel Stacks - The Calimel version of a turtle. Almonds, cashews, pecans, peanuts or walnuts nestled between layers of vanilla and chocolate caramel. Generously sized.

OMG Pretzel Squares - Layered whole peanuts, vanilla caramel, peanut butter, chocolate caramel and a square pretzel (take 5, anyone?)
