In the U.S., England, and Ireland, you drink whiskey, but if you’re in Scotland, Canada, or Japan, it’s whisky.
However you spell it, it’s the “water of life” or “uisge beatha” in the Gaelic tongue.
These scotches contain from two to as many as fifty single malts blended together. Neutral grains such as wheat, corn, or rye are added to
mellow the spirit. Blended scotches are aged a minimum of three years under the same laws as single malt scotch.

Made and aged in Scotland by a single distillery using 100% malted barley, yeast, and water. All single malt scotches
are aged a minimum of three years, though most have been aged at least eight to ten years before release. The year on the label indicates the youngest malt in the bottle, which may also contain older distillations. Single malts are double
distilled in copper pot stills and aged in oak. Only Auchentoshen is triple distilled. Scotch whisky’s smokiness comes from peat-dried barley,
though some distilleries are unpeated.
It’s scotch in every way but its country of origin, so you can’t call it scotch. You can call it very good whisky, though. Japanese whisky is distilled and aged
the traditional way, with malted barley and often with peat-dried grain. Aged a minimum of three years.

Who made the world’s first whiskey, the Irish or the Scots? That’s a lively argument that will never be resolved, so it’s best to toast both great homelands with your favorite whiskey or whisky. The Irish make single malts, as well as
excellent blends of malted and unmalted barley. Often, mellowing neutral grains are added. Usually triple-distilled and always aged a minimum of three years.

If it’s not from Tennessee and not 51% corn, then it’s another kind of American whiskey and it’s probably rye. A “straight” whiskey has to contain at
least 51% of the primary grain in its formula.

Distilled just like bourbon, except it goes through a honey charcoal filter. This is known as the Lincoln County Process. Tennessee Whiskey distillers claim that this removes impurities and mellows the spirit. Bourbon makers
say it just takes away the flavor. This is another whiskey-related controversy best settled by trying both and forming your own opinion.

All Canadian whiskies must be labeled as blends before being sold in the U.S. They are made with a blend of rye, barley, wheat, corn and
sometimes include fruit wines.

BourBon
Whiskey that is made with at least 51% corn, plus rye and barley and aged for at least two years in new charred American oak barrels. Wheated
bourbon’s formula uses wheat instead of rye. Bourbon is usually single distilled in continuous stills, except for Woodford, which is triple distilled in copper pot stills.
Bourbon can be made anywhere in the U.S., but Kentucky is the only state that has the right to put their state’s name on the bottle. Bonded Bourbon is
barrel-aged a minimum of four years in a bonded warehouse at 100 proof. No taxes are paid until the bourbon is bottled so that the “angels’ share”
(whiskey that evaporates during aging) is never taxed.

In northwest France the soil and climate discourage grape growing. The silver lining to that dark cloud is Calvados, a lusty brandy distilled from apples and pears.
It is double distilled in pot stills and aged a minimum of two years.

Cognac is named for the region of France where this brandy’s dominant grape, the Ugni Blanc, is grown. The six grape-producing Crus within the region are
Grande Champagne (considered the best), Petite Champagne, Bordeires, Fins Bois, Bons Bois, and Bois Ordinaires and Bois Communs. Cognac is double distilled
and aged in Limousin oak. VS Cognac is “very special” and has been aged two and a half years. VSOP means “very special (or superior) old pale” and has aged
four and a half years. XO is “extra old” and has aged six and a half years.

London Dry: Heavy citrus, a drier gin not
necessarily from London.
New Style or American: Contemporary style gin
with a broad range of flavors and botanicals.
Plymouth: English gin from a single
distillery, very earthy, 80 proof.
Genever: Dutch style gin, sometimes
aged, sweet, made with barley.
Oude: Old style of making gin
prior to the Thirty Year War (that’s right, the one that started in 1618) , contains more malted barley than
neutral grains.
Younge: Style of gin made after the Thirty Year War, made with
more neutral grains.
Old Tom: Very sweet gin once
considered a “poor man’s gin.”

favored ingredient in cocktails and an excellent base for exotic infusions.

Fin de siecle Paris, the Left Bank, the writers, the painters... and decadent, mysterious absinthe. That’s the romance, here are the facts: absinthe is a spirit, not a liqueur, it originated in Switzerland, not France, and despite the rumors,
it has no hallucinatory effect. Absinthe is anise-flavored and traditionally diluted with water, changing the color to a pale, milky green, which no
doubt inspired its nickname, “la fée verte,” the green fairy.

This brandy is single distilled and a bit more pungent and velvety than cognac. Armagnac is made much like Cognac with
Ugni Blanc grapes, as well as Folle Blanche, Baco, and Colombard. The grapes are grown in three demarcated production zones in Gascony:
Bas Armagnac (the best), Tenareze, and Haut Armagnac.

Traditionally, this Italian brandy is distilled grape skins, seeds, and stems left over from winemaking. Some grappas are now made from the whole
grape as well. Marc is simply grappa made in France. The better ones are aged.

Distilled from cane sugar or molasses, rum is the drink of the Caribbean, with each island creating its own distinct style.
Puerto Rico rum is distilled much like
whiskey and aged in oak casks. Light bodied rums are aged one
year, while golden rums must be aged a minimum of three years.
Jamaica produces full-bodied rums from
molasses, double distilled in pot stills and aged in oak casks
for at least five years.
Virgin Island rums are usually dry and light-bodied like Puerto Rican rums.
Martinique and Haiti produce medium-bodied rums
distilled from sugar cane juice and aged in oak.
Brazil makes rum, but it’s
called Cachaca.

Mexico’s splendid national drink is made from the blue agave, which is harvested when it’s eight to ten years old. Jimadors strip the plant of its sharp
leaves and send the 200-pound “piña” (heart) off to the distillery. There the agave juice is double or triple distilled and aged for varying lengths of time.

Blanco (plata, silver, platino,
crystal): ages in steel vats from one to two months.
Flavor profiles can include pepper, dark chocolate,
citrus, apricot, vegetable, earthy tones.
Reposado (rested): aged two
months to 364 days in oak. Flavor profiles can include all the above,
plus vanilla bean, light maple, cinnamon,
marshmallow.
Anejo(aged): aged one year
to one day shy of three years in oak. Flavor profiles
can include: heavy maple, burnt marshmallow, light
to heavy spice, cocoa.
Extra Anejo a tequila that rivals the cognacs
of France. Aged a minimum of three years in oak. Flavor
profiles can include fresh maple pancakes, burnt marshmallow,
cocoa, silky, dried fruit.
Gold no gold tequilas here at
Bohanan’s. They are made with just 51% blue agave, plus molasses
and caramel for color and are the source for tequila’s reputation for inducing dreadful hangovers.
Mezcal is also an agave spirit, which may contain a variety of agaves. The piÑas are roasted before being
made into mash for distillation. This gives Mescal its distinctive smoky flavor. Other flavors in
its profile are heavy earthy tones, spice, vegetable, and tar.

The Egyptians were making beer 6,000 years ago and it’s just been gaining popularity ever since. It is elegantly simple: combine water, yeast, malted barley,
and hops under the tender care of the brewmeister, then enjoy. There are four types of beers with hundreds upon hundreds of different styles that fall under each one.
LagersLagers are bottom
fermented (the yeast settles to the bottom of the
brewing vat) and brewed at colder temperatures, resulting
in a highly carbonated beer with a lower alcohol content
than ales. Popular lager styles: pilsner, bock, dortmunder,
marzen/Oktoberfest, malt liquor.
Combination styles beers made by a mix of
brewing styles, ingredients, or both. Popular combination
styles: Heffe weizen, wit, kolsch, altbier, steam.
Ales Ales are top fermented
(the yeast rises to the top of the vat) and typically have a higher alcohol content and
a stronger, fruitier flavor than lagers. Popular ale styles:
pale ales, IPA’s, stout, porter, bitter, blonde/golden, brown,
amber/red, barley wine.
Specialty beers can be all of the above with flavorful additions to the brew, such as fruit, spices, sweeteners, herbs, smoke.
