Staff Sgt. E.A. Milstead:A decorated American hero
Upon first meeting Ed Milstead, asoft spoken, but quick-witted eighty-four year old, mostpeople didn't real-ize that they hadhad the honor oftrading storieswith a trueAmerican hero.This highly deco-rated war veteran,a member ofAmerican LegionPost 317 in Jarrell,Texas, for thirty-five years, talkedwith as much ani-mation about hisfourteen years as aWalmart greeter ashe did about thetime he spent inthe US Army.
Reverent andhumble about hisservice, Milsteadexplained, matter-of-factly, that herisked his life countless times duringhis twenty-two year tenure, "becausewe were fighting to save our freedom,and America is worth fighting for."
He also down played the fact thathe was actually wounded three timesthroughout his career, but has threePurple Hearts to prove it.
Edgar A. Milstead, one of ten chil-dren, is originally from Ball Prairie,Texas. He was drafted into the UnitedStates Army in 1950 at age twenty-two. Following a brief, month longBasic Training regimen in CampCook, California, he was put post
haste on a ship and sent directly toJapan as part of the Occupying Force
following WWII,beginning hiseventful, historic,and heroic tenurein the U.S. Army.
Smiling broad-ly, Ed recalled that"on the way over(to Japan), wewere about to runinto a typhoon.The ship stoppedin the middle ofthe ocean and wewaited for it topass. We passedthe time playingPinochle tourna-ments.” He vividlyrecalled leavingthe United Stateswith $22 “andbefore I got to portin Japan, I had
won $2,000!” At that point, heremembered thinking, “this Armything is going to be okay!”
The following months in Japan,during the occupation, were "nothingtoo exciting. We spent the time just‘romping and stomping.’”
From Japan, Milstead was sentwith the 124th Infantry to the Chosin
Reservoir, one of the bloodiestand most decisive battles ofthe Korean War. "It was myfirst real combat,” he mur-mured, his countenance chang-ing. "I saw lots and lots ofdeath on both sides; bodieswere stacked up like cord wood,” heremembered somberly. “I didn’t havetime to be scared, though. I was toobusy passing out ammunition to mymen to think about being scared."
Between 1951 and 1958, Milsteadcompleted three tours of duty inKorea and earneda Purple Heartamong variousother medals.
Afterward, hereturned to FortJackson, SouthCarolina, where heserved as a TroopInstructor inartillery, specializ-ing in small armsweapons training.
Following atour of duty inGermany, he wassent to Vietnam in1965. A PlatoonSergeant, he land-ed in Chu Lai,where he hadvivid recall of "allthe bamboo andjungle" habitat.Again, he became pensive and a littlequieter as he recounted "the minetrails" which took so many lives andinjured so many American soldiers.
One intensememory is ofone of hisColonels“going up
front to walk with his men."Soon after," he recounted,
"the Colonel stepped on a mine andwas killed instantly."
During one particularly fierce bat-tle Milstead recalled passing outammo to his men who were carryingsix 30-caliber Machine Guns (19 lbs.apiece) and one 50 Caliber gun (76
lbs), plus 45's, agrenade launcher,and a favorite ofcombat during thatperiod, BrowningAutomatic rifles. Aweapons specialist,Milstead says thathe literally carriedalmost as muchammo as heweighed.
After being ‘incountry’ for fivemonths, Milsteadwas shot in the legand lower torsowhen he was hitwith a clusterbomb from anAmerican airstrike. In responsethe question,"How did you get
shot?” Milstead glibly replies, “Iguess I didn't duck fast enough!"
He healed from his wounds andstayed in Vietnam to complete his

Respect and Honortour, returning to the United States for the final time in1966. SSgt. Edgar A. Milstead retired from the Army in1972.
While Milstead’s recollections were at times
reverent, at times direct and matter of fact, andsometimes even amusing, his true stature as aliving American hero is evident by both theshadowbox of medals he proudly displayed, as
well as by the respect he received from hisfellow Veteran’s at the American Legion.His medals include a Bronze Star with VDevice, received for an act of heroism inCombat; an Army Commendation Medalwith V Device, for actions in Combat; aGood Conduct Medal with two Oak Leaves;a Japanese Occupation Medal; a NationalDefense Ribbon with One Star; a KoreanService Ribbon with One Star; a VietnamService Medal; an Armed ForcesExpeditionary Service Medal; a UN Medalfor Korea; a Weapons Expert QualificationAward for Automatic Rifle; a CombatArms Badge (Infantry), his most covetedaward; and of course, three Purple Hearts,two from Vietnam (one with Valor) andone from Korea.
Ed passed away quietly in his home inFlorence, Texas, August 14, of this year. Hehad kept busy by donating much of his timeto the efforts of American Legion Post 317in Jarrell, where he had been a member forthe last thirty-five years. His last service tothe Post was Sergeant at Arms, servingmany years previous as Chaplain. He also“cut up the catfish” for the Legion’s month-ly fish fry, collected cans from the legionhall for recycling, and visited his sisterdaily.
Ed Milstead was a shining example ofone the finest American heroes that thisgreat country has ever produced.

History of Veterans DayWorld War I - known at the time as “The Great War” - officially
ended when the Treaty of Versailles was signed on June 28, 1919, inthe Palace of Versailles outside the town of Versailles, France.However, fighting ceased seven months earlier when an armistice,or temporary cessation of hostilities, between the Allied nations andGermany went into effect on the eleventh hour of the eleventh dayof the eleventh month. For that reason, November 11, 1918, is gen-erally regarded as the end of “the war to end all wars.”
In November 1919, President Wilson proclaimed November 11as the first commemoration of Armistice Day with the followingwords: "To us in America, the reflections of Armistice Day will befilled with solemn pride in the heroism of those who died in thecountry’s service and with gratitude for the victory, both because ofthe thing from which it has freed us and because of the opportunityit has given America to show her sympathy with peace and justice inthe councils of the nations…"
The original concept for the celebration was for a day observedwith parades and public meetings and a brief suspension of businessbeginning at 11:00 a.m.
The United States Congress officially recognized the end ofWorld War I when it passed a concurrent resolution on June 4, 1926,with these words:
Whereas the 11th of November 1918, marked the cessation of themost destructive, sanguinary, and far reaching war in human annalsand the resumption by the people of the United States of peacefulrelations with other nations, which we hope may never again be sev-ered, and
Whereas it is fitting that the recurring anniversary of this dateshould be commemorated with thanksgiving and prayer and exercis-es designed to perpetuate peace through good will and mutualunderstanding between nations; and
Whereas the legislatures of twenty-seven of our States havealready declared November 11 to be a legal holiday: Therefore be itResolved by the Senate (the House of Representatives concurring),that the President of the United States is requested to issue a procla-mation calling upon the officials to display the flag of the UnitedStates on all Government buildings on November 11 and invitingthe people of the United States to observe the day in schools andchurches, or other suitable places, with appropriate ceremonies offriendly relations with all other peoples.
An Act (52 Stat. 351; 5 U. S. Code, Sec. 87a) approved May 13,1938, made the 11th of November in each year a legal holiday—aday to be dedicated to the cause of world peace and to be thereaftercelebrated and known as "Armistice Day." Armistice Day was pri-marily a day set aside to honor veterans of World War I, but in 1954,after World War II had required the greatest mobilization of soldiers,

Easy ways tocelebrateVeterans Day
Veterans Day is an annual holiday when veter-ans of the armed forces are honored and celebrat-ed in the United States. Many people confuseVeterans Day with Memorial Day. While bothdays honor members of the armed forces, there'sa distinction between the two holidays. MemorialDay, which is celebrated in May, is a day desig-nated for remembering servicemen and service-women who died while serving. Veterans Day,which is observed in November, honors all mili-tary veterans.
The role of the brave men and women whoserve in the military is an important one, and it'sone that warrants appreciation and celebration.The following are a few easy ways to celebrateveterans and their significant contribution to ourcountry this Veterans Day.
Offer your thanks. Serving in the militarycan feel like a thankless job, as those who havenot served might not be aware of the risks menand women in the military take and the sacrificesthey must make to protect our country and helpthe less fortunate across the globe. As a result,something as simple as saying "Thank you" to acurrent service member or military veteran cango a long way. Veterans know they don't serve invain, but it's still a great idea to let them knowhow much you appreciate their efforts and sacri-fices.
Help families of active military. Many serv-ice members are currently stationed and servingoverseas, and their families back home may needor just appreciate a helping hand. Invite familymembers of active military over for dinner, offerto do chores like cutting the grass or shovelingthe driveway when it snows or help around thehouse if something needs fixing. Even if familiesof active members serving overseas appear to begetting along great, offer your friendship and letthem know you're there to help should anythingarise.
Visit hospitalized veterans. Unfortunately,
many veterans are hospitalized after suffering aninjury during a tour of duty. These veterans sacri-ficed their physical well-being to protect our wayof life, and many spend extended periods of timein the hospital. Visiting a hospital to get to knowa veteran and spend some time with him or her,sharing a few laughs and thanking them for theirservice, is a great way to celebrate the holidayand lift a veteran's spirits at the same time.Recruit friends and family members to visit hos-pitalized veterans as well.
Pay for a veteran's night out on the town.
Like many people, veterans appreciate an escapefrom the daily grind. Men and women who wantto show their appreciation to veterans can treat aveteran to a night out on the town. Have extratickets to a ballgame or play? Donate them to alocal VFW. Or if you see a veteran out on thetown, offer to pay for his meal.
Thank businesses who support veterans.
Many businesses show their gratitude to veteransby offering them free services on Veterans Day.When a local business shows its appreciation toveterans, patronize that business and let themknow you appreciate their efforts to help.

President Woodrow Wilson proclaimed anational holiday called Armistice Day to takeplace on November 11, 1919 and annually there-after to commemorate the signing of thearmistice treaty that ended World War I. The hol-iday served to honor those who served and losttheir lives in the war. However, it wasn't until 34years later when a Kansas shoe store owner pro-posed the holiday should be expanded to remem-ber all veterans, not just those of World War I.
Alfred King, a shoe store owner in Emporia,Kansas, began a campaign to turn Armistice Dayinto "All" Veterans Day. His town's Chamber ofCommerce got involved and participated in thecause, urging all business owners to shut downon November 11 to honor veterans.
U.S. Representative Ed Rees, also of Emporia,helped push a bill through Congress, whichPresident Dwight Eisenhower later signed intolaw on May 26, 1954. Roughly one week later"Armistice" was changed to "Veterans" and theholiday has honored all veterans ever since.

Bloat is a dangerous problem for dogsDogs are valued members of many families, so
when a dog falls ill, its owners want to do all they canto ensure their four-legged friend gets back on his feetas quickly as possible.
Bloat is one of the more dangerous health problemsa dog can encounter. Affecting dogs in the prime oftheir lives, bloat can be life-threatening, especially if itisn't detected early on. Many dog owners have neverheard of bloat and therefore won't be as likely to recog-nize its symptoms should their dog get sick. As a result,it's important for dog owners to understand bloat sotheir dogs, if afflicted, will have a stronger chance ofsurvival.
What is bloat? Two conditions fall under theumbrella of bloat, which occurs when a dog's stomachfills with air, fluid and/or food. Gastric dilatation is atype of bloat that occurs when the stomach distendswith gas and fluid. Volvulus is another type of bloat inwhich the distended stomach rotates on its long axis.The spleen, which is attached to the wall of the stom-ach, rotates with the stomach.
What is gastric dilatation-volvulus? Gastric dilata-tion-volvulus, or GDV, occurs when gastric dilatation isaccompanied by volvulus. GDV is a potentially deadlycondition that requires immediate medical care, as itcan result in death in a matter of hours.
When GDV occurs, the plyorus is pulled out of posi-tion and is displaced to the left of a dog's gastroe-sophageal junction. As a result, fluid and air cannotescape the stomach via the plyoric canal, and the gas-troesophageal junction becomes twisted and obstructed.This prevents the dog from belching or vomiting, andthe stomach distends because it cannot emit gas orfluid. According to the ASPCA, even with immediatetreatment, 25 to 40 percent of dogs will die after suffer-ing from GDV.
What are the symptoms of bloat and GDV?Restlessness and pacing are two of the more telltalesigns of bloat, and dogs who whine or groan when theirbellies are pressed might be suffering from bloat. Inaddition, because bloat and GDV can be so deadly sofast, dog owners should bring their dog to the veterinar-ian should any of the following symptoms appear.
Distended abdomen; Inability to belch or vomit;Retching without producing anything; Weakness;Excessive salivation; Shortness of breath; Cold bodytemperature; Pale gums; Rapid heartbeat; Collapse
A dog's abdomen will not necessarily be distended at
the outset of bloat. When suffering through the earlystages of bloat, a dog may be noticeably uncomfortable,lethargic and walk in a stiff-legged fashion while hang-ing its head. In such instances, the dog's abdomenmight feel tight to the touch.
Are certain breeds more susceptible to bloat andGDV? Bloat and GDV can occur to any dog regardlessof the animal's age, but they are typically found in dogsthat are middle-aged or older. Large, deep-chestedbreeds are most susceptible to GDV. These dogs havelong chests (from backbone to sternum) instead of widechests. Concerned dog owners should consult theirdog's veterinarian to discuss the animal's risk of bloatand GDV.
What causes bloat? While the causes of bloat areunknown, risk factors include rapid eating, eating onelarge meal daily, eating a diet of just dry food, overeat-ing, overdrinking, stress, fearful temperament, and trau-ma. Bloat can suddenly develop in dogs who exercisevigorously before or after eating or in dogs who drink alarge amount of water immediately after eating.
What causes GDV? The ASPCA notes that thecause of GDV is unknown.
How is bloat treated? Treatment of bloat dependson the dog's condition. A doctor may take an X-ray ofthe abdomen to assess the position of the dog's stom-ach. The doctor may try to decompress the stomach torelieve pressure from gas and fluid by inserting a tubedown the esophagus.
How is GDV treated? If a dog's stomach has rotat-ed, the veterinarian will perform emergency surgery.Complications, including infection, shock and possibleheart damage, can result from surgery, so the dog willbe monitored for several days after surgery.
Can bloat and GDV be prevented? Dog ownershoping to prevent bloat and GDV can take several pre-ventive measures to reduce their dog's risk.
•Feed the dog several small meals instead of onelarge one.
•Discuss the dog's diet with a veterinarian and feedthe dog wet food in addition to dry food.
•When feeding the dog, avoid using raised bowlsunless otherwise suggested by the veterinarian.
•Limit rigorous exercise before and after meals.More information can be found at www.aspca.org.
How to find a breeder•Go to a dog show and speak with some of the owners of
champion dogs to find out if there are any breeders offeringdogs for purchase. Another avenue is to visit the AmericanKennel Club(R) Web site and search the Breeder Referralpage.
•Make an appointment to talk to the breeder and see hisor her facility. Many breeders do so part-time, so it may takesome time to receive a call back. Do not be discouraged.
•Find out when litters will be available so that you canvisit. You also will want to visit the breeder prior and ask tosee the parents and check the condition of the home or ken-nel.
•Ask questions of the breeder, including how long he orshe has been in business as well as how often litters arebred.
•A knowledgeable breeder will know a lot of informationabout the breed and should be able to tell you the sciencebehind breeding one particular dog versus another. Thebreeder should be able to explain the good and bad points ofa particular breed, including the breed standards.
•A quality breeder should be able to provide you with apedigree of the puppies, not just registration papers. Thepedigree will list several generations of the puppy's ances-tors. He or she should also be willing to share proof ofhealth screenings, such as OFA and CERF certificates.
•Pay attention to the way the dogs interact with thebreeder. Does he or she seem to genuinely care for the adultdogs and puppies?
•Most breeders breed dogs with the intention of further-ing their breeding programs to advance their purebred dogs.Therefore, a good breeder usually keeps one or two of thepuppies. If the breeder offers to sell you all of them, it couldbe a red flag.
•A good breeder may offer a lifetime guarantee on thedog and will offer to take the animal back unconditionally ifyou are no longer able to care for it.
•The breeder should provide a written contract with ahealth guarantee. He or she also may mandate that the dogbe spayed or neutered if it's being kept as a pet. Otherwise,there may be stipulations as to how the dog may be bred tokeep with the standards of its pedigree.
•Breeders should be as interested in having their dogs goto good homes as you are interested in finding a good breed-er. They may require a lot of specific information about howyou plan to house and care for the pet.
People who have their hearts set on a purebred dogshould seek a quality breeder who is knowledgeable andhonest as the only source for puppy purchase.

This summer, the U.S. Department ofEducation asked colleges across the coun-try to help potential students determinetheir true costs for a college education.Colleges were asked to provide eachaccepted student with a "shopping sheet"to make it easier to compare the costs ofattending their college versus otherschools.
The sheets include details such astuition and fees, housing, books, grantsfrom the school, Pell Grants and grantsfrom the state. Further down the page arethe net costs that the student will beexpected to provide, as well as theoptions for paying those, such as workstudy, loans and family contributions.
Other handy information on the pagedetails the graduation rate of the school,and whether it's considered low, mediumor high. The loan default rate also isshown for the school, comparing it withthe national rate.
One of the most helpful sections of thesheet is the loan-repayment information.The section shows the average levels ofborrowing for the school, as well as theexpected monthly rate of repayment over10 years. Students will know going inwhat their repayments are likely to be.

of applying to schools, the FederalStudent Aid site (studentaid.ed.gov) has awealth of information on financial aid forcollege. There are links to calculators forrepayment comparisons of subsidized andnon-subsidized loans, and Income-Contingent Repayment Plan (ICR)Income-Based Repayment Plan (IBR)loans.
Determining just how student aid iscalculated can be a big help when itcomes to selecting a school. Look for TheEFC Formula 2012-2013 information.
Dependent students who have alreadystarted the online process for financial aid(and who must include the parents'income in the calculation) can updatetheir information online should there be achange in the family's financial situation.

According to the National DigestiveDiseases Information Clearinghouse, about2 million people - or 1 in 133 people - inthe United States have celiac disease. It isconsidered to be a genetic disorder, andcan be diagnosed in infancy through adult-hood. Both males and females can havethe disease, but more women than men arediagnosed with it.
Celiac Sprue is a disease in which aperson does not tolerate gluten, the proteinin wheat, barley, rye and, to a lesser extent,oats. Celiac Sprue is not a food allergy, buta disease that damages the small intestineand prevents absorption of nutrients. Mydaughter struggles with celiac disease,which makes family dinners an interestingblend of gluten-free products transformedinto family favorites.
The Celiac Sprue Association lists threethings that happen before the onset of thedisease: a genetic predisposition, a dietcontaining wheat, barley, rye or oats, and atrigger. The trigger could be somethinglike overexposure to wheat, extreme stress,surgery or a viral infection.
It is a complicated disease because aperson can have it and not have symptoms.There have been instances where childrenhave been diagnosed with Celiac Sprue,but then have symptoms disappear. Theylater found that although there were nosymptoms, damage to the small intestinewas still occurring.
The damage in the small intestine is tothe villi, which are thin, hairlike projec-tions on the lining of the small intestine.They allow nutrients into the bloodstream.If the villi are damaged, malnutrition, ane-mia, weight loss and growth retardationcan occur.
Celiac disease is often underdiagnosedbecause it can be confused with other dis-eases such as irritable bowel syndrome,diverticulitis or Crohn's disease.Symptoms of celiac disease vary from per-son to person. To diagnose celiac disease,a physician will first do a blood test. If
cer-tain antibodies are present, they will do asmall bowel biopsy to check for damage tothe villi.
The only way to treat the disease is theelimination of gluten in the diet. Usuallypeople notice a difference within a shortperiod of time. Maintaining a gluten-freediet allows the small intestine to heal.

Swiss Chard SushiYou can use zucchini, cucumbers, bell
peppers or any other crisp veggies thathave been sliced into thin strips in thisrecipe with delicious results.
8 large leaves Swiss chard 1 tablespoon plus 1/2 teaspoon salt 2 tablespoons coconut oil1 tablespoon low-sodium soy sauce1 cup cooked fried, brown or white
rice 1/4 teaspoon freshly ground black
pepper 1/2 teaspoon crushed red pepper2 medium carrots, cut into thin strips2 green onions, roots removed,
green and white parts cut into thinstrips
1/3 cup Ume plum vinegar2 tablespoons toasted sesame oil Prepare Swiss Chard: Rinse Swiss
chard leaves under cool running water. Filla large bowl with ice water and 1/2 table-spoon salt and set aside. Fill a largesaucepan with water and bring to a boilover high heat. Add 1/2 tablespoon salt.Blanch chard leaves by submerging in theboiling water until the rib is softened andthe leaves become limp - about 1 minute.Transfer to the prepared ice bath, draincooled leaves and stack between sheets ofpaper towel until dry. Sprinkle the remaining 1/2 teaspoonsalt, pepper and crushed red pepper overthe carrots and green onions. Place a fewpieces of the carrot and green onion and 2heaping tablespoons of the rice at the endof the leaf.
Fold the bottom edges of the leaf overthe filling. Roll into a cigar shape, until itforms a tight bundle. Repeat with rest offilling and leaves. Keep chilled until readyto serve. Serves 4.
Make the Dipping Sauce: Mix theUme plum vinegar and the toasted sesameoil together in a small dish. Serve along-side rolls.

Almond Cheesecake Brownies3/4 cups butter or margarine4 ounces unsweetened chocolate
squares4 ounces semisweet chocolate
squares2 cups sugar6 large eggs2 1/2 teaspoons vanilla extract1 1/2 cups all-purpose flour3/4 teaspoon baking powder1/2 teaspoon salt1 1/2 packages (12 ounces) cream
cheese, slightly softened3/4 teaspoon almond extract1. Preheat oven to 350 F. Line 13- by 9-
inch metal baking pan with foil; lightlygrease foil.
2. In large glass bowl, combine margarineor butter and chocolates. In microwave,cook, covered with waxed paper, on High 2to 3 minutes until almost melted; stir untilsmooth. With wooden spoon, beat in 1 1/2cups sugar. Then, beat in 4 eggs and 2 tea-
spoons vanilla until well-blended. Stir inflour, baking powder and salt; set aside.
3. In small bowl, with mixer at mediumspeed, beat cream cheese until smooth; grad-ually beat in 1/2 cup sugar. Beat in almondextract, 2 eggs and 1/2 teaspoon vanilla justuntil blended.
4. Spread 1 1/2 cups chocolate batter inpan. Spoon cream-cheese mixture in 6 largedollops on top of chocolate batter (cheesemixture will cover much of chocolate batter).Then, spoon remaining chocolate batter in 6large dollops over and between cheese mix-ture. With tip of knife, cut and twist throughmixtures to create marble design.
5. Bake 40 to 45 minutes until toothpickinserted in center comes out almost cleanwith a few crumbs attached. Cool browniesin pan on wire rack.
6. When cool, cut lengthwise into 4 strips,then cut each strip crosswise into 6 pieces.
Caramel-Nut Brownies3/4 cup (1 1/2 sticks) butter or mar-
garine 4 ounces unsweetened chocolate 1 cup granulated sugar 1 cup packed light brown sugar 3 large eggs, lightly beaten 1 cup all-purpose flour 1/2 cup walnuts, coarsely chopped 1 teaspoon vanilla extract 1/2 teaspoon salt 1 cup (25 to 30, depending on brand)

1. Preheat oven to 350 F. Grease 13- by9-inch metal baking pan.
2. In 3-quart saucepan, heat butter andchocolate over medium-low heat until melt-ed, stirring frequently. Remove saucepanfrom heat; stir in sugars and eggs until well-mixed. Stir in flour, walnuts, vanilla and saltjust until blended. Spread batter in pan;sprinkle with caramels.
3. Bake brownie 25 to 30 minutes or untiltoothpick inserted 2 inches from edge comesout almost clean. Cool brownie in pan onwire wrack.
4. When cool, cut brownie lengthwiseinto 4 strips; then cut each strip crosswiseinto 6 pieces.

Peanut butter is not only a staple of children's lunches, but italso is a healthy food. While commercially made peanut butter ispopular, foodies can also make their own homemade peanut butter.

Peanut butter sometimes gets a bad rap because of the amountof fat per tablespoon of the food. While a serving of peanut butteris roughly 188 calories and may have 16 grams of fat, the fat ismonosaturated, meaning it is heart-healthy. When enjoyed in mod-eration, peanut butter is healthy.
There are several advantages to making your own peanut butter.One of the main reasons is you have complete control over theingredients. Unlike store-bought varieties, your peanut butter willnot contain extra additives, such as preservatives, sugar, salt andoils -- all of which can make commercial peanut butters lesshealthy. Taste is another factor in homemade peanut butter. Manypeople find the taste is more authentic in homemade peanut butter.Plus the saltiness, sweetness or roasted flavor can be customizedbased on preference.
Here's how to make homemade peanut butter. (Note: This recipeyields roughly 1 quart.)
1. Purchase 1 bag of unshelled peanuts or 1 can (1 pound) ofshelled, raw or roasted peanuts.
2. Set aside about a tablespoon of vegetable or peanut oil.3. Shell the peanuts, if necessary, and put them into a food
processor.4. Pulse the food processor to start chopping the peanuts. Scrape
down the bowl to ensure that all of the peanuts get finely chopped.5. Add the vegetable oil to help make a smooth butter and con-
tinue to blend until smooth.6. Taste the peanut butter and mix in salt or a small amount of
sweetener depending on personal preference. Honey makes a goodsweet alternative to sugar.
7. Peanut butter can remain fresh in a sealed container forroughly one month. It also can be frozen.
Making homemade peanut butter ensures you have control overthe ingredients, potentially creating a healthier alternative thanstore-bought varieties. It is an activity that families can do togetherand you're guaranteed a great-tasting peanut butter customized toyour palate.
Special Skillet Steaks
4 (4-ounce) lean tenderized minute or cube
steaks
1 (10 3/4-ounce) can reduced-fat cream of
mushroom soup
1 (15-ounce) can diced tomatoes, undrained
1/2 cup finely chopped onion
2 teaspoons dried parsley flakes
1/8 teaspoon black pepper
1. In a large skillet sprayed with butter-flavoredcooking spray, brown steaks for 3 to 4 minutes oneach side.
2. In a large bowl, combine mushroom soup,undrained tomatoes and onion. Stir in parsley flakesand black pepper. Spoon mixture evenly over brownedsteaks.
3. Lower heat, cover and simmer for 15 to 20 min-utes. When serving, evenly spoon sauce over steaks.Makes 4 servings.
Awesome Apple Crisp
2 cups (4 small) cored, peeled and sliced
cooking apples
1 teaspoon apple-pie spice
1/4 cup quick oats
6 tablespoons reduced-fat baking mix
Granular sugar substitute to equal 1/4 cup
sugar, suitable for baking
4 teaspoons reduced-calorie margarine
1. In a medium bowl, combine apples and apple-pie spice. Evenly spoon mixture into 4 (10-ounce)microwavable custard cups. In same bowl, combineoats, baking mix, sugar substitute and margarine.Mix well until crumbly. Evenly sprinkle crumbmixture over apples.
2. Microwave on HIGH (100 percent power) for8 to 10 minutes or until apples are tender. Let setfor at least 5 minutes. Good warm or cold. Makes 4servings.

Slimmed-Down Pumpkin Bread
Treat family and friends to our slimmed-downquick bread. Gone are the traditional version's 3 gramsof saturated fat and all the cholesterol (thanks to eggwhites and a blend of low-fat yogurt and canola oil).No one will suspect you've tinkered - a slice is thatgood!
1 cup (packed) light brown sugar
2 large egg whites
1 cup pure pumpkin (not pumpkin pie mix)
1/4 cup canola oil
1/3 cup low-fat plain yogurt
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 cup whole-wheat flour
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/2 teaspoon salt
1. Preheat oven to 350 F. Spray 8 1/2 by 4 1/2-inchmetal loaf pan with nonstick cooking spray with flour.
2. In large bowl, with wire whisk, combine brownsugar and egg whites. Add pumpkin, oil, yogurt andvanilla extract; stir to combine.
3. In medium bowl, combine all-purpose flour,whole wheat flour, baking powder, cinnamon, nutmeg,baking soda and salt. Add flour mixture to pumpkinmixture; stir until just combined. Do not overmix.
4. Pour batter into prepared pan. Bake 45 to 50minutes or until toothpick inserted in center of loafcomes out clean. Cool in pan 10 minutes. Invertpumpkin bread onto wire rack; cool completely.Serves 16.
Chocolate Eyeballs
Doughnut holes transform into a Halloween partydessert with a quick dip in melted chocolate and anM&M garnish.
12 ounces white chocolate, chopped
24 doughnut holes
24 red M&M candies
8 ounces dark chocolate, chopped
1. Line cookie sheet with waxed paper. Placewhite chocolate in medium microwave-safe bowl.Microwave on high in 30-second increments untilalmost melted, stirring occasionally until smooth.
2. Dip 1 donut hole in white chocolate to coat.Carefully place on sheet. Immediately press 1candy in center of round to resemble eye's iris.Repeat with remaining white chocolate, doughnutholes and candies. Refrigerate 15 minutes to setchocolate.
3. Place dark chocolate in medium microwave-safe bowl. Microwave on high in 30-second incre-ments until almost melted, stirring occasionallyuntil smooth.
4. Dip 1 side and then other side of coateddoughnut hole in dark chocolate, leaving white-coated space around candy to create white of eye.Return to sheet. Repeat with remaining coateddoughnut holes and dark chocolate. Refrigerate 15minutes to set chocolate. Makes two dozen eye-balls.

Veterans Daycontinued from P5sailors, Marines and airmen in theNation’s history; after American forceshad fought aggression in Korea, the 83rdCongress, at the urging of the veteransservice organizations, amended the Act of1938 by striking out the word "Armistice"
and inserting in its place the word"Veterans." With the approval of this leg-islation (Public Law 380) on June 1,1954, November 11th became a day tohonor American veterans of all wars.
Later that same year, on October 8th,President Dwight D. Eisenhower issuedthe first "Veterans Day Proclamation"which stated: "In order to insure proper
and widespread observance of thisanniversary, all veterans, all veterans'organizations, and the entire citizenry willwish to join hands in the common pur-pose. Toward this end, I am designatingthe Administrator of Veterans' Affairs asChairman of a Veterans Day NationalCommittee, which shall include suchother persons as the Chairman mayselect, and which will coordinate at thenational level necessary planning for theobservance. I am also requesting theheads of all departments and agencies ofthe Executive branch of the Governmentto assist the National Committee in everyway possible."
On that same day, PresidentEisenhower sent a letter to the HonorableHarvey V. Higley, Administrator ofVeterans' Affairs (VA), designating him asChairman of the Veterans Day NationalCommittee.
In 1958, the White House advisedVA's General Counsel that the 1954 des-ignation of the VA Administrator asChairman of the Veterans Day NationalCommittee applied to all subsequent VAAdministrators. Since March 1989 whenVA was elevated to a cabinet level depart-ment, the Secretary of Veterans Affairshas served as the committee's chairman.
The Uniform Holiday Bill (Public Law90-363 (82 Stat. 250)) was signed onJune 28, 1968, and was intended toensure three-day weekends for Federal
employees by celebrating four nationalholidays on Mondays: Washington'sBirthday, Memorial Day, Veterans Day,and Columbus Day. It was thought thatthese extended weekends would encour-age travel, recreational and cultural activ-ities and stimulate greater industrial andcommercial production. Many states didnot agree with this decision and contin-ued to celebrate the holidays on theiroriginal dates.
The first Veterans Day under the newlaw was observed with much confusionon October 25, 1971. It was quite appar-ent that the commemoration of this daywas a matter of historic and patriotic sig-nificance to a great number of our citi-zens, and so on September 20th, 1975,President Gerald R. Ford signed PublicLaw 94-97 (89 Stat. 479), which returnedthe annual observance of Veterans Day toits original date of November 11, begin-ning in 1978. This action supported thedesires of the overwhelming majority ofstate legislatures, all major veterans serv-ice organizations and the American peo-ple.
Veterans Day continues to be observedon November 11, regardless of what dayof the week on which it falls. The restora-tion of the observance of Veterans Day toNovember 11 not only preserves the his-torical significance of the date, but helpsfocus attention on the important purposeof Veterans Day: A celebration to honorAmerica's veterans for their patriotism,love of country, and willingness to serveand sacrifice for the common good.
