MMY RELATIONSHIP WITH BATTERIES HAS BEEN COMPLICATED.

At times, these little packets of power seemed magical, but all too often they’ve been fickle.

Smacking a flashlight against the palm of my hand to get a bright but rapidly fading burst of light is one of my first memories of dry cells. Powered by a nine-volt

battery, a transistor radio could play music from radio stations far over the horizon. At night, the signals of radio stations from Wheeling, West Virginia, Wyoming and Chicago bounced off the ionosphere, carrying sounds and songs. Falling asleep with the radio playing was courting disaster. In the morning the battery might be dead and the radio silent. Switching it off and waiting a while might coax a brief burst of recognizable sound, but usually it was just the soft hiss of static. The only Volkswagen I owned had a six-volt battery that was so unreliable I routinely parked the car on a hill. When I needed to drive, I would roll the old bug downhill, pop the clutch and bump start it.

Batteries are great when they work, not so great when they don’t. Fortunately, science has been tackling this problem with vigour and success. Lithium-ion batteries have vastly improved the reliability of compact, portable electrical power. After six years of near-daily use, the rechargeable battery in my iPad still works just fine. The same lithium-ion technology powers electric cars, fuelling the growing number of Teslas on the road. My nephew Chris works in a deep underground gold mine that’s been swapping its diesel-powered equipment for a new generation of battery-powered scoops and trucks. He prefers the air quality that electric vehicles allow.

At home, batteries are doing much more than powering smoke alarms, remote controls and flashlights. At their lakeside retreat, Simone and Jiri Skopek use solar energy to power their cottage. They store the extra electricity they generate in two compact batteries, each about the size of a microwave oven. When they’re generating more electricity than they need, they can feed the solar power to the electrical grid and get a credit on their hydro bill. Batteries have come a long way. Have a look for yourself on page 58.

DIVIDE AND CONQUERStorage is designed in three style categories:

1. In sight and in mind. Open shelving allows us to see what we own, defining our unique personalities. Free-standing or bolted to the wall, shelving is simple. The structure itself can be a design feature, elevating your simple objects into things of beauty.

2. Out of sight and out of mind.Closets or storage rooms are enclosed empty spaces. You can add rods or shelving to suit your requirements. People are now choosing to turn closets into dressing rooms, enclosing items in cabinetry and revealing only what’s most precious and notable through glass cabinets. If you own shoes, purses, belts or ties that are beautiful and cost a pretty penny, then why not put them on display like an art object in a glass case?

3. Combining in and out of sight.Say we’ve opted for open-plan spaces instead of separate rooms for our functions. Even kitchens are now blended in, requiring special thinking on how to manage all its requirements. While one-room living reveals all, do we really want to show off everything?

Storage credenzas, shelving and wall units can act as free-standing room dividers to delineate space. One company that provides unique items is Design Within Reach (DWR). It is a go-to destination for design sophisticates. Their variety of cabinets and shelving units are real designer heirloom classics that can make space efficient and extra special.

CUSTOM VS. STANDARDEach home is unique, not only in structure, but also in the personality and vision of its owner. While standard shelving and storage units are available at most home stores, and while you

can hack Ikea, it is best to give your storage needs the attention they deserve.

Investing in custom built-in storage solutions will enhance the value of your house, much like investing in kitchen or bathroom renovations. It is money well spent. Knowing that everything is in its place and there’s a place for everything helps liberate us from our stuff. OH

Feeling stressed because you’re surrounded by stuff? That stuff can actually make you happy, if it’s efficiently and artistically displayed. And when organized properly, you can grab and go. Technology has helped reduce or eliminate the need for some stuff, like books and record albums, but we still need to store the items we do collect.

Storage, home organization or space. solutions – whatever you call it – has become a science using the latest technology. For

example, hardware supplier Richelieu has teamed up with Panasonic to create revolving closet systems and shelves that pull down and return pneumatically, providing innovative ways to make our lives easier.

START RIGHT – GET ORGANIZEDWhether you’re living in a tiny studio or a mansion, many of the same rules apply when it comes to getting organized:

Purge: Get rid of things you don’t need or that don’t give you pleasure in some way.

Learn to make sacrifices: In a small or large space, every object matters. Make choices and focus on priorities.

Inventory items that need storage and display: Determine what type of storage or shelving you need. Make this scientific by calculating how much linear space and square footage is required.

Design and plan: Plan where these items are going and then find the design solutions you need to maximize and beautify your space.

STAYING ORGANIZED AND OTHER WAYS TO KEEP IT TOGETHERInterior Designer Dolores Pian shares her ideas.

RICHELIEU & PANASONIC: Revolving Shoe & Closet Systems

SPACES CUSTOM INTERIORS: Basement renovation with custom built-in storage.

Television often portrays renovations as costing much less than they do, so it’s important to determine what you want to spend and what your dream design will cost. Starting with a realistic and honest budget (with padding for emergencies) will help you and your designer avoid big surprises later that can end up halting your plans.

Make sure to check with local building codes, inspectors, condo or neighbourhood boards (and the like) to make sure your dreams are possible. This can take just 1 week to 3 months, depending on your site conditions, so it’s smart to start early.

Don’t forget that not all products or tradespeople can be available instantly, especially around busy seasons like spring. If you want to work with the best materials and trades, add at least 1 to 2 months extra, with custom products or anything shipping from overseas taking 2 to 6 months. Don’t get stuck picking from what’s available last-minute for a design that will last for years!

Renovating a kitchen or bathroom? Besides selecting the basics like paint colours, you’ll need to choose the grout colour, tile pattern, orientation of cabinet handles, paint finish, placement of light fixtures, style of faucet, counter edge profile… the list goes on, and can seem overwhelming when rushed. Give at least 6 weeks to 2 months for one room, and at least 4 to 6 months for a large multi-room project. Choosing many elements that work together can take a lot of searching and re-evaluating, and it’s much easier to change your mind before construction or delivery than after.

Expect even minor construction to take at least 1 month to prepare, conduct and touch up, with 2 to 6 months for larger projects. Then add a time buffer of 1 to 3 months before any sort of event when you want the work completed, to account for surprises.

In this detached basement bathroom renovation, for example, we had very low ceilings (just under six feet) and only a single sconce above the vanity mirror, not providing nearly enough light for the entire space. We had planned to increase the ceiling height and add recessed lighting. During demolition we discovered venting all through the above area and no room for pot lights. We required a bit of time to come up with an alternative plan, which was this stunning, sleek custom LED feature running from floor to ceiling and overhead. It created ample illumination and is beautiful. The solution also allowed us to hang our new mirror very close to the ceiling, creating the illusion of even more height in the room, and allowing the LED strip to reflect. Fortunately, with buffer time in place, we had the plan reworked for the better, and the beautiful results were worth the extra wait!

If you’ve been doing the math, you’ll see that even small projects can easily take almost half a year, which is far from the three days you see on television. However, you get what you put into your design, and taking the proper time leads to timeless results – all while avoiding a lot of stress and the potential for costly mistakes along the way. Working with a reputable firm can expedite this process and keep you on time and on budget. OH

matter the size or style of project you’re planning, this guide will help you know how long you really need to achieve your home makeover – and trust me, it’s nothing like what you’ve seen on television.

RESEARCH PHASE:1-5 MONTHS

Knowing your goals and limits will help you set realistic goals and avoid major hiccups that can derail your timeline.

DESIGN PHASE:2-12 MONTHS

A seemingly simple project can involve five times as many decisions as you might think, so give ample

time to get the details right.

CONSTRUCTION/DELIVERY PHASE:

2-9 MONTHSEven the best plans can be interrupted by

sudden surprises. Plan for this phase to take longer than just the expected working

time of the physical labour.

Start by gathering lots of ideas. Save images from magazines and blogs – the more you collect, the easier it will be to figure out what elements you are drawn to again and again, and which are fleeting trends. Give this 1-2 months at the very least to find ideas that stand the test of time.

Gather lots of ideas to help determine what you are drawn to most.

Construct planter boxes: Sand all freshly cut edges to smooth out roughness. Place end pieces long-side down. Place the 24-inch front and back pieces flush against end pieces and nail together. Flip the box right-side up and drop the 21-inch bottom in. Secure the bottom by nailing it to the sides. Repeat for each box.

HOW-TO

Cut box fronts, backs and bottoms: From each 6-foot plank, cut two 24-inch lengths to be used for the front and back of the planter box, and one 21-inch length for the bottom.

Cuts box ends: Set your mitre saw to 15 degrees. Take the 2-by-6 plank and cut the end 15 degrees. Flip the board and measure 5-¼ inches along the short edge and cut again with the 15-degree mitre. This will create one end of the planter box. Proceed until you have the four ends cut.

Cut ladder rails: From the remainder of 2-by-6, one end will already be cut at 15 degrees. Measure your finished ladder height (in this case we chose 3 feet for the two-box ladder) and make a cut at 15 degrees along the same angle for the first rail. Repeat for second rail and cut it

to match. To have the back of your ladder sit flush against a wall, measure 2 inches in from the pointed upper tip of each rail and cut perpendicular to the 15-degree surface.

Construct planter box ladder: Lay the ladder rails on the floor and place your planter boxes between the rails at the desired height. Secure planter boxes to the ladder by drilling two-inch screws from inside the planter boxes to the ladder.

Display and grow: Place finished planter box ladder against a wall, fence or deck, fill with potting soil and get growing! OH

Poached PeachMIMOSAS

RECIPE AND PHOTOGRAPHY JENELLE MCCULLOCH

The mimosa is a staple of every brunch, traditionally made with sparkling wine and orange juice. This recipe uses poached peaches for a refreshing twist.

DIRECTIONS

Combine water, sugar and honey in a saucepan over medium heat. Stir until sugar and honey are dissolved.

Add peach halves and simmer for 5-10 minutes, turning until tender.

Remove peaches and reduce poaching liquid by half. Put peaches in a small, sturdy bowl and reserve liquid in a separate bowl. Cool both.

Using a muddler or the back of a spoon, press peaches against the side of the bowl. Press hard and twist. The goal is to break up the fruit, release liquid and intensify the flavour.

Add a dollop of muddled peaches to champagne glasses, then add a ½ tsp of poaching liquid to each glass.

Top with sparkling wine. OH

INGREDIENTS

2 cups water

¼ cup granulated sugar

¼ cup honey

WWhen the ice on Haliburton Lake melts this spring, few people will be happier than Peter Vandendool. A competitive water skier for 30 years, he intends to find out if the lake is a good spot for water skiing. “We’re really looking forward to that,” he says. Peter and his wife, Donna bought a cottage on the lake last fall.

A realtor with RE/MAX Escarpment Realty Inc. in the Hamilton and Burlington area, Peter and Donna had rented a Haliburton cottage as a place to spend a week with their family for eight summers. As grandchildren arrived, they outgrew that summer spot and began hunting for a cottage of their own.

“Our family loves to spend time on water,” says Vandendool. Although his competitive skiing days are behind him, at 62 he still skis multiple times each week. Daughter Traci-Ann is a wakeboarder and son Jake occasionally slalom skis. “I would love to get the grandkids involved in water sports too,” says Vandendool. His oldest

grandson is three and Vandendool sees the next 10 years as prime time with the next generation. “This is the time we want to be close to the grandkids. That’s why cottage life appealed to us.”

Manufactured by 1867 Confederation Log & Timber Frame and built by Cedar Wylde Homes Inc., the four-bedroom, 3,000 sq. ft. log house was designed and furnished by Ian Robertson and his wife Elaine. The president of Ian Robertson Design, Robertson has been designing custom homes, planning and managing construction for 15 years. While Tudor Revival, French Chateau and Georgian architecture inspire many of his projects, this was his first log home. “I had been in contact with Confederation for a long time, for a number of years prior to building it,” Robertson says. “I liked the way they looked, I like the feeling of all the wood that surrounds you. I thought it was fitting for a cottage so I went that route.” He

and Elaine worked on preliminary designs, refined the floor plans and drafted elevations around a particular look. “We liked the open gable look,” Robertson says. “Those were the predominant features of the house – vaulted ceilings and bigger volumes of space.” Once they ensured the design fit their budget, they passed it on to Confederation to do the architectural drawings.

Confederation owner Rick Kinsman describes the Robertson design as a collaboration that uses every inch of space. “He was very receptive to listening to our ideas, then he put his own touches on it,” Kinsman says. “It’s not very often you get a homeowner who can visualize so well. He understood what we wanted to do. That was interesting.”

Steve Johnson’s company Cedar Wylde built the home from ground up, looking after all the sub-trades, excavation and landscaping. “It’s a beautiful design,” says Johnson, who specializes in log homes. “They’re unique. There’s thousands of builders out there that build stick frame custom homes but log homes are a smaller, niche market and I just think it’s neat.” He has been building Confederation’s log homes for 32 years.

The Robertsons knew from day one how they wanted the cottage to look – with an open kitchen, family room and lots of space in which to move around. High volume ceilings give it a feeling of grandeur and capture the southwestern view of the lake. “My wife and I did all the interior décor ourselves,” Robertson says. “We wanted this cottage to feel contemporary, even though it was a log cottage, so when we chose our furniture, it was clean-lined, rectangular, square and low. We had the black theme throughout, so black windows, black railings and black accents helped that contemporary feel.”

A wood-panelled four-season Haliburton room proved to be the favourite of everyone who visited. “We ensured all the windows open up, both top and bottom, to give you the feeling you’re still in a screened room. It captures the outdoors, but you have all the protection from the elements when you close the widows,” Robertson says.

The Robertson family enjoyed summer at the cottage, then tested the market by putting the property up for sale, a serendipitous choice that brought the Vandendools to their door in the company of realtor Jessica Wilson from Team Haliburton Highlands at RE/MAX North Country Realty Inc. Vandendool had hired Wilson to find a cottage that didn’t need repairs, renovations or improvements.

“We love the design of it; the look of it,” says Vandendool, who admits he never thought he would buy a log home. “We like contemporary, but this is like a contemporary house with a cottage feel. To us it was just a perfect mix. We love the way the Robertsons furnished it.”

They bought the home with all the furniture. “It was exactly our taste because we have the same style at home. It’s very contemporary.”

The Vandendool family enjoys the cottage kitchen and dining area as well as the easy access to the outside deck. “We spend a lot of time outside and everything just flows perfectly,” says Vandendool. “It’s got a great view of the lake. The kids love it. They’re excited. We gave them all keys when we took possession. We told them the more it gets used the better.”

Robertson says he and Elaine had a good time planning, building and furnishing the lake house. “My wife and I spent an entire winter shopping, which is fun for somebody who likes to shop,” Robertson says. “We enjoyed that part of it. I enjoyed the design process, the construction.”

If the Roberstons can find another parcel of reasonably priced land, they’d probably build another cottage, Robertson says. OH

HOW-TO

1 CUT & PAINT BANNERS

With a band saw or jig saw, cut and shape pine boards wide enough to serve as banners for

the sign’s lettering. Paint the banners. When dry, give them a distressed look with sandpaper or an orbital sander.

5 MAKE TWIG LETTERS

Using pruners, cut dogwood stems to length to spell out the letters. Cut at a 45-degree angle

to shape corners. Paint the letters white. Use a nail gun to secure the pieces to the stencil on the banners.

6 ADD FINISHING TOUCHES

Try slicing pine cones in half and gluing or nailing them at the ends of the banner, or apply tiny

metal maple leaves, mini crossed paddles or decorative twigs.

7 HANG

Screw metal eyelets into the ends of the crosspiece and connect a chain on which to hang

the sign. Enjoy. OH

2 APPLY AGING FINISH

Give the banners an aged look by applying Briwax, a mixture of carnauba wax, beeswax

and stain. Smooth the wax finish with steel wool.

3 MAKE TWIG BASE

Cut and nail alder stems in a V-shape with an upper crosspiece extending almost two

inches on either side of the V. This will serve as the base for the sign. Position your banners and nail them to the base.

4 DRAW LETTERING

Make a stencil for your sign by sketching lettering on tracing paper. Rub a white Prismacolor

pencil on the back of the stencil lettering. Lay the stencil right side up on the wooden banner and trace over the letters. The white pencil marks will transfer the lettering to the wood.

PAN SAUCE AND PLATINGINGREDIENTS

¼ cup pancetta, diced

1 cup whole mushrooms of choice (I used cremini and shitake)

2 Tbsp wine, optional

½ cup chicken stock

DIRECTIONS

Sauté pancetta over medium heat in a heavy bottomed pan until fat is rendered. Remove pancetta and reserve a tablespoon of fat in the pan. Unwrap roulade and sear in pan until a golden crust forms. Remove from pan.

Add remaining whole mushrooms to the pan and sauté for 2-3 minutes. Add pancetta back into pan. Deglaze the pan with a splash of wine, optional. Add chicken stock and cook until reduced by a quarter.

Slice roulade and plate with pea puree and whole mushrooms, spooning pan sauce on top. OH

RECIPE AND PHOTOGRAPHY JENELLE MCCULLOCH

This chicken roulade with a flavourful filling of chestnuts, pancetta and mushrooms sits on a colourful bed of pea hummus. It’s a light, savoury dish you’ll love.

PEA HUMMUSINGREDIENTS (SERVES 2)

2 cups peas, fresh or frozen

1 clove garlic, roughly chopped

2 Tbsp pecorino cheese

1 tsp truffle oil

1 Tbsp olive oil

1 tsp fresh chives

Salt and pepper

1-2 Tbsp of water if needed

DIRECTIONS

Blanch peas before use. Boil peas for 4-5 minutes or until tender and plunge into an ice bath to preserve colour and stop cooking.

Combine ingredients in a food processor and puree until smooth. Add a few tablespoons of water if necessary to aid in the process.

Heat in a saucepan over low-medium heat before serving. Season with salt and pepper to taste.

CHESTNUT FILLING AND ROULADEINGREDIENTS (SERVES 2)

1 cup whole chestnuts

1 cup mushrooms of choice (I used cremini and shitake)

1 Tbsp olive oil

1 shallot

1 clove garlic

2 tsp fresh chives

½ tsp black pepper

½ tsp salt

1 boneless, skinless chicken breast

DIRECTIONS

Preheat oven to 400ºF. Score an X onto the flat end of each chestnut and roast until skin begins to peel back. Let cool and peel.

Dice 1 cup of mushrooms and sauté in olive oil over medium

heat. Let soften and add chopped garlic and shallots. Cook 3-4 minutes until softened.

In a food processor combine chestnuts, mushroom mixture, chives, salt and pepper. Pulse until combined.

Place chicken breast in between two sheets of plastic wrap. Pound breast with a tenderizer until about ¼-inch thin. Move to a clean sheet of plastic wrap. Line one end of the breast with the chestnut filling. Fold chicken over filling and tightly roll breast.

Wrap chicken breast with plastic wrap, rolling it tightly. Twist each end of excess plastic wrap so that the chicken roll becomes tight. Tie each end.

In a large pot of simmering water, poach wrapped chicken for 5-10 minutes, depending on the size of the breast.

Alternatively, tie chicken with kitchen twine and roast in 350ºF oven for 20-25 minutes.

T“We need to ensure when retrofits are done they are done to the

EnerPHit standards (passive house standards for retrofit),” he says. “Often this is done piece by piece – the windows may reach their end before the cladding – so you build a retrofit plan that allows you to replace them with proper passive-house-level windows.”

Building to passive house standards may mean a simpler design, but it could also mean higher costs.

Constructing these one-off custom homes costs 10 to 15 per cent more than what it costs to build to code, says Marion.

But large reductions in energy bills (up to 70 per cent) can offset extra construction costs while yielding a superior living environment in any climate, he says.

With many municipalities working toward a climate action plan for reducing greenhouse gases, that’s where the future is headed, says Marion.

Governments can encourage builders by offering rebates based on meeting quantifiable energy reduction targets, says Marion.

The federal government has already stepped in with Build Smart Canada, says Bernhardt. It’s Canada’s strategy to creating a model national building code by 2030 for net-zero energy ready buildings.

“It’s widely viewed as being an approximation of the passive house,” he says. “With this strategy, we now have a specific plan to move in this direction for the entire country.”

Where some passive houses have already been built across Canada, larger projects are now being pursued, too.

Sidewalk Toronto is one such example, says Bernhardt. It is an initiative for the development of 13 acres by Toronto’s waterfront, he explains. The land has been tagged as the potential new headquarters for Google Canada and is part of a provincial, federal and municipal partnership to redevelop 2,000 acres of Toronto’s waterfront.

Whether building passive on a large scale or simply retrofitting your house, once you’re done, says Bernhardt, certification is a good idea. It’s a valuable quality assurance mechanism that is available, even though it isn’t required.

A passive house designer applies for certification through an accredited North American certifier, who will evaluate the building and report to the Passive House Institute for a certificate, he says.

And once you’ve lived in a passive house, says Bernhardt, you wouldn’t want to live anywhere else. OH

That’s the advice Rob Bernhardt, CEO of Passive House Canada, has for those taking up construction projects.

“If you’re building something that you want to sell competitively, you might want to build it at a higher level,” he says.

Bernhardt is an expert in Passivhaus (passive house) standards. Before there were green buildings and smart homes, there were

passive houses, a conservation-based concept that originated in Europe and has now slowly made its way into Canada.

A passive house is a design approach that follows building science, studying how heat, air and moisture move through and affect buildings, says Ed Marion, Certified Passive House Consultant with Passive House Ontario.

Certified designers use specialized software to create a “house as a system,” he explains. All components in such a build – the site characteristics, house shape, window size and placement and insulation levels – work together to optimize building performance.

For instance, a site that has good solar access makes a difference, says Marion. It may not always be possible, but it has to be accounted for in the build.

“The net result is a super comfortable, ultra energy-efficient house with high indoor air quality, and excellent durability,” says Marion, who built his passive house in Oakville five years ago.

Other energy efficient features include triple-glazed windows, extra insulation and a simple house design, he says. A building with many corners needs an equally busy foundation and roof, features that drive construction cost and increase energy usage.

Despite the name, says Bernhardt, passive houses have an active heating mechanism.

“That system can be very small,” says Bernhardt, also a passive house

owner. “A small radiant electric wall panel is an active system that can typically be used in a passive house.”

In addition, a high-quality ventilation system must be used to supply fresh air to all rooms throughout the building, he adds.

These standards are not just for newer houses, says Bernhardt.

THE PLACE: “The concept behind the store is to inspire

people,” says Urban Rustic Living owner Tary Roossien. Filled

with home décor and furnishings, the store is staged like a home

with individual rooms where clients can visualize their own ideas

in a friendly, inviting and inspiring environment. “We’re all design

people and that is a complimentary service,” says Roossien.

“We offer advice.” Some customers bring materials from home

and the design team works to complement those articles with

store items that enhance and embellish the client’s ideas. Some

customers are working on an individual room, a specific home,

complete renovations or entire cottages and just need help

pulling things together, Roossien explains.

THE PRODUCTS: Roossien and her husband, Ed, travel

extensively to bring the store unique furnishings that

transition between organic, rustic and modern. “We’re mixing

all kinds of design styles and pieces so that it’s not just one

look, it’s a mixture of looks,” says Roossien. “We try and pick

streamlined pieces with little features in them that make them

unique.” Often, they mix wood with other materials. “A lot of

our pieces are made locally – maps and vintage pieces that

have been brought into the modern day and age.”

THE STYLE: “It’s a real mix of rustic and modern – like our

name Urban Rustic Living,” says Roossien. Rustic pieces offer

warmth while streamlined items provide longevity. “It’s really

a mix of those two elements.” The Roossiens also buy smart,

in terms of maximizing space and seating. “Because in our

resort area there’s usually a lot of people that have to be

accommodated,” she says. FAVOURITES: Roossien’s daughter Maxine likes faux fur blankets

for their luxurious feel. Real fur rugs and cowhides are also

popular. “In general we do a really good job of our bedding,”

says Roossien. “We carry products from various companies but

we always do top-quality bedding and we layer our beds and

make them very luxurious, especially master bedrooms.”

WHAT’S HOT: Lighting is hot. “People are seeing what lighting

can do for a space – complementary lighting, ground level and

above,” Roossien says. More and more modern lighting is being

installed, especially LED lighting. “Everybody wants that kind of

light. Now it’s becoming available in everything.”

IIn 1976, Jiri Skopek’s parents decided to purchase a cottage property. At the suggestion of one of his dad’s patients, a storekeeper who was central to their Czech community in downtown Toronto, an appropriate property was found.

The original cottage was a rough-hewn, rustic old shed, built of wooden crates, pallets and whatever else could be reclaimed and repurposed. A handyman special, if you will, but it was warm and intimate on a lovely spot overlooking the shimmering water of Clear Lake in Muskoka. For well over 40 years, it has been a wonderful retreat and gathering place for three generations of Skopeks.

Jiri Skopek is an architect and planner of international renown. He is best known for developing Green Globes environmental assessment tools for new building design, sustainable interiors, building operation and management. As an architect and planner, Jiri has contributed to Toronto’s skyline, ran the Paris office of an elite architectural firm responsible for many noted designs, and has

been involved in a myriad of international sustainable community activities.

While his wife Simone appreciates Jiri’s accomplishments and shares his eco-consciousness, the irony of living in “the shack,” as she affectionately referred to the cottage, was not lost on her. “As the saying goes: The cobbler always wears the worst shoes,” reflects Simone. “I suppose the same applies to architects like Jiri.” It was time for a serious change and, as the old adage might suggest, a new pair of shoes.

In 2010, Jiri and Simone finally had an opportunity to set things in motion. They took over the place from their parents and for the next few years began to plan, design and, with the help of Ian Fotheringham, one of Jiri’s associates, ultimately execute their dream of constructing a beautifully efficient, eco-friendly building on the site.

“Planning the new cottage was a lifetime vision that was forever being delayed,” says Simone. “To live up to our environmental credo, the new design called for preserving

trees on the property and reuse of the existing foundation.” Both Jiri and Simone were determined to maintain what they could of the original construct, reuse whatever materials they could salvage, protect the trees and be as absolutely energy effective as possible.

“All the best laid plans did not come to pass,” says Jiri. As much as they and their general contractor, Steve Potter of Rustic Woods, wished to follow the game plan, there simply was nothing salvageable, right down to the footings, says Jiri.

The Skopeks did, however, maintain their determination and commitment as far as energy efficiency was concerned. “The objective was always to be energy efficient and environmentally benign,” says Jiri.

“All the lights are LED and the heating is provided by an air-source heat pump, in addition to a Blaze King wood stove,” Simone points out (stove sourced at The Fireplace Stop). R40 insulation, elevated with foam in the insulated crawl space by SoundSeals Insulation, helps keep the cottage warm. “A tankless, instantaneous hot water system services our on-demand needs and the project also includes a net metered M2 Solar Array with a Panasonic solar storage system,” she says.

Solar power supplies electricity for all lighting, refrigeration, sewage, the water supply and Internet. They are not only self-sufficient much of the time, they can also generate enough solar power to offer it back to the grid and earn credits against their utility account.

Construction was started in October 2015 and fully completed by September 2016. Muskoka Lumber Building Supplies Centre provided timbers and building materials, Weismiller Lumber furnished the trim and North Country Floors & Home supplied flooring for the main living areas. United Lumber Home Hardware Building Centre supplied pre-engineered roof trusses. Staff at Home Depot in Orillia were especially helpful in the advice they gave on all manner of hardware products and installations – even taking the time to talk on the phone with the contractor to best meet the needs of the project.

“With good south orientation and a north view of the lake, the 1,560 square feet of living space is optimized by the spacious great room that incorporates the living, dining and kitchen areas, with large windows facing the lake and an open mezzanine, work and entertainment space

on the upper level,” Simone and Jiri say. The cottage has a delightfully open feeling, a place where you can relax, feel comfortable and connected with everyone, yet also find a nook or corner for personal pursuits and private time. It is an inviting home in every sense.

That feeling extends from the rich brown tone of the Maibec siding that clads the exterior with its contrasting black windows and doors, into the soaring great room with a brilliant white tongue-and-groove ceiling, offset by formidable dark support trusses. Clean lines, spacious rooms and a perfect recipe for an intimate getaway.

“All three of our children, Tom, Jean Marc and Majka have always loved it here,” says Simone. “It has always been such a retreat and with this beautiful new space, that feeling has been amplified dramatically.”

Jiri points out that there are plenty of work surfaces so that everyone can do their own projects without feeling cramped or claustrophobic. It is a welcoming place that encourages a sense of community and togetherness. This is a cottage truly designed around gathering – family and friends enjoying the time, the place and each other, whether it is sitting on sawed-off logs around the fire pit, stretched

Some surveys suggest up to 85 per cent of Canadians intend to live at home for as long as possible. But more than one in three haven’t seriously considered measures to make life at home easier and safer.

Thinking ahead is essential, says Heather Mahon, who owns and operates Heather’s Home Healthcare, a medical equipment and supplies store that promotes independent living. “Today we can be really, really healthy and tomorrow that can change.”

The earlier Canadians start planning, the more prepared they’ll be to handle changes in their health and mobility, Service Canada advises. That planning should include current and future costs of staying at home, proximity to friends and family, transportation, and assessing safety risks at home. The agency has a wealth of information about aging in place.

aging in place

home safety

low maintenance

SAFETY MEASURESHomeowners can make simple improvements themselves, such as installing grab bars in the shower, bath area and around the toilet, says Mahon. “If you’re going to replace furniture, my suggestion is to go to a lift chair.” Push-button controls on an electrically-powered recliner are easier to use than manually-operated handles that require strength and dexterity.

MAINTENANCEJohn Ritchie of Ritchie Renovations suggests making the home as maintenance-free as possible. He says windows and doors that need paint every year or every other year should be replaced, if homeowners have room in their budget. Vinyl or fibreglass windows need little maintenance. Some manufacturers offer windows that clean themselves with glass coatings that react with sunlight to break down dirt and grime that’s washed away by rain. “The more maintenance-free they can make their house, the better off they are,” Ritchie says.

Anyone heating a home with only wood should get a furnace, Ritchie recommends. “Get a source of heat other than wood because it’s a lot of work.”

When it comes to interior renovations, an occupational therapist can provide detailed advice tailored to individual needs.

BATHROOMSFor Mahon, it’s bathrooms that require the most attention. “Your biggest bugaboo is the bathroom,” she warns. With many hard surfaces and edges that get slippery when wet, bathrooms can be a painful place for a fall. Grab bars and shower seats are key to safety. An unobstructed area, at least five feet in diameter, is needed for manoeuvring a wheelchair or walker in the bathroom. Motorized wheelchairs or scooters need more room. “Think about access,” Mahon advises. “If I have to go in with a walker am I able to turn around?”

Curbless showers are terrific, she says. Although some people like to soak in a tub, as they age they’re susceptible to what Mahon calls “beached whale syndrome.”

“One day you’re going to get caught in that tub and you’re not going to be able to get out because either your arms aren’t

strong enough or you can’t get yourself turned around.” When replacing a tub, she recommends a low-profile tub, no higher than 21 inches. “If you’re doing flooring, put in a heated floor and get rid of scatter mats, they’re a tripping hazard. As you age, you don’t want those in there,” she says.

The Canada Mortgage and Housing Corporation provides detailed recommendations for renovations or new construction to make nearly every room of the house safe, accessible and comfortable. It offers suggestions for kitchens, appliances, living rooms, exterior decks, gardens and landscaping.

Revenue Canada allows homeowners age 65 or older and those with disabilities to claim up to $10,000 for renovation expenses that make their homes accessible and safer.

In addition to accessibility, people who want to grow old at home should consider day-to-day maintenance, such as snow removal and year-to-year maintenance, says Leah Kane, a sales person with RE/MAX North Country Realty Inc. “Will the furnace need to be replaced in the next little while? Those big ticket items need to be done. Budget for those big ticket items,” she urges.

DOWNSIZINGSome people are selling their family homes in large urban areas, where homes fetch high prices, and are moving to smaller communities where housing is less expensive. “That is a big chunk of our business,” says Kane. “We see people migrating north because this is the lifestyle they’ve been envisioning for a long time. When they come up here, it’s much more affordable.”

One-floor living, with comfortable living arrangements, master bedroom and ground-floor laundry, is ideal, she says. “If people are transitioning from a large home into a smaller home, the benefits to doing that is their taxes will be lower. Their heating costs will be lower,” Kane says. “If you need to replace a roof over a 1,000 sq. ft. home versus a 1,700 sq. ft. foot home with a second storey, it’s going to be less expensive. A smaller bungalow is going to be much more affordable.”

Financially, the longer people can live in their own homes, the better, she says. OH

PROS PUT YOU FIRST

Attention to detail, skilledcraftsmanship, and knowledgeableadvice make experts essential.

Tell us about your business: “Chad Taylor and I work as a team, with a priority on treating our clients with honesty, kindness and respect,” says Melanie Moffat. “Our goal is to enable you to relax and enjoy your vacation time, while we keep your property looking beautiful and well-maintained year-round. We offer a wide range of property maintenance services and engage skilled/licensed and fully-insured contractors for specialized work. We are highly knowledgeable in the design of beautiful gardens, planters and pots. Clients have indicated great satisfaction with our service.”

What’s new? “I am grateful and blessed to have a second chance at life, due to a special donor who gave me a wonderful gift this past year,” says

Moffat. “Before my double lung transplant on Feb. 7, 2017, I suffered from pulmonary fibrosis, a part of the mixed connective tissue disease that I’ve struggled with for years. This experience has given me new strength and courage to keep fighting and pushing forward through every arising issue. Much love and caring support from my network of family, friends and clients have helped me continue to run my business.”

Your best advice: “We all have challenges in life, some more than others, but I believe that if we try our best to stay positive and appreciate, respect, and support each other in tough times, we can beat almost anything,” Moffat says. “Never give up. Please consider signing your driver’s licence organ donation form. Help someone else live life to the fullest.”

BRANDON RYMAN, ELECTRICIANRyman Plumbing and Electrical

Tell us about your business: “We offer plumbing, electrical services and heating,” says Peter Ryman. “We install radiant floor heating, plumbing and specialty items, whatever customers need, anything from submersible pumps to the plumbing within the house and even sewage pumps, like grinder pumps and high-lift pumps. We also do water testing and analysis for complete filtration systems. We do a lot of work on Georgian Bay with boats that service a lot of cottages.” The company also installs underground electrical services, home automation, lighting control, sound, television and media rooms, says Brandon Ryman.

What do you like about your work? “It gets you out of the house every day and it’s clean work for the most part,” says Brandon. “It makes you think.” Peter enjoys travelling around the many islands of Georgian Bay. “I love the islands and taking care of people,” Peter says. “I enjoy meeting people.”

Any trends in your field? “People are conscious of where they spend their money now,” says Peter. “Whatever is hot on the designer’s list is what we’ll install.” Brandon has seen a shift to more energy-efficient LED lighting and low-voltage cove lighting.

Tell us about your boats: “Kemp Boats are custom, welded aluminum boats,” says Scott Kemp. “We build anything from 14-feet up to 40-feet right here in Pointe au Baril. They’re commercial boats or cottager-style boats. A lot of people, like contractors, use them for construction. Cottagers use them for getting back and forth to their cottages as a runabout. Some people use them to go picnicking on islands.”

What advantages do your boats offer? “They’re maintenance-free because there’s not a lot of upholstery,” Kemp says. “You can clean them easily. You don’t have to worry about them getting scratched. They’re self-bailing boats so you don’t have to worry about them

sinking. They’re basically the SUV of boats. In a custom-built boat you can change things in the interior to suit your liking, for example different seating for people, live wells, things like that.”

How are they used? “A lot of people haul ATVs, fridges, lumber and things like that to their cottage,” he says. “The bull nose boat has a ramp. You can drop that down on the shoreline and unload an ATV, a wheelbarrow or cement mixer. You can wheel off appliances. They’re great for elderly people in a wheelchair to get on and off islands. You can go out to picnic on Georgian Bay and drop it down on the rocks.”

DEBBIE TILSTRAMANAGERMuskoka Lighting Company

Tell us about your business: Owned by master electrician Jeremiah Tilstra, Muskoka Lighting Company sells landscape lighting, under-cabinet lighting, pot lights, security lights and Sonos entertainment systems. It carries a wide range of lighting from Kichler, Hinkley, Savoy House and Visual Comfort. “We sell everything from a builder basic fixture to a hand-forged fixture. We try to cover the gamut up here,” says Debbie Tilstra, Jeremiah’s mother. “We work with a lot of designers. We work with a lot of builders. The business has been great since the day we opened the door. So we’re very grateful.”

Why did you start a lighting store: “When Jeremiah started Muskoka Lighting & Electric, it was his vision to open a lighting store at some point,” says Debbie. “With his experience in installation, he realized that we could really use a lighting store in this area and we could provide lighting to entire homes, from the basement to the attic and provide the installation as well. A one-stop shop.”

Your favourite part of the work? “I love customer service,” says Debbie. “I love being able to show people new things, to help guide them in their selections and give them the right advice for their installation. Meeting new people is also a joy.” OH

AAfter fire destroyed her lakeside residence, Karen Cox discovered a wonderful silver lining during the rebuilding journey. “The aftermath of any disaster is overwhelming for those involved, but one has to look for the silver lining to face each day and for me it was the incredible love and support from my family and friends that allowed me to move forward,” she explains. “I couldn’t have done it without them.”

Cox purchased her Silver Lake property in 2005 with the intent of continuing to offer her children the same Muskoka experiences she’d known summer and winter at her parents’ cottage on Lake Joseph. She dubbed it Silver Lining and by the time she retired from full-time

teaching and moved here permanently in 2007, numerous improvements had set the stage for her forever home – or so she thought.

On August 14, 2015 shortly after 5 p.m. a powerful lightning strike hit. A concerned neighbour called Cox, who was in Barrie, to tell her the house was on fire and to make sure she was okay. She rushed home to find firefighters battling a fully engulfed structure and watched it burn until dark with son Michael by her side. Thick smoke melded with visions of happier times and cherished memories with family and friends. Within four hours, she’d lost nearly all her material possessions.

In the following days and weeks, caring family, friends and community helped temper the roller coaster ride of those emotional first difficult days. A place to stay at a nearby friend’s and clothing and meals were quickly organized. Her son Matthew helped guide her with dealings with the insurance company, but there was endless paperwork required for her insurance contents claim that only she could do.

Over the winter months Cox spent time searching for designs and sketching floor plans, finding this creative challenge positive and healing. She also decided on using Cedarland Homes to build her new home.

“The architectural drawing team was able to take my sketches and ideas and come up with a drawing that functions exactly the way I envisioned: open concept with gracious space for entertaining, accommodating to overnight visitors, but also easy to manage. Honestly this plan is just perfect.”

The new Silver Lining home plan will be featured in Cedarland’s newest design catalogue. “The property she is on is a very nice lot, uniquely close to the water compared to many of the builds we do,” explains Greg Lubbelinkoff, Cedarland’s vice-president of operations. “And the design she picked was really functional – a cosy layout but very open concept at the same time – so it’s actually one of the nicer floor plans we’ve done in a 1,500 sq. ft. size.” With the sunroom, this Cedarland design adheres to the same 1,755 total square footage of the original footprint and features two guest bedrooms, a main bathroom, a master bedroom with en suite, and an open living/dining/kitchen space with stone fireplace.

Cox credits Lubbelinkoff with helping her get a fair settlement from her insurance company to rebuild what she had. Throughout construction, Cedarland’s project manager Sahag Demergi was a constant support, while the company’s interior design team of Katelyn Moore and Amanda Saunders helped design the kitchen layout and offered advice on the style and colour of kitchen cabinets and the countless other finish decisions. “This was such an enjoyable and positive experience,” Cox remembers. “Both Katelyn and Amanda understood exactly what l wanted.” The visually pleasing and functional kitchen features a subway tile backsplash installed by Frank Merli Construction, complete with an artistic chevron glass inset.

Ryan Gray of Gray’s Paint & Flooring helped Cox choose the grey, blues and cream colour scheme, while Duane Cavanagh of Cutting Edge Painting & Staining and team painted walls and trim to evoke a light and fresh feel throughout. To enhance the airy feel in the great room, vaulted ceilings were added in whitewashed pine. Furniture is a mix of old and new pieces. Several rescued family heirlooms, including a coffee table, rocking chair and pine blanket box were restored. Two new recliners and a sofa and love seat from La-Z-Boy are enhanced by a coordinating woven rug in blue, grey and cream colours. The cottagey master bedroom and en suite has coastal driftwood touches. Bedroom furniture and rugs in this relaxing retreat are from Harris Furniture and Antiques. “Dean Harris and staff helped me choose pieces that will become new heirlooms in our family,” Cox remarks.

The greatest improvement from the original home was the in-floor heating system installed by Dan Lachapelle from Lakeside Heating & Cooling. Shaw Laminate from Carpets-n-Colours was chosen for flooring. Rock Solid Supply provided the bathroom vanity cabinets. An abundance of energy efficient windows from Ross Windows & Doors allows excellent passive solar heating throughout and maximizes the westerly water view.

Outside, David Adams of Adams Bros. Construction Ltd. suggested large limestone rocks for foundation garden edging to best complement the deep blue Westcott Navy Maibec siding with its contrasting white trim. A campfire circle, flowerbeds and circular driveway, also completed by the expert Adams Bros. crew, created landscaping that truly enhances the approach to the home.

Cox is often reflective these days. “The traumatic effects of lightning two years ago made me appreciate that the important things in life are not material. However, I am grateful for our new Silver Lining where family and friends can enjoy happy times and make new memories for many years ahead.” OH

Growing food is one of the most popular forms of gardening practised today.

Given the ever increasing costs (and lack of nutritional content) of current grocery store produce, it makes sense. Growing food at home is actually pretty easy to do. For example, throwing a tomato plant or two in a sunny spot in your garden, and giving it an occasional watering, will likely produce a few fruits. But for your veggie garden to be truly successful in both health and bounty, a number of requirements must be met.

PLACEMENT Food gardens need sunshine, but only about eight hours per day. East facing is ideal, followed by south and west. Veggie gardens need not be planted in rows if you prefer free-form arrangement. Add some inexpensive and edible flower seeds such as sunflower and nasturtium

to punch up the colour. Be artistic as crops will change year to year so nothing is permanent.

CROP ROTATION Certain plants are heavy feeders while others actually increase soil health in the areas in which they grow. This makes crop rotation very beneficial to the home garden. For example, legumes fix nitrogen into the soil, so plant cabbage and cauliflower in an area where you previously grew beans and peas. Root crops don’t like very rich soil, so plant these in areas previously inhabited by demanding cabbage and cauliflowers.

PERFECT COMPANIONSSome plants have similar growing requirements and even grow better when planted together, making them natural allies. Other plants, like people, compete for resources. Many companion planting charts are available online so with a little research you’ll find out exactly which of your plants are friends or foes.

THE HARVEST Every great chef knows each dish is only as good as its ingredients, so harvest your bounty at its optimum flavour. Sometimes you’ll have an abundance of one crop or have many crops that mature all at once. Don’t let those extras rot in place! Freezing and canning are easy and you may end up with enough delicious and nutritious preserves to last you until the following July.

Most mass-grown fruits and vegetables are sprayed with dangerous herbicides and pesticides, planted in depleted soil and shipped an average of 2,500 kilometres before they reach the local grocery store. Even much of our livestock are given loads of antibiotics and an unhealthy diet that then trickles down to us when we consume them. Given the state of the average Canadian’s body fat level, coupled with mass vitamin and mineral deficiencies, our bodies are simultaneously both starving and storing fat! However, when the body is nourished at a cellular level, cravings disappear, natural energy is restored and many health problems retreat. Food is the original medicine so why not give a healthful, tasty organic veggie garden a try? OH

SOILJust as it is with good relationships and sound construction practises, a successful vegetable garden is built upon a solid foundation – its soil! Healthy soil is composed of weathered rock, organic matter, water and air, yet it also contains the magical hidden element of beneficial organisms. Let’s take a closer look.

Minerals: Roughly half of soil’s composition is made of bits of broken down weathered rock – the vital minerals necessary for healthy plants. The size of these particles determines the texture of soil. Large sand particles are found in sandy soil, medium particles in silty soil and small particles in clay-based soil.

Organic Matter: These are the partially decomposed remains of plant life, soil organisms and all kinds of vegetative matter. Although organic matter makes up only five to 10 per cent of soil composition, it is essential to bind soil particles together, retain moisture, allow air flow and provide food for the all-important microorganisms. All soil types will improve with an increase in organic matter so add in compost, aged manure or seed a “cover crop” such as annual rye grass, then till it into the existing soil to decompose.

Soil Life: Beneficial bacteria, fungi, nematodes and earthworms are just a few of the important creatures found in garden soil. These tiny beings are imperative to help convert the organic matter and minerals in soil into vitamins, hormones and nutrients plants need for optimum growth. Avoid sterilized commercial soils and composts, pesticides and herbicides. Add in worm compost, home compost or leaf mould to enhance your colonies instead.

Often located adjacent to the garage, the mudroom can become the primary entrance in many homes and is a high-traffic area. It’s the last place you see when you head out for the day and the first space that greets you when you return (and perhaps the first space guests will see as well). Therefore, the mudroom should be designed with the utmost utility in mind to meet the specific needs and requirements of your household. Walking in and out of a tidy, organized and functional space creates a welcoming and comforting environment that can help calm your nerves and reduce stress.

Whether you’re redesigning your current space or starting from scratch, here are some considerations when designing a mudroom:

MATERIALSAs the name suggests, the space should be designed with durable materials and finishes that can withstand the dirt, mud and snow. A non-porous hard floor surface, such as porcelain or luxury vinyl tile, is easy to mop and requires minimal maintenance. Just avoid light-coloured grout.

Consider hard-wearing wall finishes (the matte paint trend is not suitable for the mudroom). Wall tile, wood panelling and many wallcoverings are resilient and easy to wipe.

Be mindful of uneven surfaces and heavy textures where dust and dirt can settle and become difficult to clean.

Radiant floor heat is worth the investment in the mudroom as it helps to keep the space warm and dry in the cool, damp months and is a welcome treat for cold toes.

Mudrooms are multifunctional spaces. In addition to storing a household’s shoes, boots, coats, mitts, hats, umbrellas, purses, backpacks, keys and sports gear, it is frequently also the mail drop, home to the family calendar, pantry, housekeeping or laundry space, and often the spot for a family pet’s crate, food and litter. It truly is a hard-working space!

The kitchen might be the hardest working space in the house, but the mudroom comes in a close second. So it’s no surprise that mudroom design is receiving more attention and the room itself more square footage than ever before.

STORAGEConsider where shoes, boots, coats and mitts will be stored both in season and off season. Do you prefer visible hooks for coats and open cubbies for boots or do you prefer them hidden behind closed doors? Incorporating a bench or form of seating is helpful for people of all ages when it comes to footwear.

Individual storage cubbies have become popular and their ease of access allows everyone to be responsible for placing their stuff in its designated location.

A combination of open and closed storage helps minimize visual clutter while providing an opportunity to express your individual style through cabinetry, hooks, hardware, bins and baskets.

EXTRASIf you’re an active individual or household, be sure to designate space to accommodate the gear for various sports and outdoor activities.

Avid gardeners can incorporate sufficient counter space to pot, prune and care for plants and start spring vegetables. A small, deep, wash-up sink can be handy to rinse fresh garden produce and to clean hard-working hands straight from the shop or barn.

Do you struggle with muddy paws after walks with your dog? Pet showers are becoming a more popular request when sufficient space is available. They help contain the mess so it doesn’t get tracked throughout your home, and can also be handy to fill the mop bucket or rinse boots.

A docking station for mobile phones can be a great addition to the space as more people try to successfully balance the demands of work and home life. The idea is to leave your phone in a specific location instead of continually by your side, which can allow you to be less distracted and more focused on the present moment.

Be sure to consider the vantage point from adjoining spaces and decide what you don’t mind on display and what you’d prefer hidden from view. Pocket or barn-style doors are a good option that don’t take up valuable floor space like a door swing.

Although functionality and practicality are the focus of the mudroom, it is also another space where you can express your unique style and design sensibility. Be creative and have fun with it! OH

DEEP WATER WOOD PRODUCTS Ontario’s lakes are a resting place for buried treasure – in the form of century old timber.

Deep Water Wood, a Muskoka–based carpentry company, began salvaging logs from lakes and converting them into flooring, furniture and charcuterie boards since 2006.

In the 19th century, timber was felled and rolled into the lakes to float downstream where it was then processed at a mill. The lighter logs floated, but the heavier ones sank, staying hidden beneath the waves.

Turning logs into coveted products is a process. Dianne Hoegler, the Head of Marine Exploration, identifies the submerged logs using side scan sonar. They then submit permits for retrieval, don scuba gear and bring the timber to the surface where it is transported to their sawmill and transformed.

“Our clients love the history and story behind the wood,” said Jedson Smuck, the company’s President. “Many logs still have the original stamps at the ends. Sometimes we cut those out and inlay them into the table, it preserves the history and gives the object authenticity.” Deep Water Wood products are carried across the province at wineries, restaurants, resorts and home furnishing stores. For a complete list of where to purchase, visit their website at deepwaterwood.com (Please see ad on pg 27)

MATTRESSES OF MUSKOKA Q. How do I prolong the life of my mattress?

A. The following suggestions will help prolong the life of your mattress:

1. Using a mattress pad or protective cover will help avoid stains, which are not covered by the warranty.

2. Rotate your mattress to promote even wear.

3. Use a good quality bed frame (see warranty card for queen- and king-size diagrams).

4. To eliminate bends in the border wiring that surrounds the mattress, avoid sitting or standing on the edge of your mattress or box spring. Warranty does not cover bent border wiring.

Here at Mattresses of Muskoka, we can answer this question and many more! Located in Bracebridge, Ontario, we are your home and cottage mattress centre. We specialize in Tempur-Pedic, Memory Foam, Marshall, Dreamstar, and Galaxy Mattresses. We also carry the Creden-zzz Convertible Cabinet Bed with Memory Foam Mattress and the Knickerbocker Bedbeam Support System which can support up to 1,600 lbs. of weight. Roll out your floor plans on our jumbo slab boardroom table or scroll through your options on the video monitor. We also offer a full working kitchen.

Viewing a full slab of quartz takes the guess work out of what you will actually receive at time of installation. Typically, these decisions are made from a 12x12 sample or smaller, but with the veining, movement and colour that Cambria offers it’s best to see these art pieces in their full glory. Cambria currently holds 140+ designs within their palette. The Gallery displays those designs with the most movement, ranging from bold to contemporary, and timeless classics. Cambria also offers subtle solids and more uniformed designs that are complimentary to their other selections.

STÛV Stûv products stem from the spirit of innovation and ongoing commitment by finding ways to improve the technical performance on all appliances which boosts the satisfaction that the user receives from day-to-day use. Stûv products do not have to submit the architecture. They respect it and inspire new possibilities for it. The contemporary look and simplicity of our products means that they blend with any kind of interior.

Ten years ago, Vincent Boudreau, who was intrigued by the beautiful stoves and fireplaces he had seen in a European architecture magazine, travelled from Quebec to Belgium to visit Stûv’s facilities. It was love at first sight! He saw a business opportunity in the ingenious streamlined stoves and fireplaces that had not yet reached the North American market.

Today, Stûv America offers 35 models in wood and gas and has more than 90 dealerships all across North America. In 2016, with its principal partner (Stûv sa), Stûv America bought a factory in Quebec to produce within the next two years all Stûv products here in Canada.

Vision on the fire, efficiency and timeless design are the main characteristics of all Stûv models. Have a look at stuvamerica.com (Please see ad on pg 5)

THE FIREPLACE STOPWe at The Fireplace Stop find ourselves in the position of getting involved with the renovation of many cottages to convert them to permanent dwellings as people are retiring in cottage country. For those without air conditioning or satisfactory heat source the split ductless units are proving very reliable and popular. These units are very quiet and serve both cooling and heating requirements at a very low cost. Couple this with a modern woodstove which will burn up to ten hours on one fill and we can accomplish a very cosy environment. Whatever you desire, whether it be wood, gas or propane product we have it all, from large Rumford fireplaces to small woodstoves and barbecues.

We also feature exclusive European stoves and fireplaces which will quickly become the focal point of any room. The Fireplace Stop can get involved with your heating and cooling requirements of any new construction project from air conditioning, furnaces, heat pumps, in-floor thermal heating and domestic hot water heating.

Please drop by our store at Highway 9 and Highway 27 and check out our extensive showroom. Our sales professionals will be happy to answer any questions you may have and offer you our 30 years experience in the industry.905.939.87586048 Highway 9 and 27, Schombergfireplacestop.com(Please see ad on pg 65)

INGREDIENTS

½ cup mascarpone cheese

½ cup superfine sugar

1 tsp vanilla extract

1 cup whipping cream

DIRECTIONS

Combine mascarpone cheese, sugar and vanilla in a small bowl.

In the bowl of a stand mixer, whip whipping cream until light and fluffy.

Slowly add cheese mixture to whipped cream while the mixer is still running. Mix until combined.

TO ASSEMBLE THE CAKE

Layer sponge cake with whipped mascarpone and top with blackberries. Drizzle with bourbon caramel to finish. Serve cake soon after assembly for best results and cut with a serrated knife – the cake is very delicate. OH

BLACKBERRY SHORTCAKEwith BOURBON CARAMEL

RECIPE AND PHOTOGRAPHY JENELLE MCCULLOCH

Go above and beyond with this modern upgrade to an old classic: the shortcake. Light sponge cake is layered with mascarpone whipped cream and topped with decadent blackberries with a hint of bourbon.

Sponge Cake For this super simple sponge cake you will need two 6-inch round baking pans.

INGREDIENTS

5 large eggs at room temperature

1 cup + 1 Tbsp cake flour, sifted

½ cup + 1 Tbsp granulated sugar

pinch of salt

DIRECTIONS

Preheat oven to 340ºF. Butter and flour sides and bottoms of baking pans. Cut out two 6-inch rounds of parchment paper and line the bottom of each pan. Set aside.

In the bowl of a stand mixer, combine eggs, sugar and salt. With the whisk attachment, beat on medium/medium-high speed for 15-20 minutes until pale and fluffy. The mixture will be firm and will form soft peaks when ready. In batches, slowly sift in flour and carefully fold the mixture by hand to combine. Be careful not to overwork and deflate the batter.

When combined, divide the mixture evenly in the two prepared pans and bake for 25-30 minutes. Be careful not to open the oven as the cakes may deflate. The cakes are done when an inserted toothpick comes out clean. Turn off oven. Leave cakes to cool inside the oven for 5-10 minutes with the door propped open. Remove from oven and let cool for another 10 minutes before removing from pans and inverting them onto a rack to fully cool.

INGREDIENTS

2 cups fresh blackberries

1 Tbsp bourbon

2 Tbsp maple syrup

INGREDIENTS

1 cup sugar

½ cup water

½ cup heavy cream

1 Tbsp butter

1 Tbsp bourbon

Pinch of salt

DIRECTIONS

Combine ingredients in a saucepan. Heat over medium until blackberries begin to render their juices. Chill until ready to use.

DIRECTIONS

In a saucepan over medium heat combine sugar and water. Do not stir, but let sugar dissolve and come to a simmer. Simmer until syrup is a golden, amber colour. Swirl the mixture in the pan if necessary to ensure all of the sugar is dissolved and caramelized.

Remove from heat and whisk in heavy cream. Lower heat to medium-low and return pan to burner. Continue to stir the caramel for another 2-3 minutes.

Remove from heat, add butter and stir. Add the bourbon and salt, stirring again.

Transfer to a heat-safe container to cool. The caramel will thicken as it cools.

HOW-TO

Sand both sides of the 12-by-48-inch project board using 120-grit sandpaper.

Wipe the surface with a lint-free rag, and sand both sides again with 220-grit sandpaper. Repeat with 320-grit sandpaper.

Using a staining rag, stain both sides of the board and let dry. For a deeper colour, add a second coat of stain.

Once the board is dry, use the painter’s tape to mask off the perimeter and edges of the board to create a border that will remain unpainted.

Spray with chalkboard paint in even strokes on the unmasked portion of the board. Allow the project to dry completely before carefully removing the tape.

Fasten the handles of your choice.

Add a custom message or design with chalk and use to serve.
